Cattaraugus County organizations receive $10,000 in grants Thirteen nonprofit organizations in Cattaraugus County received small grants totaling $10,000 through the BlueCross BlueShield of Western New York Blue Fund. The community-based, not-for-profit health insurer pivoted its traditional 2020 Blue Fund grant cycle to support the most critical and immediate community needs as a result of the coronavirus pandemic. The grants bring the total of COVID-19 Response aid in Cattaraugus County — facilitated by the Cattaraugus Region Community Foundation — and its philanthropic partners to more than $169,000. The organizations to receive grants are:

A free reception and artist talk will open the exhibit on Feb. 12 at the Arts Council. OLEAN — The Tri-County Arts Council will host the digital art of Laura Cole in two exhibits, “Through the Looking Glass” and “Edwardian Olean” with a reception and artist talk in February. Council officials said the opening reception and talk will be held from 6 to 8 p.m. Feb. 12. The exhibit will continue through April 3 in the Arts Council gallery at 110 W. State St., Olean. The Arts Council is open from 2 to 6 p.m. Tuesday through Friday, and noon to 5 p.m. Saturdays. While admission to the opening reception is free, reservations are required to observe Covid safety protocol. Arts Council officials said Cole’s digital art is a ‘masterful restoration of time-worn photography from a longago era into fresh colorful portraits which transcend time and distance, linking the viewer with Olean’s forgotten Edwardian age.” Cole describes her art on her website as “the notion

that objects from the past have the power to move us, emotionally, through time and space, to by-gone eras and otherworldly places.” Cole’s avant-garde surrealist art style reveals a dreamlike or, as she describes, a “fairytalelike” quality to create her “Through the Looking Glass” series. “This resurrection of forgotten faces, exposed on old tintype photographs, starts when I scan these analog, 19th Century artifacts into my digital workspace,” Cole said, adding she uses Adobe Photoshop and Corel Painter “to manipulate the unaware models into colorized - characters in surreal collages that transport the viewer to a place and time of maximalism and fairytalelike whimsy.” Cole combines scans of 19th century photographs with photos taken from different objects to create surreal collages. Using Corel Painter, she digitally

hand-paints over the entire image at the end of her process to create the “painterly” look to them. “My images usually have rich colors and an element of nonsense or whimsy. My goal is for each image to feel like a scene from a fairytale,” she said. “I choose to work with images of real people from the 1800s because I’m fascinated with the time period and have a strange nostalgia for what is, no doubt, an idealized notion of what it was like to live in a simpler, more elegant time.” Cole’s art career began in 2012 with a series of selfportraits she created as she learned to use her first-ever camera and Photoshop. “I began shooting weddings and portraits professionally the following year but continued to create fine-art self-portraits in my free time. I eventually came across a number of artists who were creating various forms of collage using antique photographs, and I was fascinated!” she said. The “Edwardian Olean”

series is a bit different, as Cole begins with old tintype, ambrotype or daguerreotype portraits. In this series, she used old postcards, postmarked in Olean between 1901 and 1914. “I curbed the surrealism a bit because I wanted them to feel like miniature time machines that could take the viewer back to an Olean that no longer exists ... one of pride, wealth, and abundance,” she said, recalling the Olean in which she was born and has lived her entire life. “My family goes back generations in Olean, on both sides. It was important to me to create something that paid homage to the import role that Olean has played in me becoming the person that I am.” More information on the exhibit and Arts Council can be found on its website: https://www.myartscouncil. net/

Students can apply for CRCF scholarships beginning Feb. 1 The Cattaraugus Region Community Foundation will open its scholarship application process to area students Feb. 1. Students can apply using the online scholarship portal. Students can complete one common scholarship application to become eligible for awards from some 65 scholarship funds. In 2020, 104 area students received 143 awards, totaling over $155,000, an increase of some $50,000 from 2019. “As we all know, 2020 was a year full of challenges, but I am proud of how the scholarship process at CRCF was able to adapt despite school closures and changes to remote learning,” said Karen Niemic Buchheit, CRCF executive

director. “Scholarships remain integral to enable the many hardworking and talented students in our area to pursue their dreams,” she said. “The CRCF Scholarship program has continued to grow over the years, and we look forward to another successful scholarship season this year.” Scholarships are available to students throughout the region — including, depending on the criteria of each fund, Cattaraugus, Allegany and McKean (Pa.) counties — for a multitude of interests and career/ educational goals. Awards are available to students at specific high schools, students with different majors, students with different career goals and more.

New awards include: • Robert E. Hull VMD Memorial Scholarship, with first preference for minority or female Olean High School students. • Nelson M. Beard Memorial Scholarship for graduating Salamanca High School students • Tim Bushnell Memorial Scholarship for graduating Olean High and Portville Central School graduates • Ginger D. Schroder Legislative Scholarship for a graduating high school student residing in Cattaraugus County Legislative District 3 who will pursue a trade degree or two- or four-year college degree. • Kathy Jowsey Spirit Memorial Scholarship for graduating Ten Broeck Ac a d e m y/ Fra n k l i n v i l l e

Urgent need for Meals on Wheels volunteers The Cattaraugus County Department of the Aging’s Senior Wellness and Nutrition program is in urgent need for volunteers in Olean, Portville, Salamanca and Gowanda. Protocols are in place to ensure the safety of volunteers during meal delivery. Meals are delivered

Monday through Friday. Most volunteers deliver meals just once a week, although there isn’t a limit of one day. Most delivery routes consist of 7 to 12 stops, and it takes approximately an hour to deliver a route. In addition to the benefit of helping the most vulnerable county residents

during this very difficult time, volunteers may qualify for mileage reimbursement. SALAMANCA — A Pennsylvania company is proposing to build a 21.6-megawatt solar farm on 65 acres in the town of Salamanca. The site is nearly a halfmile long, parallel to Route 353 and the Pat McGee Trail, running from a spot behind the Salamanca Town Hall to Town Line Road. The IDA has a $6,000 per megawatt P.I.L.O.T. that is divided between the school district, county and town where the facility is located. The lion’s share goes to the school district followed by the county and the town. Jackson said everything will depend on people’s response to the proposal. “If we don’t get any responses and people don’t care or if they believe the taxes will be beneficial to the town” the town board would take that into account, he said. He added, however, “The IDA has said if we don’t want it, they won’t approve it.”

His wife added: “Part of the reason people move to this area is that they don’t have to see industrial solar farms like this. I don’t want to see it off my back deck.” Jackson said the town board will convene a meeting next month to hear how town residents feel about the solar facility. CATTARAUGUS — The Cattaraugus Free Library has been selected as one of 200 libraries to participate in Libraries Transforming Communities: Focus on Small and Rural Libraries, an American Library Association (ALA) initiative that helps library workers better serve their small and rural communities. The competitive award comes with a $3,000 grant that will help the library focus on a community engagement project in hopes of reenergizing the village of Cattaraugus. “We are honored to be chosen for this amazing opportunity,” said Lori Antholzner, library director. “This grant will allow our library to start a muchneeded discussion on what can be done to revitalize the beautiful village of Cattaraugus. Every successful endeavor starts with a great conversation and we are thrilled to be a part of this project.” For the grant, Cattaraugus Free Library staff will take an online course in how to lead conversations, a skill

Staff will then host an outdoor conversation in late spring with residents to discuss what they feel is vital to the community. “Over the past few years, residents have witnessed many businesses and factories leave the village, including the only grocery store, gas station and pharmacy,” she said. “What can be done to lure such things back to our community?” The grant funds will cover the expenses of the project including printing, postage and research hours. We invest a lot in hunting — make the venison worth it

By WADE ROBERTSON Venison can’t be bought at the store. You must acquire it yourself and this can take hours, days or months under every type of weather condition. If luck and skill combine you harvest a deer. Then the fun ends and the work begins. The hunter must fielddress the animal, get it to the vehicle and into the garage, skin, cut up and package the deer. Some take their deer to a butcher, but I have my own way of doing things and am very particular about my sausage and hamburger recipes. There can be an immense amount of labor, time and effort involved in properly harvesting and preserving your deer. It’s a little scary how much a buck may be worth, monetarily. I’ve given this some thought and, totaling up every expense, I don’t believe it’s possible to properly equip yourself for that initial deer for less than $2,000. If you buy topquality clothing, boots, bow, rifle or shotgun, that amount can rapidly increase. If you’re fortunate enough to harvest a large animal you’ll have 60 pounds of meat — if you’re lucky. Many deer will yield less. Do the math and a pound of venison is worth $34. That’s as low an amount as I believe possible — and here’s why. Looking objectively at startup costs, a decent rifle and trustworthy scope will run at least $500 to $1,000, camouflage (warm and cold weather) clothing and footwear another $500. Odor limiting clothing even on sale will run $200 to $300. Don’t forget gloves, hats, socks, etc. Then figure in six days’ worth of hunting at $10 an hour. That’s $480 — and you can easily see how I calculated $2,000 as a minimum figure to outfit yourself and bag a single deer. Still doubtful? I haven’t mentioned possible food plot expense, binoculars,

range finders, knives, scent, rattles, grunt tubes, tree stands, (who has just one?) saws, trimmers, ammunition, arrows, broadheads, targets, rifle rest, shooting bench and accoutrements, stools or seats and a host of other small items you simply have to have. I would have no difficulty believing some with expensive tastes and the best of equipment have $100 to $200 dollars invested in a pound of venison. Of course, if you don’t buy much the following few years the cost slowly comes down, but the point is, venison is without doubt the most expensive meal out there. With that in mind, it’s wise to prepare it carefully. I want to share are some of the recipes I use when preparing my deer meat. The easiest way to enjoy venison burger is simply to mix it 50-50 with hamburger. By doing so you double the amount you have and get enough fat in the meat so it doesn’t stick to the pan. Put 1 or 2 pounds in a vacuum pack bag, depending on the size of your family, seal it and look forward to eating delicious burgers, meatloaf, chili or sloppy joes. If you’re preparing to make any dish other than hamburgers, fry the ground meat mixed with half a cup of fine-chopped onion. Onions perfectly complement the burger. When cooking chili or sloppy joes, brown the meat and onions, combine the ingredients and then add a tablespoon of brown sugar and one-third cup of ketchup. You will be amazed how these two simple ingredients will slightly sweeten and blend the other flavors beautifully together. If you’re on a diet or watching your sugar intake, use sucralose or similar substitute for the brown sugar. Using the 50-50 venison mix, simply fry your burgers, then place cheese and lightly microwaved slices

of sweet onion on top. While the cheese is melting toast your rolls and place the burgers on them. Next, some good barbeque sauce. Man, that’s heaven in every bite! Using plain venison burger, I fry the meat in bacon fat or use a cooking spray to keep the burger from sticking. Use medium to low heat. Then the cheese, onion, toasted rolls and barbecue sauce. Another great burger is easy — add a pack of dried onion soup mix to your meat and fry. Simply use your favorite toppings; they’re great. You can also mix steak sauce into the burger before frying. I love venison meatloaf. Use 1.5 pounds of meat, one egg, one chopped onion, one cup of milk, one cup of breadcrumbs, two tablespoons of brown sugar or equivalent sweetener, one tablespoon of mustard and a third of a cup of ketchup. Salt and pepper to taste. Bake 70 minutes at 375. Spaghetti and meatballs are a favorite. Use 1 pound of venison hamburger, half a cup of Italian breadcrumbs, a quarter cup milk, package-dried onion soup mix and one egg. Make your meatballs, brown on all sides in a fry pan and place in sauce. Simmer for an hour. My two favorite roasts are the neck roast and the shoulder roast. Place the roast in a pan or crockpot. Add a quart of beef broth

and two-three cubes of chicken bouillon. Cover and cook at least 8 hours at 275. If using a crockpot, leave on high for an hour, then turn to low. You may also add carrots, potatoes, small onions or other vegetables at the same time. When cooked long enough and kept moist the meat will literally fall off the bone. For sausage, grind 10 pounds of venison. Buy 7 pounds of pork butt and 3 pounds of pork fat, and grind. (I ask the store to grind it for me.) Spread venison 2 inches deep on a flat surface. Program offering $3 million to help NY restaurants

ALBANY — A restaurant recovery fund of over $3 million meant to help eateries during the COVID-19 pandemic has been set up. Empire State Development, New York’s primary economic development agency, announced the “Raising the Bar” Restaurant Recovery Fund, according to a news release. The fund is meant to assist restaurants in the state to deal with the impact of the pandemic and adherence to the public health and safety measures during the winter when outdoor dining is limited. Establishments could receive up to $5,000. Qualifying purchases and expenditures need to be from Sept. 1, 2020 onward to be eligible. The funding was made possible through donations by Diageo North America and supported by Coastal Pacific Wine & Spirits, and will be implemented by the nonprofit National Development Council. Initial grant funding will be awarded based on the received applications and given out independently by the development council. Applications will start to be accepted today at the n Empire State Development , website at esd.ny.gov/ n raising -bar-restaurantn recovery-fund. , Grant funding can n be used for COVID-19, related improvements and ,

Funds may also be used for improvements that will allow the business to continue operating through the winter months such as filtration system upgrades and food heaters to maintain temperature for togo orders and purchasing PPE and sanitation supplies necessitated by the pandemic; and COVID-19 related business improvements like patio heaters or contactless technology. Eligible businesses are New York state restaurants that have no more than $3 million in 2019 revenue and are engaged in providing food services and meals prepared on-premises to patrons who traditionally order and are served while seated, including certain on-premises food and drinking establishments licensed through the State Liquor Authority (SLA). Establishments providing takeout or grab-andgo food services due to COVID-19 restrictions are also eligible to receive the grant from NDC.

Occasionally the stars do line up and you may find yourself with a giant on your line. If you don’t panic and with a little luck you may even land it. The author with a rainbow bigger than he thought he’d ever land. By Wade Robertson Every fishermen has fantasies of catching a monster fish, impossibly large. It keeps you going, knowing that the unlikely might take really place, much like winning the lottery. Also, experience has shown almost every dedicated fisherman does tie into one of these leviathans sometime during their lifetime, though they seldom land them. Their names are in the records books, their pictures appear in newspapers and magazine and even on lure packages. Even if it isn’t a record-book fish, the unusually large ones allow you a certain status and renown among your friends. Yes, any cast it might happen, the chance exists. When a thaw and rain hit last winter, I was cutting firewood. It was a Monday and the streams were rising. My thoughts immediately turned to fishing; here was a little winter window of warmer weather that might raise the streams enough to stir up the big ones. I determined to fish the next morning. I awoke around 5, filled the woodstove and went back to bed, but couldn’t sleep. Before 6 I was back up and in the dark, foreboding morning fishing didn’t seem like such a great idea. I hesitated, indecisive

as what to do. Oh, the drag of age. In my youth the thought of skipping a fish trip would never even have entered my mind. This realization fired me up a bit. Dang it, I’m going, despite the long drive! My gear was already in the trunk, it seldom if ever leaves, so I skipped breakfast, chugged some water, dressed warmly and hit the road, the headlights cutting through the predawn gloom. When I finally arrived at the pulloff I was relieved the snow was unbroken, not a tire track cut the parking lot or footprint showed on the path to the stream. I grabbed my equipment and hustled down to the water. The stream, to my surprise, was clear, but high. I’d hoped it would be cloudy, but yesterday’s rainfall hadn’t been heavy. At least the stream was up and flowing swiftly. I immediately walked to the biggest pool. If the fish were moving 1 or more would be holding here. Positioning myself at the best spot I began quartering the pool. After several minutes I cast up into the rapids at the head of the pool and as the silver blade came in sight I saw a nice brown trout turn and quickly follow it. It saw me, though, and turned away. Drat. The wind started blowing

and since the temperature was only in the low 30s my hands quickly became uncomfortable. Since the stream was icy cold from the snowmelt the fish would be a little lethargic, maybe I should switch to a small crankbait, allowing a slower retrieve. But, did I really want to cut the spinner off and retie? My fingers were hurting already. Well, forget the fingers and just do it. New lure on, I began casting using a much slower retrieve with an occasional pause. The second cast the lure jolted to a stop. A hit! I snapped up the 7-foot UL and felt my knees tremble, when a huge, white belly rolled and bucked. I gasped and the 4-pound line felt like gossamer as the weight and unbelievable power of this fish flowed into my hands, the rod doubled over and throbbing. What was it? Then the fish came up and rolled again and I saw the broad red and silver side of a giant rainbow. Oh, my word! My eyes simply couldn’t believe I had a fish that large on. I gulped, prayed and began talking to myself, trying to keep calm. “If the fish is well hooked and you don’t panic or horse him, you have a chance, keep cool.” I was literally a little scared of this fish. For 10 minutes the huge trout stubbornly sulked, then unexpectedly made lighting quick runs across and down the stream. It was incredible how strong it was and how rapidly it stripped off 100 feet of line, the drag screaming in protest. All I could do was hold on, every nerve stretched to the breaking point. The rainbow then began moving upstream and as I tenderly kept the pressure on it came into sight across the stream. When we made eye contact the fish shot

to the top of the hole, his rush threatening to pull the light pole from my hands. A sunken log lay in the rapids and I was forced to raise my rod as high as possible and pull upward to discourage her. Surprisingly, the light, additional pressure stopped her and she turned, going deep. She bulled around several rocks, the line scraping; my heart was in my mouth, but the light line held and after 20 minutes the trout was in front of me. No doubt she was tiring and hope gleamed. Then the worst part of any battle with a big fish. At least 10 times I had her at my feet. The front hook had worked free, only the rear held tenuously. Ten times she flopped wildly and rushed back out into the current. Now the tension was unbearable, now’s the time most fish are lost. My net was too small, but I led her into it and lifted. Only her front third was in and she flopped crazily, the repaired net rim cracked, the hooks snagged in the meshes. Instantly, I dropped her back in the water and used the net to push her against the shore, put my waders against her sides, stuck a trembling hand in her gills and tossed the huge fish onto the snowy bank. Shaking all over I stared and stared. Was it possible I’d really landed this trout, that this time it wasn’t a dream? I reached out and touched her and then the realization this was all real burst like the sun over me. My soul swelled with pure emotion, an intense joy that seemed to lift me off the ground. Thank you, dear Lord, what a gift!
