Comments sought on Cuba comprehensive plan
CUBA — The town and village of Cuba’s comprehensive plan committee has prepared a draft of the plan, which is available for public review and comment. The draft is available online by visiting the following link: https:// www.alleganyco.com/ departments/planning/
reports/. Still in the shadow of the COVID-19 pandemic, limited hard copies of the report are available for public viewing at 15 Water St. and at 17 E. Main St. If you are interested in receiving a copy of the draft, please request it following the comment procedure outlined below.
Village and town officials note that the plan is a working draft, with minor edits expected as officials move forward, as well as some formatting and other finishing work. Appendices will be added to the online link, as they are finished. Those items are not expected to change in
any way; however, they might change in their listed order and are currently referenced as “Appendix X” for every item. While the village has worked with consultants in the past to produce economic development plans, the town of Cuba was not previously involved. This time, the
municipalities are working together to develop a plan that provided the framework to help reach desired growth and development within both communities. Barring any major delays, it is expected the plan will be adopted by March. All requests for draft hard copies, as well as
questions or comments, should be directed to Michelle Denhoff, assistant director of Economic Development and Planning for Allegany County at denhoffmm@ alleganyco.com. Title your subject as “Cuba Comprehensive Plan Public Comment.” Comments are requested by no later than Jan. 15.

Every item or dollar donated is vitally important to help our shelter animals.” Along with the miracle of unexpected donations, the SPCA also saw the miracle of adoption when after two long years at the shelter, Dixie, a 7-year-old female cat, found her forever home this past Saturday. “These two have a bond like no other,” Pruski said. “Congrats to Dixie. We love you and will miss you and we want to say thank you to the wonderful adopter for loving our sweet girl. “The closer we get to Christmas we have the UPS and FedEx trucks stop by the shelter daily with donated deliveries from Chewy and Amazon, and many of our supporters have gone shopping and stopped by to drop supplies and goodies for the animals,” Pruski said.
For the SPCA, 2020 was filled with change and challenges due to the pandemic such as closing the shelter and being open by appointment only for adoptions, canceling many of its fundraisers and being unable to attend community events with their shelter residents.
“This was not only disappointing, but it also impacted our donations for the animals,” Pruski said. She said many people are not aware that the SPCA is a charitable organization and receives no taxpayer dollars or governmental funding. “We are run by
donations, grants and bequests — without the support of our community and the kindness and generosity of our supporters we could not be in existence today,” Pruski said.

Ward embraced scoring role in sophomore season
Even in an injuryshortened freshman campaign, Mitch Ward made quite the impression on his Fillmore boys soccer coaches. Ward spent a long stretch of the 2019 season sidelined with a shoulder injury, but still scored a Fillmore freshman-record 14 goals for a team that made the New York state Class D semifinal. But with three of the team’s top four scorers (Levi and Tobias Webb and Ethan Peet) graduating last year, the Eagles needed a go-to scorer to emerge this fall. “I was really bummed out last year because we were really pushing for a sectional title and I felt like I couldn’t be there for my team while I was out with a shoulder injury,” Ward said. “But this year, without having the Webbs and Peety (Ethan Peet) and all the seniors there to really carry us, I had to step up and make sure I was able to help my team win and try to get back to the place we were at last year. “I knew even though they helped me out a ton and helped me get to where I am, this year would have had to be my time, and if we were going to get far, I had to step up in a big way.” Ward did just that, scoring 27 goals for a team that went undefeated in the regular season, finishing 14-1 with a loss to Keshequa in the Section 5 Class D1 final. He also had 10 assists on the season. After his stellar breakout sophomore year, Ward is the Times Herald’s Rich Sullivan Award winner, given annually to the Big 30 Boys Soccer Player of the Year. He earned the vote of the Times Herald’s soccer all-star committee after being nominated alongside Allegany-Limestone junior Chance LaCroix. The Big 30 selections come from schools throughout the region, in both Cattaraugus and Allegany counties in New York and from McKean and Potter counties in Pennsylvania. Ward is the first Big 30 Player of the Year from Fillmore since
Ryan Campbell was a co-winner in 2007 and first outright winner since Jesse Woolsey won the inaugural award in 2005. Fillmore coach Jamie Mullen called Ward a “phenomenal player” as a freshman. But he didn’t settle after one good year, instead working all through the offseason, especially with Mullen’s son, Fillmore assistant coach Jordan Mullen. “You hear this all the time about great players, but he never took days off,” Mullen said. “That’s one of the reason you don’t get more great players, (despite) natural physical ability or potential, is because so many times, and I would say especially in small schools, being the big fish in a small pond means that really early in their lives, even fifth and sixth grade, they kind of look around and they see that they’re the top dog and they just kind of figure that they don’t have to earn it every night. “And Mitch is special that way. He never looks at his accolades and his accomplishments. His mindset is there’s always something more to be done. That’s true about every day in practice, it’s true (in that) he spent most of the summer working one-on-one and with small groups, especially with my son doing training over the summer. There was never a time where Jordan was doing something at the field that he wouldn’t be there. So he’s certainly earned every bit of what he does.” Ward’s other postseason honors include winning the Allegany County Division 1 MVP, the Section 5 Allegany County Player of the Year and the team MVP award. With all that — and a possible all-state selection yet to be announced — as just a sophomore, Mullen still sees plenty of room for Ward to grow in the coming years. BELMONT — One new death due to COVID-19 was reported by Allegany County health officials this past weekend. The one reported death increased the county’s confirmed total to 53 — it was the third death reported in the past week. There were 54 new cases of COVID-19 infection reported over the weekend — 27 each on Saturday and Sunday and pushing the county’s total to 1,769 since the beginning of the pandemic. There were 174 active cases in Allegany County as of Sunday; 1,542 county residents have recovered from
the virus. There were 819 residents in quarantine, an increase

He’d seen little of his players until the season actually started in early October. And still, he kept it humming, guiding Fillmore to an unbeaten (14-0) regular season and back into the D1 title game, where it came up just shy of a second-straight crown. At the end of last season, Beardsley brought up a handful of younger players, who learned from the Eagles’ senior class and fared well in sectionals. That made this year’s transition a little more seamless, though still slightly surprising given that 2020’s influx consisted primarily of freshmen, including big goal-scorers Grace and Hope Russell and goalkeeper Preslee Miller. “We obviously knew we had some good kids coming in, but they hadn’t had that full-time varsity experience. You didn’t know completely what to expect,” Beardsley said. “You knew there was potential there and I guess that’s the best thing I would have said, is that I knew the potential for them to be good at some point was there.

“They surprised me a little bit, and, of course, I think they surprised a lot of other people. They meshed really well quickly.” Sophia Templeton, a Fillmore junior, was a player of the year nominee. The MVP of Allegany County Division I, she had 17 goals and 16 assists. Freshman Grace Russell of Fillmore was also a Big 30 all-star. She scored a team-high 24 goals and dished out 16 assists, finishing second in points in all of Section 5. Other Big 30 all-stars
from Allegany County schools were Emera Aquila, a senior at Genesee Valley; McKinlee Harris, a sophomore at Bolivar-Richburg; and Kate Pensyl, a senior for Andover/Whitesville. On the boys Big 30 team, Allegany County
selections in addition to Fillmore’s Ward were Spencer Cook, a senior for Andover/Whitesville; Mason Cool, a senior for Fillmore; Cameron Loucks, a senior for Scio; and Matt Weaver, a junior for Belfast.

Louise Brown was the president of the Monday Club, a group of women interested in current events and the development of the community. “With a gift of $17,000 for the building, the purchase of the site by individual subscriptions and the Monday Club’s donation of $3,000 for the shelving, the new building [NE corner Main and Jefferson St] became a reality.” It was written in the local newspaper, “The cornerstone for the new building was placed on July 29, 1909. A year later, over 1,200 people, including Mr. and Mrs.
Howe, attended the formal opening and reception. While there had been some hesitancy on the part of some village officials in accepting the property, state aid and village funds took care of maintenance. Mr. Howe stepped in when repair funds were needed for the library. On July 26, 1910, the library was formally opened and offered as a gift to the village of Wellsville and became village property. “Miss Fannie Crittenden was chosen by a Board of Trustees, seven in number, to act as librarian. “The new library build-
ing had rooms furnished in the basement for the Monday Club’s meetings. The building cost $17, 563.51. It housed 9,000 books. During the years that followed, Mr. Howe provided funds to make the required repairs.” At the opening of the present David A. Howe Library (1937), Crittenden commented to a reporter, “In remembering Mr. Howe, who passed away in 1925, she stated, ‘He was as nice a man as ever lived, so gracious and charming and friendly. And Mrs. Howe was very fine too. They used to come to the library often and
spend some time looking around. Mr. Howe was always keenly interested in the work. He would inquire about the library and would complement us on its appearance.’” Today the future of the old municipal building is in the hands of the village board. It has not been placed for sale and Mayor Randy Shayler said, “We want to do the best thing for the people and the building. The old municipal building is too big a part of the fabric of the village to do anything different.”

We invest a lot in hunting — make the venison worth it By Wade Robertson Venison can’t be bought at the store. You must acquire it yourself and this can take hours, days or months under every type of weather condition. If luck and skill combine you harvest a deer. Then the fun ends and the work begins. The hunter must fielddress the animal, get it to the vehicle and into the garage, skin, cut up and package the deer. Some take their deer to a butcher, but I have my own way of doing things and am very particular about my sausage and hamburger recipes. There can be an immense amount of labor, time and effort involved in properly harvesting and preserving your deer. It’s a little scary how much a buck may be worth, monetarily. I’ve given this some thought and, totaling up every
expense, I don’t believe it’s possible to properly equip yourself for that initial deer for less than $2,000. If you buy topquality clothing, boots, bow, rifle or shotgun, that amount can rapidly increase. If you’re fortunate enough to harvest a large animal you’ll have 60 pounds of meat — if you’re lucky. Many deer will yield less. Do the math and a pound of venison is worth $34. That’s as low an amount as I believe possible — and here’s why. Looking objectively at startup costs, a decent rifle and trustworthy scope will run at least $500 to $1,000, camouflage (warm and cold weather) clothing and footwear another $500. Odor limiting clothing even on sale will run $200 to $300. Don’t forget gloves, hats, socks, etc. Then figure in six days’ worth of hunt-
ing at $10 an hour. That’s $480 — and you can easily see how I calculated $2,000 as a minimum figure to outfit yourself and bag a single deer. Still doubtful? I haven’t mentioned possible food plot expense, binoculars, range finders, knives, scent, rattles, grunt tubes, tree stands, (who has just one?) saws, trimmers, ammunition, arrows, broadheads, targets, rifle rest, shooting bench and accoutrements, stools or seats and a host of other small items you simply have to have. I would have no difficulty believing some with expensive tastes and the best of equipment have $100 to $200 dollars invested in a pound of venison. Of course, if you don’t buy much the following few years the cost slowly comes down, but the point is, venison is without doubt the most

The easiest way to enjoy venison burger is simply to mix it 50-50 with hamburger. By doing so you double the amount you have and get enough fat in the meat so it doesn’t stick to the pan. Put 1 or 2 pounds in a vacuum pack bag, depending on the size of your family, seal it and look forward to eating delicious burgers, meatloaf, chili or sloppy joes. If you’re preparing to make any dish other than hamburgers, fry the ground meat mixed with half a cup of finechopped onion. Onions perfectly complement the burger. When cooking chili or sloppy joes, brown the meat and onions, combine the ingredients and then add a table-

spoon of brown sugar and one-third cup of ketchup. You will be amazed how these two simple ingredients will slightly sweeten and blend the other flavors beautifully together. If you’re on a diet or watching your sugar intake, use sucralose or similar substitute for the brown sugar. Using the 50-50 venison mix, simply fry your burgers, then place cheese and lightly microwaved slices of sweet onion on top. While the cheese is melting toast your rolls and place the burgers on them. Next, some good barbeque sauce. Man, that’s heaven in every bite! Using plain venison burger, I fry the meat in bacon fat or use a cooking spray to keep the burger from sticking. Use medium to low heat. Then the cheese, onion, toasted rolls and barbecue sauce. Another great burger is easy — add a pack of dried onion soup mix to your meat and fry. Simply use your favorite toppings; they’re great. You can also mix steak sauce into the burger before frying. I love venison meatloaf. Use 1.5 pounds of meat, one egg, one chopped onion, one cup of milk, one cup of breadcrumbs, two tablespoons of brown sugar or equivalent sweetener, one tablespoon of mustard and a third of a cup of ketchup. Salt and pepper to taste. Bake 70 minutes at 375. Spaghetti and meatballs are a favorite. Use
1 pound of venison hamburger, half a cup of Italian breadcrumbs, a quarter cup milk, package-dried onion soup mix and one egg. Make your meatballs, brown on all sides in a fry pan and place in sauce. Simmer for an hour. My two favorite roasts are the neck roast and the shoulder roast. Place the roast in a pan or crockpot. Add a quart of beef broth and two-three cubes of chicken bouillon. Cover and cook at least 8 hours at 275. If using a crockpot, leave on high for an hour, then turn to low. You may also add carrots, potatoes, small onions or other vegetables at the same time. When cooked long enough and kept moist the meat will literally fall off the bone. For sausage, grind 10 pounds of venison. Buy 7 pounds of pork butt and 3 pounds of pork fat, and grind. (I ask the store to grind it for me.) Spread venison 2 inches deep on a flat surface. Spread pork evenly on top, 2 inches thick. Poke many holes into the layers with your fingers. Sausage seasonings come in packs sized to season 10 pounds of meat. I use 1 1/2 packs of sweet Italian and half a pack of hot. If you prefer it hotter, use one of each or, hotter yet, two packs of hot. Mix thoroughly and regrind. Delicious! Well, I’m going to thaw some burger ... writing this has made me very hungry indeed.
