HELLO
& Welcome Back! Our February issue is always one of our favorites because we feature an array of Valentine specials from our Elk River businesses. When you are a small business owner, every customer makes a difference and letting them know about your specials is key to them walking through your doors! We were raised to shop local before it was even a catch-phrase. Our grandfather, Joe Knight, and then our dad, Bill, owned Knight’s General Merchandise outside of Clendenin and they emphasized that you spend your dollars in your community when you can. Diane Harris shared with me that, during the winter months when pipeliners were off work, our dad would run a line of credit for them at the store. When the pipeliners went back to work in the spring, they paid their bill. Dad never worried about getting paid. Diane said not only did he carry families for the winter (with no interest charge by the way), he would always fill up a little brown bag full of penny candy and send it home to the kids when they paid their bill. Life is full of changes and we adapt and move forward with the times. It’s important, however, to remember the hometown business ethics and hearts of those who first opened their doors, and what was important to owners and their customers. When you buy from our local businesses, you are helping one of our own families to succeed and grow. When you receive a gift from a local business, it makes it all the sweeter knowing it came from a business that truly cares about you as a customer. It’s what we do here on the River. We take care of one another. Happy Valentine’s Day and always know you are loved and appreciated.

abi Strickland Walker and her hubby, Gar, are big Chicken Marsala fans and she said, “This recipe may be the best Chicken Marsala ever.” The orzo holds the sauce better than a normal pasta, and the sauce is a perfect blend of great garlic flavors and sweet. She added, “The chicken was juicy, the mushrooms soaked up the flavors, and the cheese topped it all off.” She suggests serving it with grilled asparagus and some hot bread for a great Valentine’s dinner.
CHICKEN MARSALA & ORZO

INGREDIENTS
DIRECTIONS
• 1 T olive oil
STEP 1 Heat olive oil on medium-high heat in a large saucepan. Add onion and
• 1 sweet onion - diced • 8 oz sliced white button mushrooms • 1 lb boneless chicken tenderloins • ½ t salt • ½ t pepper • ½ C Marsala cooking wine • 2 t sugar • 2 C chicken stock (more if orzo is sticking to the pan)

• 8 oz. orzo pasta • 2 T butter • 4 oz Parmesan cheese - shredded
saute about 3-5 minutes, leaving it slightly firm.
STEP 2 Add mushrooms, salt, and pepper, and saute about 5 minutes, stirring occasionally so they don’t burn.
STEP 3 Add chicken, then saute about 3 minutes per side, allowing it to sear slightly.
STEP 4 Add Marsala cooking wine, sugar, chicken stock and bring to a boil. STEP 5 Add orzo, then cover and cook for 10-12 minutes, then remove from heat. Stir a few times while pasta is cooking.
STEP 6 Stir in butter and chopped parsley, then sprinkle Parmesan evenly across the top of the skillet. Replace lid for 1-2 min allowing the cheese to melt slightly.

RUMMAGE SALE The HHHS graduating Class of 1971 is having a huge rummage sale on April 5-6 at the old Rogers Grocery (VFW) building at Pinch. The sale will be held from 8 AM to 4 PM on that Friday and Saturday.
IT’S MUSKIE EXPO TIME The Elk River Muskie Club will have their annual expo on Saturday, February 10, starting at 10 AM in the Koontz Gym in Clendenin. Over 30 vendors will display the latest lures and all things muskie! This annual event attracts an excellent crowd every year of approximately 500 attendees. Bring the family and come check out this year’s Expo!
This rummage sale will be their big fundraiser this year to help fund their second annual scholarship to a Herbert Hoover High School vocational education/training school recipient. The Class of 1971 presented their first scholarship last year to Ezekial Kibler. All donations will be gladly accepted, including household items, toys, tools, clean gently-used clothing in good condition, furniture, knick-knacks, and anything else you would like to donate! It’s a perfect time to clean out your attic or garage and donate the items to support a good cause! Items can be dropped off on Thursday, April 4 from 9:30 AM to 4:30 PM at the old Rogers Grocery/VFW building in Pinch. Also, if you want to drop off items before April 4, you can go to Keith’s VW Auto Parts in Clendenin, Tuesday-Thursday, from 8:30 AM-5:30 PM. WV HUNTERS SAFETY COURSE The West Virginia Division of Natural Resources (WVDNR) and the Town of Clendenin hosted their first West Virginia Hunters Safety Course last fall and will schedule a date soon to have another course this spring.

ELK REFLECTS THE CLENDENIN BRIDGE & THE BOATHOUSE
Kim Johnson has a wonderful Facebook group entitled “You Know You’re From Clendenin WV When.” If you haven’t checked it out, you really should, because it is full of awesome photos and information of Clendenin back in the days. Recently, Kim shared an early view of the Clendenin bridge and surrounding area in Clendenin with what appears to be a baptizing in the Elk River. Many people are watching the event from the bridge. Also, you can see the Boat House in the center of the photo, which was a general store that sold ice cream, confections, and toiletry articles as well as gas fittings and plumbing supplies. It even had a doctor’s office upstairs.

Kim said, “Railroad ties were placed in the street at intersections due to muddy conditions caused by freight wagons, etc., making a mess of the dirt roads. You can see the railroad ties in the street at the bottom right. This building was located to the right of the stage on Main Street, and across from the old Ben Franklin store.” As far as Kim could determine, the Boat House was torn down sometime in the 1920s.

ebruary is a cold month and we think of soups to warm us up! Most of the ingredients can be found in the heart of our cellars. You can use any of your personal recipes and use your own canned or store-bought

ingredients. My favorite is vegetable beef soup. I use my canned tomatoes, tomato juice, and any of my favorite canned veggies, along with frozen or canned beef. Chili will warm you up, too. We use canned tomatoes and tomato juice, canned kidney beans, frozen or canned hamburger, and add our favorite chili spices. Potato soup can also be made with canned potatoes, canned carrots and frozen ham (diced). One of my family’s favorites is pumpkin pie and it doesn’t matter what time of year. I just grab a quart of canned pumpkin out of the cellar and we have a delicious dessert anytime. This recipe was given to me by Marilyn Rose.

INGREDIENTS

Temp 400• | Cook Time 50 Min
• 4 eggs, beaten
• 2 tsp ginger
STEP 1 Combine eggs and pumpkin
• 1 quart of canned pumpkin ( or 1 can 1 lb 13 oz)
• 2 1/2 tsp cinnamon
STEP 2 Blend in sugars, salt, and spices
• 1/2 cup sugar

• 1/2 cup brown sugar, packed • 1/2 tsp salt
• 1 1/4 tsp nutmeg • 1 cup milk • 1 2/3 cup (13 oz.) evaporated milk • 2 - 9” pie crusts, unbaked
STEP 3 Add milk and mix well. STEP 4 Divide and pour into the 2 pie unbaked crusts. Bake 400* for 50 minutes or until a knife inserted comes out clean.
NOTE I put half of a pecan on the cut place in the center.

LAZY WOMAN'S CABBAGE ROLLS From the Kitchen of Quincy Potasik
INGREDIENTS
DIRECTIONS
• 3 cups chopped cabbage
• 1 pint tomato sauce
• 1 cup dry rice, cooked
• 1/4 cup water
• 1 lb. ground beef and 1 lb. sweet Italian sausage, cooked together and drained
• 1 Tbsp sugar
• 1 qt. Sauerkraut, canned or store bought, do not drain
• 1 tsp salt
• 2 tsp ground garlic • 2 tsp Italian seasoning
Temp 375• | Cook Time 45 Min
STEP 1 Layer cabbage, rice, ground beef and souerkraut in a 9x13" baking pan.
STEP 2 Simmer tomato sauce, water, sugar, ground garlic, italian seasoning and salt in saucepan until hot.
STEP 3 Pour sauce evenly on top. Bake covered at 375 degrees for 45 minutes. Quincy said, “It’s even better the next day!”
Brett Budd Oates shared this recipe with us for Stewed Tomatoes and Zucchini. He says he has made this before as a big batch and then canned it. “It’s so great to pull out and just heat up,” he said.
STEWED TOMATOES & ZUCCHINI From the Kitchen of Brett Budd Oates
INGREDIENTS • 2 cups of frozen zucchini, cut in 1" cubes • 1 Tbsp tomato paste • 1 large sweet onion, coarsely chopped • 1/2 cup coarsely chopped yellow or orange bell pepper
• 2 medium garlic cloves, thinly sliced • 1/2 tsp granulated sugar, more to taste • 1/2 tsp fine salt, more to taste
Cook Time 40 Min
STEP 1 Combine everything (except tomato paste) and
bring to a boil. Reduce to simmer and cook until the veggies are tender (40 min).
STEP 2 Add tomato paste to thicken, if desired.
• 1/4 tsp freshly ground black pepper, more to taste
Now is also a good time to start thinking about what plants you want to grow in your garden this year. You can start your tomato and pepper seeds indoors around the first of March. Other seeds can be started in the next couple of months, also. It’s a good time to gather up your favorite seeds now and be ready to GROW. More info to come in our March issue!

Heart disease is the leading cause of death in the United States. One in five deaths is due to heart disease, even though the disease is largely preventable. Keeping your heart healthy starts with living a hearthealthy lifestyle. But first, you need to get smart about your heart. Knowing what causes heart disease, what puts you at risk for it, and how you can reduce those risks can help you make informed decisions to protect your heart and keep it strong.
