Raspberry Jalapeno Burger
Perfect for this year’s Memorial Day cookout rather than the standard burgers and hot dogs. Try Gabi Strickland Walker’s delicious Raspberry Jalapeno Burger. She says it is “over the top delicious, a perfect marriage of my brother’s burger components and a little inspiration from my favorite Goat Cheese Salad from Lola’s restaurant on Bridge Road.”

INGREDIENTS
1 ½ - 2 lbs ground chuck, enough to make at least 4 burger patties 8 oz. cream cheese, softened 1 jalapeno, diced (seeds and membranes removed or leave in depending on your ‘heat’ level) Raspberry preserves ½ C. all-purpose flour 1 egg 3T milk Salt/Pepper to taste ½ C Panko breadcrumbs Olive oil Hamburger buns
DIRECTIONS
Step 1 Mix softened cream cheese and diced jalapeno together in a bowl. Set aside.
Step 2 In a bowl, whisk egg, milk, and a dash of salt and pepper.
Step 3 With heavily floured hands, divide the cream cheese mixture into four patties. Press each patty into about the same size as your burger patties. Place cream cheese patties on a plate and put into the freezer while you set up your dredging stations.
Step 4 Set up three dredging stations: one bowl for flour, one for egg, one for the panko breadcrumbs.
Step 5 Carefully dredge each cream cheese patty in flour, then in the beaten egg/milk mixture, then in the panko breadcrumbs. Make sure all sides of the patties are covered well in each of the three dredging stations.
Step 6 Place the 4 coated patties on a plate and freeze for about 15 minutes.
Step 7 Meanwhile, preheat the grill. Make burger patties and add salt and pepper to taste. Grill over low heat to desired preparedness. (We like nice, juicy, medium-pink -center burgers).
Step 8 While burgers are cooking, heat 3 T. of olive oil in a skillet over med/high heat. Add cream cheese patties to the heated skillet and fry until both sides are golden brown, adding more oil if needed. Set on a paper towel-lined plate to drain when done.
Step 9 To assemble the burger, spread a good layer of raspberry preserves on the bottom bun (about 1 T.) and top with a hot grilled burger. Top with a fried panko-coated cream cheese and jalapeno patty. Next, generously spread the top bun with more preserves (about 1T.) and place on top.
