FROM THE EDITOR
Hello & Welcome! Welcome to our October issue, full of everything you love about fall!
The Elk’s Garden features one of fall’s favorite crops – apples! And what do you do when you have a lot of apples? Laura Shafer has the answer! You make homemade applebutter. Check out her friend Lucy’s quick and easy recipe for those of us who just want to make a few pints to enjoy! Gabi Strickland Walker, from Walker Mountain Eats Facebook group, shared a perfect recipe to put you in the mood for fall. She made Pumpkin Dump Cake for her husband, Gar, and he is already saying she needs to make it one or even two times before Thanksgiving… when he’ll need her to make it again! Sounds like it is husband-approved, and Gabi says it is super easy, so it sounds like a win-win recipe. The Chili’N on the Elk Chili Cook-off and Beer & Wine Festival just celebrated another great event in Clendenin! Check out this year’s winners, including locals James Anderson, People’s Choice, and Jacob Clendenin, Best of the Elk. Our feature this month highlights 12-year-old Clayton Childress, who competed at the 2026 Pokemon World Championship in San Francisco, CA at the end of August! Being able to qualify at World’s during his first year playing was never something Clayton expected. Read about his exciting journey. Don’t forget to make time for the last fall festivals in Clendenin, the Vintage Fest on October 3 and Elktober Fest on the 17th. Also, check out the new mural created by HHHS Art students above the Clendenin Brewing Company. It’s a perfect month to enjoy the colorful trees, snuggle up under a blanket in the evenings, and bask in everything that makes your fall extra special to you! Be safe my friends and know you are loved.

PUMPKIN DUMP CAKE
M
y husband Gar loves pumpkin desserts, and even though I don’t get all the craziness over pumpkin spice season, I make them for him. This recipe checks all the boxes for me: easy and according to Gar, we’ll
be needing one or two more of these between now and Thanksgiving. Try this incredibly delicious pumpkin dessert and let me know what you think!

T
he annual Chili'N on the Elk Chili Cook-Off & Beer/ Wine Festival celebrated another successful year on Saturday, September 12, in Clendenin. Festival director Carrie Sloan-Meyer put together a fantastic lineup of chili vendors for attendees to sample, with the crowd casting their votes for the People's Choice and Best of the Elk awards. It was the perfect kind of gorgeous fall day to bring the whole community out: live music, arts and crafts, food vendors, plenty of fun, and of course, lots and lots of chili. This International Chili Society (ICS)-sanctioned event carries some serious stakes, too: the winner automatically qualifies for the 2026 World Championship Chili Cook-off, held in January 2027. Running right alongside the chili cook-off was a craft beer and wine festival featuring vendors from across the Mountain State, including Heavenly Heritage Winery, Koerber Beer Company, Country Boy Brewing, Hatfield Family Distillery-Vineyards, Parkersburg Brewing, Greenbrier Valley Brewing Company, Big Timber Brewing Company, Chestnut Ridge Winery, Hawk Knob Ciders and Meads, The Peddler, Charleston Nano Brewery, Kirkwood Winery, Lexington Brewing, and Clendenin Brewing Company.
A COMMUNITY EFFORT This year's cooks' and winners' plaques were handcrafted by Shop students at Herbert Hoover High School, adding a special local touch to the celebration. "We couldn't do this festival without our great sponsors," Carrie said. "A big thank you to everyone who helped make this year's festival a huge success." Here's to another year of great chili, good music, and an even better community — see you at Chili'N on the Elk next year!
THANK YOU SPONSORS!

ROOTED IN COMMUNITY, DRIVEN BY VISION: ERTF’s First Annual Dinner & Fundraiser
We’ll also be recognizing four individuals — one from each of our Trail Towns — with Trail Town Stewardship Awards for their dedication to their communities and support of the Elk River
Submitted by Madison Stone, Executive Director of the Elk River Trail Foundation

ix years ago, the Elk River Trail Foundation was founded with a vision: to preserve, protect, and enhance the Elk River Trails while creating opportunities for recreation,
tourism, community health, economic development, and connection throughout our Region. Since then, that vision has continued to grow thanks to the people who believed in it. Now, we’re getting ready to celebrate! On Saturday, December 5, 2026, at 5:00 PM, the Elk River Trail Foundation will host its First Annual Elk River Trail Dinner and Fundraiser at Hammock Hills Venue. This is a celebration of who we are, where we’ve been, and where we’re going. Our theme for the evening is “Rooted in Community, Driven by Vision.” It captures so much of what the Elk River Trail Foundation has become. We are rooted in the communities along the trail, in the volunteers who showed up before there
organization we have today: our founding president, Kenneth Tawney! But while we’re celebrating the past, this evening is also about investing in the future. Help Us Make It Possible As a nonprofit organization, events like this are an important part of helping ERTF continue its work throughout the region. We are currently seeking businesses, organizations, and individuals interested in sponsoring our first annual dinner. We aren’t simply asking businesses to sponsor a dinner. We’re inviting people to invest in the future of the Elk River Trail and the communities it connects. The trail is more than a place to walk, bike, run, paddle, or explore. It is an economic development asset, a tourism attraction, a gathering place, and an opportunity to bring new visitors and investment into communities throughout Central West Virginia. AROUND THE WORLD
Apple butter shows up in kitchens across many countries, each with its own twist: Germany — apples and pears, spread on bread Netherlands — apple syrup, sometimes paired with cheese Belgium — apple and pear, sometimes with dates France — made without added sugar or spices Russia — apples and pears with plenty of sugar Hungary — a thick paste made with apricots, plums, or apples Switzerland — very much like ours Jersey, Channel Islands — black butter, with a touch of licorice Japan — the exception to the rule, with dairy butter actually added to the apples
CHOOSING YOUR APPLES
Not every apple is right for apple butter. They're chosen for hardness, sweetness, acidity, and tartness — and soft apples are favored because they cook down faster and easier. Good choices include McIntosh (soft and creamy), Cortland (soft, sweet, and tart — a true all-purpose apple), and Granny Smith (its tartness mellows and sweetens as it cooks). The best apple butter comes from a mix of soft, sweet apples for a smooth base and tart apples for brightness — about 60% sweet to 40% tart is the sweet spot for rich flavor and smooth texture. Among friends and family, the favorites for apple butter tend to be Golden Delicious, Winesap, Jonagold, and McIntosh. Frank likes to blend varieties, and we've used three or four different kinds in one kettle. A day or so before cooking, we make applesauce by washing, coring, and cooking the apples
out to judge the thickness. Once it's just right, we set up an assembly line: one person ladles the apple butter into jars, the next wipes the rims, another adds the lids and rings, and the jars move to a table to cool. As they cool, listen for the telltale click of each lid sealing. A quick note: apple butter must stay hot while it's being ladled into jars. As the kettle runs low, we ease back the heat so nothing scorches. A copper kettle holds a lot, so this isn't a job we take on every single year — our last batch made 120 pints! Apple butter can also be made in a crock pot, an electric roaster, the oven, or right on the stovetop. My friend Lucy Newhouse makes hers on the stove in a heavy canner, stirring continuously with a small apple butter paddle her husband Harry made years ago.
