apanese cuisine is full of distinctive flavors and seasonal appeal, a trait that many people mistakenly believe is due to the Japanese people’s reverence for nature and their desire to enjoy the beauty and flavors of the seasons to the fullest. Actually, the Japanese are pursuing two ancient methods of staying healthy: learning from nature and “shindofuji,”which means to become one with the soil. People nowadays have more faith in modern science than in traditional wisdom, thus they have abandoned the custom (and often necessity) of eating locally grown foods that are in season. Moreover, modern transportation enables us to enjoy produce from all over the world at any time. However, eating foods that are not acclimatized to our own environment is the cause for many modern health issues of both mind and body. HARMONIZING WITH THE SEASONS Japanese cuisine, from its ingredients to its cooked dishes, changes with the seasons. Even the bento boxes sold throughout Japanese cities showcase seasonal elements. For example, during the late autumn, the kuri gohan (chestnut rice) might be decorated with two red leaves; the red, white, and yellow colors symbolize the colors of autumn. Come winter, the steaming hot pots and assortments of root vegetables evoke cozy memories of spending the evening chatting around a fire. These thoughtfully decorated dishes are thus a feast for both the eyes and the soul. As winter ensues, elementary and middle schools across Japan send out reminders to parents through the monthly school menus to serve their children the right seasonal vegetables as the seasons change. Turnips, spinach (eaten with the root), taro, and other root vegetables are always recommended in early winter. The schools emphasize that it is best to eat locally grown produce because local vegetables do not need to be transported, which requires time and manpower.

t was the end of another busy day of rehearsals, and dancers poured out of the practice rooms. Only Jason Pan remained behind. Taking a deep breath to center his mind, Pan began to move. Strength flowed through his limbs and to the tip of his sword as he brought to life the story of Li Bai, known in China as the “wine immortal.” The charismatic Tang Dynasty poet was famed for his beautiful and majestic poems often written while inebriated. A lead dancer in New York’s Shen Yun Performing Arts, the world’s premier classical Chinese dance company, Pan has long learned that when your heart is calm, solitude can bring artistic transcendence. “I took nine months to prepare this sword dance. I studied Li Bai’s writings and spent countless hours pondering the drunken poet’s thoughts and emotions before condensing it into one dance,” Jason said of the performance that earned him a silver title at NTD’s International Classical Chinese Dance Competition.
「 我從小就對中國文化特別感興趣 」，從建築、服飾到 文學、哲學，中華五千年文明裡的各方面，無一不讓舞 蹈藝術家潘克岐充滿熱情。來自臺灣的他，母親是中文 教師，從小就浸染於傳統文化之中，自三歲識字起，遍 讀古籍經典，11 歲時，為了進一步體會中華文化，主動 向父母表明想學習武術。習武兩年後，他在全國大賽中 摘下銀牌，展露其過人的天賦。 14 年後，在 2021 年新唐人電視台舉辦的「 全世界 中國古典舞大賽」中，潘克岐以詮釋詩仙李白一舞，勇 闖決賽，並拿下人生中另一面重要的銀牌。這一名熱衷 於傳統文化的青年，從學習中國傳統武術，到成為中國 古典舞藝術家，之間的歷程與轉變，得從一場藝文演出 說起。 潘克岐談 起 2009 年時，他在臺灣觀賞來自美國 紐約神韻藝術團的演出。該藝術團以復興中華五千年文 明為宗旨，自 2006 年成立以來，每年在世界五大洲巡 演，是首屈一指的中國古典舞藝術團，以「 世界第一秀」 之名享譽全球。這是他初次接觸中國古典舞，此後數年， 他從一名觀眾，蛻變成舞臺上光采奪目的舞蹈家，現任 神韻世界藝術團的領舞演員。他說： 「 當初加入神韻， 就是因為這藝術團的最終目標——再現中華五千年傳統

I’ve always dug deep and had faith and a strong belief that I could do it. The mind is a very powerful muscle.”

A FAMILY TRADITION Roldan starts his busy days with meditation and prayer. He takes an hour and a half of peaceful time to himself, and it’s his favorite part of the day. But going to the “office” is pretty good, too. “Coming to my barn every day and knowing that this is sort of like my office and being able to hang out with these incredible animals, … I’m obviously incredibly blessed,” he said.

As a fourth-generation professional polo player, Roldan has been around horses for as far back as he can remember. His father, Raul Roldan, played polo for the Sultan of Brunei. His father is Argentinian, and Roldan was born in Argentina, though he has lived most of his life in Wellington, Florida. “What I learned the most [from my father] was his dedication, his passion for the sport,” Roldan said. “He was always extremely humble. I think that was a really great quality of his. He was always very kind. I think at the end of the day, those are the most important things.” Roldan’s account of what led to his success shows humility as well: “It’s a little bit of luck; it’s having the right team, the right organization, and the right horses under you.” He says that the relationship with horses is one of the most important parts of playing polo. “What defines an elite polo player is being at-one with your horse, … flowing with each horse in sort of an artistic way, like a ballerina.” It’s not easy to learn that level of synchronization, Roldan said. It’s partly innate, and it also develops naturally by spending a lifetime with horses. THE HORSES A game of polo typically lasts more than an hour, and players switch horses every several minutes. According to Roldan, a player must thoroughly understand each horse’s unique characteristics. For example, some are light in the mouth, so the player must be mindful of how hard he pulls to have the horse respond as he needs. Some horses have more stamina than others. He must be aware of how the horse is feeling that day. “You could have your best horse, but that day he doesn’t feel that great,” he said. He describes what it’s like taking all this into consideration in the moment: “It’s the relationship with the horse [that] you have to have: the speed and the intensity, the understanding of each horse and the control of each horse, all while you’re trying to hit a ball 25 to 30 miles an hour, [and] you’ve got four other guys trying to chase you. It’s incredible. We don’t just get out onto the polo field and run around like a bunch of chickens without heads. Every play is thought-out. … It is really like a chess game.”

s visitors meander the streets of New York City, their first sight is undoubtedly the city’s wild assortment of buildings. From the history-filled red-brick houses to the towering skyscrapers, a location can, in many ways, be defined by its architecture. From the street, a person’s field of vision is usually limited to about four stories, according to Nelson Wei, the founder of Wild Stone, a construction company based in New York. His dream is to beautify whatever falls within this field of vision.

With time, the industry changed, and Packard had to shut down operations. But the company was recently revived through the singular vision of Scott Andrews, a watchmaker and inventor. Andrews believed so deeply in the value of American manufacturing that he acquired the rights and intellectual property to the brand and jump-started the company from scratch.
