The up & down system with dual lighting, direct light on the cooktop or ambient light, adjustable in intensity and shade of white, ensures the ideal lighting. Luna is much more than a lamp. It is the missing element that completes the circle of a total experience with Elica products.

Communicating Italian cuisine abroad also means dismantling preconceptions that are still widespread. It’s not just pizza, pasta and tiramisu, but a vast and complex gastronomic heritage that’s deeply connected to Italy’s extraordinary regional diversity.

Mich beschäftigt auch der Dialog zwischen der italienischen und der mediterranen Küche im weiteren Sinne, von Andalusien bis nach Nordafrika, nicht zuletzt dank des Austauschs mit dem Team, das an meiner Seite arbeitet.

Es ist eine Suche, die niemals endet: Jede Reise, jede Begegnung und jedes neue Werkzeug eröffnen eine neue Perspektive.

Absolutely. At the moment I am working a lot on light fermentations and delicate cooking methods, to bring out the natural flavour of ingredients without overpowering them. I am also interested in the dialogue between Italian cuisine and Mediterranean cuisine in a broadest sense, from Andalusia to North Africa, thanks in part to input from the team working alongside me. It is a search that never truly ends. Every journey, every encounter and every new tool opens up a different perspective. For me, cooking is constant movement.

Sie gehörten zu den ersten Chefköchen, die mit Lhov gekocht haben: Inwiefern verkörpert dieses Gerät Ihrer Meinung nach die Idee einer Kochkunst, die offen ist für die Welt und die Zukunft?

Für mich bedeutet Innovation Werkzeuge, die den Koch unterstützen, ohne ihn zu ersetzen. Lhov ist die erste All-in-One-Lösung aus Backofen, Kochfeld und Absaugsystem – ein Konzept, das die Arbeit vereinfacht und flüssiger macht. Die Absaugung von Gerüchen und Dämpfen sowohl von der Arbeitsfläche als auch vom Ofen verändert das Kocherlebnis, besonders in modernen, offenen Wohnräumen, in denen gemeinsam gekocht und gelebt wird – wie in meinem neuen Zuhause mit Lhov. Mit 52 Jahren fühle ich mich den Zubereitungsmethoden traditioneller Rezepte zutiefst verbunden. Die Wahrung der ursprünglichen Technik ist für mich von grundlegender Bedeutung: zu verstehen, warum etwas auf eine bestimmte Art und Weise zubereitet wurde, welche Zeiten, Garverfahren und Arbeitsschritte dabei zum Tragen kamen – und dann zu erkennen, wie man das Ganze verbessern kann. Doch dann ist da auch die Gegenwart, es gibt neue Geschmacksvorlieben, und es herrscht ein anderes Empfinden hinsichtlich Konsistenzen, Temperaturen und Intensität.

Ich ändere nicht den Kern des Gerichts, sondern seine Ausdrucksweise. Das beste Beispiel dafür ist meine gratinierte Tomate. Das Rezept stammt von der gratinierten Tomate meiner Mutter: Sie gart die Tomaten auf einem schwarzen Backblech – dieser leicht angebratene Geschmack, der nach Zuhause schmeckt. Darauf kommen Semmelbrösel mit Knoblauch, Öl und Petersilie, und dann geht zum langsamen Garen in den Ofen. Ich habe diese „Erinnerung“, dieses Rezpet aufgegriffen und verändert: gegrillte Tomaten, mit dem Messer zerkleinert, serviert in einem Glas.

Darauf liegen Semmelbrösel und ein Schaum aus Bärlauchöl, der mit flüssigem Stickstoff hergestellt wurde. In diesem Glas steckt das Mittelmeer, es steckt die Erinnerung, aber es steckt auch die zeitgenössische Technik. Es ist kein Bruch, sondern eine konsequente Weiterentwicklung.

Welche Eigenschaften ermöglichen es, das Gewöhnliche in Frage zu stellen und die Standards in der Küche auf ein höheres Niveau zu heben?

Verwurzelung, Neugier und Mut. Verwurzelung, denn ohne Herkunft kommt man nicht weit. Neugier, denn die Welt verändert sich, und man muss ihr zuhören. Mut, denn die Neuinterpretation der Tradition ist ein Akt der Verantwortung. Um die Messlatte zu heben, braucht es keine seltsamen Dinge, sondern einfache Dinge auf außergewöhnliche Weise – wie eine Tomate. Wer Heimat, Geschichte und moderne Technik in eine Tomate packt, bringt die Küche wirklich einen Schritt weiter.

“Where Cooking has no Borders”: what does this concept inspire in you?

For me, means absolute freedom. It’s not a theoretical concept, it’s something that happens instinctively when you find yourself faced with ingredients and heat. That’s when you realise how far you can go, what you can transform, what you must respect and what you can reinterpret.

I represent a very specific stretch of land: the Adriatic coast from Rimini to Ancona, down to San Benedetto. Where sea and hills meet. “Where Cooking has no Borders” doesn’t mean forgetting where you come from, it means not putting any limits on the way you tell that story. It is a freedom that grows from your roots, not from denying them.

Your cuisine blends the traditional and the contempory: how do you combine two such different approaches?

I am 52 years old and deeply connected to the processes behind traditional recipes.

For me, respecting the original technique is essential: understanding why something was done in a certain way, what the timing was, the cooking methods, the gestures, and then working out how it can be improved. But there is also the present, with contemporary tastes and a different sensitivity to textures, temperatures and intensity. I don’t change the soul of the dish, I change the language. The clearest example is my tomato gratin. It comes from my mother’s tomato gratin: tomatoes cooked on a black baking tray, with that slightly charred flavour that tastes like home. On top, breadcrumbs with garlic, oil and parsley, then slowly baked in the oven. I took that memory and transformed it: chargrilled tomato, chopped by hand and served in a glass. On top, bread crumbs and a snow of wild garlic oil made using liquid nitrogen. In that glass there is the Mediterranean, there is memory, but there is also contemporary technique. It’s not a break with tradition, it’s a coherent evolution.

You were one of the first chefs to use Lhov: how do you think it express the idea of a cuisine that is open to the world and the future?

Which qualities make it possible to challenge the ordinary and raise standards in the kitchen?

Roots, curiosity and courage. Roots, because if you don’t know where you come from, you won’t go far. Curiosity, because the world changes and you must be willing to listen to it. Courage, because reinterpreting tradition is an act of responsibility. To raise standards you don’t need to do unusual things, you need to do simple things in an extraordinary way. Like a tomato. If you can imbue a tomato with your homeland, your story and contemporary technique, then you are truly taking cuisine one step further.

For me, innovation means tools that amplify the chef’s craft without replacing it. Lhov embodies this idea: it is the first All-in-One solution combining an oven, a hob and an extraction system. In den letzten Jahren haben wir mit einem klar definierten Ziel vor Augen gearbeitet: Elica zu einer führenden Cooking-Marke zu machen, die in der Lage ist, eine unverwechselbare Vision in der Welt der Küche zu vermitteln. Das Rebranding war keine rein ästhetische Maßnahme, sondern der Beginn eines ganz klaren industriellen Entwicklungsprozesses. Seitdem haben wir nie aufgehört. Nach Nikola Tesla und Lhov fügen wir heute der strategischen Roadmap von Elica einen entscheidenden Schritt hinzu: unsere erste Serie von Induktionskochfeldern mit eigener Technologie, der ID-Technologie, die vollständig von Elica entwickelt wurde.

Es handelt sich nicht nur um eine technische Weiterentwicklung: Erstmals entwickeln wir die Hardware- und Softwarearchitektur, die das Herzstück des Produkts bildet, vollständig im eigenen Haus. Wir glauben fest an dieses Projekt und haben über 2 Millionen Euro in dessen Entwicklung investiert. Eine Task Force aus sechs Ingenieuren hat drei Jahre lang ausschließlich an dieser Entwicklung gearbeitet, gemeinsam mit dem Marketing- und Design-Team, um ein einzigartiges Wertversprechen zu konzipieren. Dadurch war es uns möglich, eine firmeneigene, skalierbare Technologieplattform aufzubauen, die die Innovationen der kommenden Jahre unterstützen kann.

Parallel dazu stellen wir auch die neue Benutzeroberfläche „Matrix“ vor, eine aus Pixeln bestehende Matrix-Oberfläche, die hochauflösende Grafiken erzeugen kann. Das Ergebnis ist eine dynamische und unverwechselbare Ästhetik, die von den fortschrittlichsten und anspruchsvollsten Branchen, wie der Automobilindustrie, inspiriert ist und Animationen erzeugt. Hinzu kommt eine neue visuelle Qualität, die in diesem Segment höchste Maßstäbe setzt. Sie ermöglicht eine schnelle und intuitive Interaktion durch die Einführung von Infografiken und mehrsprachigen Textanzeigen. Zusammenfassend lässt sich sagen: Wir erweitern heute nicht nur unser Sortiment, sondern festigen auch unsere Innovationsfähigkeit.

In recent years we have been working towards a very clear objective: to transform Elica into a leading cooking brand expressing a distinctive vision in the world of the kitchen. The rebranding was not merely a cosmetic exercise, but the beginning of a specific industrial trajectory.

Since then, we have never stopped. After NikolaTesla and Lhov, today we are adding a crucial step to Elica’s strategic roadmap: our first range of induction hobs featuring proprietary technology named ID Technology, entirely designed by Elica.

This is not simply a technical evolution. For the first time, we are developing the hardware and software architecture that forms the core of the product in-house. It is a project we strongly believe in, one in which we have invested more than €2 million. A dedicated task force of six engineers worked exclusively on this development for three years, together with the Marketing and Design team, who devised a unique value proposition. This has allowed us to build a proprietary technological platform that is scalable and ready to support innovation in the years ahead.

At the same time, we are introducing the new Matrix user interface, a pixel-based matrix interface capable of generating highly detailed graphics. The result is a dynamic and distinctive aesthetic able to create animations, inspired by the most advanced and aspirational sectors - like the automotive industry. It also delivers a visual quality that raises the standard in the segment, introducing infographics and multilingual text messages that make interaction quick and intuitive.

In short, today we are not simply expanding our range, we are strengthening our ability to drive our own innovation.

Für den Nutzer stellt das Induction Design by Elica einen konkreten, sofort spürbaren Qualitätssprung dar. Die Oberfläche ist enorm flexibel und ergonomisch – erstmals auch bei Kochfeldern mit integrierter Absaugung –, was mehr Komfort, Bewegungsfreiheit und intuitivere Nutzung bedeutet.

Ein weiteres Merkmal ist die Temperaturregelung: Statt Kochstufen lässt sich die Gradzahl einstellen oder es können Automatikfunktionen genutzt werden.

Die Bedienoberfläche ist übersichtlicher, großzügiger und besser lesbar, selbst bei kompakten Abmessungen: Der Gesamteindruck ist der eines modernen, präzisen und optisch ansprechenden Systems.

Denn ja, wir können es so sagen: Schönheit ist ein wesentlicher Bestandteil dieser Neuheiten. Für uns ergänzen sich Ästhetik und Leistung stets auf ideale Weise.

For the user, Induction Design by Elica represents a concrete and immediately perceptible leap forward in the user experience. The surface is flexible and ergonomic, extended for the first time to this degree even on hobs with integrated extraction, translating into greater comfort, freedom of movement and a more intuitive management of the cooking areas.

Another distinctive feature is temperature control, which makes it possible to cook by setting the temperature instead of the power level, or to use automatic modes.

Cooking with ID Technology is also particularly quiet, and power control remains constant and efficient thanks to innovative patented technological solutions.

In this context, the new user interface also plays a fundamental role. It is a versatile and original interface, designed to create countless configurations and offer a superior user experience. The control panel is clearer, larger and easier to read, even with compact dimensions. The overall effect is that of a modern, precise and visually engaging system.

And yes, we can say it: beauty is an integral part of these new developments. For us, aesthetics and performance always go hand in hand.

TheKub ist eine neue Art, eine Dunstabzugshaube zu konzipieren: ein Würfel mit nur 32 cm Kantenlänge, der ein 3D-Absaugsystem an mehreren Seiten mit einer großzügigen, gerichteten Lichtquelle vereint.

Der Würfel ist Ausgangspunkt für zahlreiche Varianten durch Zubehörteile – an der Wand montiert oder hängend wie eine Leuchte. Mit Abluftkamin wird er zu einer Haube anderer Kategorie, mit optionalem Einlegeboden erhält er eine völlig neue Gestalt.

Das Designkonzept ist modular und wandlungsfähig: Kleine Ergänzungen verändern Ästhetik und Konfiguration entscheidend. TheKub ist im Grunde eine Matrix der Möglichkeiten – eine einfache Form, die sich an unterschiedliche Räume, Stile und Küchenleben anpasst.

TheKub is a new way of thinking about the kitchen hood. It embodies the perfect blend of form and function: a cube measuring just 32 cm on each side, incorporating a 3D extraction system across multiple sides of the cube and a generous directional light.

The cube is conceived as a fundamental element, a starting point for a wide range of variations, thanks to a series of accessories.

It can be wall-mounted or suspended like a lamp. With the addition of a chimney it changes shape, transforming into a hood of a different class, while the accessory shelf gives it an entirely new form.

The design concept is therefore modular, but also transformative: small additions profoundly modify the aesthetics and configuration of the product.

Ultimately, this is what TheKub is: a matrix of possibilities, a minimalist form capable of generating different solutions and adapting to ever-changing spaces, styles and ways of experiencing the kitchen.

It is “Silence, Let the cooking speak”, a four-part series that weaves together art, haute cuisine and cinema. The storytelling unfolds along multiple narrative directions.

The interplay of references from one art form to another creates original connections between an iconic painting, a gourmet dish and cinematic choices.

Colours on canvas, ingredients and references to great masters of cinema create fascinating parallels, skilfully crafted by exceptional voices: Elica President Francesco Casoli, art historian Jacopo Veneziani, and chefs Arianna Gatti, Pasquale Laera, Chiara Pannozzo and Luca Adobati.

Manet’s masterpiece is interpreted by the chef through a dish that evokes the painting in a fresh, flavourful and original way: lamb, with its delicate pink hues, sits at the centre of the composition; the carrot becomes an element of light and colour; hay and sage become symbols of memory and the land.

For Caravaggio’s celebrated masterpiece, Pasquale Laera created a reinterpretation of Parmigiana. The dish’s colour palette immediately recalls the painter’s work: the green of the basil oil, the red of the tomato, the white of the mozzarella.

Culinary technique then transforms the preparation: the eggplants are pricked, fried and marinated; the glaze becomes a layer that holds everything together without restraining it. Music and elegant black and white scenes illustrate the parallels between the painting and the dish, in a clear homage to Fellini and his poetic atmospheres.

Am Hauptsitz von Elica fand die elfte Ausgabe von „E-STRAORDINARIO for Kids“ statt, dem von der Fondazione Ermanno Casoli organisierten Kunstworkshop für die Kinder der Mitarbeitenden.

Mit „Dietro ai miei occhi“ hatten die Kinder die Gelegenheit, die Welt der Kunst und des Unternehmens kennenzulernen.

Ein Vortrag des Illustrators Francesco Fagnani führte die Teilnehmer auf eine kreative Reise, bei der Gedanken in Geschichten und Geschichten in Bilder verwandelt wurden. Der Künstler Giovanni Termini lud sie daraufhin ein, ihre Vorstellung davon, was sich „dietro ai propri occhi“ (hinter den Augen) verbirgt, auf große Holztafeln zu zeichnen.

Diese wurden zu einer dauerhaften Installation zusammengefügt.

Ein echtes Gemeinschaftswerk.

Elica’s headquarters hosted the 11th edition of E-STRAORDINARIO for Kids, the artistic workshop organised by the Ermanno Casoli Foundation and dedicated to employees’ children. Through the “Behind My Eyes” project, the children had the opportunity to engage with both the world of art and the company.

A lecture by illustrator Francesco Fagnani guided the participants on a creative journey, transforming thoughts into stories and stories into images.
