INGREDIENTS

• 4 mint leaves • 1 teaspoon powdered sugar • 2 teaspoons water • Cracked ice • 2 ounces bourbon whiskey • Mint sprig

In a highball glass, gently muddle the mint, sugar and water. Fill the glass with cracked ice, add bourbon, and stir well until the glass is well frosted. Garnish with a mint sprig.

Wine Society members enjoyed an evening of wine tasting, fine dining and a visit from a special guest.

Kevin Reynolds has set aside bottles of Shafer Hillside Select for years.

“I met John Shafer back in 1990,” said Reynolds, director of clubhouse services and the Club’s wine steward. “I felt like Shafer’s Hillside Select was something that the Duquesne Club needed.”

It’s no wonder – Shafer’s wines are consistently named among the top rated in Napa Valley.

Members of the Duquesne Club Wine Society were able to taste Shafer Vineyards’ elegant libations when they indulged in an exclusive

wine tasting last fall featuring Shafer Vineyards’ own Doug Shafer as the guest speaker.

Forty members and guests tasted 18 Cabernet Sauvignon vintages ranging from the mature Hillside Select 1994—with its dried herb, anise and black licorice flavors—to the youthful Hillside Select 2011—with its bountiful mix of blackberry, cassis, black cherry, dark chocolate, smoke, peppery spice and vanilla.

After the tasting, attendees were led to the dining room, where they enjoyed decadent plates such as sautéed noisette of lubina, diver sea scallop and iberico ham served with Shafer’s Red Shoulder Ranch Chardonnay 2013, and pan roasted petite fillet of grass fed Australian beef tenderloin accompanied by Shafer’s One Point Five Cabernet Sauvigon 2010 and Relentless 2008.

The meal came to a close with Valhrona chocolate cake, black raspberry frozen yogurt, sesame tuile and cocoa nib toffee streusel with spiced blackberry coulis satiating diners’ taste buds as they sipped Shafer Merlot 2011.

The existing vineyard on their newly purchased 210-acre estate originated in the 1920s, so Doug had to help his father terrace the steep, rocky hillsides to clear and replant the fields.

Doug Shafer moderated throughout the evening, sharing his family’s experience with the wine industry and the story of how they came to become vintners.

Having spent much of his life around the winemaking process, Doug enrolled in the enology and viticulture program at the University of California at Davis. He became Shafer’s winemaker in 1983 and president in 1994.

“This was the first time someone of this caliber from such a highly rated winery has been able to attend one of our events,” Reynolds said.

Doug’s father, John, changed his career path at the age of 48, when Doug was 17 years old. All of a sudden, Doug found himself packing up his belongings for a move from Chicago to California.

By 1972, 48-year-old John Shafer had spent 23 years working for the publishing industry, but a magazine article encouraging workers to consider a second career before they reach 50 inspired him to take a risk.

Shafer harbored a prediction that the California wine business would take off, and he wanted to be a part of this movement.

He and his family moved from Chicago to their new estate in the Stags Leap District, also known as Napa Valley’s neighborhood for world-class Cabernet.

The family claimed the official title of vintners when they crushed their first Cabernet grapes in 1978 and produced a modest 1,000 cases of wine.

Within the next year, they began constructing the staple that is now Shafer Vineyards.

The first Shafer Cabernet won the acclaimed San Francisco Vintners Club taste-off upon release, and about a decade later, it also took home first prize in an international blind tasting held in Germany.

Shafer Vineyards now produces 32,000 cases of quality Cabernet Sauvignon, Merlot, Chardonnay and Syrah.

MAINE LOBSTER AND ENGLISH PEA RISOTTO with Shaved Truffle and Yellow Tomato Beurre Fondue

Transport your dinner guests to the spring shores of Rockport with this fresh yet decadent main course.

Serves 4

FOR THE RISOTTO

2 tablespoons virgin olive oil 1/4 cup minced sweet white onions 1 teaspoon minced garlic 1 1/2 cups Arborio rice 5 cups lobster stock or chicken stock 1/4 cup freshly grated Parmesan cheese 1/4 cup mascarpone cheese 1 cup hulled English peas, blanched 1/2 cup English pea puree To taste, salt and white pepper 12 pieces shaved truffle To taste, freshly grated Parmesan cheese

Heat the oil in a medium sauce pan and sweat the onions and garlic. Add the rice and coat well with the oil. Increase the heat to medium high. Add the stock in 1/4 cup increments, making sure all is absorbed before adding the next 1/4 cup. Stir frequently with a wooden spoon. After about 16 minutes, the rice will still be slightly al dente. Add the cheeses and fold in the peas and pea puree. Season the risotto with salt and pepper.

MAINE LOBSTER AND ENGLISH PEA RISOTTO continued FOR THE YELLOW TOMATO BEURRE FONDUE

1 tablespoon olive oil

To taste, salt and pepper

1/4 cup sweet white onions 1/2 teaspoon minced garlic 1/4 cup dry white wine 2 cups chopped yellow tomatoes, seeds removed, reserving the juice 3 tablespoons unsalted butter

Heat the oil in a medium sauté pan. Add the onions and garlic and sweat for 4 minutes or until onions are translucent. Deglaze pan with white wine and reduce to 1 tablespoon of liquid. Add the chopped tomatoes and their juices. Reduce temperature to a simmer and continue to simmer for 20 minutes covered. Remove lid and simmer an additional 3 minutes. Transfer to a blender, and puree. Strain, season with salt and pepper, and place back into cleaned blender. Add the butter in small pieces while machine is running.

Transfer to a sauce container. Hold in a warm place until ready to use. Keep covered.

4 - 1.5 pound Atlantic lobsters 4 gallons water 1/2 cup champagne vinegar 1/2 cup chopped leeks 1/4 cup chopped carrots 1/4 cup chopped celery 1/4 cup chopped mushrooms 4 tablespoons salt 1 teaspoon freshly cracked white peppercorns

Combine all the ingredients above except the lobster and bring to a boil. Drop two of the lobster into the boiling water and cook for 9 minutes.

Remove and repeat for the remaining two lobster.

Split the lobster tails and remove the tail meat.

Crack four of the claws and remove from shells.

Reserve remaining claws for another use or serve.

FOR PRESENTATION Spoon a 1/2 cup portion of risotto onto the center of four plates. Ladle 1/4 cup of the yellow tomato beurre fondue around the risotto. Place the lobster over the risotto and garnish with the shaved truffle and freshly grated Parmesan cheese.

This application not only provides members easy-tonavigate views of the Club’s entire wine selection — all of which can be done remotely on an iPhone, but also gives locker holders the ability to browse through their personal inventory. The wine list can be searched by varietal, vineyards and regions. The application also provides images of wine labels and tasting notes on many of the bottles.

In-house iPads are available to access our wine list and locker inventories in

the First Floor Bar and Library. More iPads will be arriving soon to enable browsing in dining rooms.

To access our wine list on your iPhone, go to the App Store, enter “corkguru” in the search field, and download the free “CorkGuru for Guests – Find Your Next Great Wine” app.

Create an account and enable your location. On your iPhone, you may then select the Establishment option and choose the Duquesne Club from the list of participating clubs and restaurants.

Clean lines with refined flourishes in the site’s design represent the Club’s rich history and legacy while subtly reflecting the Club’s evolution toward a more modern finish.

The new site boasts added functionality as

well. Members are able to directly book tables for breakfast, lunch and dinner, make reservations for special events at the Club, and request a hotel room for themselves or for guests. Users can browse the dining menu and get detailed information on the Club’s many amenities.

Members now also gain quick access to the latest Club news and events. Additional site features include membership and visitor information, a photo gallery and Health & Fitness page.

The website has been engineered with responsive design—allowing the site to adapt to various screen sizes, including mobile and tablet.

The new website is part of the Club’s rebranding campaign, which aims to upgrade the Club’s aesthetic while maintaining its history of tradition.

Luncheon Speakers The Literary Society sponsored three fascinating luncheon discussions last fall.

On The In October, author Tom McMillan discussed Flight 93: The Story, the Aftermath and the Legacy of American Courage on 9/11, providing new insights into the flight, terrorist attack onboard and heroic actions of its passengers – some whose bravery had not been previously reported.

Ellen Roth, Ph.D., author of Ten Fingers Touching, discussed the enduring appeal and continued relevance of fairy tales in today’s society during a November ladies luncheon. She was joined by the book’s illustrator, John Blumen, who commented on their successful collaboration.

David Preston, Ph.D., author of Braddock’s Defeat: The Battle of the Monongahela and the Road to Revolution, returned to Pittsburgh November 18 for an event co-sponsored with the Pittsburgh Area Citadel Club, organized with the assistance of the late David Murdoch, and moderated by Andy Masich. Preston offered a reinterpretation of Braddock’s Expedition in 1755, one that gave full justice to its remarkable achievements.

Game Dinner On November 12, Executive Chef Keith Coughenour and his kitchen brigade prepared an adventurous menu for this popular annual dinner. The evening featured a cocktails and hors d’oeuvres reception and specially selected wine pairings served with each game course.

New Westmoreland Museum of American Art Tour The Art Society hit the road October 31 for a trip to Greensburg to visit the new Westmoreland Museum of American Art (WMAA) following its two-year renovation and expansion. Members and guests viewed two grand opening exhibits: A Passion for Collecting – Selections from the Richard M. Scaife Bequest, and All About Color & Geometry – Selections from the Diana and Peter Jannetta Gift.

Thanksgiving Sporting Clays Shoot at Seven Springs The Rod & Gun Society helped its members and guests start their Thanksgiving holiday with a bang during a sporting clays shoot at Seven Springs on November 25. This event featured a 100 target sporting clays shoot, buffet lunch and skill prizes. Several members made it a family affair – bringing their children.

Suds in the City Holiday Gathering The Beer Society hosted its inaugural holiday beer tasting December 16.

The tasting featured an assortment of draught and bottled selections – chosen to appeal to novice and serious beer drinkers alike.

Beer Society Interactive Tasting On January 20, the Beer Society hosted a fun, interactive tasting. New Year’s Day Open House More than 1,000 meals were served during the Club’s New Year’s Day Open House. Members, their families and friends rang in 2016 with cocktails, a delicious dinner served in three seatings, tours of the clubhouse – including the kitchen, professional portraits and musical entertainment.

The Garden Patio was transformed into a fun speakeasy and featured a showcase of the Club’s societies.

Culinary Society Dinner Executive Chef Keith Coughenour invited Culinary Society members and their guests to a celebration of food during the annual Culinary Society dinner on January 29.

Attendees were presented a grand tasting of eight elegant, upscale American gourmet courses, prepared with unique ingredients and accompanied by exquisite wines.

That’s no coincidence! The more time and consistency you put into your routine, the more progress you’ll make. Make sure you’re tracking it—and reflecting on it.

You’ll be more likely to stay motivated when you’re mindful that hard work does pay off.

When in doubt, seek help.

If you really have no idea where to begin—or if you have specific medical conditions that need to be accounted for in your fitness regimen—seek a professional’s help. There’s a reason personal trainers are certified in their craft; they are able to look at each individual’s fitness status and goals and tailor a program accordingly.

If you prefer to exercise on your own, consider signing up for a one- or two-time session with a trainer. They’ll give you the tools you need to keep propelling yourself forward on your own.

Do what you love.

There’s no use forcing yourself to run a mile a day if you sincerely loathe the treadmill.

Instead, sign up for different classes, jump on machines you’ve never tried before, and ask a trainer for different workouts to try. Go swimming. Try the elliptical. Practice yoga.

When you find something you enjoy, keep doing it! You’ll be more likely to stick with your routine—and really push yourself— when you’re having fun along the way.

You can start with an app on your phone (like MyFitnessPal or Runkeeper), a heart rate monitor (such as Fitbit or Garmin), or do it the old-fashioned way with an exercise buddy. He or she can remind you just how far you’ve come, and push you to do more.

Go easy on yourself.

Fitness is a journey, and you’re right there at the starting line. Don’t be discouraged when the weight doesn’t come off instantly, or you can’t run for more than a few minutes at a time. Fitness is a process, and you will eventually reach your goals when you put in the time and hard work.

In the meantime, revel in mini-victories— like taking your belt down a notch, or a good post-sweat endorphin rush. Be compassionate with yourself, and your self-care will show.

Without question, the Duquesne Club’s most treasured work of art is When Shadows Hint Death, painted in 1915

by Charles M. Russell and on permanent exhibit on the second floor of the clubhouse.

Considered Russell’s finest work, the painting has been featured in National Geographic and loaned to the Denver Art Museum and Carnegie Museum of Art for special exhibits.

Heather Semple, the Club’s art director and curator, reveals details about this masterpiece and the artist on the 100 year anniversary of its painting.

The Cowboy Artist - Charles M. Russell

Encouraged by his wife and manager, Charles Russell staged an exhibit in 1917 at Wunderly Brothers Gallery in Pittsburgh, where the Duquesne Club reportedly purchased When Shadows Hint Death for $5,000.

Today it remains the Club’s most cherished painting, proudly shown off by members to their guests and featured as a highlight on more than 40 docent-led tours of the art collection each year.

The painting has left the clubhouse only twice in almost 100 years — loaned to two exhibits: Carnegie Museum of Art’s 100 Years of Western Art from Pittsburgh Collections, 1982 (where the image graced the cover of the catalogue), and The Masterworks of Charles M. Russell: A Retrospective of Paintings and Sculpture, organized by the Denver Art Museum and Gilcrease Museum in 2009.

The painting was first reproduced in Scribner’s Magazine in 1921 and was titled Where Shadow Hint Death.

Born in St. Louis in 1864 to an affluent family, young Charley was a rebel and was expelled from a military academy. In 1880 at the age of 16, he was sent to work on a sheep ranch in Montana.

He began his journey by train and continued by stage coach, sketching along the way. He later worked with a trapper, and in 1888 lived with the Blood Indians of Alberta (kin of the Blackfoot Confederacy), where his name was “Ah-wah-cous,” or Antelope. They referred to him as “the picture writer.”

Russell became adept at Indian sign language and stated, “I am all Injun but my hide.” He learned to live without sugar or salt.

There are approximately 4,500 catalogued works in existence by the artist documenting the West that is gone forever.

In 1893, he gave up his nomad existence and moved to Great Falls, Montana, where he met his future wife, Nancy, 14 years his junior.

Russell confessed to having a past “fuzzy reputation” and was ready to settle down. Nancy became his family business manager. They made several trips to the East Coast to sell his paintings.

Thomas Petrie, founder and trustee of the Denver Art Museum’s Petrie Institute of Western American Art, states, “During his lifetime, Pittsburgh was a very important market for the works of Charles M. Russell, arguably America’s greatest western artist.” Their trips east enabled the Russells to live more easily —with a winter home in Great Falls, where Nancy built a log studio, and a summer residence on Lake McDonald, now Glacier National Park.

Will Rogers was a fast friend and frequent visitor, as well as Tom Mix, Bill Hart and Douglas Fairbanks. The Russells adopted a son in 1918 and named him Jack. They even made plans to begin building a home in Pasadena, California, named Trails End. Sadly, Charley passed away from a heart complication before the home’s completion in 1926.

He commented in 1921, “In the 41 years I [have] lived in Montana, I have seen the great change. I have always liked to tell stories with the brush so

Also known for his Predicament Paintings, Russell depicts natural conflict between nature and humans, Native Americans and cowboys. Brian Dippie, curator for the 2007 exhibit at the National Museum of Wildlife Art in Jackson Hole, Remington & Russell Revisited: Celebrating the Art of Two American Masters, notes, “He was adept at portraying action and painted many buffalo hunts and man-animal confrontations, but his signature Indian themes minimized conflict. Parties of warriors move majestically across the open land or perch on some promontory scanning the distant horizon; they do not celebrate the winning of the West; they are love songs to a vanished world.”

Frequently found in the lower corner along with Russell’s signature is a stylized buffalo skull. His lodge was called Bulls Head, and he considered this symbol to be his memento mori, Latin for “remember that you must die.”

National Geographic featured CM Russell Cowboy Artist on its January 1986 cover. Bart McDowell, assistant editor, in his article describes When Shadows Hint Death, pictured in the magazine as a two-page center spread: “Cinematic tensions pervade (the painting which) depicts the dread of an encounter with Indians, here seen only as shadows. Though famous for action scenes, Russell in many of his works was able to focus the viewer’s imagination on action to come.”

Professor David G. Wilkins, author of The Art of the Duquesne Club, 2001, refers to the skull as “his special emblem; it served both as personal memento mori and a reminder of the passing of the West that he had known as a youth. In 1908 he penned a poem — using colloquial frontier spelling — below a drawing of such a skull: ‘You sleeping relic of the past, if I but had my way, Id cloth your frame with meat an hide an wake you up today.’”

Sunshine and Shadow

Joan Carpenter Troccoli, senior scholar in the Petrie Institute of Western American Art of the Denver Art Museum, says, “When Shadows Hint Death depends on deep shade to conceal the foreground figures that look across the gulley at the shadows of a procession of Indians moving in single file along the top of the bluff above them. This was Russell at his most cinematic, the sun literally serving as a projector casting shadows on a screen. The joke in Sunshine and Shadow has become a fully recognized work of narrative art.”

Sunshine and Shadow pertains to Unexpected Guest (also known as When Ignorance is Bliss), painted in 1910 and owned by the Duquesne Club.

In September 2015, the Art Society welcomed Byron Price, director of the Charles M. Russell Center at the University of Oklahoma, who presented, “Celebration of the Artist Charles M. Russell & 100 Years of When Shadows Hint Death.”

In his final slide, Price pointed out a still image from the blossoming silent film moving picture industry — The Iron Horse, 1924, directed by John Ford. The reflection of the Cheyenne Party against the railroad car comments on the trials of westward expansion and the Native American fight to protect their rapidly disappearing land. It is almost certain that Ford was influenced by Russell’s shadows across the canyon wall.

The Duquesne Club is honored to own When Shadows Hint Death, and members have enjoyed the distinct pleasure of viewing it for 100 years. Thomas Petrie attests, “As a securities analyst covering Gulf Oil and U.S. Steel in the 1970s and 1980s, my first exposure to some of this artist’s greatest work was at the Duquesne Club.”

The Duquesne Club is frequently asked about the current value of the painting. It is only right to say it is invaluable, as its benefits surely exceed any price assigned to it by an appraisal.

On Saint Patrick’s Day, March 17, 1936, a natural disaster descended on the City of Pittsburgh.

we look back on Pittsburgh’s historic flood through excerpts from The History of the Duquesne Club.

Heavy spring snows combined with an early thaw to produce a record-breaking flood that inundated 36 acres at Pittsburgh’s Point. The waters rose 21 feet above flood stage and left 110,000 homeless, 3,500 injured and 69 dead in the tri-state area.

On the evening of March 17, the swollen rivers carried a lethal load of debris into Pittsburgh’s Golden Triangle – barges, cars, docks, boats and anything else unable to resist the torrent of water rushing through the upstream communities.

For several days most of the city was without running water, electricity, telephone lines and gas service.

The most remarkable aspect of the Club’s reaction to the flood was that service to members continued.

The gas was still on, and it was possible to serve breakfast, luncheon and dinner on (Wednesday, March 17, 1936) by candlelight. The menu was abbreviated; the usual 85 cent and $1.00 luncheon eliminated, à la carte being the only service available. About three hundred members and their guests were served on Wednesday.

In order to insure service of a very curtailed nature, many employees were housed in the Club. Those rooms that were not already occupied by guests were turned over to various groups of waiters, waitresses, cooks, service employees and engineers, and the extra employees needed the next day to clean up were all kept in the Club, two, three and four to a room.

The Club stayed open, serving three hundred luncheons on Thursday, Friday and Saturday “and a great many for dinner in spite of the fact that it was difficult for members and employees to get through the National Guard lines.” Some arrived and departed in rowboats and motor boats.

It is not clear which is more surprising – that the Club was able to continue to function during the devastating flood, or that so many members continued to come to the Club for lunch and dinner during the emergency.
