Summer is upon us! The Arab tourism season and domestic holiday travelers are bringing the occupancy rates to an all-time high in Cairo, on the North coast and in Hurghada. Even Sharm El Sheikh is finally witnessing the return of guests to enjoy yet again this beautiful destination.

We Chefs choose a profession that keeps us busy catering to the different seasonal demands. This requires a great deal of mental stamina and physical strength especially during the hot summer months. The physical strain can sometimes be too much for chefs; I urge you all to look after your health. Make sure you get enough rest; recharge your batteries regularly. Take the time to be with your family or friends and make sure that you also have some time for a hobby and are able to rewind. This will help you build your stamina and strengthen your immune system so as to withstand the stressful demands of the job.

In just a few days I will be traveling to Malaysia to represent our Association and the Egyptian Chefs at the 2018 WorldChefs Congress in Kuala Lumpur. Traveling with me will be two young chefs: Chef Salma Saleh who will attend the Bill Gallagher Young Chefs Forum held in conjunction with the Congress and chef competitor Mahmoud Korany. He will compete in the Hans Bueschkens Worldchefs Young Chefs Challenge finals. After his outstanding performance last November at Hace'17 where the regional contest was held, Chef Mahmoud Korany will have now the heavy responsibility of representing the Africa & Middle East region in the final world contest for young chefs. He will compete against the best selected candidates of each continent. Chef Salma and I will assist him with all the logistics in preparing for the contest but once in the competition kitchen he will be on his own! We wish him the best of luck.

Talking about competition - last month The World's 50 Best Restaurants 2018 awards were announced. The list each year announces the 50 best restaurants selected by 1000 culinary experts and judges. Massimo Bottura’s Osteria Francescana came number one this year. The full list is published in this edition of Chef's Corner. We also listed the number of Michelin stars held by each of the winning restaurants. My wish is for the culinary spectrum in Egypt to develop to such heights that we will find a restaurant in Egypt listed in those international acclaimed star ratings. I am sure Egyptian chefs have the talent but are just missing the opportunity to work in such highly rated places. We should encourage our young generation of chefs to travel and take up short internships overseas so as to widen their horizons and bring back their expertise to Egypt. In this way they will contribute to the continuous development of our culinary offerings in this country.

The competition program for Hace 2018 will be announced to all you chefs shortly. One small note- worthy of mention - Hace this year will take place over three days not four. This is not the choice of the Association but a condition required by the exhibition organizers, the Egyptian Group for Marketing, who kindly host us at their renowned hotel trade fair. So once we start announcing competitions, be sure to sign up immediately as registration will be on a "First come, first served" basis.

Chef Massimo Bottura’s Osteria Francescana ranked No.1 in the “World’s Best Restaurants,” 2018.

T

he annual awards ceremony were held in London from 2003 to 2015 before they started a global tour. Its first stops were in New York in 2016 and Melbourne in 2017 but the Oscars of the food world returned to Europe for its 2018 edition. This was held at Euskalduna Palace in Bilbao, the capital of the Biscay province in northern Spain.

When gastro-tourism began to rise in popularity, The World's 50 Best Restaurants earned its legitimacy as a compass for fledgling gourmets, unveiling up-and-coming chefs and culinary trends and showcasing the subtlety and complexity of various cuisines from around the world.

Since 2002, The World’s 50 Best Restaurants has reflected the diversity of the world's culinary landscape. Thanks to its panel of more than 1,000 culinary experts, as well as its structured and audited voting procedure, the annual list of the world's finest restaurants provides a snapshot of some of the best destinations for unique culinary experiences in addition to being a barometer for global gastronomic trends.

The World’s 50 Best list continues to function like a game of musical chairs, trading one venue for another at the top spot. Osteria Francescana, Massimo Bottura’s three-Michelinstarred tasting menu venue in Italy’s Emilia-Romagna region, has returned to the top spot. El Celler de Can Roca in Catalonia took the No. 2 spot, while Mirazur in Southern France moved up to No. 3. Eleven Madison Park, which was closed for renovations for four months in 2017, dropped to No. 4.

The flamboyant Bottura is known for his playful approach to classic dishes. His creations include a lasagna with only the crispy bits and a deconstructed dessert called “Oops I Dropped the Lemon Tart.” Bottura is an art lover and his food is visually exciting as well as delicious. More recently, he has become known for Feed the Soul, an international non-profit

organization to feed the homeless and hungry that grew out of a community kitchen in Milan.

Bottura accepted the award on stage with his Americanborn wife Lara Gilmore. He said that chefs and everyone in the restaurant business must realize that they have the power to change the world.

“I am going to use this spotlight to draw further attention to the changes that are going to occur,” said Bottura at a press conference following his win. “Feed the planet. Fight waste. Last week Henry Kissinger asked me for a selfie. It is unbelievable.

We have to involve all the community of chefs … using the spotlight to reveal the invisible and give it greater prominence is an extremely important task.”

Clare Smyth was awarded Best Female Chef this year. “For the last 10 years of my career I’ve been asked, ‘What is it like to be a female chef?’ to which I reply, ‘I’m not sure what you mean, because I’ve never been a male chef,’” Smyth said in a speech that touched on gender equality and improving the work environment in kitchens. She said she was honored to receive the award, but also acknowledged the debate over whether it should exist in the first place.

Winning the 50 Best is great for business. The day after El Celler de Can Roca first topped the list in 2013, its website got 12 million visitors and the restaurant hired three extra staff just to turn down requests for tables. Noma’s René Redzepi said he could have filled his restaurant for almost 15 years with the booking requests the day after he first won, in 2010.

Noma had regularly topped the influential World’s 50 Best Restaurant List, taking the number one spot in 2010, 2011, 2012, and 2014. In 2016, Noma was still holding down the number five position but in 2017 the restaurant had to be removed from the list entirely as Chef René Redzepi shut down his acclaimed restaurant and a “new” Noma opened last February. Restaurants that are closed or closing aren’t eligible for inclusion. Noma’s February opening was too late to be considered for inclusion on this year’s 2018 list so the question remains where the new Noma will land on the list in 2019.

I N T E R V I E W How did you prepare yourself for the challenge?

I prepared by reading books on Arabic cuisine and trained myself to focus on the speed and accuracy of the tasks that are assigned so as to do what is needed on time while maintaining accuracy. In fact I did not have enough time in which to train; I was informed of my participation in the program only one month ahead of time.

Do you think the education at the Culinary Training Centers Egypt helped you to compete and, if so, in what particular way did it help?

It certainly helped me a lot; it taught me the basic cooking methods and how to handle all the products. I learned how to deal with the ingredients in front of me and how an ingredient can be integrated into many different recipes.

What was your winning menu / dish?

I won several awards in this program; I won the best dish with the singari fish I prepared in the fifth episode of the program. In an episode that had beet as its main theme, I prepared a beet pudding (mehlabyia) and won the best beetintegrated dish. In another episode, whose theme was recalling memories, I prepared a lamb fillet dish with freik.

The winning menu of the final included three dishes: seafood stew, ceviche sea scallop, and strawberry cheesecake with gooseberries.

was the proud winner of the 2017 edition of Top Chef. Find out in this exclusive interview how he won.

Could you give us some background details on the Top Chef competition? How many chefs participated; who were the jury members and what were the rules?

Top Chef Middle East is a reality competition that airs on MBC in which 15 chefs compete against one another. It is based on the American television show Top Chef. The contestants are judged by three of the Arab’s World top Chefs; the celebrity Chinese–Egyptian Chef Bobby Chinn, Saudi Chef Mona Moussalli and Lebanese Chef Maroun Chedid and a weekly panel of professional chefs and other personalities from the food industry with one or more contestants eliminated in each episode.

Each episode has two main challenges: the Quickfire Challenge and the Elimination Challenge.

In the Quickfire Challenge each contestant is required to cook a dish with specific requirements or participate in a culinary-related challenge within one hour or less. A guest judge selects one or more chefs as the best in the challenge.

In the Elimination Challenge, the contestants have to prepare one or more dishes to meet the challenge requirements.

Some of these challenges can be individual while others could require teamwork. After the Elimination Challenge ends, the three judges consider the guests' comments and deliberate on the best and worst dishes.

What do you think helped you win the competition and what was the secret of your success?

My patience and my faith in God: knowing how to deal with every task or challenge I faced. The secret of success is focusing on goals; nothing is impossible given that I believe I am capable of doing anything.

If you had to describe Top Chef in one sentence what would it be?

It was like a dream but a dream that came true.

How will the win at Top Chef help you in your career?

Winning the title helped me with new challenges.

Participation in the program opened many doors; I came into contact with many experienced chefs. It also helped me acquire new skills and increased my experience.

What are your aspiration for the future?

I hope that Egyptian cuisine will be able to compete and reach its rightful place on the international culinary scene. I want the whole world to acknowledge Egyptian cuisine.

On a personal level: I look forward to realizing my own project but I face several challenges which include finding a team to help me and finding a good sponsor.

Do you have any advice for young chefs who wish to enter culinary competitions?

They have to follow the specific rules and regulations of each competition. They need to accept criticism. Young chefs should have the required spirit and have the necessary determination and persistence to win.

Celebrating the Wedding Cake

Food is at the heart of any celebration. If you want to explore a foreign country and culture first look at its national dishes. Food is a cultural marker as distinctive as language.

hat do the Japanese eat for breakfast?

Which countries are mainly vegetarian? Ask questions like this and you will soon marvel at the rich culinary traditions that flourish across the globe, and are deeply embedded in each culture. After reading this article you might say ‘the cake is king!’

Our question here is what form does the traditional wedding cake take in different countries? In every culture it is a key element of the celebration. For those attending a wedding the cake signals happiness and hope for the couple.

One thing is certain, the wedding cake takes different forms and contains different ingredients wherever it is made. You will be surprised at the ingenuity of those who make them and equally amazed at the visual impact they are meant to have.

So let’s get started and see what we can learn by taking a quick tour of the wedding-cake culture around the world.

The aim of our tour is to decide what makes a cake distinctive: is it the taste, the method of baking,the visual effect when it is decorated or the traditions surrounding it?

Let’s begin our tour in France which occupies a special place in the culinary universe. Look at this magnificent tower crammed with cream-filled pastries. This is coated in caramel

F E A T U R E and is formed in a tower pyramidal in shape. The French name – ‘croquembouche’ – means "something that crunches in the mouth". Can’t you just hear the crunching sound and taste what oozes from the pastries? Actually this delectable tower is also served on other occasions: at baptisms and first communions.

Sometimes edible flowers, chocolate, or sugar almonds are added to the tower.

Scandinavian countries

The Danish are known to feast upon a cornucopia cake. Made of almond cake and marzipan, the ring-shaped confection is decorated with pastilage and filled in the center with candy, almond cakes, fresh fruit, or sorbet. Sometimes marzipan portraits of the bride and groom are attached to the outside of the cake. To avoid bad luck, the newlyweds cut the cake together and all the guests must eat a slice.This custom is found in many cultures.

There are several different kinds of cakes in Scandinavian countries. The most common is the kransakaka – this translates as a "wreath cake" or "tower cake". For a truly eye-catching confection look at the Scandinavian tower. From a distance it might look like a cake composed of jumbo doughnuts, but it’s actually ring-shaped, almond-flavored pastries that form this pyramid. Sometimes, the center is filled with chocolate or other treats.

China The Chinese tradition and practice has ancient origins and represents a completely different culture to that of European countries. In China, families anticipate the nuptials by sending out cakes with the wedding invitation so that friends can share in the family’s excitement.

It truly is a ‘tower cake’ and consists of multiple layers – sometimes as many as eighteen - sitting one on top of the other and held in place by white icing. This confection is a favorite at weddings but also at baptisms and for Christmas and New Year celebrations.

The Norwegians may serve brudlaupskling, a type of wedding bread first developed when white flour was a rarity on farms in Norway. Any food containing wheat was once highly prized, so the wedding bread was considered a true treat. Topped with cheese, cream, and syrup, this unique bread is folded over and cut into small squares and served to all the guests.

F E A T U R E The original name of this gift was‘marry girl cake or small cakes and is a tradition that may go back to the time of the Three Kingdoms, around 220-280 AD. The cake has a spongecake like texture and has multiple variations. Some of the most popular incorporate duck egg, lotus seed, yellow green bean paste, or Terminalia walnut. A recent innovation has been a ‘great-grandmother cake’ sent to the bride's grandparents.

These the groom sends as a gesture of good faith.

Great Britain Fruitcake is the basis of all cakes made for traditional celebrations throughout the British Isles whether for a wedding or for Christmas. It contains many expensive ingredients: liqueurs, nuts and fruits- a very rich cake, made richer by different toppings. The three-tiered confection is often laced with bourbon, brandy, or whiskey and each layer is spread with almond paste. The cognac-soaked dates, prunes, raisins, currants, and orange peel produces a very moist cake. Popular frostings include marzipan, brandy butter, or fondant.

One curious but interesting tradition among some Britons is that the entire top tier is named ‘the christening cake’ and kept until the birth of their first child.

Eastern Europe Here the tradition is different yet again.

The Korovai is a type of bread cake that has its origins in the ancient world. Everything, from baking to dividing the cake, has meaning and purpose. The bottom layer of the cake, the one shared with wedding guests and the musicians, is called the pidoshva. Decorated with designs representing eternity and the joining of the two families, the bread is considered a sacred part of the wedding feast. Sharing the bread cake symbolizes good luck and prosperity for the couple.

In Lithuania, the wedding cake is actually a cookie-like pastry shaped into a Christmas tree. Baked to a sunny yellow hue, the pastry, called a sakotis, displays fresh flowers and herbs protruding from the top peak.

Exotic Asia – Indonesia, Korea & Japan First – the traditional: at weddings in Indonesia the wedding cake is a massive, multilayered creation known as kek lapis. The cake is typically made from layers of chocolate and vanilla and dates back to the Dutch colonial period; today's versions are often spiced with cinnamon and nutmeg.

In Korea many American-style wedding cakes would be considered too sweet for Koreans. They opt instead for a cake made of ground steamed rice covered in red bean powder. A tiered sponge cake covered in non-dairy whipped cream is also a popular treat.

An unusual and unconventional cake is that typically served in Japan. These are ‘imposter cakes’ which are made of artificial rubber; these fake confections are iced with wax -- and even feature a slot for the bride and groom to insert a knife. Some of these fakes consist of elaborately frosted Styrofoam dummy cakes. While the imposters are just for show, sheet cakes are thankfully hiding out in the kitchen and are cut into portions and served to guests. All guests get to enjoy cake while the fake cake stays intact.

Prickly Pears in the Kitchen

Prickly pear is gaining popularity around the world as a healthy addition to a balanced diet. Abundantly available in Egypt we take a look at the versatile use of this cactus.

The pad of the cactus, called nopal, can be used as a vegetable.

The flower petals can be used as garnish or added to salads.

The pear can be eaten as a fruit.

A

lthough all cacti are technically native to the Americas, prickly pears and its fruits have spread across the world to Egypt, Morocco, Europe and the Middle East. Prickly pears are used as food, as well as in alternative medicines as they contain a wealth of nutrients and are beneficial for health.

The prickly pear makes a healthy addition to any dish because it is a good source of fiber, vitamin A and C and calcium. Studies indicate that the pectin contained in the cactus pulp can lower "bad" cholesterol and the pulp's soluble fibers are said to help keep blood sugar stable. Prickly pear is rich in antioxidants and contains antiviral, anti-inflammatory and anti-clotting properties.

The prickly pear pads have been used in Mexican cooking for hundreds of years. As this cactus is easy to grow given that it grows in arid and semi-arid regions and requires very little water, it is ideal for cultivation and use in Egypt. How can we make better use and incorporate prickly pear in our meal offerings?

In Egypt we are familiar with the street carts that sell the fruits of the prickly pear which are peeled and sold as a refreshing summer delight. However, not many know that you can also consume the pads of this cacti. Actually when we talk about from "root to stem" cooking the prickly pear is ideal in its multiple flavors and versatile use.

Prickly Pear Fruits Although we eat the fruit ready-peeled, in the kitchen this versatile fruit is still very much undervalued. Fruits can be used in salads, or to make dips, syrups, pies, smoothies and cocktails.

You can sauté nopales in a little oil and spices as you like.

Sauté on medium/low heat for about 5 minutes or until tender.

You can serve this as a side dish, or mix with scrambled eggs, blend into salsas, top on a baked potato or use in any number of ways.

Prickly pear syrup is made by simmering boiled, mashed, and strained prickly pear fruit in sugar. Lemon is added for tartness. You can use this syrup on pancakes, in fruit salads or in any dessert recipe. For an elegant dessert you can make a light prickly pear sorbet.

But prickly pear is not only suitable to make desserts and sweets but can also add a delightful flavor to grilled meats.

Marinate chicken thighs or legs in a prickly pear sauce before you grill them. Prickly pear and citrus are a tasty culinary match.

Combine prickly pear, orange wedges, honey and fresh mint to make a delightful salad.

Prickly Pear Pads (nopales) There is a variety of ways to prepare the pads: boiling, sautéing, pickling; they can be grilled or chopped up and mixed raw in salads. Many compare the taste of the pads to that of okra, green beans and green peppers. The texture of the pads when boiled is slightly slimy and so similar to that of okra.

Therefore, a good start would be to use the pads in the same way that one would cook an okra stew but by replacing okra with the nopales. If you don't like the slimy texture, cover the cactus in salt for about 15 minutes. Rinse thoroughly with cold water before cooking.

One can also boil nopales and then drain them, rinse off with cold water and serve in a salad with finely diced tomatoes, onion, cilantro and jalapenos, seasoned with vinegar, salt and lime juice. Stirring cooked nopales into soup or mixing them into an omelet is also an option. If you grill nopales, you might want to coat them generously with pepper, salt and other spices. They are ready when they are tender and slightly browned. Grilled nopalitos strips can be seasoned with fresh lime juice and a little olive oil.

As much as prickly pears are delicious and healthy on the inside, their sharp outer spines show no mercy when touched.

Carefully remove the spines using thick gloves and a paring knife. Make sure all of the spines are removed. The pads not only have large spines, but there are also tiny, invisible and far more irritating spines called glochids that are extremely difficult to remove from the skin. The glochids can lodge themselves in lips, gums and throat, which can be very painful. The spines and glochids can also be removed by burning them off with a small torch or by placing the prickly pear pad on a gas burner and turning it with tongs.

Prickly Pear Fries Fritters and fries are always a welcome snack in between. Use the prickly pear pads for a surprising alternative.

1 kg Prickly pear pads (nopales) 3 tbsp Cornstarch 2 tbsp Achiote paste* 85 g Flour, all purpose 1 tsp Baking powder 1 pc Egg white 3/4 cup Ice water Oil for frying Salsa as accompaniment

This variation on the classic lemon bar starts with a cookie base made with chopped pecans, butter, flour, and sugar.

The sweet filling consists of prickly pear juice, lemon juice, and lemon zest. The result is a sweet and tangy lemon bar with a buttery crust and striking pink color.

Remove the thorns and "eyes" from the cactus pads; trim the edges of the pads.

Bring salted water to a boil, add pads, reduce heat and simmer for 2 minutes. Drain.

Cut the pads in strips, about the size of French fries.

Combine the cornstarch and achiote paste in a blender; pulse until smooth. Place in a mixing bowl and add the flour and baking powder. Mix well.

In another bowl, whisk the egg whites until stiff peaks form. Fold in half of the flour mixture into the egg whites. Add half the ice water, then the remaining flour mixture and enough water to make the batter even in consistency. Refrigerate until chilled, about 20 to 30 minutes.

Dip the prickly pear strips into the batter and fry in the oil until crisp and golden, about 2 to 3 minutes.

Drain on paper towels and serve immediately with salsa dip.

• Substitute achiote paste: Blend 10 g paprika powder, 1 tbsp white vinegar, 1 g dried oregano, 1 minced garlic clove and 1 g cumin.

Coat a 20 cm square baking dish with butter and press the mixture evenly on the bottom of the dish.

Bake at 175°C for 15 minutes.

Pour over hot crust.

Bake at 175°C for 20 minutes or until topping is set.

Allow to cool before cutting.

The Carb Myth Unraveled

Carb free diets have often been a choice of many who wish to lose weight. Is this the right choice for losing those extras kilos?

ummer is here and it is the time of the year that many people want to lose weight and follow a diet. There is a common myth that carbohydrates make you fat.

However a low carb diet is just one way to control your calorie intake. There is no overall benefit in the long term compared to following a moderate, nutritionally balanced diet. Low carb diets and balanced diet both produce similar weight loss results. The amount of carbohydrates, fat and protein in the diet does not influence weight loss, only total energy intake does.

Just like any other food if eaten in unnecessarily large quantities, carbohydrates also contribute to weight gain.

However, omitting them from your diet altogether will also compromise the many health benefits carbohydrates provide.

Carbohydrates are a healthy and necessary part of any diet.

Along with fat and protein they are one of the essential macro nutrient we need to consume as a source of energy.

Other benefits are preventing certain cancers and in aiding better sleep. Carbs also boost your mood, because carbs promote the production of serotonin, a feel-good brain chemical. In a study from the Archives of Internal Medicine there is evidence that people who followed a very low carb diet for a year, experienced more depression, anxiety and anger than those on a more balanced diet.

Last but not least the carbon footprint of cereals and pulses, fruits and vegetables is significantly lower than that of beef, lamb and chicken. So a low carb diet might be more expensive to follow and lend itself to being less sustainable.

Conclusion: as with everything in life, moderation is the key when it comes to having a balanced diet that provides you with all the nutrients you need while retaining your ideal weight.

Carbohydrates not only provide the body with the energy it needs but they are also a good source of many vitamins and minerals. If we remove carbs from the diet we consequently eliminate vital nutrients such as fiber, B-vitamins, anti-oxidants to name a few.

Healthier carbs are those in their whole form that undergo minimal processing, refining and milling. Consuming a diet rich in unrefined, wholegrain carbohydrates, like oats, brown rice, quinoa and bread made from whole wheat flour has many important benefits. One of them is the value of dietary fiber for

It is no surprise that location is important to restaurant success. So how do you determine if you have found the right location? Chef's Corner gives you some tips.

Market Conditions - Anticipated sales volume. How will the location contribute to your sales volume? Economic conditions and forecasts, traffic (including foot traffic) and nearby places of interest. Will your target market be there?

irst you should remember some truths! There is no such thing as the perfect location for a restaurant. Once you start searching for a location you will soon realize that each location has advantages and disadvantages. Also, what could be an ideal location for one restaurant might not be ideal for another. Location and restaurant concept are closely linked and a bad match between restaurant concept and location might lead to closure of the outlet.

Competition - Research what restaurants already exist in the area, how they compare to your concept and how you can compete.

Another truth to remember is that a poor location can be overcome by a great product and operation, but a good location cannot overcome a bad product or operation.

Still, choosing the right location for your concept is critical.

You’ll need to do research on demographics, competition and more, not to mention on the actual place and its size, visibility, and history.

So what criteria should you focus on when selecting the right restaurant location?

Size of the Site - Intended seating capacity and operations, space available for a bar area or dining area, space in kitchen for food preparation, space for storage of ingredients and service ware. Draw some detailed floor plans.

History of the site - Previous Tenants - Who occupied the space in the past? Why did they leave? What was their experience with the area and the landlord?

Target Market and Ideal Customer Profile -Demographic information about who you intend to target and who will be your best customers.

Accessibility to potential customers - Consider how easy it will be for customers to get into your business. If you are relying on strong pedestrian traffic, consider whether or not nearby businesses will help generate foot traffic for you.

The rent-paying capacity of your business - If you've done a sales-and-profit projection for your first year of operation, you will know approximately how much revenue you can expect to generate; you can use that information to decide how much rent you can afford to pay.

Restrictive ordinances - You may encounter unusually restrictive ordinances that make an otherwise strong site less than ideal; these may be limitations on the hours of the day that trucks can legally load or unload; there may also be restrictions on operating hours, which is often the case when you are located in a shopping mall.

Customer parking facilities - The site should provide convenient and adequate parking as well as easy access for customers.

Shopping Mall Locations An important consideration is the legal licenses needed to operate a restaurant at the location. Shopping malls in Egypt have restrictions regarding operating hours and times for deliveries but the rent contract for a food outlet in such a location usually includes all the necessary legal licenses required. This explains why restaurant entrepreneurs often opt for locating to shopping malls. An additional advantage is a steady flow of visitors to the mall and the high number of neighboring businesses. It is essential to be sure that the customers to the shopping mall are the same as your target market otherwise your restaurant has little chance of succeeding.

Anthony Bourdain - the Explorer Chef

The culinary world has recently lost Chef Anthony Bourdain - an American celebrity chef, author, travel documentarian and television personality.

B

ourdain was a master of his crafts -- primarily in the kitchen but also in the media. Through his TV shows and books, he helped audiences think differently about food, travel and themselves. He advocated the cause of marginalized populations and campaigned for safer working conditions for restaurant staff.

The news of Bourdain's death was received with shock and profound sadness within CNN, where "Parts Unknown" has aired for the past five years.

Celebrity chefs have taken to social media to pay tribute to this popular chef. “Anthony was my best friend," Chef Ripert tweeted. "An exceptional human being, so inspiring and generous. He was one of the great storytellers who connected to so many. From the bottom of my heart I pray he is at peace.

My love and prayers are with his family, friends and loved ones”.

British chef Gordon Ramsay, who also hosts several TV shows, posted an emotional message: “Stunned and saddened by the loss of Anthony Bourdain. He brought the world into our homes and inspired so many people to explore cultures and cities through their food.”

President Donald Trump extended his condolences to Bourdain's family: "I enjoyed his show," Trump said "he was quite a character." Former President Barack Obama recalled a meal he shared with Bourdain in Vietnam while Obama was on a trip through Asia in 2016 - an encounter captured in a "Parts Unknown" episode that year. "'He taught us about food

Bourdain grew up in Leonia, New Jersey, and started working in kitchens in his teens. He fell in love with food during childhood visits to France where his paternal grandparents lived. He graduated from the world-renowned Culinary Institute of America in 1978. He spent years as a line cook and sous chef at restaurants in the Northeast before becoming executive chef at Manhattan's Brasserie Les Halles. An altogether different passion - his writing - helped put him on the map by his early 40s.

He moved out of the kitchen to become a bestselling author and award-winning TV personality, gaining wider fame with his unique culinary worldview. Viewers felt connected to Bourdain through his fearless travels, his restless spirit and his magical way with words. His shows took him to more than 100 countries and three networks.

Bourdain found himself on a path to international stardom.

In 2002, Bourdain started his two-season run on the Food Network’s A Cook’s Tour, a series featuring Bourdain traveling the world seeking culinary adventures; it moved to the Travel Channel and appeared as "Anthony Bourdain: No Reservations," a breakout hit that earned two Emmy Awards and more than a dozen nominations. On his award-winning series, "Parts Unknown" Bourdain brought the world home to CNN viewers.

Through the simple act of sharing meals, he showcased both the extraordinary diversity of cultures and cuisines yet highlighted how much we all have in common. The show focused on specific dining rituals across the globe.

“I always work really hard not to think about my place in the world" Bourdain told Business Insider in 2016. "I'm aware of my good fortune. I'm very aware of it and I'm very aware that because of it, people offer me things and opportunities to do extraordinary things."

Bourdain was a larger-than-life figure, a gifted chef and storyteller who used his books and shows to explore culture, cuisine and the human condition.

Chef's Corner published an interview with Anthony Bourdain in 2006. Upon being asked if he ever missed working in the kitchen now that he enjoyed stardom he said that every chef after reaching 50 needs an exit strategy and that he was lucky to be able to do what he loved - to travel and write and be paid for doing it. His sudden exit from the world came as a complete shock and devastated many.

In 1997, The New Yorker published Bourdain's now famous article "Don’t Eat Before Reading This", a scathingly honest look at the inner workings of restaurants, specifically their kitchens.

With his credibility as a renowned chef, the article carried much weight and led to other writing projects. In 2000 his bestselling book Kitchen Confidential: Adventures in the Culinary Underbelly published to popular acclaim – and later translated into more than two dozen languages –was a vast expansion of the New Yorker article and highlighted Bourdain's sometimes rough disposition. "In America, the professional kitchen is the last refuge of the misfit. It's a place for people with bad pasts to find a new family," he wrote. "When the book came out, it very

quickly transformed my life - I mean, it changed everything," Chef Antony told NPR.

Career Management for Alex Chefs

The chefs of Alexandria had a chance to join Ramy Hassan, Managing Director of Vapiano Egypt & ECA Board Member for a full day workshop on Career Management. The workshop covered an in-depth understanding of the Food & Beverage business cycle. Ramy Hassan also explained the skills required by anyone wishing to be an effective and impactful individual in the work environment. The workshop included many interactive discussion and exercises.

A good understanding of the Food & Beverage business cycle will enhance your career development as a chef. During this workshop industry professionals learned what it takes to get to the top and stay there in the competitive food business.

The Egyptian Chefs Association wishes to thank Ramy Hassan for travelling to Alexandria and his dedication and effort in conducting the workshop. The workshop was kindly hosted by Arabi Center for Arabic Studies.

Soft Skills Training

ECA members joined facilitator Ali Nasreldin - F & B and Operations Consultant - and learned how to develop their soft skills in order to enhance their careers and personal lives. Soft skills refer to a set of attributes that every person needs so as to work in an efficient and harmonious manner. When employees acquire a high level of soft skills their individual contribution to the company is more beneficial while simultaneously they are developing their own careers.

Pastry Workshops with Chef Valentina Verbenko

Professional chefs and hobby chefs alike joined Chef Valentina for two intensive one-day hands-on courses; one in making cheesecakes and one in making a variety of cookies.

I

n the cheesecake course, participants learned how to prepare a variety of this delicious and popular cakes by mastering the skills required to make many different bases, crusts, fillings, toppings and sauces. These included the following selection: making a good lemon curd, raspberry custard, Butterscotch sauce and cheesecake mousse. Participants learned how to make the popular Lotus cheesecake, multicolor cheesecakes, Oreo crust raspberry cheesecake, chocolate cheesecake variations including milk and dark chocolate and the American classic - lemon cheesecake.

In the hands-on workshop on Making Cookies more than 16 different type of cookies and biscuits were covered during the practical sessions of the workshop. These included how to make Graham crackers & Digestive biscuits, lemon crinkle cookies, peanut butter and honey-oatmeal cookies, Srassburger cookies, various sable cookies, Swedish pepper cookies and of course the popular chewy and chunky chocolate chip cookies.

Part of the pleasure of cookies comes from their versatility.

They may be eaten as an in-between snack or as an elegant and final conclusion to a dinner. Flavors are limited only to the baker's imagination. This course was a hands-on workshop

during which the participants learned different mixing methods of cookie doughs and batters which is the basis for knowing how to make several types of cookies.

Chef Valentina Verbenko has had 4 years experience in the field of professional baking and pastry making. She is a graduate of the Russian MBA-City Academy with an international degree as a Master Pastry Chef (Level 6). She attended the Exclusive Culinary Academy (Moscow branch) & achieved Junior Master Pastry Chef (Level 5). She is qualified to manage an industrial pastry/bakery production line - management, recipe development, recipe implementation, hygiene and quality control.

ECA Visits Nestlé ECA members and friends visited the Nestlé dry foods factory. Nestlé supplies the market with high quality dry food products. Recently the company launched its Nestlé Professional line of products to supply the hospitality and catering industry.

Upon arrival the participants got a short introduction to the line of Nestlé dry food products. They also received information about the source of the ingredients that feed the production line. Following this introduction they visited the manufactoring

line to see the new technology being used in the production of the dry food products and the quality control system that operates during production. The tour was concluded with a cooking demo and tasting lunch which incorporated the use of Maggi stock products.

Workshops with Chef Mohamed Hamed ECA chef members and friends joined Chef Mohamed Hamed, ECA Culinary Instructor and Executive Chef of Steigenberger Golf Makadi, for two hands-on workshops; making delicious burgers and preparing soups.

The burger workshop started with sharing some handy tips on how to prepare and shape the perfect burger patty, followed by professional guidelines on how to fry a burger that is well-cooked but still moist.

During the practical session, participants made a variety of burgers which used beef, chicken, turkey and vegetarian ingredients. They also learned how to make interesting flavor combinations for the toppings and condiments. Also explained was how to bake breads for the burger bun. The Workshop provided participants with a complete solution for serving a variety of creative burgers.

The soup preparation workshop started with a short theoretical session explaining the classification of the main soups. During the practical section participants learned to master the techniques of preparing broths, consommés, cream soups, purée, bisque, chowder and cold soups. Furthermore Chef Mohamed advised on the thickenings to be used and explained in detail how to use them. He also gave guidelines on suitable garnishes for each soup.

Cutting Skills with Chef Markus Iten As a professional chef your chef's knife is your "business card".

In this workshop Chef Markus Iten, Founder & Honorary President of the Egyptian Chefs Association & General Manager of Food Tracks conducted the practical hands-on session during which the participants learned the different techniques required for slicing, dicing, chopping and mincing a variety of vegetables and herbs. These techniques included all the classical cuts such as chiffonade, julienne and bâtonnet among others.

Ali Nasreldin, Hospitality and F & B Consultant and freelance instructor of the Egyptian Chefs Association taught the attendees how to look after a professional chef's knife. During the theoretical session he explained which knife to use and the task for which it was suitable. Knife handling and cutting skills are the essential foundation for any professional chef!

The Sustainable Kitchen The Way Forward

Start Your Own Restaurant

The Egyptian Chefs Association launched the Sustainable Kitchen program in Cairo for the hospitality and catering business with a 2-day interactive and introductory training session.

Sustainable food consumption is a growing field of interest. Operating your kitchen sustainably will give you a market advantage in the hospitality and catering business.

This concern is especially important as restaurants and hotels tend to generate a high amount of food waste. Implementing sustainable food practice strategies could reduce your food waste and add to your bottom line.

Aspiring entrepreneurs joined the ECA for an intensive 2-day workshop on How to Start Your Own Restaurant - from Concept to Operation

The Sustainable Kitchen training program consists of 5 main modules. These cover a general introduction about food sustainability followed by a discussion regarding the different topics related to food sustainability such as purchasing, menu composition, food preparation and presentation, internal and external communication and waste management. The training session concludes with a module on building the right work environment for implementing sustainable food strategies in any hotel or restaurant operation. The course combines different areas of expertise which trainers insert while teaching the program. They use various exercises and case studies which contribute to a course that is highly interactive and productive.

The Sustainable Kitchen program launched in Egypt by Futouris in cooperation with the Egyptian Chefs Association aims to: • • • • • • •

Improve food quality by promoting the use of cooking techniques that preserve the nutrient content during cooking.

Design and maintain more sustainable food menus.

Support small local farmers and local food markets.

Reduce environmental damage.

The Egyptian restaurant sector is bustling with activity. New restaurants, cafés and retail food outlets are being established at a rapid pace. Whereas some are successful a fair number of these new ventures run into problems and close their doors again after a brief period of time.

This workshop was designed in such a way that all the participants worked on developing their own food business concept by doing the exercises in the start-up project workbook.

The explanatory handbook and start-up workbook guided the participants through the 10 basic steps involved in creating a realistic picture of the restaurant they wish to establish.

The 10 steps guided participants to answer questions such as: what type of restaurant they wanted to run and whom their restaurant would be for; where they would locate the restaurant and how they would market themselves; whom their competitors might be and what unique value proposition they had to offer; how many employees they would need; what the interior front of the house and back of the house would look like and last but not least how much money they would need to start the restaurant.

By the end of the 2-day course they had developed the outline of a business plan they would need to start their own establishment.

Agriculture, Community and Food Day Members of the Egyptian Chefs Association participated in a farm tour last February organized by Dayma. The Cairo Journey-Urban to Wilderness-Agriculture, Community and Food Day- took place in Sakkara. It focused on farming women and showed chefs how they make home-made pasta products and cheese from produce in their surroundings. In return the participating chefs who assisted at the host venue provided valuable tips and guidance on how women can improve their kitchen setting for enhanced efficiency in production and proper storage conditions.

The chefs also offered advice on the product range and catering menu on offer and how to calculate the cost of the products so as to arrive at a selling price that is both competitive and profitable. The day was a success in two respects: the exchangeof knowledge and experience between the two groups during which chefs could familiarize themselves with high quality local produce and farmer's style home cooking; women learned how to use their capabilities to achieve a more profitable business outcome.

ECA Conducts Successful Home Catering Program for Care Egypt Care Egypt in cooperation with the Egyptian Chefs Association conducted a 7-day intensive training program for refugees living in Cairo. It was devoted to Successful Home Catering. The program aimed to provide refugees with the knowledge and skills they require to make their home catering business more profitable. This would be achieved by teaching them the means of standardizing the quality of their products and by showing them ways of improving their efficiency so as to maximize their income thus ensuring a steady livelihood for their families.

Topics covered in the program were advanced food hygiene with a special focus on the transport of foods; ways of cooling down prepared foods and methods of reheating to the correct temperatures before service were taught. Standardization in recipe writing and costing of menu items were also covered as well as the writing of market lists. Participants were taught about the setting of a correct mise en place before cooking of the menu items starts.

The proper standardization of recipes and accurate costing help promote efficiency and organization and ensure the right pricing of menu items. Together all these measures contribute to ensuring the profitability of the home catering business.

The 7-day intensive program was conducted by Ali Nasreldin, Hospitality and F & B Consultant and freelance instructor of the Egyptian Chefs Association.

‫في عام ‪ ،1997‬نشرت "نيويوركر" مقال بوردين الشهيرة "ال تأكل قبل قراءة‬ ‫هذا"‪ ،‬حيث وصف فيه األجواء خلف الكواليس في املطابخ الراقية‪ .‬ونتيجة‬ ‫ملصداقيته كشيف مشهور‪ ،‬حمل املقال أهمية كبرى‪ ،‬وأدى إلى مشاريع أخرى في‬ ‫الكتابة‪ .‬وفي عام ‪ ،2000‬نشر كتابه الشهير "مطبخ سري للغاية‪ :‬مغامرات في‬ ‫أحشاء الطهي"‪ ،‬والذي حظي بإشادة واسعة االنتشار‪ ،‬وتم ترجمته الحقا إلى أكثر‬ ‫من عشرين لغة‪ .‬وهو توسع ملقالة نيويوركر‪ ،‬وكتب فيه بصراحة عن نزعاته‬ ‫السلوكية املضطربة في بعض األحيان‪ .‬وقال بوردين في تصريحات لشبكة إن بي‬ ‫آر‪ " :‬في أمريكا‪ ،‬يعد املطبخ االحترافي املالذ األخير للغير أكفاء واملهمشني‪ .‬هو‬ ‫مكان لألشخاص الذين لديهم ماض سيء حيث يمكنهم العثور على أسرة جديدة‪.‬‬ ‫حني ظهر هذا الكتاب على الساحة‪ ،‬تحولت حياتي بسرعة كبيرة‪ ،‬أعني تغيرت‬ ‫تمام ًا‪".‬‬

‫قال بوردين في حوار لبيزنس إنسايدر‪ ،‬في عام ‪" :2016‬أنا أعمل دائما بجد‬ ‫كي ال أفكر في مكاني في العالم‪ .‬أنا ُمدرك أنني حسن الحظ‪ .‬أنا مدرك جد ًا لذلك‪،‬‬ ‫وأنا أدرك تمام ًا أنه بسبب ذلك يقدم لي الناس أشياء وفرص ًا‪ ،‬للقيام بأشياء غير‬ ‫عادية"‪.‬‬

‫وكان بوردين قد نشأ في ليونيا‪ ،‬في نيوجيرسي‪ ،‬أحد األحياء الراقية في مدينة‬ ‫نيويورك‪ ،‬وبدأ العمل في املطابخ في سن املراهقة‪ .‬وقع في حب الطعام أثناء زياراته‬ ‫إلى فرنسا وهو طفل‪ ،‬حيث يعيش أجداده من األب‪ .‬وتخرج من املعهد األمريكي‬ ‫الشهير لفنون الطهي‪ ،‬في عام ‪ .1978‬وأمضى سنوات في العمل كشيف دي‬ ‫بارتي‪ ،‬ثم سو شيف في املطاعم في شمال شرق أمريكا‪ ،‬قبل أن يشغل منصب‬ ‫الشيف التنفيذي ملطعم ‪ Brasserie Les Halles‬في مانهاتن‪ .‬وجاءت كتاباته ‪ -‬وهي‬ ‫شغف مختلف تمام ًا ‪ -‬لتساعد في وضع اسمه على الساحة وتنطلق شهرته في‬ ‫العالم‪ ،‬وهو على مشارف األربعينات‪.‬‬

‫وانتقل بوردين من عالم املطبخ ليصبح مؤلف كتب تربعت على أعلى قوائم أكثر‬ ‫الكتب مبيعا‪ ،‬وكذلك شخصية تليفزيونية حائزة على جوائز‪ .‬واكتسب شهرة واسعة‬ ‫بفضل نظرته العاملية الفريدة في الطهي‪ .‬شعر املشاهدون أنهم مرتبطون ببوردين‬ ‫من خالل رحالته التي ال يهاب فيها‪ ،‬وروحه القلقة‪ ،‬وطريقته السحرية في اللعب‬ ‫بالكلمات‪ .‬وقد نقلته برامجه التليفزيونية إلى ما يزيد عن ‪ 100‬دولة‪ ،‬وتم بثها على‬ ‫ثالث شبكات تليفزيونية‪.‬‬

‫كان بوردين شخصية أكبر من الخيال‪ ،‬وكان شيف‪ ،‬وراوي قصص موهوب‬ ‫استطاع أن يستخدم كتبه وبرامجه التليفزيونية الستكشاف الثقافات واملطابخ‬ ‫والحاالت اإلنسانية‪.‬‬ ‫وكانت مجلة شفس كورنر قد أجرت حوار ًا مع شيف أنتوني بوردين في‬ ‫‪ .2006‬وعند سؤاله حول ما إذا كان قد أفتقد العمل في املطبخ اآلن‪ ،‬حيث إنه‬ ‫يستمتع بالنجومية‪ ،‬أجاب أن كل شيف بعد وصوله لسن الخمسني يحتاج إلى‬ ‫استراتيجية خروج‪ ،‬وأنه محظوظ ألنه قادر على فعل ما يحب‪ ،‬أال وهو السفر‬ ‫والكتابة‪ ،‬وتلقي املال مقابل القيام بذلك أيض ًا‪ .‬إال أن رحيله املفاجيء من العالم جاء‬ ‫بمثابة صدمة كبيرة لكثير من محبيه‪.‬‬

‫ليس من املستغرب أن يكون موقع‬ ‫املطعم من أهم عوامل نجاحه‪ .‬إذن كيف‬ ‫يمكنك الجزم إنك وجدت املوقع األمثل‬ ‫ملطعمك؟ مجلة شفس كورنر ستمنحك‬ ‫بعض النصائح عن هذا املوضوع‪.‬‬

‫ ‬ ‫ينبغي عليك أو ًال أن تتذكر بعض الحقائق‪ .‬ال يوجد شيء يسمى املوقع األمثل‬ ‫للمطعم‪ .‬فبمجرد البدء في البحث عن مطعم‪ ،‬سرعان ما ستدرك أن كل مكان له‬ ‫مزاياه وله عيوبه‪ .‬أيض ًا‪ ،‬ما يمكن أن يكون املوقع األمثل ملطعم ما‪ ،‬قد ال يكون مثالي ًا‬ ‫ملطعم آخر‪ .‬إن موقع املطعم واملفهوم القائم عليه يرتبطان ارتباط ًا وثيق ًا‪ ،‬لذا فأي‬ ‫توافق سيء بني موقع املطعم ومفهومه ربما يؤدي إلى إغالق أبوابه‪.‬‬

‫• •بديل ملعجون اآلشيوت‬ ‫يمكن خلط ‪ 10‬جرام من بودرة البابريكا‪ ،‬مع ملعقة كبيرة خل أبيض‪ ،‬وجرام‬ ‫من األوريجانو املجفف‪ ،‬وفص ثوم مفروم‪ ،‬وجرام كمون‪.‬‬

‫طريقة إعداد عجينة البسكويت‪:‬‬

‫‪1 .1‬يتم مزج الدقيق مع السكر وجوز البيكان والزبد‪ ،‬حتى الحصول على‬ ‫قوام متفتت‪.‬‬ ‫‪2 .2‬يتم دهان صينية خبيز مربعة‪ 20 ،‬سم‪ ،‬بالزبد‪ ،‬ثم يتم وضع املزيج في‬ ‫الصينية بالتساوي‪ ،‬مع الضغط عليه برفق‪.‬‬ ‫‪3 .3‬يخبز عجني البسكويت في الفرن في درجة ‪ْ 175‬م‪ ،‬ملدة ‪ 15‬دقيقة‪.‬‬

‫ثمار التني الشوكي‬ ‫على الرغم من أننا نأكل الفاكهة وهي مقشرة بالفعل‪ ،‬إال أن هذه الفاكهة‬ ‫متعددة االستخدامات في املطبخ ال يزال الناس يبخسون قدرها كثير ًا‪ .‬يمكن‬ ‫استخدام ثمار الفواكه هذه في السلطات‪ ،‬أو إلعداد أصناف الغموس والسيرب‬ ‫والفطائر‪ ،‬فض ً‬ ‫ال عن مشروبات السموزي والكوكتيالت‪.‬‬ ‫ويتم إعداد سيرب التني الشوكي عن طريق سلق ثمار التني الشوكي ثم‬ ‫هرسها وتصفيتها‪ ،‬وطهيها على نار هادئة في السكر‪ .‬ويمكن إضافة الليمون‬ ‫إلضافة املذاق الالذع‪ .‬يمكنك استخدام هذا السيرب على البانكيك‪ ،‬أو في سلطات‬ ‫الفواكه‪ ،‬أو في أي وصفة حلويات‪ .‬وللحصول على حلويات فاخرة‪ ،‬يمكنك إعداد‬ ‫شربات خفيف من التني الشوكي‪.‬‬ ‫ ‬ ‫لكن التني الشوكي ال يصلح فقط إلعداد أصناف الحلوى والحلويات‪ ،‬لكن‬ ‫يمكنه كذلك إضافة نكهة محببة للحوم املشوية‪ .‬فيمكن نقع أفخاذ أو دبابيس‬ ‫الدجاج في مرق تتبيل من صوص التني الشوكي‪ ،‬قبل شيها‪ .‬والتني الشوكي‬ ‫يتماشى جيد ًا مع املوالح‪ ،‬ويخلق توافق ًا طهوي ًا شهي ًا‪ .‬إجمع بني التني الشوكي‬ ‫وفصوص البرتقال وعسل النحل‪ ،‬والنعناع األخضر‪ ،‬إلعداد سلطة شهية متميزة‬ ‫املذاق‪.‬‬

‫تحذير‪:‬‬ ‫بقدر ما يكون التني الشوكي شهي ًا وصحي ًا من الداخل‪ ،‬إال أن أشواكه‬ ‫الخارجية الحادة ال تظهر أي رحمة عند ملسها‪ .‬لذا ينبغي إزالة الشوك بحرص‬ ‫باستخدام قفازات سميكة وسكني تقشير‪ .‬تأكد من إزالة كافة الشوك‪ .‬أما الصبار‬ ‫فال يحتوي على أشواك كبيرة فحسب‪ ،‬لكنه يحتوي كذلك على أشواك صغيرة غير‬ ‫مرئية ومزعجة أكثر من ذلك بكثير‪ ،‬وتسمى بالكرات الشوكية‪ ،‬ويصعب إزالتها جد ًا‬ ‫من الجلد‪ .‬هذه الكرات أو الشعيرات الشوكية يمكن أن تغرز نفسها في الشفاه‬ ‫واللثة والحلق‪ ،‬والتي يمكن أن تكون مؤملة جد ًا‪ .‬ويمكن أيضا إزالة الشوك الخارجي‬ ‫والشعيرات الشوكية عن طريق حرقها بمشعل صغير أو بوضع صبار التني‬ ‫الشوكي فوق موقد البوتاجاز‪ ،‬وتدويره باستخدام ملقاط املطبخ‪.‬‬

‫يكتسب التني الشوكي شعبية كبيرة في جميع‬ ‫أنحاء العالم‪ ،‬بوصفه إضافة صحية إلى نظام‬ ‫غذائي متوازن‪ .‬وهو متوافر بكثرة في مصر‪ .‬لذا‬ ‫دعونا نلقي نظرة على االستخدامات املتنوعة لهذا‬ ‫النبات الشوكي الذي ينتمي إلى فصيلة الصبار‪.‬‬

‫موضوع العدد‬ ‫وكان االسم األصلي لهذه الهدية هو "تورتة زواج الفتاة أو تورتة املهر"‪ ،‬وهو‬ ‫تقليد ربما يرجع تاريخه إلى زمن "املمالك الثالث"‪ ،‬حوالي ‪ 280 – 220‬ميالدي‪.‬‬ ‫والتورتة تتميز بقوامها الشبيه بالكيكة االسفنجية‪ ،‬ولها تنويعات متعددة‪ .‬وبعض‬ ‫من أصنافها األكثر شعبية تتضمن‪ :‬بيض البط‪ ،‬وبذور اللوتس‪ ،‬ومعجون الفاصوليا‬ ‫الخضراء املائلة لألصفر‪ ،‬أو جوز تيرميناليا‪ .‬ومن أحدث ابتكارات هذا الصنف‪،‬‬ ‫"تورتة الجدة الكبرى"‪ ،‬والتي يتم إرسالها إلى جدة وجد العروس‪ .‬والعريس يرسل‬ ‫هذه التورتة كبادرة عن حسن النية‪.‬‬

‫بريطانيا العظمى‬ ‫تعد تورتة الفواكه هي أساس كافة التورت التي تُصنع من أجل املناسبات‬ ‫التقليدية في جميع أنحاء الجزر البريطانية‪ ،‬سواء كان لحفالت الزفاف أو ألعياد‬ ‫الكريسماس‪ .‬وهي تحتوي على العديد من املكونات مرتفعة الثمن‪ :‬مثل الليكر‬ ‫واملشروبات الكحولية‪ ،‬واملكسرات والفاكهة‪ ،‬وهي تورتة غنية جد ًا‪ ،‬وهي غنية أكثر‬ ‫من غيرها نظر ًا إلى أصناف التوبينج املختلفة املستخدمة بها‪ .‬وهذه التورتة ذات‬ ‫الثالث طبقات‪ ،‬يتم في الغالب عمل السيه لها من البوربون‪ ،‬أو البراندي أو‬ ‫الويسكي‪ ،‬وكل طبقة يتم فرد معجون اللوز عليها‪ .‬والتمر يتم نقعه في الكونياك‪،‬‬ ‫وما يتم استخدامه من برقوق وزبيب وزبيب مجفف‪ ،‬وقشر برتقال يتسبب في جعل‬ ‫التورتة رطبة جد ًا‪ .‬ومن أشهر أنواع الفروستينج املستخدمة لهذه التورتة‪ :‬املارزبان‪،‬‬ ‫أو زبد البراندي أو الفوندان‪.‬‬ ‫وأحد التقاليد املثيرة لالهتمام والطريفة كذلك بني بعض البريطانيني‪ ،‬أنه يتم‬ ‫تسمية الطبقة العليا للتورتة بأكملها باسم "تورتة التعميد"‪ ،‬ويتم االحتفاظ بها حتى‬ ‫والدة الطفل األول للزوجني‪.‬‬ ‫ ‬

‫شرق أوربا‬

‫وفي ليتوانيا‪ ،‬تتخذ تورتة الزفاف شكل شبيه بالبسكويت‪ ،‬على شكل شجرة‬ ‫الكريسماس‪ .‬والتورتة يتم خبيزها لتصل إلى لون أصفر شمسي‪ ،‬وتسمى‬ ‫"ساكوتس"‪ ،‬وهي تظهر زهور وأعشاب طازجة تبزغ من السطح العلوي لها‪.‬‬

‫املناطق البعيدة في آسيا – إندونيسيا‬ ‫وكوريا واليابان‬ ‫أو ًال‪ ،‬العادات والتقاليد‪ :‬في حفالت الزفاف في إندونيسيا‪ ،‬تكون تورتة الزفاف‬ ‫عبارة عن كيكة ضخمة متعددة الطبقات‪ ،‬وتعرف باسم " كيك البيس"‪ .‬وتصنع‬ ‫التورتة من طبقات من الشيكوالتة والفانيليا‪ ،‬ويعود تاريخها إلى فترة االستعمار‬ ‫الهولندي‪ .‬أما تورت هذه األيام‪ ،‬فغالب ًا ما يتم استخدام توابل بها مثل القرفة وجوز‬ ‫الطيب‪.‬‬ ‫وفي كوريا‪ ،‬يعتبر الناس أن الكثير من تورت الزفاف املصنوعة على الطريقة‬ ‫األمريكية حلوة جد ًا بالنسبة للكوريني‪ .‬وسيختارون بد ًال من ذلك‪ ،‬كيكة مصنوعة‬ ‫من األرز املطحون املطهي على البخار‪ ،‬واملغطى ببودرة الفاصولياء الحمراء‪ .‬ومن‬ ‫األصناف املحببة هناك أيض ًا‪ ،‬كيكة إسفنجية متدرجة الطبقات مغطاة بكريمة خفق‬ ‫خالية من األلبان‪.‬‬ ‫هنا تختلف التقاليد مرة أخرى‪.‬‬ ‫"كورفوايي" هي نوع من أنواع التورت التي تعتمد على الخبز‪ ،‬وأصولها تعود‬ ‫إلى العالم القديم‪ .‬وكل شيء في هذه التورتة‪ ،‬من طريقة خبيزها في الفرن إلى‬ ‫طريقة تقسيمها‪ ،‬له معنى وهدف‪ .‬إن الطبقة السفلية من التورتة‪ ،‬وهي الطبقة التي‬ ‫يتناولها ضيوف حفل الزفاف واملوسيقيني‪ ،‬تسمى "بيدوشفا"‪ .‬وهي مزينة بتصاميم‬ ‫تمثل األبدية‪ ،‬وارتباط العائلتني‪ ،‬ويعد الخبز جزء ًا مقدس ًا من وليمة الزفاف‪ .‬إن‬ ‫مشاركة كيكة الخبز ترمز إلى الحظ السعيد‪ ،‬ورخاء الزوجني‪.‬‬

‫وعادة ما يتم تقديم تورتة غير عادية وغير تقليدية في حفالت الزفاف في‬ ‫اليابان‪ .‬وهذه تكون "تورت زائفة" تصنع من املطاط الصناعي‪ .‬وهذه الحلويات‬ ‫املزيفة تكتسي بالشمع‪ ،‬وحتى أنها تحتوي على فتحة لتقوم العروسة والعريس‬ ‫بإدخال السكني فيها‪ .‬وتتكون بعض من التورت املزيفة هذه من كيك وهمي مكسو‬ ‫بإتقان بالستيروفوم‪ .‬وفي حني تكون التورت الزائفة للعرض فقط‪ ،‬تختبيء التورت‬ ‫الحقيقية في املطبخ‪ ،‬لحسن الحظ‪ ،‬ويتم تقطيعها إلى حصص‪ ،‬وتقديمها إلى‬ ‫الضيوف‪ .‬ويتمكن كافة الضيوف من التمتع بتناول التورتة‪ ،‬بينما تظل التورتة‬ ‫الزائفة سليمة‪.‬‬

‫موضوع العدد‬ ‫وتعني "شيء يقرمش في الفم"‪ .‬أال يمكنك االستماع إلى صوت الجرش باألسنان‪،‬‬ ‫أو تذوق ما يسيل من سوائل من املعجنات؟ في الواقع‪ ،‬هذا البرج ُيق ّدم كذلك في‬ ‫مناسبات أخرى؛ فيتم تقديمه في حفالت العماد ومناسبات التعرف األولى‪ .‬وفي‬ ‫بعض األحيان‪ ،‬يتم إضافة الزهور الصالحة لألكل‪ ،‬والشيكوالتة‪ ،‬واللوز املسكر‬ ‫إلى البرج‪.‬‬

‫الدول االسكندنافية ‬

‫ويعرف عن الدانماركيني احتفالهم بتورتة "كورني كوبيا"‪ .‬وهي مصنوعة من‬ ‫كيك اللوز واملرزبان‪ ،‬والحلويات التي تتخذ شكل الحلقة‪ ،‬تكون مزينة بالباستيالج‪،‬‬ ‫ومحشوة في املنتصف بالحلويات املسكرة وكيك اللوز‪ ،‬والفواكه الطازجة‪ ،‬أو‬ ‫الشربات‪ .‬وفي بعض األحيان‪ ،‬يتم صنع صور للعريس والعروسة من املارزبان‪،‬‬ ‫ولصقها على الهيكل الخارجي للتورتة‪ .‬ولتجنب الحظ السيء‪ ،‬يقوم العروسني‬ ‫بتقطيع التورتة مع ًا‪ ،‬ويجب على كافة الضيوف أن يتناولوا شريحة منها‪ .‬هذه‬ ‫العادات موجودة في ثقافات مختلفة‪.‬‬

‫الصني‬ ‫توجد عدة أنواع مختلفة من التورت في الدول االسكندنافية‪ .‬وأشهرها على‬ ‫اإلطالق هي "كرانسكاكا"‪ ،‬وهي تعني " التورتة البرجية" أو "تورتة األكليل"‪ .‬للبحث‬ ‫عن حلويات تخطف األنظار بحق‪ ،‬أنظر إلى البرج االسكندنافي‪ .‬عند النظر إليه من‬ ‫على بعد‪ ،‬ربما يبدو شبيه ًا بالكيك املكون من الدونتس الجامبو ذو الحجم العائلي‪،‬‬ ‫لكنه في الحقيقة حلويات على شكل حلزوني وبنكهة اللوز‪ ،‬وهي التي تش ّكل هذا‬ ‫الشكل الهرمي‪ .‬وفي بعض األحيان‪ ،‬يتم حشو املنتصف بالشيكوالتة أو غيرها من‬ ‫األصناف الحلوة‪.‬‬ ‫إنها بحق "تورتة تتخذ شكل برج" وتتكون من طبقات متعددة‪ ،‬أحيانا ما تصل‬ ‫إلى ‪ 18‬طبقة‪ ،‬كل طبقة فوق األخرى‪ ،‬وتتماسك الطبقات بفعل اآليسنج األبيض‪.‬‬ ‫وتعد هذه التورتة من األصناف املفضلة في حفالت الزفاف‪ ،‬وأيض ًا في أعياد‬ ‫الكريسماس واحتفاالت رأس السنة‪.‬‬ ‫قد يقدم النرويجيون ‪ ،brudlaupskling‬وهو نوع من تورت الزفاف عبارة عن‬ ‫برج من الخبز‪ ،‬تم تطويره ألول مرة عندما كان الدقيق األبيض يعد من األصناف‬ ‫النادرة في املزارع في النرويج‪ .‬فأي صنف طعام يحتوي على قمح كان ذو قيمة‬ ‫حقيقة‪ ،‬لذا كان خبز الزفاف يعد من األصناف الحلوة الفاخرة بحق‪ .‬وكانت هذه‬ ‫التورتة مغطاة بالجنب والكريمة والسيرب‪ ،‬ويتم تقطيعها إلى مربعات صغيرة‪،‬‬ ‫وتقدم إلى جميع الضيوف‪.‬‬

‫إن التقاليد واملمارسات الصينية تتميز بأصولها القديمة‪ ،‬وتمثل ثقافة مختلفة‬ ‫تمام ًا عن تلك الخاصة بالدول األوربية‪ ،‬حيث تشكل تورتة الزفاف القطعة املحورية‬ ‫إلفطار الزفاف‪ .‬في الصني‪ ،‬تتوقع العائالت الزواج من خالل إرسال الكيك مع‬ ‫دعوة الزفاف‪ ،‬حتى يتمكن األصدقاء من مشاركة العائلة في فرحتهم‪.‬‬

‫تورت الزفاف حول العالم‬

‫يعد الطعام هو قلب أي مناسبة أو احتفال‪.‬‬ ‫وإذا أردت استكشاف دولة أجنبية‪ ،‬أو ثقافة‬ ‫غريبة‪ ،‬عليك أو ًال التعرف على أطباقها القومية‪.‬‬ ‫فالغذاء هو داللة ثقافية مميزة‪ ،‬مثله مثل اللغة‪.‬‬

‫فرنسا‬

‫ ‬ ‫فما الذي يتناوله اليابانيون على اإلفطار؟ وما هي البلدان النباتية على األغلب؟‬ ‫إطرح أسئلة مثل هذه‪ ،‬وسرعان ما ستتعجب من التقاليد الطهوية الغنية التي تزدهر‬ ‫في جميع أنحاء العالم‪ ،‬واملتجذرة بعمق في كل ثقافة‪ .‬بعد قراءة هذا املقال‪ ،‬ربما‬ ‫ستقول "التورت هي ملكة املناسبات"‪.‬‬ ‫ ‬ ‫وسؤالنا هنا هو ما شكل تورت الزفاف التقليدية التراثية في الدول املختلفة؟‬ ‫في كل ثقافة‪ ،‬تعد تورت الزفاف عنصر ًا أساسي ًا في أي احتفال‪ .‬وبالنسبة ألولئك‬ ‫الذين يحضرون حفل زفاف‪ ،‬فإن التورتة تشير إلى السعادة وتمثل األمل للزوجني‬ ‫الجدد‪.‬‬ ‫وهناك شيء مؤكد‪ ،‬أال وهو أن تورت الزفاف تتخذ أشكال مختلفة وتحتوي‬ ‫صنعت‪ .‬ستفاجأ من مدى براعة من يصنعونها‪،‬‬ ‫على مكونات متنوعة‪ ،‬أينما ُ‬ ‫وستصاب بالدهشة‪ ،‬على حد سواء‪ ،‬من التأثيرات البصرية التي من املفترض أن‬ ‫تتميز بها‪ .‬لذا دعونا نبدأ ونرى ما الذي يمكننا تعلمه من خالل القيام بجولة سريعة‬ ‫داخل أروقة ثقافة تورت الزفاف حول العالم‪.‬‬ ‫إن الهدف من هذه الجولة هو تحديد ما الذي يجعل التورتة مميزة‪ :‬هل هو‬ ‫املذاق‪ ،‬أم طريقة الخبيز‪ ،‬أم التأثيرات البصرية عند تزيينها‪ ،‬أم التقاليد التراثية‬ ‫املحيطة بها؟‬

‫دعونا نبدأ جولتنا من فرنسا‪ ،‬والتي تحتل مكانة خاصة في عالم الطهي‪ .‬أنظر‬ ‫إلى هذا البرج البديع املليء باملعجنات املحشوة بالكريمة‪ .‬هذا البرج مغطى‬ ‫بالكراميل‪ ،‬ويتخذ شكل البرج الهرمي‪ .‬ويسمى بالفرنسية ‪’croquembouche‬‬

‫حوار‬ ‫يتطلب بعضها العمل الجماعي‪ .‬بعد انتهاء تحدي اإلقصاء‪ ،‬يدرس الحكام الثالثة‬ ‫تعليقات الضيوف‪ ،‬ويتداولون فيما بينهم الختيار أفضل األطباق وأسوأها‪.‬‬ ‫كيف استعددت لهذا التحدي‪ ،‬وكيف قمت بتدريب نفسك؟‬ ‫استعددت بقراءة بعض الكتب الخاصة باملطبخ العربي‪ ،‬ودربت نفسي على‬ ‫التركيز على السرعة والدقة في األعمال املكلفة لي‪ ،‬بحيث أنجز ما هو مطلوب في‬ ‫الوقت املحدد‪ ،‬مع الحفاظ على الدقة‪ .‬في الواقع‪ ،‬لم تتح لي فرصة كبيرة للتدريب‪،‬‬ ‫حيث لم يتم إبالغي باالشتراك في البرنامج سوى قبلها بشهر واحد‪.‬‬ ‫هل ترى أن التعليم الذي تلقيته في مركز تدريب فنون الطهي قد ساعدك‬ ‫في هذا البرنامج‪ ،‬وإذا كان األمر كذلك‪ ،‬فبأي شكل من األشكال؟‬ ‫بالتأكيد مركز فنون الطهي ساعدني كثيرا ‪ .‬وساعدني في تعلم أساسيات‬ ‫طرق الطهي‪ ،‬وكيفية التعامل مع كافة املنتجات‪ .‬فأنا تعلمت فيه كيف أتعامل مع‬ ‫املكون الذي أمامي‪ ،‬وكيف يمكن إدماج هذا املكون في العديد من الوصفات‪.‬‬ ‫ما هو الطبق أو قائمة الطعام التي فزت عنها بجائزة؟‬

‫أفضل ‪ 50‬مطعم في العالم لعام ‪2018‬‬

‫احتل مطعم "أوستيريا فرانسيسكانا"‪،‬‬ ‫لشيف ماسيمو بوتيورا املرتبة األولى في‬ ‫قائمة "أفضل مطاعم العالم" لعام ‪.2018‬‬

‫وقد أقيم حفل توزيع الجوائز السنوي في لندن في الفترة من ‪ 2003‬إلى‬ ‫‪ ،2015‬قبل البدء في تنظيم جولة عاملية‪ .‬وكانت أولى محطاته في نيويورك‪ ،‬في عام‬ ‫‪ ،2016‬ثم في ملبورن في ‪ ،2017‬لكن "أوسكار عالم األغذية" عاد إلى أوربا في‬ ‫نسخته لعام ‪ .2018‬وأقيم هذا االحتفال في قصر يوسكالدونا‪ ،‬في بلباو‪ ،‬عاصمة‬ ‫مقاطعة بيسكاي في شمال إسبانيا‪.‬‬ ‫حني بدأت شعبية السياحة الغذائية في االزدياد‪ ،‬اكتسبت جائزة "أفضل ‪50‬‬ ‫مطعم في العالم" شرعيتها كبوصلة للذواقة الوليدة‪ ،‬وكشفت النقاب عن الشيفات‬ ‫املتوقع لهم النجاح‪ ،‬واالتجاهات الحديثة للطهي‪ ،‬كما أنها أظهرت مدى براعة‬ ‫املطابخ املختلفة من جميع أنحاء العالم‪ ،‬ومدى صعوبتها‪.‬‬ ‫وقد عكست جائزة "أفضل ‪ 50‬مطعم في العالم"‪ ،‬منذ عام ‪ ،2002‬مدى تنوع‬ ‫الساحة الطهوية في العالم‪ .‬وبفضل لجنة التحكيم الخاصة بها‪ ،‬واملكونة من ما‬ ‫يزيد عن ‪ 1000‬خبير من الخبراء الطهويني‪ ،‬باإلضافة إلى إجراءات التصويت‬ ‫املُنظمة واملحسوبة بدقة‪ ،‬تقدم القائمة السنوية ألرقى املطاعم في العالم ملحة عن‬ ‫بعض أفضل الوجهات لتجربة طهوية فريدة من نوعها‪ ،‬إلى جانب إنها تعد مؤشر ًا‬ ‫على اتجاهات الطهي والتذوق العاملية‪.‬‬ ‫وال تزال قائمة أفضل ‪ 50‬مطعم بالعالم تعمل مثل لعبة الكراسي املوسيقية‪،‬‬ ‫حيث تقايض مكان ًا بمكان آخر ليحتل الصدارة‪ .‬عادت قائمة طعام ماسيمو بوتيورا‪،‬‬ ‫ذات الثالث نجوم ميتشالن‪ ،‬ملطعم أوستيريا فرانسيسكانا‪ ،‬في منطقة إميليا –‬ ‫رومانيا‪ ،‬بإيطاليا‪ ،‬لتحتل الصدارة‪ .‬وجاء "السي ّلر دي كان روكا" في كتالونيا‪ ،‬في‬ ‫املركز الثاني‪ ،‬في حني تقدم مطعم "ميرازور"‪ ،‬بجنوب فرنسا‪ ،‬في الترتيب واحتل‬ ‫املركز الثالث‪ .‬وانخفض ترتيب مطعم "إليفن ماديسون بارك"‪ ،‬ليشغل املرتبة‬ ‫الرابعة‪ ،‬حيث كان قد تم إغالقه ألربعة أشهر في ‪ ،2017‬إلجراء تجديدات به‪.‬‬ ‫ويشتهر "بوتيورا" املتوهج بنهجه املُسلي لألطباق الكالسيكية‪ .‬وتتضمن‬ ‫إبداعاته الزانيا مع قضمات صغيرة مقرمشة فقط‪ ،‬وطبق حلويات مفكك الهيكل‬ ‫يسمى "عفو ًا‪ ،‬أسقطت تارت الليمون"‪ .‬إن بوتيورا محب للفنون‪ ،‬وطعامه مثير من‬ ‫الناحية البصرية‪ ،‬باإلضافة إلى أنه شهي‪ .‬وفي اآلونة األخيرة‪ ،‬أصبح معروفا بـ‬

‫"غذي الروح"؛ وهي منظمة دولية غير ربحية‪ ،‬تهتم بإطعام املشردين والجائعني‪،‬‬ ‫الذين نشأوا من مطابخ ميالنو بإيطاليا‪.‬‬

‫وتسلم شيف بوتيورا الجائزة على املسرح مع زوجته املولودة في أمريكا‪ ،‬الرا‬ ‫ّ‬ ‫جيلمور‪ .‬وقال إن الشيفات وجميع من يعمل في مجال املطاعم يجب عليهم أن‬ ‫يدركوا أن لديهم القدرة على تغيير العالم‪.‬‬ ‫وقال بوتيورا في مؤتمر صحفي عقب فوزه‪" :‬سأستخدم تسليط الضوء هذا‬ ‫إلبراز التغييرات املقرر حدوثها‪ .‬تغذية كوكب األرض‪ ،‬ومحاربة إهدار الطعام‪.‬‬ ‫اإلسبوع املاضي طلب مني هنري كيسنجر إلتقاط صورة سيلفي معي‪ .‬أنه أمر ال‬ ‫يصدق‪ .‬علينا إشراك مجتمع الشيفات بأكمله‪ .‬وينبغي استخدام دائرة الضوء هذه‬ ‫للكشف عن األشياء غير املرئية‪ ،‬وإعطائها أهمية أكبر‪ ،‬فهذه مهمة بالغة األهمية‪".‬‬ ‫وتم منح كلير سميث جائزة أفضل شيف للعام من اإلناث‪ .‬وقالت سميث في‬ ‫كلمة ألقتها وتناولت مسألة املساواة بني الجنسني‪ ،‬وتحسني ظروف العمل في‬ ‫املطابخ‪" :‬على مدى السنوات العشر األخيرة من مسيرتي املهنية‪ ،‬تم سؤالي "ما هو‬ ‫شعورك وأنتي شيف من اإلناث؟" وأجيب على هذا السؤال بقولي "لست متأكدة مما‬ ‫تعنيه‪ ،‬ألنني لم أكن أبد ًا شيف من الذكور"‪.‬وقالت أنها تشرفت باستالم الجائزة‪،‬‬ ‫لكنها أقرت بالجدل حول ما إذا كان ينبغي أن تكون موجودة في املقام األول‪.‬‬ ‫ال شك إن الفوز بمكان في قائمة أفضل ‪ 50‬مطعم يعد شيئ ًا رائع ًا لنجاح‬ ‫تصدر "السي ّلر دي كان روكا" لقائمة أفضل املطاعم‬ ‫املطعم‪ .‬ففي اليوم الذي تلى ّ‬ ‫في عام ‪ ،2013‬شهد موقعه على االنترنت ولوج نحو ‪ 12‬مليون زائر‪ ،‬ووظف املطعم‬ ‫ثالثة موظفني إضافيني‪ ،‬ملجرد رفض الطلبات على حجز املوائد‪ .‬وقال رينيه ريدزبي‬ ‫من مطعم "نوما" إنه كان بإمكانه شغل مطعمه ملدة ‪ 15‬عام ًا تقريب ًا مع طلبات الحجز‬ ‫التي تلقاها في اليوم التالي لفوزه في ‪.2010‬‬ ‫تصدر بانتظام القائمة املؤثرة ألفضل ‪ 50‬مطعم بالعالم‪،‬‬ ‫وكان مطعم "نوما" قد ّ‬ ‫حيث احتل املرتبة األولى في ‪ 2010‬و‪ ،2011‬و‪ ،2012‬و‪ .2014‬وفي عام ‪،2016‬‬ ‫كان نوما ال يزال يحتفظ باملركز الخامس‪ ،‬لكن في ‪ ،2017‬تمت إزالة اسم املطعم‬ ‫من القائمة تمام ًا‪ ،‬حيث قام شيف رينيه ريدزبي بإغالق مطعمه الشهير‪ ،‬وافتتح‬ ‫مطعم نوما "الجديد" في فبراير املاضي‪ .‬إن املطاعم التي تم إغالقها‪ ،‬أو في مراحل‬ ‫غلق أبوابها‪ ،‬تكون غير مؤهلة لالنضمام إلى القائمة‪ .‬وكان افتتاح "نوما" في فبراير‬ ‫متأخر ًا جد ًا بحيث ال يمكن تضمينه في قائمة هذا العام؛ ‪ .2018‬لذا يبقى السؤال‪:‬‬ ‫هل سيظهر "نوما الجديد" في قائمة ‪2019‬؟‬

‫حل فصل الصيف وحان موسم العطالت ‪ ،‬ويحقق حالي ًا موسم‬ ‫السياحة العربية والسياحة الداخلية معدالت إشغال مرتفعة ال نظير لها في‬ ‫القاهرة والساحل الشمالي‪ ،‬والغردقة‪ .‬وحتى شرم الشيخ تشهد مؤخر ًا‬ ‫عودة النزالء لالستمتاع مرة أخرى بهذا املقصد السياحي املتميز‪.‬‬ ‫نحن الشيفات نختار مهنة تجعلنا دائمي االنشغال في توريد اإلمدادات‬ ‫الغذائية من أجل تلبية املتطلبات املوسمية املختلفة‪ .‬وهذا يتطلب قدر ًا كبير ًا‬ ‫من القدرة الذهنية والقوة البدنية على االحتمال‪ ،‬وخاصة خالل أشهر‬ ‫الصيف الحارة‪ .‬إن اإلجهاد البدني يمكن أن يكون‪ ،‬في بعض األحيان‪ ،‬أكثر‬ ‫مما يمكن احتماله بالنسبة للشيفات‪ .‬وهنا أحثكم جميع ًا على االعتناء‬ ‫بصحتكم‪ .‬احرصوا على أن تحصلوا على قسط من الراحة‪ ،‬واعملوا على‬ ‫شحن طاقتكم بانتظام‪ .‬اقتطعوا بعض من الوقت لقضاءه مع األسرة أو‬ ‫األصدقاء‪ ،‬واحرصوا على توفير بعض من الوقت ملمارسة هواية ما‪ ،‬حتى تكونوا قادرين على ممارسة مهامكم باقتدار‪ .‬من‬ ‫شأن ذلك أن يساعدكم على تعزيز قدرتكم على االحتمال‪ ،‬إلى جانب تقوية الجهاز املناعي‪ ،‬حتى تتمكنوا من الصمود أمام‬ ‫متطلبات الوظيفة املرهقة‪.‬‬ ‫في غضون أيام قليلة سوف أسافر إلى ماليزيا‪ ،‬لتمثيل جمعيتنا والشيفات املصريني في مؤتمر "وورلد شفس" ‪،2018‬‬ ‫والذي سيقام في كواال ملبور‪ .‬وسيسافر معي اثنني من الشيفات الشباب‪ :‬شيف سلمى صالح‪ ،‬وستمثل مصر في منتدى‬ ‫بيل جاالجر للشيفات الشباب‪ ،‬الذي ُيقام بالتزامن مع املؤتمر‪ ،‬وشيف محمود قرني‪ .‬وسيتنافس محمود في نهائيات مسابقة‬ ‫هانز بوشكانز العاملية لشباب الشيفات‪ .‬فبعد أدائه املتميز في شهر نوفمبر املاضي‪ ،‬في فعاليات هيس‪ ،‬حيث أقيمت املسابقة‬ ‫اإلقليمية‪ ،‬سيحمل شيف محمود قرني مسئولية كبيرة على عاتقه‪ ،‬في تمثيل أفريقيا ومنطقة الشرق األوسط‪ ،‬في نهائيات‬ ‫املسابقة العاملية للشيفات الشباب‪ .‬وسيتنافس أمام أفضل املرشحني املختارين من كل قارة‪ .‬وسأقوم بمساعدته أنا وشيف‬ ‫سلمى في كافة التحضيرات اللوجيستية الالزمة للمسابقة‪ ،‬ولكن بمجرد دخوله مطبخ املسابقة‪ ،‬سيكون عليه االعتماد على‬ ‫نفسه فقط‪ .‬نتمنى له كل التوفيق‪.‬‬ ‫وبالحديث عن املنافسة‪ ،‬تم اإلعالن مؤخر ًا عن جوائز قائمة أفضل ‪ 50‬مطعم في العالم‪ .‬وتعلن القائمة كل عام عن أفضل‬ ‫‪ 50‬مطعم ًا تم اختيارها من قِ بل ‪ 1000‬خبير من الخبراء الطهويني‪ .‬احتل مطعم "أوستيريا فرانسيسكانا"‪ ،‬لشيف ماسيمو‬ ‫بوتيورا املرتبة األولى في قائمة هذا العام‪ .‬يتم نشر القائمة الكاملة للمطاعم الفائزة في هذه النسخة من شفس كورنر‪ ،‬حيث‬ ‫قمنا كذلك بإدراج عدد نجوم ميتشالن التي حصل عليها كل مطعم من املطاعم الفائزة‪ .‬وأتمنى أن يتطور املشهد الطهوي‬ ‫في مصر ليصل إلى هذه اآلفاق‪ ،‬وأن نجد مطعم ًا في مصر مدرج ًا ضمن تصنيفات هذه النجوم العاملية الشهيرة‪ .‬أنا متأكد‬ ‫عال‪ .‬ينبغي علينا‬ ‫من أن الشيفات املصريني يتمتعون باملوهبة‪ ،‬لكن تنقصهم الفرصة فقط للعمل في أماكن تحظى بتصنيف ٍ‬ ‫أن نحث الجيل الجديد من الشيفات على السفر‪ ،‬وااللتحاق بفترات تدريب داخلي قصيرة في الخارج‪ ،‬حتى يتمكنوا من‬ ‫توسيع آفاقهم‪ ،‬والرجوع بخبراتهم إلى مصر‪ .‬بهذه الطريقة‪ ،‬سوف يساهمون في التطوير املستمر ملهنة الطهي في هذا البلد‪.‬‬ ‫سيتم اإلعالن عن برنامج مسابقات هيس ‪ 2018‬لكافة الشيفات خالل وقت قصير‪ .‬هناك فقط ملحوظة صغيرة تستحق‬ ‫الذكر‪ ،‬أال وهي أن فعاليات معرض هيس هذا العام ستقام على مدار ثالثة أيام‪ ،‬وليس أربعة‪ .‬وهذا ليس اختيار جمعية‬ ‫الطهاة‪ ،‬لكنه ظرف يرجع إلى الجهة املنظمة؛ املجموعة املصرية للتسويق‪ ،‬الذين تفضلوا باستضافتنا في معرضهم التجاري‬ ‫الشهير‪ .‬لذلك بمجرد البدء في اإلعالن عن املسابقات‪ ،‬احرصوا على االشتراك على الفور‪ ،‬ألن تسجيل األسماء سيكون وفق ًا‬ ‫لقاعدة "الخدمة بأسبقية الحجز"‪.‬‬ ‫أتمنى لكم جميع ًا صيف ًا رائع ًا‪.‬‬
