NOW HIRING: THIRSTY LION, HULA MODERN TIKI, BREAKFAST KITCHEN BAR By Molly Cerreta Smith

IT’S A GOOD SIGN OF A HEALTHY ECONOMY WHEN NEW BUSINESSES ARE OPENING LEFT AND RIGHT! And with the valley becoming more and more widely recognized as a culinary hot spot, new restaurants are filling the demand! Several restaurant concepts are bringing their second, third and fourth locations right in the North Phoenix and Scottsdale area. Thirsty Lion Gastropub, with three other Arizona locations around the valley, is opening a 6,500 square-foot location in Desert Ridge Marketplace this December. With a large dining room (accommodating up to 200 guests), an outdoor bar with firepit and an inviting patio that can seat 140 diners, the restaurant is set to open on the southwest side of the north Phoenix outdoor shopping center’s “District” area. Based in Portland, Oregon, Thirsty Lion is looking to hire more than 100 employees and will offer benefits including health insurance, 401(k) and a meal discount program. The company is looking to fill a variety of positions including bartenders, servers and waitresses as well as front- and back-of-house jobs. Thirsty Lion also offers its employees career advancement opportunities as well

as career mentorship and education programs at all job levels. Employees also have access to a company job pool that includes locations outside the state in areas of Oregon, Colorado and Texas.

In addition to a vast menu, the fourth Thirsty Lion location will offer the north Phoenix area a wide array of craft beers on tap, including many local varieties from beloved homegrown breweries like Huss Brewing and Four Peaks Brewing Co. It will be the 10th restaurant to come to Desert Ridge Marketplace since the center’s $22 million renovation in 2017. Tiki bars and restaurants, HULA’S launched in uptown Phoenix in 2009, and downtown Scottsdale in 2014. “We’ve had our eye on this neighborhood for a while,” M. Dana Mule, Hula’s Modern Tiki owner said in a statement. “And a lot of people have asked us to bring HULA’S to north Phoenix. We’re excited to serve this fast-growing area, and introduce a new community to HULA’S amazing food and drinks, our always friendly staff, and a fun, unpretentious Tiki vibe.” Upon opening, HULA’S Modern Tiki on High Street will serve up the same menu of signature tropical drinks and from-scratch Polynesian-style foods such as spicy rice bowls and fresh fish tacos that valley locals have come to love at the restaurant’s other locations. HULA’S Modern Tiki is set to host a job fair later this winter as it looks to hire 35 full- and part-time employees for both front- and back-of-house positions. KNOW BEFORE YOU GO I-17 ON-RAMP CLOSURES AT PINNACLE PEAK ROAD

WITH THE SEASON OF HOLIDAY TRAVEL UPON US, IT’S MORE IMPORTANT THAN EVER TO CHECK YOUR ROUTES BEFORE YOU HEAD OUT ON A ROAD TRIP OR VACATION TO CELEBRATE THE SEASON. In addition to paying extra-close attention on the road while driving due to more travelers and an influx of out of towners that may not be as familiar with our roads, it’s important to check construction and closures to either plan for extra time or route a detour. The I-17 has been experiencing closures at the onramp of Pinnacle Peak Road and according to the Arizona Department of Transportation, the southbound I-17 on-ramp will remain closed around-theclock through the evening of Sunday, December 22. Additionally, the northbound 1-17 exit ramp at Pinnacle Peak Road will be closed around the clock through Monday, January 6, 2020.

These closures will further allow the continuing reconstruction of the I-17 traffic interchanges at Happy Valley and Pinnacle Peak roads.

According to its website, during these closures, ADOT will temporarily reconfigure portions of the north- and southbound I-17 frontage roads between Pinnacle Peak and Deer Valley roads while ramps at I-17 and Pinnacle Peak Road are reconstructed. The temporary reconfigurations below are scheduled to remain in place through 5 a.m. Monday, January 6, 2020: • The southbound I-17 frontage road will become a temporary two-way road between Premier RV and Self-Storage and Adobe Drive. • The northbound I-17 frontage road will become a temporary two-way road between Williams Drive and the roadway south of Adams Traditional Academy/north of the Phoenix Metro RV Park. Work to reconstruct the Interstate 17 traffic inter-

changes at Pinnacle Peak and Happy Valley roads in north Phoenix is accelerating through the end of 2019 and into early 2020. The Arizona Department of Transportation advises everyone who lives, works and drives in the area to allow extra travel time and be prepared to use detours while several ramp, roadway and interstate restrictions are in place. Most work is scheduled to occur during overnight and early morning hours; however, ramp closures at I-17 will be in place continuously, seven days a week, while work is underway.

ADOT also notes that these scheduled closures (and re-openings) are subject to change based on weather and other unforeseen factors, so it’s important to check the website for updates. While experiencing heavy traffic or delays due to these closures, keep the spirit of the season alive by allowing extra space for other drivers to merge and providing courtesy on the road to ensure the holiday travel doesn’t bring out any Grinchy road rage. MAKING WRONG-WAY SIGNS MORE NOTICEABLE – IN A BIG WAY By Doug Nintzel / ADOT Communications

EFFORTS TO REDUCE THE RISK OF CRASHES CAUSED BY OFTEN-IMPAIRED WRONG-WAY DRIVERS INVOLVE A VARIETY OF COUNTERMEASURES. They include increasing the size and visibility of wrong-way signs at state highway interchanges. Those upgrades received a major boost in the form of a $2.1 million project to install new larger wrong way signage at more than 140 interchanges, along with other improvements, along several Phoenixarea freeways. If you drive in the area, you’re much more likely to notice the larger “Wrong Way” and “Do Not Enter” signs at the top of freeway off-ramps in the Valley. Not only are they bigger, they also represent updated national standards by being located lower to the ground and thus hopefully more in line with a driver’s line of vision. Yes, that’s about making them easier to see so that a wrong-way driver might not travel down that off-ramp. northtatumtimes.com

The signs along exit ramps are not the only changes that crews, working mostly at night, made as part of this project. They also added many more of the large, white arrows that are located on the pavement of exit ramps. Those arrows point in the “right” direction of travel, as another measure designed to get the attention of a driver heading the wrong way.

One other upgrade was the installation of dozens of large “Wrong Way” signs, measuring 5 feet by 8 feet, installed above the left lanes of freeways. They’re on the backs of bridges and other overhead structures and you, traveling the right way, may have noticed a few of them if you’ve glanced to the left across the median. Those noticeable signs, facing in the wrong direction, are above the freeway left lanes because wrongway drivers tend to travel in those lanes. More than two dozen of these signs were first installed along I-17 in Phoenix in 2017 in association with ADOT’s first-in-the-nation thermal camera wrong-way vehicle alert system. ADOT has been installing larger and

more visible wrong way signs not only along Phoenix-area freeways but also at highway interchanges across the state over the last several years. This particular project has focused on sections of interstates 10 and 17, US 60 (Superstition Freeway) and Loop 202 (Santan Freeway) in the East Valley, State Route 51 as well as Loop 101 (Agua Fria Freeway) and Loop 303 in the West Valley.

It remains important to note that more noticeable signs and other countermeasures we’ve mentioned can’t prevent someone, especially someone who’s impaired, from getting behind the wheel and becoming a wrong-way driver. The signs are big. But stopping impaired driving would make a life-saving difference in an even bigger way. That’s something to keep in mind as we head into the holiday travel season.

CALLING ALL SAM FOX FANS! Culinary Dropout, one of Fox Restaurant Concepts’ popular dining establishments with four other locations around the valley, is headed to north Scottsdale! Culinary Dropout is set to bring its vibrant-yetapproachable menu, laidback vibe, games and live music to Scottsdale Quarter, where it will be right at home. Fox Restaurant Concepts first brought the Culinary Dropout gastropub to the valley with the Scottsdale Waterfront location in Old Town in 2010. The restaurant’s menu featuring chef-driven comfort food quickly gained popularity and so other locations around Arizona including Phoenix, Tempe, Gilbert and Tucson soon followed. Now it’s north Scottsdale’s turn to get in on the food and fun that Culinary Dropout has to offer. With few details as far as an official opening date solidified, it’s certain that the neighborhoods surrounding Scottsdale Quarter will welcome Culinary Dropout with open arms. For one, the menu has something for everyone and every occasion — including light bites and shareables, antipasti and appetizers, salads, and sandwiches, entrees and delicious desserts. The restaurant’s Soft Pretzels and Provolone Fondue is a fan favorite, and diners can easily choose between classics like Hot Wings and Hummus to get things started or take a leap into a more adventurous plates such as

Smoked Salmon Avocado Toast, Ahi Tuna Tartare, or Cheddar and Potato Pierogies. Heartier appetites will be satiated by entrees like the 36-hour Pork Ribs, Braised Short Rib Stroganoff, Spicy Vegan Curry, or the Pesto Shrimp Orecchiette. For those just looking to nosh while they enjoy beer, wine or specialty cocktails, the meats, snacks and cheese portions of the menu giver diners creative license to create their own charcuterie plate.

To wash down any order, Culinary Dropout has become known for its array of beer and wine but especially its creative cocktail list featuring classics and specialty beverages unique to the concept. If the restaurant’s other locations are any indicator, the new Culinary Dropout will also offer weekend brunch with specialties like Fried Chicken and Buttermilk Biscuit with sunny side up egg; Smokehouse Hash featuring slow-roasted BBQ pork, Bread Pudding French Toast and more.

The new location is now hiring and according to the website, they are looking to hire “a hardworking group of servers, managers, bartenders, hosts, and chefs” that are dedicated to serving the best food and drink in town. MARINE RAIDER FOUNDATION MAKES ITS MARK ON VALLEY OF THE SUN By Gabby Wylie

ore than 500,000 military veterans reside in Arizona and many are still learning to cope with the everyday struggles of their transition back into society. Whether it’s dealing with medical costs not covered by military health insurance or adjusting to civilian life, out-of-pocket expenses and life changes can feel overwhelming for any former serviceman or servicewoman. Members of the Marine Corps Forces Special Operations Command (MARSOC), comprised of Marine Raiders, also face the challenge of being the newest to the United States Special Operations Command. Formed in 2006 by Donald Rumsfeld, Marine Raiders are the most elite of the country’s special operations teams. They are quiet professionals deployed around the world to execute complex operations in uncertain environments. You’d think coming home would give them peace of mind, but that’s not always the case. Being new also means fewer support systems exist. This is why the 501c3 nonprofit Marine Raider Foundation stood up in 2012; not only to pay for the out-of-pocket expenses accrued by raiders and their families, but also with an emphasis on building personal, professional and family resiliency. This past October, Marine Raider Foundation hosted its inaugural Valley of the Sun Gala in Phoenix. More than 150 people joined 16 Gold Star Family members (parents, siblings and spouses of military service members who died in combat) at the gala to raise $86,000. MARSOC Foundation’s four main programs are raider support, including transition assistance, funding for award ceremonies and receptions, and funding for events that focus on personal and professional resiliency; family northtatumtimes.com

he Columbia Scholastic Press Association announced its Finalists for their Crown Awards. Both Cactus Shadows “Shadows” Literary Magazine and the student run newspaper, CS Press have won Crown Awards. They will find out in March if they are Silver or Gold. CSHS’ Literary Magazine has won a total of six Crown awards since 2012, and the CS Press has won a Crown every year since 2011 except for 2017.

Q: Is CBD the same as marijuana and will it make me high? A: No, CBD is NOT marijuana and it will NOT make you high. CBD is short for Cannabidiol, one of over 100 different cannabinoids. Like Hemp, marijuana is also a variety of cannabis plant. Hemp plants contain CBD and trace amounts of THC at or below 0.3%. THC has both medicinal and psychoactive properties, whereas CBD has tremendous medicinal properties (neuro-protectant and anti-inflammatory) with no psychoactive effects. Q: Is CBD legal? A: Yes, Hemp-derived CBD is Federally legal. CBD is primarily produced from hemp plants but can also be produced from marijuana plants. CBD is illegal if sourced from marijuana. It is important to know the source, and that

you are purchasing from a reputable supplier. If a CBD product tests higher than the Federally mandated THC level of 0.3%, the product is deemed illegal. There are a number of products on the market that are not properly lab tested, do not contain the labeled amount of CBD, and exceed the legal amount of THC. Proper lab testing is crucial to make sure that you are not breaking the law unknowingly.

Q: How do I know if a CBD product is legitimate/safe? A: The average consumer won’t know and may find that many CBD products don’t work for them. Lab testing verifies the CBD content/potency as well as tests for bacteria, mold, heavy metals and toxic chemicals. There are few regulations governing today’s CBD industry which means purchasing from a reputable source that follows proper lab testing procedures is extremely important.

Q: How do I determine what is a quality CBD product? A: We have an ongoing joke in our lab, “If you wouldn’t buy sushi at a gas station, would you buy gas station CBD?” Always start with a reputable brand with proper labeling and verified third party lab testing. Full-Spectrum CBD is king because it produces an “entourage effect” in conjunction with other cannabinoids, as opposed to a “Pure” or “Isolated” CBD, which has limited benefits and no traceable THC. Seek products that have all-natural ingredients and use Super Critical CO2 Extraction. Quality CBD is not cheap. Q: How does CBD work in my body? A: To put it simply, all animals and humans have an Endocannabinoid System already present in their bodies. You have receptors throughout your body that accept and use these cannabinoids (CBD being the most prolific) to regulate homeostasis in the body.

That’s why CBD can work for so many ailments.

Q: What is the best delivery method for CBD? A: It is scientifically proven that smoking a medication and inhaling the vapors has high efficacy and is fast-acting. However, it is generally accepted that smoking, and more recently vaping, is not recommended for your health. The best delivery method would then be CBD Oil administered sublingually and absorbed directly into the bloodstream. You can also get CBD through topical applications (creams/lotions) absorbed through the skin. Topical applications are more location specific and can be very effective but have less efficacy than sublingual delivery. rizona and Vestar, the owner of Desert Ridge Marketplace in North Phoenix as well as Tempe Marketplace in Tempe and a multitude of other lifestyle centers around not only Arizona but the West, have made history by changing legislation to allow shoppers the first ever “sip and stroll” opportunity in the state. The Vestar owners had the idea for this concept and took it to legislature, which recently passed a bill allowing shoppers ages 21 and older the opportunity to purchase beer, wine or cocktails from pop-up bars located at The District Stage and the Barnes & Noble Courtyard, and stroll throughout the center with the beverage in hand. Construction is currently underway for a permanent bar/ kiosk that will be called the Copper Cantina and will be operated by Copper Blues Live. Copper Cantina is scheduled to open in January and will offer extended operating hours. Current hours for the sip and stroll are Fridays and Saturdays from 4:00 p.m. to 12 midnight (with last call at 11:30 p.m.) and Sunday from noon to 8:00 p.m. (with last call at 7:30 p.m.). Alcoholic beverages are not permitted outside of designated areas within The District. Once their age has been verified, customers will be given wrist bands to verify their eligibility and will be served in special plastic cups. Extra security is set to be provided, and patrons may enjoy their beverages in designated areas only — they are not allowed to take their drinks offsite or even into the parking lot.

State Legislature. The bill was sponsored by State Representative Jeff Weninger and signed into law by Governor Doug Ducey several months ago. Larcher added that this program will help keep shopping centers relevant for people, saying, “Malls need to be destinations, and food, beverages, entertainment and art are all part of that.” He notes that since malls such as Desert Ridge Marketplace have been allowed to serve alcohol in enclosed areas for special events, he suggested making it a permanent situation.

While its centers continue to thrive in the ‘Age of Amazon’, Vestar has understood that energizing properties is key to their ongoing success; and that’s just how the idea to permit shoppers to stroll outdoors with a cocktail, beer or wine in hand came about. While permitted in certain gaming areas like Las Vegas, the concept has been banned in Arizona and almost every state, until now. “You can get a drink at a movie theater and walk around resorts and golf courses with a cocktail, so why not retail centers?” asked Vestar President David Larcher.

The law allows certain retail properties that qualify to grant one of its existing bars or restaurants permission to serve alcohol outside of its establishment to a customer who then may stroll the grounds with an alcoholic beverage in hand. The plan, including security, must first be approved by the city in which the shopping center is located in, then by Director John Cocca of the Arizona Department of Liquor. The City of Phoenix and Director Cocca have approved the Desert Ridge Marketplace plan.

Larcher said the company did its homework, talked to state officials including the Arizona Department of Liquor, and eventually landed a bill dealing with liquor laws during the past session of the Arizona

Desert Ridge Marketplace will be the first shopping center in the state to provide this new shopping experience along with Vestar’s Tempe Marketplace, which is also in the process of seeking approvals to offer the same amenity.

Copper Blues Live will be the only location at Desert Ridge Marketplace where customers can purchase alcohol and then stroll outdoors with the drink while enjoying movies, concerts, and various outdoor amenities. The popular restaurant, comedy spot and entertainment venue says they expect this change in the law will help business across the center. “We appreciate Vestar’s leadership to help make this change possible. We think it will be great not only for our business but the eligible shopping centers seeking to innovate with new and different ways to bring people and keep them at their properties,” said Eric Bachkoff, Partner of Copper Blues Live. Vestar has long been known as a pioneer in new retail experiences from the design of the centers themselves, to the programming of up to 300 events a year on-site. The HB 2281 calls for a three-year pilot program allowing the owner or manager of a regional shopping center to designate one restaurant or bar with a liquor license to apply for the extended service. So that the Arizona Department of Liquor Licenses and Control can easily track compliances or potential issues, only one restaurant or bar per mall can offer the extended service. The legislation allows patrons to “consume spiritous liquor

throughout a designated pedestrian area,” according to the legislation, which was sponsored by Rep. Jeff Weninger (R-Chandler) and passed both legislative chambers by an overwhelming majority. The new law allows up to 10 malls to apply for the extended service. Only larger shopping centers with at least 400,000 square feet of retail space — the ones with more extensive pedestrian areas — are eligible. While the experience was previously banned in many states, Larcher predicts common-area liquor sales could spread to other states based on Arizona’s experience and due to the fact that bringing in another element of entertainment and enjoyment will continue to keep up the demand for shopping malls, particularly since online shopping has become the preferred way to shop for many. discussed owning vacation rental properties. The biggest season of all for vacation rentals is January – April; some visitors start even earlier. We’re getting questions about vacation rentals now, when most are already taken. There simply aren’t nearly enough winter rentals available. Many “snowbirds” tie down their next year’s accommodations before leaving in the spring. This means that waiting until October or later to find a short-term rental may bring disappointment. If you have friends from out-of-state who would love to spend the winter here, you might suggest that they start months ahead. Some owners do not want a one-month tenant if they can tie down a tenant for two to four months, so they may postpone taking a single month lease, hoping to obtain a longer-term tenant. There are resources your friends and family can check out but be prepared for the higher price tags. Special

events (such as Spring Training) are premium times and can make it difficult to find options. Hotel prices also increase dramatically during the winter season; especially during special events. Staying for the entire season gives the vacationer more bargaining power than those that want one or two months. Many short-term rentals are available via websites like www.VRBO.com, www.HomeAway. com, etc. and some locals list on our multiple listing service. Like everything else today, the internet is full of information. Just be cautious and always ask what is in the unit specifically. Is it move-in ready? Does it include everything you need – right down to hangers in the closet? Use reliable vacation rental companies or your Realtor. rizona is known for being a fantastic place to get outside and enjoy the wonders of nature, regardless of the activity you choose. Fortunately for us, our state is not only home to 22 National Parks and Monuments in the National Park Service, but we also have one of the best managed state park systems in the United States. In 2017, the Arizona State Parks & Trails system was awarded the Gold Medal for being the best-managed state park system in the nation from the American Academy for Park and Recreation Administration in partnership with the National Recreation and Park Association. Arizona State Parks & Trails are located throughout the state on more than 64,000 acres of pristine Arizona wilderness, near lakes, deserts, forests, and natural wonders. There are 35 state park areas around Arizona, with 18 recreational parks, nine historical parks, seven conservation areas, and one memorial park. This 286-acre nature preserve and environmental education center sits in the heart of Red Rock country and offers gorgeous forest and creek-side hiking trails with amazing views of the giant red rock formations that define Sedona. The park also has a fantastic visitors center, educational facilities and libraries, and many fascinating environmental classes and programs. TONTO NATURAL BRIDGE – PAYSON Tonto Natural Bridge is a hidden gem of geological wonder located near Payson on the Mogollon Rim. This small state park lets you hike down trails, stairs, and bridges to a stream fed by natural springs. The stream flows directly through the giant wonder of the only known travertine natural bridge in North America. It’s a great spot for picnics, short hikes, and wildlife watching, with a historic lodge and visitors center. The park is a great day trip from Phoenix and a perfect excuse to visit Rim Country.

BOYCE THOMPSON ARBORETUM – SUPERIOR One of the best reasons to venture east of Phoenix on Highway 60 is to visit the diverse beauty of Boyce Thompson Arboretum State Park. Founded in the 1920s by mining magnate Col. William Boyce Thompson, the 323 acres of the Arboretum is both the oldest and the largest botanical garden in Arizona. The Arboretum features flowers, trees, and plants from deserts around the world, set into the sheer cliffs of mountainous terrain through a high desert forest next to a flowing stream. This is a beautiful spot for a day trip, and a must-see drive into the mountains near Superior on the way to Globe. CATALINA – TUCSON If you’re looking for fantastic natural views of Sonoran Desert mountains, you must pay a visit to Catalina State Park in Tucson. Nestled in the foothills of the Catalina Mountains just north of Tucson, this park provides 5,500 acres of fantastic hiking, biking, and horseback riding trails, through canyons, streams, and desert in the Coronado National Forest. A favorite

spot for bird and wildlife watching, the park offers beautiful views of mountains, desert flora, and wildlife. KARTCHNER CAVERNS – BENSON Celebrating their 20th Anniversary this year, Kartchner Caverns is a world-class Arizona State Park that features fantastic caves and beautiful desert vistas. A well-kept secret for decades, the park opened in 1999 and provides facilities for camping, hiking, and of course touring the pristine and previously untouched caverns. A visit to Kartchner Caverns is worth the trip south to Benson, but be sure to book your cave tour tickets in advance because tours book up very quickly. WHAT THE TRUCK?! TESLA FINALLY UNVEILS “CYBERTRUCK” By Molly Cerreta Smith

After much hint-dropping and hype build up via social media and interviews, Tesla CEO Elon Musk revealed a prototype of the new “Cybertruck” on November 21, the last day of the Los Angeles Auto Show. Tesla’s first ever truck has been a longtime coming. Musk has taken to Twitter to tease the electric pickup truck release (which he first announced way back in 2013) and earlier this year, Musk teased fans with a mysterious image of part of a truck that could either be interpreted as a hood or the bed of the pickup with a sleek, matching tonneau cover on board. The Tesla CEO got fans buzzing through other hints that his latest vehicle would be inspired by the movie Blade Runner, and he also claimed that the truck would be “something quite unique, unlike anything.” Not one to

shy away from tooting his company’s own horn, Musk referred to the “cyberpunk truck,” as Tesla’s “best product ever” and even boasted in an interview with Recode last year that the new release is “…Gonna be awesome, it’s gonna be amazing. This will be heartstopping.” The reveal was certainly heart-stopping… or perhaps jaw-dropping is a better word. Musk spend upwards of 15 minutes hyping the Cybertruck one final time prior to its reveal. However, not all claims may have been thoroughly tested prior to the reveal. While Musk’s claim that his new truck was “bulletproof” (at least to smaller firearms) panned out — as a demonstration of sledgehammering the sides resulted in no damage to be seen, the demonstration of the truck’s “unbreakable” metal glass windows didn’t go quite as well. When a metal ball was thrown at the first window, it shattered immediately. Musk said the throw was

“too hard,” but the glass cracked on the second attempt too. Musk stood by his claim noting, “But it didn’t go through.”

But it will be interesting to see what kind of demand the truck, which will be sold in the fall of 2021, will attract

“Our family is made up of a long line of butchers and smokers,” he says. “My grandad, who was the first American born in our family, bought a farm in the Midwest in the late 40s and he started cooking barbeque – he loved the American style from mid-western style pork to Texas-style brisket.” And that is what Danky’s restaurant offers its diners today — a farm-style approach to Mesquitewood slow-smoked BBQ meats with a focus on fresh, simple and scratchmade food … with a few Eastern European influences tossed in as a nod to Pat’s Slovakian heritage.

The aroma of smoke wafts out before one even steps foot through the door and the custom-made smoker out of Missouri, which is like no other, is churning out meats 24 hours a day, seven days a week with a low-and-slow approach to barbeque meats including pork, beef brisket, chicken, hot links, andouille sausage and more. The restaurant also offers unique signature sandwiches including the Danky Dank — a pulled pork classic topped with Danky’s house made relish barbeque sauce; The Curly Wolf (aka “a bad mama jama,” according to Pat) featuring chopped brisket with the restaurant’s signature green “javelina sauce”; and The Hot Southern Mess with pulled pork and chopped brisket topped with hot barbeque sauce, jalapenos and onions and more. Guests may choose between a regular sized or “big” sandwich and can build their own sandwich by picking a meat, a style and a size to make it their own. Danky’s also offers full slab dinner combos featuring baby back ribs, sides and cornbread muffins.

or Pat Frederick, owner of Danky’s Bar-B-Q located at 4727 East Bell Road, Suite 31 in North Phoenix, cooking barbeque stems from a long family tradition that started five generations ago… in Slovakia of all places. While one may not typically envision Slovakia as a hotbed for barbeque, it’s where Pat’s family learned their practices that he puts into play each day at Danky’s.

A local of the neighborhood since 2008 (he moved from Detroit for two things — weather and opportunity), Pat chose the location for Danky’s conveniently situated at Bell Road and Tatum Boulevard because he noticed a lack of barbeque presence in the area at the time he was developing his restaurant concept. The intimate-yet-unassuming restaurant, which opened in 2015,

barbeque with a little flair. All sides are scratch made and each is given an extra dash of creativity to make it different — and delicious. Take the Green Apple Coleslaw for example, which was inspired by a close friend’s grandfather and includes green apples and a few other special ingredients to give it a touch of sweetness. And the Pork Belly Pit Beans incorporate Slovakian seasonings to give it a “what is that?” flavor and the thick chili-like texture is a personal preference of Pat’s from back in his farm days. As the holidays approach, Danky’s also takes large catering orders. When asked if he will accommodate custom orders, Pat replies in true farm boy manner, “Yes, ma’am.” In fact, catering and weddings have become a large part of the restaurant’s business and they are

happy to oblige when it comes to creating an off-menu menu. Pat cures his own hams and can prepare turkey, brisket, beef ribs and other specialty items given some time. Generally speaking he needs at least 72 hours to prepare custom holiday orders, but as much as five days or more for a custom-cure item. Whether cooking for a crowd or for guests that walk through the door one at a time, Pat pays the same time and attention to each plate. It all comes down to giving people the simplicity of the farm-fresh food he came to love growing up and he’s happy to say that he gets a healthy balance of both regulars and new faces in every day. “Every day, I recognize people and I see new people — and that’s how we know we’re doing something right,” he says. Jojo Rabbit tears apart fascism in a comedic yet still heartfelt way, never pulling punches and still giving such a horrific time the brutally honest look it deserves. Even the film’s design and cinematography match the tonal shifts between light and dark. The cast is a perfect mix of newcomers (Roman Griffin Davis, Thomasin McKenzie) and seasoned actors (Scarlett Johansson, Sam Rockwell) who bring the characters to life. This was a passion project for Waititi and it shows.

THE LIGHTHOUSE

Two sailors suspect there are greater forces conspiring against them on their isolated lighthouse shift. The wonderful thing about Robert Eggers’ new film is how the viewer soon feels the same isolation as the characters. The camerawork, Robert Pattinson and Willem Dafoe’s performances and visuals capture you and place you into their world before you know it. This world is scary, unrelenting, nothing ever feels normal or safe, and it will continuously keep you guessing if something is actually watching our char-

acters or if they’re going insane. The black and white photography and unique aspect ratio are key in this style. Creating the atmosphere perfectly is Mark Korven’s absolutely terrifying score - one of the best I’ve ever heard. This is a new horror classic.

FORD V FERRARI

The true story of Ford’s efforts to outdo Ferrari at the 1966 24 Hours of Le Mans. Ford V Ferrari is 152 minutes long and doesn’t waste a single moment. Everything is central to the story and includes the perfect amount of focus on the actual creation of the car; even the failures and improvements get their proper showcase here. Matt Damon and Christian Bale are wonderful as two distinct characters that mix well together, and director James Mangold shoots the race scenes in a way that makes the final race one of the best theatrical experiences of the year.

PARASITE

A family in South Korea forms a relationship with an upper-class family which brings dire consequences. Director Bong Joon-ho has made his masterpiece with this new thriller. This film astounds with a mixture of incredible filmmaking, writing and an amazingly diverse personality of cast members, and offers an intriguing look into class disparity and differences. A film like this receiving a wide release is rare, so I highly recommend taking the time to see it.
