A New Take on Steak Anthony Lazzara and His Chophouse

O

bserving Anthony’s Chophouse from the exterior, the impressive glass wall facing Main Street literally reflects the modern sophistication of the Arts & Design District.

Inside, guests are swept up in the lushness of the interior, where stratospheric ceilings and two stories of white-linen elegance await. The natural light from the east- and north-facing glass walls, and the views out into the surrounding neighborhood—with the Monon Trail on the east and Main Street on the north—open the dining experience beyond walls and windows to give patrons a sense of oneness with their community.

I

sat down with Anthony Lazzara in a private, mezzanine-level dining room that overlooks the spacious downstairs bar area, lined with its green, velvet banquettes. Early into our conversation, Anthony made it clear that he doesn’t enjoy being the center of attention, enduring the well-deserved media coverage the establishment has seen since even before it opened last August. So why, then, does the steakhouse bear his name?

“We had a list of names, seven or eight, that we kept funneling around before we settled on this,” he says. “I kept asking what everyone thought, and we wanted a name, an affiliation, so it kept coming back to Anthony’s.” When he makes his rounds through the dining areas to check in with patrons, Anthony introduces himself without drawing attention to the fact that he’s a co-owner—his wife Kayla co-owns the restaurant—but invariably, customers ask, “Are you ‘the’ Anthony?” “I hear ‘Wow’ a lot,” he laughs. Anthony’s young face—he’s only 29, after all—throws some people off. For this member of Carmel’s well-known Lazzara family, however, the ambition to open a fresh, upscale, and modern steakhouse experience that beats right along with the pace and vision of Carmel’s community development has been in the works since Anthony’s high school days.

Entering the vertically spacious, 9,000 sq. ft., two-story dining area through the main entry doors, adorned with a stylized “A,” one encounters a lush elegance that rivals any restaurant space in the country’s major metropolitan areas. Natural light permeates the spacious front bar and extends back into the first floor’s main dining area, and the sweeping glass walls lining the restaurant on both the north and east offer a relaxed view of the hustlebustle of Main Street and the Monon. Upstairs, the “Glass Chimney Room” pays homage to that late, great Carmel establishment, by harboring the Chimney’s original mahogany bar. From where I sat in the mezzanine—and yes, there is almost something theatrical about this space—I asked Anthony about the inspiration behind the interior. What followed was the depiction of a true act of culinary reconnaissance—and what some might even call a raison d’etre.

The original business plan for what would eventually become this stunning reinvention of what a steakhouse should be was Anthony’s senior high school DECA project, for which he qualified on the national level.

At Ball State, where he enrolled in the entrepreneurial management program—and where he met Kayla— Anthony adapted the plan, digging into the research aspect of business development, and learning all he could about ownership by interviewing owners of Indiana’s local steakhouses. After graduation, the couple traveled on weekends to New York and Chicago, Las Vegas, Florida (Naples, Fort Myers, Miami), and visited as many restaurants as they could fit into their schedule.

“I literally carried around a little black notebook and took notes on servers, plates, glassware, dishes, place settings, floor operation, you name it,” Anthony says. “I took pictures of the walls, the ceilings, the floors—all with the notion of figuring out what would look cool and what would work in Carmel.” Combining field notes with the professional and creative opinions of their interior designers and architects, what emerged, as Anthony describes it, is “a big-city, Chicago, New York feel with two-story windows and tall ceilings, but toned down to fit Carmel’s personality.” He adds, “Wherever you’re sitting in the restaurant, you have these views that look out into our Plaza, or the Monon, and every seat in here has this constant synergy with downtown Carmel.”

Anthony comes by this connection to community honestly, and playing a role in Carmel’s growth is steeped in his blood. In fact, the redevelopment along the northside of Main Street between the Monon Trail and 3rd Avenue Southwest, of which the Chophouse is a part, was very much a product of his family’s community involvement. His father is Chuck Lazzara, longtime owner, with his wife Lynn, of the Ritz Charles, and his uncle Joe Lazzara is owner and founder of Joe’s Butcher Shop on Carmel’s Main Street. Matt Frey, another uncle, is the owner of a longtime Carmel favorite, Bub’s Burgers and Ice Cream, just across Main Street from Anthony’s.

In 2008, his uncle Tom Lazzara sold Chuck the corner lot on which the Chophouse sits today, and Chuck began acquiring real estate along that stretch of Main Street, with the final piece falling into place in 2015. “We all love Carmel, and we love being right where we are in the middle of Indiana,” Anthony says. “Growing up in a family that is so actively involved in the economic growth of the city has taught me about being humble and caring, and knowing that at the end of the day, work isn’t just about numbers—it’s about creating a space that goes beyond business for the betterment of the community.”

SPINNING A NEW TALE ON THE STEAKHOUSE EXPERIENCE Part of that going beyond business for Anthony has been to bring a refreshingly innovative vibe to the traditional steakhouse in this new venture. Besides the unorthodox approach to the interior—that is, bringing light to the stuffy, dark-wood feel of old-school establishments— executive chef Justin Miller brings an artistry to his presentations, along with flavors not typically found in the steakhouse repertoire. Especially creative are their takes on traditional appetizers. “We do a tempura cauliflower that’s very nice, served with asparagus, sprouts, and a roasted red pepper bisque” Anthony says. “And one of our sides is a ‘deconstructed’ Mexican street corn, with cilantro, lime, chili powder and cotija.” Other bold departures from the ordinary include the wedge salad, with a bacon-fat infused bleu cheese dressing. “I mean, who doesn’t love bacon with bleu cheese,” he adds, jokingly. The Forest Mushrooms and Spinach demand an audience, with a tri-mushroom blend of cremini, oyster and shiitake, topped with crispy Dijon chicken rinds. And if you’ve come for steak but want to take a tour instead of settling down, opt for their “flight of beef,” with scrumptious 4 oz. medallions of Prime, grass-fed, and Wagyu.

On the third floor, operating as a swanky, spirit-centered, big-city feel alternative to the Chophouse below, you can find 3UP Rooftop Bar. In retrospect, Anthony says that 3UP was kind of an afterthought. “Rooftop bars really started picking up towards the end of Kayla’s and my immersive research, but we visited a few other rooftop bars around the country just to see what we wanted to do,” he says. Once they determined that the building was strong enough architecturally to support a rooftop concept, it was on with the show. “It’s a separate restaurant up there, with a smaller menu and more of a focus on shareables,” Anthony explains. “We have coverage outside with industrial heaters—people were sitting outside in 40-degree weather last year in polo shirts and were completely comfortable.” Safe and sound and warm with cocktail in hand and views overlooking the heart of Carmel? Not bad for an afterthought.

LIFE’S LEARNING CURVE In telling his and Kayla’s story of the Chophouse genesis, Anthony makes clear the importance of having a strong, capable team of players supporting the enterprise. “Kayla might give me a glare when I say this,” he jokes, “but a

good thing all along was to surround myself with a strong team. I preach to my staff and everybody I meet to have a work-life balance, especially in our society nowadays.

You have to set priorities in your life—without them, life can drive you crazy.” Of course, he admits that it’s still hard for him—especially since the couple welcomed their son into the world earlier this year. “Really, she’s been so understanding, and with our son now, it’s been a learning curve for me,” he says. “I knew it would all be a challenge—that there were going to be long nights and long days and long weeks—but that’s the industry. I love the hustle—I love the adrenaline.”

And he loves Kayla, who he says comes in when she can and works behind the scenes on social media and marketing efforts. A clinical research specialist in IU Health’s oncology unit, in addition to her roles of co-owner and new mom, Kayla shares her husband’s passion for community connection. Besides that, she holds a place in her heart for those less fortunate— neglected felines, in this case. “A while back she helped find homes for this litter of 15 kittens at her aunt’s farm

near Columbus, Ohio,” Anthony tells me. “She just didn’t have the heart to let them all run wild.” They welcomed three of the tabbies to their own home. “I love being on this adventure with Kayla,” Anthony says.

A SHARED VISION In creating the fine dining experience that Carmel residents and visitors can now find at Anthony’s Chophouse, Anthony and Kayla, and the entire Lazzara family, are buying into the Carmel community and the future they see for it. “All of the developments here, all the construction—it’s all about knowing how beautiful and great a place Carmel is to live and to raise a family,” Anthony says. As for future plans, he says that while the next year will focus on making the Chophouse experience even better for patrons, that they look forward to growth, and Anthony already has notions of a different kind of concept down the road. “There’s so much opportunity here in Carmel,” he says. And that’s the kind of community that he and Kayla consider themselves fortunate and grateful to be a part of.
