President’s Message

I hope this issue of The Wisconsin Shepherd finds everyone enjoying road construction season, also referred to as summer in Wisconsin. Summer is also a great time to work on the construction of your flock and make the improvements needed to move your flock closer to your goals. The years lamb crop should be coming along nicely and replacements can start to be evaluated, ewes and pastures need to be monitored so that they stay in optimal condition and perform at their greatest potential, and maybe most important, breeding decisions need to be made. How is your ram battery? Do you need to purchase a new ram? Did the rams you used last year help move you closer to your flocks goals? Just like the roads, not every project can be completed in one year, so evaluate what part of your flock needs construction and work on that first.

Summer also means it is fair and festival season. I encourage everyone who participates in a fair or festival to be as open and engaging to the public as possible. If we choose to not talk to fairgoers, we miss an opportunity to explain what we are doing. It has been my experience that this group of people wants to know about our animals and our farms back home, or else they wouldn’t walk through the barns. Some of the questions may be outrageous to us, but imagine the answers that can be thought up if we don’t take the time to answer them, or be available to answer them, and even consider making a kids day by letting him pet a lamb for the first time.

As you will see in this issue of the Shepherd, our main event of the year, the Wisconsin Sheep and Wool Festival will be here before you know it. If you have never experienced the festival, make plans to do it this year. There is literally something for everyone and three full days of events to partake in. If you need help with your flock construction projects, I can’t think of a better place to go for information.

American Lamb Board Grant Drives Festival Promotion The American Lamb Board has provided the Wisconsin Sheep Breeders Cooperative (WSBC) with a grant of $3500 to help fund promotional efforts at the 2015 Wisconsin Sheep & Wool Festival, scheduled for September 1113 at Jefferson Fair Park, Jefferson, WI. In writing the grant proposal, WSBC Secretary Jill Alf underscored the target audience the festival currently serves within the Milwaukee-Chicago-Madison metropolitan area and that the event brings all aspects of the sheep industry into focus for the general public. The proposal also highlighted the long history of the festival in promoting American lamb through cooking demonstrations under the direction of respected metro area chefs including Jack Kaestner, formerly the Executive Chef at the Oconomowoc Lake Club and currently the Chef Instructor for the Culinary Arts Program at the Milwaukee Area Technical College. Chef Kaestner has been featured on radio, television and in print as a local food expert in SE Wisconsin. He has collaborated in helping to produce numerous local foodrelated publications and has helped develop the Farmer Chef Connection that builds working relationships between farmers and chefs based on a similar program in Portland, Oregon. Chef Kaestner has been and continues to be a strong advocate for both American farmers and their products and has recently appeared on the Wisconsin Foodie, an Emmy nominated independent television series dedicated to discovering the stories behind the food we eat.

The 2015 Wisconsin Sheep & Wool Festival will feature Chef Jack Kaestner as part of a four-part workshop series entitled American Lamb: Farm to Table, that will be held on Saturday, September 12, starting at 8:30 a.m. In addition to Chef Kaestner, the featured speakers will also include Jeff Sindelar, Extension Meat Specialist, University of WisconsinMadison Meat Science & Muscle Biology Lab; Robby Weyker, Manager, UW-Meat Science & Muscle Biology Lab; and Cody Hiemke, Niman Ranch Lamb Program Manager & Past Director, American Lamb Board and participating Culinary Arts Students from the Milwaukee Area Technical College.

The festival will be held at Jefferson Fair Park, Jefferson, WI September 11-13.

processors, producers or consumers wanting to learn more about getting the best marketable yield from a lamb carcass and how to prepare American lamb for the table.

In Part 1, Jeff Sindelar and Robby Weyker will break down two to three lamb carcasses. Some cuts will be standard, and some won’t! Learn the basic retail cuts, how to merchandise legs, break shoulders into grillable cuts and collect carcass data which will be used for Part 3 of this series.

In Part 2, Jeff Sindelar and Robby Weyker will focus on value-added or further processed options for lamb, plus discuss ways to improve meat quality and consumer satisfaction through product enhancement. They will also cover sausage manufacturing approaches, including handson demonstrations.

In Part 3, Cody Hiemke will discuss the pricing of lamb cuts for direct marketers according to cost of processing and production. This will be the first public presentation of a “Cutout Calculator” and “Yield Tracker” that he has developed for the American Lamb Board.

Part 4 brings Chef Instructor Jack Kaestner to the stage, where he and MATC Culinary Arts students from the Milwaukee Area Technical College will prepare recipes based on the lamb cut and processed during the morning sessions.

The Dollars & Cents of Shearing Management: It’s Your Money!

Too many sheep producers don’t consider shearing to have any major role in flock management except to schedule the shearer, get the sheep inside and have lunch ready. But the reality is that a shepherd may be chalking up real losses because of poor decisions at shearing time. David Kier, Professional Shearer, Eleva, WI, will discuss how shearing affects a ewe’s metabolism and how bad timing can show up on your bottom line.

In this eyes-and-hands-on workshop, you will be able to examine raw fleeces from different breeds and learn about how they might be used in finished projects. Not all wool breeds are alike and their unique qualities make them better suited for particular purposes than others. Fleece Show Coordinator Holin Kennen will guide you through the basics so that you can choose fleeces which suit your needs.

11:00 OPP Update: The Latest Research Ovine Progressive Pneumonia (OPP) is a chronic viral disease of sheep caused by a lentivirus, which is characterized by a long incubation period. In sheep, the virus primarily infects the udder and lungs, and infection results in reduced milk production, lighter weaning weights in lambs, greater death and culling rates of ewes, and increased replacement rates. New results from USDA researchers suggests that costly artificial rearing of lambs is not necessary to reduce the flock incidence of OPP, and a commercially available genetic test allows selection of animals with a reduced susceptibility to OPP. This begins with selecting sheep with genetics that can advance the industry. In this section, we will discuss how NSIP is the genetic foundation for a profitable US sheep industry by explaining what estimated breeding values (EBVs) are and how they are calculated. We will how EBVs compare to other production information like raw data and ram tests.

10:00 NSIP in the Commercial Sheep Industry—How the entire industry can benefit from quantitative genetic selection The main goal of NSIP is to increase productivity and profitability to the entire US sheep flock. This only happens

Spooner Sheep Day Set for August 22 The 63rd Annual Spooner Sheep Day will be held at the Spooner Agricultural Research Station on Saturday, August 22. Registration will open at 8:30 a.m. at the Station Headquarters located at W6646 Hwy 70, Spooner, WI 54801.

The educational program will start at 9:15 a.m. and end at approximately 3:30 p.m.

The program will be a mix of reports of sheep research results and timely topics for the sheep industry. Featured speakers this year will be Cody Hiemke, B.S. and M.S. in Animal Sciences from UW-Madison and current Lamb Program Manager, Niman Ranch, a natural meats company, and Dr. Kay Nelson, D.V.M from UW-Madison and current veterinarian for the herds and flocks of the College of Agriculture and Life Sciences. Cody will lead a discussion on the production of a quality market lamb and the benefits to both the producer and the sheep industry of producing such lambs. Dr. Nelson will discuss some of the more common sheep health issues she has seen at the UW-Madison sheep units at both the Arlington and Spooner Stations with recommended preventive measures and treatments. UWMadison graduate students Tom Murphy and Vera Ferreira who are working with the sheep program at Spooner and

Emily Petzel, the 2015 summer student intern at Spooner, will present results of several projects they have been working on including the Use of Estimated Breeding Values in Predicting Future Performance of Sheep, the Effect of Breed and Hybrid Vigor on Lamb Survival, and a Novel Approach to Controlling Internal Parasites in Lambs. The program will conclude with an open house at the sheep farm in the afternoon that will focus on a discussion among participants on sheep facilities and handling innovations.

A lamb lunch will be served at noon at a cost of $8.00 per adult, $5.00 for children ages 5 to 11, and free for children under 5. Advanced reservations are not required.

The Wisconsin Sheep & Wool Festival and the Wisconsin Sheep Breeders Cooperative invite you to submit your sheep and wool photos to their annual photo contest. The contest is open to everyone, regardless of whether they raise sheep or are WSBC members. Judges will select the winning photos based on theme, clarity, content, composition and appeal based on the category entered.

Photos will be on display in the Activity Center Friday through Sunday.

United States Targhee Sheep Association Announces 2015 National Starter Flock Winners Las Vegas, NV - Because of the incredible generosity of the members of the United States Targhee Sheep Association (USTSA), two Starter Flock Program awards will be presented in 2015 at its national show and sale, July 23rd through 25th, in Big Timber, Montana. The USTSA is honored to have these incredible candidates and their families join their membership!

Dylan will be receiving a yearling ewe donated by Bridget Williams/Ben Kukowski of Golden Willow Targhees (Kaycee, WY), a yearling ewe donated by Carolyn & John Green of the Green Ranch (Melville, Montana), and a spring ewe lamb donated by Dean & Charleen Von Krosigk (Riverton, WY).

Zach Moret of Barron, Wisconsin

To say Zach has immersed himself into his sheep project would be an understatement. Now in his 4th year, he is turning his attention to not just showing animals, but actually raising his own for him and his three younger siblings to show.

As Zach said in his application, “…there are more important things in life than potato chips and video games.”

To help prepare him for when he could have a flock of his own, Zach has done practically everything he could do to get to this point. He has attended show clinics and camps, including the Indianhead Sheep Breeders Clinic where he won an essay about why he wanted to raise sheep. He read his essay in front of about 200 people! Zach, his brother and his sisters all studied up on lambing, bought some lambing pens, and are fortunate to have friends and fellow club members to help them out.

All the work is worth the effort for Zach. Attending various livestock shows and county fairs is serious business, especially showmanship, but there is a lot of fun too. Zach enjoys looking at the other exhibits, taking in the rides, and seeing friends.

Zach has not limited himself to just sheep. He maintains a straight A report card, and is currently learning to play the trumpet. Zach also has experience with dairy, beef, pigs, horses, rabbits, dogs, cats and custom dairy replacement heifers. He loves to keep the animals as comfortable and healthy as possible at all times, treating them with kindness and respect. Through his 4-H club, he is a member of a state and nationally ranked dairy judging program. As his judging coach stated, “He is very intuitive and has an excellent grasp of new concepts,” traits that should help with learning how to care for and grow a wool-breed flock.

Big plans are in store for this starter flock. 14 The Wisconsin Shepherd Summer 2015 From a young age, Dylan, who is now 14 years old, knew he wanted to have sheep of his own. His grandmother raised a commercial Rambouillet flock where he would help out with chores. As his interest grew, he had the opportunity to help out during shearing at a nearby ranch which raised Targhees. There he learned about the dual purpose nature of the breed – a great carcass with fine wool. This has lead to 6 years of being involved in the sheep project in his local 4-H chapter, and recently joining FFA. Dylan has purchased and bred Merino/Columbia crossed ewes, exhibited their offspring, and even bred them to a Suffolk ram in order to raise the Grand Champion Market Lamb. Even though that goal has eluded him, he still has grown and accomplished quite a bit during his show career.

This includes Champion White Faced Sheep, Best of Show for one of his fleece entries, and making it to the champion market lamb drive!

Besides tending to his flock, Dylan is a member of his 4-H livestock judging team which has helped him evaluate his own animals. He also enjoys playing basketball, running, playing in band and jazz band, and being a member of his schools international club. Last fall, Dylan was also confirmed in the Lutheran Church where he is involved in the youth group, helping the youth leader with computer work and other jobs as needed. He also volunteers monthly for local Hospice where he makes pancakes for the men’s breakfast.

Dylan’s goals for his award project are to expand his flock by raising his ewe lambs, and possibly pursuing a career in the sheep industry. This award will give him a jump start on

Wisconsin Junior Targhee Sheep Association Announces 2015 Starter Flock Winner Fourteen-year-old Katelyn Dunnum of Westby, Wisconsin, was selected as the 2015 recipient of the Wisconsin Junior Targhee Sheep Association (WJTSA) Starter Flock Award.

Livestock and farming have been constants for Katelyn during her whole life, growing up on a 120 acre third generation dairy farm that her father, Ryan, bought from his grandparents. She started by helping feed their chickens and collecting eggs. But things really expanded after she joined 4-H and FFA, which has included rabbits, purebred show chickens, and eventually sheep.

Katelyn and her mother, Jamie, are very involved in the fiber arts, so their initial small flock consisted of Merino, Corriedale, Border Leister and Clun Forrest genetics. From there, they expanded into Icelandics, which she showed successfully at local fairs for the past few years. She also exhibited needle-felted creations and hand knit goods she made from homespun fibers. Katelyn also teaches fiber art classes to younger 4-H members.

After seeing Targhees exhibited at fairs she attended, Katelyn liked the size of the breed and the quality along with fineness of the wool. Both she and Jamie felt that the breed would be a good fit for both their art and their farm.

Now Katelyn and her four siblings (soon to be 5!) are looking forward to raising and exhibiting the newest additions to their farm. She is excited to have the opportunity to show at both open and junior sheep shows at the Wisconsin State Fair this summer, and once her flock has grown, to donate back to the starter flock program.

Directions Cut the leg of lamb into cubes. Brown the cubes ½ at a time in a large stock pot over medium heat. Remove the lamb from the pan and add set aside.

Brown the onions in the oil.

Return the lamb to the pot with the onions and add in the yogurt, coriander, ginger, cardamom, salt, pepper and milk and mix well.

Bring the pot to a boil, then reduce the heat to a simmer and cover. Cook covered for 2 hours, stirring occasionally.

Cut the small red potatoes into cubes and add to the stew. Cover again and cook for 25 minutes until the potatoes are tender.

Garnish with almonds and coriander, and serve with Basmati rice.

2015 Livestock Judging Results from Area Animal Science Days Madison - The 2015 Area Animal Science Days were held in Lafayette, Kewaunee, Dunn and Rock counties. Youth involved judged breeding and market classes of each of the following species: swine, beef, sheep and in some locations meat goats. Youth also answered a set of species questions and senior judges gave oral reasons on selected classes.

The top two Senior and Junior Teams from each contest site earned the opportunity to compete at the State 4-H Livestock Judging Contest that will be held on Monday, July 27th at the Lodi Fairgrounds. Dairy Sheep Symposium Comes Back to Wisconsin The 21st Annual Dairy Sheep Association of North America (DSANA) Symposium will be held in Madison, Wisconsin on November 5-7, 2015 with a pre-symposium sheep milk cheese-making course on November 4, 2015.

Twelve presentations by 16 animal scientists, dairy sheep producers, veterinarians, and sheep milk cheese makers and marketers will be held on November 5-6 at the Pyle Center on the University of Wisconsin-Madison campus. A sampling of topics and presenters are: “Milking Machine Basics and Special Considerations for Small Ruminants” by Dr. Doug Reinemann, University of Wisconsin-Madison; “Impacts on Non-GMO Labeling on Artisan Cheese Production” by Cathy Strange, Global Cheese Buyer, Whole Foods Market, Austin, Texas; “Best Practices for Raising Lambs on Milk Replacer” by Dr. Tom Earlywine, Land O’Lakes, St. Paul, MN; and “Principles of Dairy Nutrition” by Dr. Michel Wattiaux, University of Wisconsin-Madison.

The pre-symposium sheep milk cheesemaking course will be offered on November 4 at the Center for Dairy Research on the UW-Madison campus for symposium participants and DSANA members for an extra fee.

Fall University Day at Wisconsin Museum of Quilts & Fiber Arts – October 3 Fall University Day is returning the Wisconsin Museum of Quilts & Fiber Arts on Saturday, October 3, 2015. The theme will again be ‘All About Wool’ with opportunities for exposure and experience with wool in many forms. The full-day event includes a keynote address; choices of four one-hour classes – or – a single one-hour class plus a three-hour workshop; lunch; wool wearable fashion show; and raffle. The keynote will be Mary Flanagan, who with her partner Scott operates Mary Flanagan Woolens in Pickett, WI. A former costume designer, Mary knows and loves wool, and creates her own woolen art with incredible hand-dyed wool.

The classes include several opportunities for the knitter – or aspiring knitter. Options include a ‘Learn to Knit’ class

by Jan Nosse; an intermediate knit project class with Nicole Woltman; and an advanced class on Latvian knitting techniques by Sandy DeMaster. Want to try your hand at creating wool objects with woven wool? Learn proddy from Joyce Krueger; wool braiding with Sandy Kub; wool quilling with Mary Flanagan; and see a variety of techniques for creating accessories with wool from Lyle Drier.

Want to stitch or appliqué with wool? Make and take a wool pieced pincushion taught by Terri Sankovitz; practice wool appliqué with designer Lynn Schmitt, with a custom designed project for WMQFA 2015 Fall Uday; or create wool embroidered Christmas ornaments with Julie Austin. Watch a demonstration of wool felting by Wisconsin fiber artist Peter McMasters; or hear the story of and watch the craft of Master Spinner Ingrid McMasters.

Indianhead Receives ALB Promotion Grant The American Lamb Board (ALB) has allocated $35,000 in FY 2015 to support new lamb promotion ideas targeting nonindustry audiences (consumers, chefs, media, retailers etc.).

These funds are intended to help support local or regional lamb promotions designed to build demand for American Lamb.

Indianhead Sheep Breeders Association (ISBA) was awarded a 2015 promotional grant of $500 which will support an educational booth in the Sheep Barn at the Wisconsin State Fair during the Open Meat Breed Show on August 14-16. Educating the thousands of visitors that pass through each day about “The American Lamb Difference” will help build the bridge between the urban consumers and the producers that make it possible. This program is designed 20

to build awareness and demand for American Lamb. Visitors will be invited to play a game to learn about American Lamb products and will receive a voucher for a substantial discount on a lamb sandwich or other ready to eat lamb items in the Wisconsin Lamb Booth in the Wisconsin Products Building during the State Fair. Popular UK Judges Return to MSSBA Shows graded wool with Mary Gibbings for the SSS for a number of years and one of her many proud accomplishments was making a 1 ply Shetland ring shawl five feet square! Some of Maurice and Gillian's other interests are showing dogs, breeding and showing Dartmoor Ponies.

Maurice traces his Shetland convictions to the 1980s when he says “The late Marion Avery and Stanley Bowie both helped to start our flock, with Marion selling us one of her best ewes. We try to breed a sheep true to the 1927 standard and one that either of these experts would have been proud to own.” He continues, “I am now a ram inspector and judge which have given me the opportunity to see many different sheep and their owners. I love talking about Shetlands with them and feel that it gives me the chance to return the help and hopefully advice to new members which we were given.”

Bartels also announced that on Friday of the festival Maurice will be conducting a hands-on Shetland sheep inspection and a presentation entitled Shetland Islands & Shetland Sheep. “We are hoping that participants will bring sheep to be evaluated and will gain additional knowledge to better evaluate their own flocks.” Each sheep inspected will receive a signed inspection form for each sheep participating.

Maurice Wakeling will judge the Shetland sheep show on Saturday beginning at 12:30 p.m. and Gillian Wakeling Gillian judge the MSSBA fleece show on Saturday beginning at 9 a.m.

The Midwest Shetland Sheep Breeders have sponsored a sheep show at the Wisconsin Sheep & Wool Festival for over a decade, pulling together exhibitors from a five-state area.
