Some interesting things came out of the Fall Classic Board meetings for the Board of Directors. I was pleased to see that two parents who had a concern regarding showmanship came to the TJLA Board of Directors meeting and addressed the board about their concerns. I appreciate their candor, and they were pleased to find out that we always record show results as they are sent in by the show, so their problem was solved. I would encourage any other parent with a concern regarding rules to do the same thing. The TJLA Board of Directors meets four to five times a year. We welcome your input. Another topic of discussion at the TJLA Board of Directors meeting was the breed divisions in TJLA competition that do not have 20 active participants.. As some of you may recall the Board has put in place a rule to encourage participation in each division of competition. There are some breeds of competition which do not have 20 active participants in their divisions. Those divisions will be eliminated in next year’s TJLA Competition unless they gather 20 active participants by February 15 or someone decides so sponsor those divisions as outlined in the TJLA Rules and Regulations. The PeeWee divisions of competition are on what we have termed “The Endangered Species” list. Neither the PeeWee Lamb, the PeeWee Goat or the Pee Wee Swine Division has 20 members who have actively gained points in PeeWee competition. In the heifer division the Red Brahman division is in danger because it lacks 20 active members who have actually gained points in Red Brahman competition. And neither the Junior, Intermediate, or Senior Finewool divisions have 20 active participants. There are some members who received their participation points in that division, but they must actually show an animal at a sanctioned show in order to count as a participant. Some of those divisions are very close to having their twenty, and some still have a way to go. I would encourage you to get other members to participate so they will have 20 active participants by February 1. There is a provision in the TJLA Rules and Regulations for sponsoring a breed division, but it would be much easier to get others to participate and earn points. There was concern expressed to one of the superintendents about a couple of out of state entries being brought in and placed on Texas exhibitors. That discussion is slated for our February meeting along with grooming rules for lambs. There was also a complaint about a few exhibitors’ parents that are involved in a heated buckle race. The number one thing that we hope that all TJLA families teach their children is good sportsmanship. Good sportsmanship does not allow other parents to make rude remarks to other exhibitors even if they are kidding. There are rules in the rulebook which prevent this type of behavior, and infractions should be reported at both the show and the office. The Board owes a great thank you to Robbie Lehman, Diane Blackwell, Lori Kempen and Charolette and Barry Smith for getting Thanksgiving dinner together. I was sick on Thanksgiving day, and had it not been for this great group, Thanksgiving dinner might have been much different. We thank them.

Questions and Answers about the LJLA

If I belong to the heifer division of the LJLA, can I only show one heifer? No, you may show as many heifers as you please. You can only count points towards awards on a maximum of two heifers in a breed or a maximum of three heifers in a show. The heifers with the highest point totals are usually the ones that we count in the office. However, if you are trying to win a particular breed buckle, you may contact the office and tell the points person that you want to make sure that all of your points in one particular breed count. (For example: all of your Angus points if you are trying to win in the Angus division.) How does the point system work? At the Parish and District Shows there will be a set number of points given for a first, second, third, fourth, fifth, sixth, and then participation points. At the LSU Show and all sanctioned jackpot shows, the points will be weighted toward the number of animals in the class. The larger the class and the higher you place, then you earn a larger number of points. It is a sliding scale. 82 DECEMBER/JANUARY 2010 | THE SHOWBOX


What if I do not place in the top five, do I still get points? If you participate at a sanctioned show, you will get points no matter where you place. Participation points are assigned to those who place lower in the class so they are still accumulating points towards awards. When does the point year start? January 1, 2010 and it ends on December 15, 2010. All points earned during that period of time will count towards next year’s awards year.

Soups, Glorious Soups My friend Nancy Land is a wonderful cook. As I have said in earlier articles, I am embarrassed when she comes to my house. She has been writing a series of articles on recipes for the Grapeland Messenger, and she was kind enough to share them with us. Enjoy!

Soups, Glorious Soups Well, it is Fall here in East Texas, but I am already starting to think about the wonderful soups to have as main courses for lunches and maybe even dinners. This all began when I was in New York recently visiting a friend on Long Island. She knows me well and invites all her foodie friends to visit while I am there so we can talk food. One great thing about being on a lifelong diet is that you can talk food for a long time without taking in any calories. We started out by making a pot of my vegetable soup that has become a daily part of my diet. In case you are interested, here it is: Totally Vegetable Soup In a large pot, put: 1 large onion, chopped 1 whole bunch of celery, chopped 2 green peppers, chopped 4 cups of fresh baby spinach (can use frozen) 1 whole cabbage head, chopped (be sure to throw away the core) 2 zucchinis, chopped 2 yellow squash, chopped 1 large can of chopped tomatoes 1 jar of spaghetti sauce Any other fresh vegetables you have, carrots, green beans, swiss chard, turnips, mushrooms—about 2 cups of each ¼ cup of cumin Fill the pot with water and bring to a boil. Simmer for about an hour. Taste, add salt and pepper or more cumin. I like to get it tasting like tortilla soup. This makes a wonderful rich vegetable broth and soup. I keep it in the refrigerator and have it for one meal each day. Reheat only the amount that you eat so that the rest stays fresh in the refrigerator. You can brown some ground meat, pour off the fat, and add it to the soup base for a light chili, or grill some chicken breasts and add them if you want more protein. I think there is something addictive about the cumin because I have been having this soup for almost a year now and I never seem to get tired of it. Try it. It has helped me lose a lot of weight and that is definitely a good thing. After making this soup for my friends, they in turn offered a couple of other soup recipes. Pam Boles suggested this soup that she said was the best zucchini soup ever. I tried it and I think she might be right. The Best Zucchini Soup 1 large onion, chopped 6 medium zucchinis, chopped Saute the onion and zucchini in about ¼ cup olive oil until soft, but not brown. Add 4 cups of chicken or vegetable broth, 1 package of frozen lima beans, and cook for about 15 minutes. Cool, then add ½ package frozen green peas. Blend using a blender until smooth. Add salt and pepper to taste. This is a beautiful green soup. Serve hot or cold with a dollop of sour cream or yogurt on top. If you like dill, sprinkle some chopped dill on before serving. I served it warm one evening and cold for lunch the next day, and it 84 DECEMBER/JANUARY 2010 | THE SHOWBOX

was good both ways. It is very filling but rather mysterious. Let your family try to guess what the ingredients are. Jim (my husband) was convinced it had potato in it, but was pleased to find it had none. I served it with my favorite zucchini salad just because I like to highlight the versatility of this lowly vegetable. I gave you that recipe back in my first column when I was on a zucchini bender. As we lunched on this beautiful green soup, another friend suggested a very light beet borscht which I also tried and liked. Even those of you who think you do not like beets might like this soup: Borscht 6 beets, boiled and peeled (messy job), then grated 6 carrots, peeled, grated ½ head cabbage, chopped fine (I used ½ a package of chopped cole slaw mix) ½ onion, grated 6 cups chicken broth 1 teaspoon dill, dried 1 teaspoon salt ½ teaspoon pepper Simmer all of the ingredients together for about an hour. Add about 3 potatoes, peeled and quartered, and simmer until the potatoes are soft, about 30 minutes more. The potatoes will be a beautiful red on the outside and a creamy white inside. Correct the seasoning and serve. You can add a dollop of yogurt or sour cream to this soup as well if you want to serve it in the authentic Russian style. This soup is a gorgeous deep red color. If you are not on a diet, serve it with hot crusty bread and butter. If you are, like me, on a perpetual diet, forget about the bread and just enjoy the soup without the potato but with the yogurt. This is another soup that you can try hot or cold. Both are delicious. Because these soups are not made with any fats or oils, they do have oil on the surface that needs to be heated to emulsify it to make the soup appetizing. I used to think that soup was just half a meal, but I have learned an interesting thing as I have experimented with these hearty vegetable soups. A bowl of any one of these soups is a meal by itself, satisfying, and complete. I rarely want or need anything more. If you want to use these soups as a first course, serve a very small amount in a cup or small bowl so that your guests have room for your main course. I come from a tradition of over-feeding guests and it has taken years for me to realize that most people prefer to have smaller portions of a number of well-prepared dishes.

Case of the Month at Elgin Veterinary Hospital

A new show season will soon be upon us, and as we look forward to these times with anticipation of class winners and grand championships we need to consider some of the bumps in the road that may keep us from realizing our dreams. It is very evident that judges today are keyed in on structural faults that lead to problems with the way animals are presented. Some judges are more critical than others, but if cattle are lame they are definitely less likely to be considered for a high ranking in class than an animal that is sound and can move with little effort. The focus of this article is a look at a very common problem, boggy hocks (swollen hocks). (Picture 1) The Problem Boggy hocks is the number one lameness complaint in show animals presented to our hospital. There can be many causes of this problem; most begin early in the life of the animal. In cases of acute swelling, trauma is the most likely cause and may be complicated by joint infection. Hyperextension or hyper flexion of the hock can cause ligament tearing or straining causing laxity in the joint, thus instability that leads to inflammation and secondary increase in the production of joint fluid. Sometimes, small fractures may occur within the joint to produce small bone fragments, “chips”, that can act as a mechanical irritant to the joint surfaces. These cause both localized pain and swelling and can lead to more serious lameness issues. The number one cause of cattle with boggy hocks presented to our clinic is from OCD, an acronym or abbreviation for the medical term osteochondessicans. There has been a large amount of research produced Picture 1 dritis involving this condition in other species but very little reported in cattle in recent years. Current scientific research implicates both genetics and nutrition playing important roles in the development of these problems. OCD is actually a malformation of the bone structure of the joint surface, an area immediately underlying the joint surface that fails to harden or calcify as an animal matures, allowing for a defective area to develop in the joint cartilage because there is no underlying bone support. Put simply, it is like a pothole that forms in the road, the road foundation erodes away and the pavement collapses into the hole providing an irregularity in an otherwise smooth surface. We have seen these problems for years and suspected the existence of OCD, but it was difficult to prove on x-rays because the detail attained with conventional radiography was insufficient to discern OCD lesions. With the development of digital radiography we can get quality radiographs with good detail that allow us to better visualize the lesions. (picture 2) Evaluating x-rays of the hocks of cattle can be difficult, the anatomy of the joint is confusing when compared to other species and superimposition of anatomical structures can make evaluation of a normal joint difficult. Experience in evaluation is key to an accurate diagnosis and treatment plan. Other means to determine if lameness is associated with a swollen hock include the injection of a local anesthetic agent into the joint and evaluation of the joint fluid to get information about the health of the joint, including identification of an infected joint. An animal needs to be expressing some degree of lameness in order for the anesthetic to be effective. Lameness is due to pain, the anesthetic blocks the pain response and allows the animal to walk normally, thus isolating or pinpointing the area of lameness. Treatment Once a diagnosis is made, the location of the problem within the hock and the degree of involvement will dictate the treatment plan. Usually, bone fragments within the joint will need to be surgically removed if accessible anatomically. Surgery is also indicated for OCD lesions when they are accessible by an arthroscope. In these animals healing of the defect occurs after the damaged cartilage is removed and the underlying bone curetted to stimulate new bone development. Follow-up treatment is still required even with surgery; medication to reduce inflammation in the joint and restricted exercise for a period of time is needed. If the damaged or defective area cannot be corrected with surgery, there are other treatment options. Active, large volume, pressurized lavage or flushing of the joint “washes out” Picture 2 degenerative products within the joint and injection of anti-inflammatory agents and nutritive products then aid in joint healing. Although not a direct fix, experience has proved that this treatment will reduce inflammation for a time and slow the progression of the disease thus allowing market animals to reach maturity and be shown to their potential. There are parenterally administered medications available that may also help in the treatment and resolution of these problems. Such medications as Adequan® or Legend® have been used in various treatment protocols with success, but should only be administered after obtaining a diagnosis. Oral feed additives and medications have been used for years as adjunct therapy in horses with some success. These same medications have been recommended in ruminants without any study as to their efficacy. Questions have been raised whether these products actually survive bacterial degradation within the rumen and remain effective when given by this route. With the economic investment we have in most of our show animals, it is vital that we understand the problems we are trying to treat and the products we are using for treatment.
