“As a breed and association, Charolais has played a huge role here, investing in genetics and management that deliver not just more beef, but better beef.
“ay is the gateway to the summer months, the dusting off of the grill for many American households and an opportunity for the beef industry to gain additional real estate on those grills. Even amidst the high prices we’ve seen over the past year and a half, beef is holding its ground on the American dinner table – we’re still reaching for the beef in the meat case and that’s a testament to the work we’re putting in as cow-calf producers. We’re delivering the quality and consistency that ensures every steak, burger and brisket provides the eating experience consumers expect.
It’s been a wild ride for beef prices, with the all-fresh retail price averaging over $8 per pound and sirloin steak ringing up at nearly $12 a pound. Ground beef is holding steady at over $5.50. Per capita beef consumption is expected to hover right around 59 pounds per person this year. Consumers are sticking with beef even as the wallet squeeze gets tighter. It comes down to value, taste and the confidence that every bite will be worth their investment.
As a breed and association, Charolais has played a huge role here, investing in genetics and management that deliver not just more beef, but better beef. We continue to work to show that Charolais-influenced cattle are known for their efficiency, high yields, and the kind of tenderness and flavor that keeps folks coming back for more. This isn’t just talk—the launch of new consumer
outreach efforts is helping spread the word, connecting directly with shoppers and showing them why Charolais beef deserves a spot on their grill.
The numbers back it up. Fresh beef retail sales topped $40 billion in 2024, accounting for more than half of all fresh meat sales at retail. That’s a jump in value, with pounds sold also on the rise. In fact, the only thing not on the rise is cow herd numbers. Fortunately, over the past few decades, we’ve made a concerted effort to identify and move forward efficient cattle. Even with the lowest cowherd numbers on record, the industry is meeting consumer demand with 2024 commercial production estimated to have been 26.985 billion pounds, an increase of 0.1 percent over 2023.
May is Beef Month, and it’s the perfect time for every sector of the industry to reflect on demand and the quality that drives it. The investments Charolais breeders have made in genetics, animal care, and consumer education are paying off. Beef demand is not just holding steady—it’s thriving, even in the face of higher prices and tighter supplies. The opportunity is there and our mission is clear: keep telling the story, keep focusing on quality, and keep making the case for why beef—especially Charolais beef—deserve a place on every grill across America. The sizzle, the flavor, and the eating experience are what bring people together, and thanks to the work of Charolais producers, beef is ready to own the summer.

Just outside of Blackduck, Minnesota, Little Timber Farms is equipping cowcalf producers with heifer pairs that are getting the job done for their herds and profitability goals. Since 2021, Rachel Gray, co-owner of Little Timber Farms has worked with the Zehnder-Waage Partnership sale to light a fire for F1 baldie heifers and the half-Charolais calves at their side.
“We start with good quality. I’m very selective in where I source and only buy front end heifers from the ranches I work with,” Rachel told us during an interview at the Charolais booth during the 2025 National Cattleman’s Beef Association Convention and Tradeshow. “We make sure that those baldies are measured and pelvic scored and can handle a good, vigorous calf. It’s a fabulous cross and the people purchasing those pairs are coming back as repeat customers. There’s
nothing that grows like an F1 x Charolais-cross calf; we’ve never seen another cross like them.”
For the Zehnder-Waage Partnership sale, the pairs have been an attraction buyers have come to look for Chad Zehnder says.
“We want to show value for commercial producers to breed to Charolais bulls,” he says. “These F1Charolais pairs are creating a buzz. Every year, we’re getting more calls about them from people asking what they are going to bring. We’ve had several repeat buyers, including the buyer who purchased the first set of heifers. He was in the crowd bidding again this year. The only problem we have with our F1-Charolais pairs is that we never have enough of them.”
In 2024, the F1 baldie x Charolais pairs sold for $4150. During the 2025 Zehnder-Waage sale, pairs brought $4650 and were purchased by the same buyer who took home
2024’s offering.
THE CHAROLAIS ADVANTAGE
As the Region 3 winner of the NCBA Environmental Stewardship Award Program, Little Timber Farms knows about quality cattle and developing the forages needed to allow those cattle to reach their genetic potential. The operation also knows a thing or two about the importance of running cattle the entire family can enjoy.
The Charolais breed has come a long way over the past few decades.
“Everything about the Charolais cattle we’re running now compared to 30 years ago has changed,” says Rachel’s son Nick Grundmeier, who works on the family operation full-time. “They’re still vigorous, but they’re a lot easier to work with, and that’s a big deal for a family-run farm where everyone pitches in.”
For Gray, the proof is in the numbers. She is adamant about data collection and its correlation

to the heifers she sends into the commercial sector for other producers to build their herds with. One of the critical pieces of data Gray has incorporated into her record keeping is the amount of time it takes a calf to nurse after birth.
“We love to collect data on our pairs so we can pass that along to the next producer. On average, our calving time on these F1 baldies is around 60 minutes. We’re also measuring the amount of time it takes for that calf to get up and their first attempt to latch on. The Charolais cross calves are almost always around that 18 to 22 minute time frame,” she says. “And that’s important because the faster that calf is up and going, the faster it’s getting colostrum and nutrients. There’s a lot of value in an aggressive calf with a passion to live.”
A heifer development program at its core, Little Timber Farms has built a model that has kept producers coming back for more than a decade. The operation sources front end heifers from reputation ranches
throughout Minnesota and North Dakota to create the quality, F1 heifers with a background producers are looking for.
Using Zehnder-Waage genetics, Gray has found a cross that doesn’t look back when mating home developed F1 baldies with Genex’s WDZ WARROAD bull. Retaining those heifers through calving and selling as pairs, Gray, along with Zehnder-Waage have found a tremendous niche market.
“We’re selecting our heifers very critically and then doing the work before we breed them to make sure they will work for this program. The other thing you have to look at is the bull that you’re using. It’s not just a calving score EPD. You have to look at that bull phenotypically, looking at his head shape; does he have a smooth shoulder? You have to look at everything,” she says. “We may bump to a 105-pound calf but we haven’t seen any problems because the calves are shaped like rockets. The weight is in the length.”
This year’s calving window saw -47 degree temperatures with little to no set-back on calves – another
testament, Gray says, to a bull and heifers that continue to prove themselves.
For Gray, putting a calf on the ground that is heavier and vigorous is an advantage that follows throughout that animal’s life. Another advantage: F1 heifers that have calved unassisted provide an incredible range of opportunity for buyers who are looking to use Charolais genetics for their second calf.
For Gray and the ZehnderWaage Partnership, creating a niche customers continue to demand has been rewarding and one they hope will continue to grow as more producers see the value of the cross.
“One the best phone calls I’ve received: A customer called me and said, “I have a problem”.
As a heifer developer that’s not something I ever want to hear.
He said, “I have some straight Angus cows that I need to be baldies,” he laughed.
“This F1 baldie x Charolais cross outweighed my purebred Angus calves by 75 pounds at auction.”

Hello, my name is Sidney Allard and I am currently serving as an AIJCA At-Large director. I am from Sidney, NE and currently attend Kansas State University in Manhattan, KS. I am an Animal Science major with plans on continuing on to grad school for ruminant nutrition. I have shown cattle for eight years, but bought my first Charolais heifer four years ago. I enjoy showing cattle along with my sister, Sara, and couldn’t do it without my parents, Kent and Becky Allard.
Outside of the show barn, what else are you up to?
Outside of the show barn, I am involved in many clubs and organizations on campus but I love photography so you’ll probably find me taking pictures .
What do you want to accomplish with your time on the AIJCA Board?
During my time on the AIJCA Board, I want to connect with our junior members and bring some unique ideas to the association. I really looked up to the Jr. Board when I first started showing Charolais cattle, so I want to be someone our members can look up to and depend on.
Tell us about your 1st Junior National: My first Junior National was in Grand Island, Nebraska in 2022. I exhibited my heifer, Josie, as well as competing in showmanship, team fitting, team sales, and quiz bowl! I had so much fun and met a ton of new friends!
What are your future plans?
I plan on finishing my Bachelor’s degree in Animal Sciences and Industry. Then I will go on to start a Masters in ruminant nutrition with the end goal of completing a Ph.D. Ideally, I would consult with feedlots or work for a show feed company developing feed rations.
What is one thing you would say to someone interested in joining the Charolais breed?
The Charolais breed is such a good community and truly has become my family. Joining the AIJCA was one of my best decisions and while it seems daunting at first, everyone is always willing to help or answer questions!
If you could have lunch with any 3 people who would they be?
If I could have lunch with any three people, I would choose Johnny Cash, Anna Kobza, and my grandpa!.
How can we use our platform for good?
Promoting the use of Charolais cattle and beef is important to help our breed continue to grow and flourish! I like interacting with non-agriculture people and teaching them about raising beef cattle. It’s important to teach rather than argue so that people develop an understanding and respect for our industry.

Membership in the nationwide American-International Junior Charolais Association (AIJCA) is open to anyone 21 years of age and under as of January 1 of the present year. The initial membership fee is $30 and $25 annual dues thereafter.
The American-International Charolais Association’s Dam of Distinction program recognizes dams that have consistently weaned calves with above average weaning weights and have been regular producers with 380 days or less calving intervals.
Must have produced seven calves by the time they are nine years old.
Must have produced three calves by the time they are five years old.
For both awards, the calving intervals must be 380 days or less. Also, all calves must have weaning weight ratios of 101 or higher, or the dam's average progeny weaning weight ratio must be 106 or higher for dams with one calf below average for weaning ratio.

How did you get into showing cattle? And more specifically Charolais?
Lily- I started showing Charolais when I was 10 with a steer. Since then, I’ve shown many other breeds but always come back to Charolais. There is just something special about these cattle, the juniors, this association, and getting to experience all the different things the Charolais breed has to offer.
Claire- We have raised cattle my whole life, but my sister started showing first before I was old enough and I found the same joy in Charolais as she does when I was old enough to start showing.
What gets you out of bed in the morning? What’s your why?
Lily- My why each morning is that there is always someone working harder than you and all you can do about it is work harder than you did yesterday. #OutWorkEveryone
Claire- What gets me out of bed in the morning is thinking of how the armor of God helps us fight a battle against evil. So, I know, I can get people to help me fight this battle by sharing the gospel with everyone.
What is one thing you’d tell somebody to get them involved in our breed?
Lily- One thing I would say to encourage someone to get them involved in our breed would be that by getting involved with Charolais, you can tap into a highly efficient breed that consistently delivers high-quality, lean meat, helping to maximize both profitability and the potential for longterm success in the cattle industry. Plus, they have a calm temperament making them relatively easy to handle compared to some other breeds.
Claire- I would share how the Charolais Association becomes like an extended family, and everyone is always willing to help others. The Charolais association also helped me make many friends from many different states.
You’ve been allowed to create the highest quality show heifer ever made, what does she look like?
Lily & Claire- Our highest quality show heifer would have a balanced and symmetrical body, with a straight top line and good muscle tone. She would have a deep, wide chest and a strong, level back. Good leg structure is important too, perfectly powerful legs and soundness. She would also have a great personality.

Every May, the beef community comes together to celebrate National Beef Month—a tradition that highlights the essential role of beef in American households and honors the ranchers and farmers who make it possible. As producers, May is more than a celebration; it’s an opportunity to share our story, how beef is raised and why it should be a staple on the dinner plate. At this year’s National Cattleman’s Beef Association Annual Convention and Tradeshow, Dr. Shalene McNeill, PhD, RD, and Executive Director of Nutrition Science, Health and Wellness for the National Cattlemen’s Beef Association shared insight into the work she has been doing on the ranching community and beef industry’s behalf for more than two decades.
“I’ve seen firsthand the important role that beef has played in my own health and wellbeing,” she told attendees of the Cattleman’s College luncheon. “If there’s a study, an article or a professional argument about beef, chances are, I’ve probably seen or heard it. And I can honestly tell you that I have never lost a wink of sleep worrying about negative health implications of beef. In fact, I honestly worry more about vulnerable populations around the world who are being discouraged from beef eating for health.”
We’ve
The seventies, eighties and nineties were hard on beef demand. Dramatic declines in beef consumption resulted in market disrupting demand reduction, and while many economic drivers played a role, nutrition narratives skewed
public perception of beef in a healthy diet. Beef was vilified on the dinner plate with the 1977 Senate Select Committee, led by George McGovern, calling for Americans to decrease their consumption of beef for concerns of saturated fat and dietary cholesterol.
The legislative shortcoming generated the first dietary guidelines for Americans in 1980 and sent negative ripples through the beef industry that have taken decades to undo, with some still lingering amongst the ill-guided perceptions of consumers. Misinformation also fueled vegan physicians who used the information to advance animal rights agendas that had nothing to do with nutrition.
“We saw scientists like Walter Willett from Harvard University, who literally built his entire
“Consumers are looking for physical nourishment, of course. But they are also looking for social nourishment and emotional nourishment from the foods they eat,” she said. “As we think about the future of our food supply and our beef industry, we all need to be a part of the conversation.”
scientific career blaming beef for all things that ailed Americans. We just had a negative drumbeat of media that continued to reinforce and discourage Americans from consuming beef,” McNeill shared. “Even generations of health professionals, including myself, were discouraged from advising people to eat beef for health.”
By the early 1990’s the beef industry had a lot of catching up to do.
“We began to prioritize nutrition research,” McNeill said, adding that with the adoption of the Beef Checkoff program in the 1985 farm bill, funding became available to reach the consumer’s dinner table. “We have been able to invest a commitment over decades to demonstrate that you absolutely do not have to cut back on beef in order to achieve great heart health.”
Nutrition research led to new information and new perceptions of beef within medical and nutrition communities. Today, most leading cardiovascular researchers no longer believe that you have to cut back on dietary saturated fat for heart health.
Changing the Conversation
The headlines have been changing. Beef has a positive story to tell, and our consumers have changed as well.
Today, over three quarters of beef consumers agree that beef
is nutritious, in fact, nutrition is a demand driver as consumers view beef as a top source of protein.
“The stronger our scientific methods get, the better the case for beef gets,” McNeill said. “We have very strong evidence of beef’s role in a healthy diet.”
There’s no “perfect” human diet, McNeill admits. Humans can thrive on many different foodstuffs to achieve great health. However, one scientific fact that cannot be disputed is the importance of dietary protein.
Dietary protein is one of the most essential nutrients to the human body. Every single tissue in the human body requires the essential amino acids found in high quality proteins – like beef. Unfortunately, it took more than 30 years of misleading dietary guidelines before optimizing protein intake for human health became a discussion of scientific committees.
Since the early 2000’s Beef Checkoff funding has helped to reinvigorate protein research. The results have been incredibly impactful for the story beef has to tell.
“Today, protein is the most sought after nutrient that health conscious consumers are looking for when they’re eating healthier. And over half of Americans say that they’re looking to be on some sort of healthier eating plan – they’re
going to high protein diets. That is awesome progress for our industry, and it’s only going to get better,” explained McNeill.
One out of every eight consumers is using a weight loss drug to help them lose and maintain a healthy weight. Unfortunately, rapid weight loss can also lead to rapid muscle loss. To protect muscle mass, protein rich foods, and let’s be honest few are as protein rich as beef, are being encouraged to supplement these weight loss drugs. The implications for beef producers and the industry is huge and show no signs of weakening.
“Beef is a super food, no other food delivers the great nutrition beef delivers in a food package that people are so excited to consume,” McNeill offered.
McNeill left attendees with the realization that while consumer demand is strong, it is no time for the industry to rest. Diversity, she said, is still an incredible important part of the American diet. This fact is both an opportunity and a challenge for our industry, she noted.
“Consumers are looking for physical nourishment, of course. But they are also looking for social nourishment and emotional nourishment from the foods they eat,” she said. “As we think about the future of our food supply and our beef industry, we all need to be a part of the conversation.”
