of settlers from Antioquia–led by Jesus Maria Ocampo, alias the Tiger slayer–reached these blessed high mountain lands with gentle hills and fertile valleys to clear the brush and settle with their oversize families. Armenia had not yet turned 80 years old and it was already called a city, because it was declared capital of the new province of Quindío in 1966, the “green heart” of Colombia. It was then known as “Miracle City”, because it quickly reached the level of its three-hundred-year-old sisters. And it proved to be a miracle, because, after the devastating earthquake of January 25, 1999, it took flight, emerging from the rubble to become this marvelous city that today welcomes thousands who enjoy its privileged location. Other eleven municipalities, featuring diverse landscapes and climates, surround the capital of the province that was declared a World Heritage Site by Unesco in 2011, thanks to the awe-inspiring beauty of its natural landscape. hasta 1889, cuando un grupo de colonizadores, provenientes de Antioquia y liderados por Jesús María Ocampo, el Tigrero, arribaron a estas bendecidas tierras de altas montañas, suaves colinas y fértiles valles a tumbar monte y asentar sus inmensas familias. No había cumplido aún los 80 años y ya era llamada ciudad, pues en 1966 fue declarada capital del nuevo departamento del Quindío, el “corazón verde” de Colombia. Fue entonces conocida como la “Ciudad milagro”, gracias a que rápidamente se puso al nivel de sus tricentenarias congéneres. Y demostró ser un milagro, pues, luego del terrible terremoto del 25 de enero de 1999, alzó vuelo de entre los escombros para convertirse en esta maravilla de ciudad que hoy acoge a miles que disfrutan de su ubicación privilegiada. Otros once municipios, de paisajes y climas diversos, circundan la capital de un departamento que en el 2011 fue declarado Patrimonio de la Humanidad por la Unesco, gracias a la impresionante belleza de su paisaje natural.

César Restrepo comenzó a elaborar, a puerta cerrada y por encargo, tres tortas principales: de chocolate, María Luisa y genovesa, que ha mantenido en el tiempo. Sin embargo, no era justo que estas delicias fueran exclusivas para unos pocos, entonces, el público en general comenzó a presionar para que también pudiera disfrutar de estas exquisiteces; así que César amplió su oferta a postres, panadería y, gracias a sus conocimientos en cocina, abrió también el restaurante. Fue tanta la demanda, que tuvieron que ocupar la casa colonial bellísimamente decorada que ocupa en la actualidad y en la que se realizan diferentes actividades, como veladas culturales con música en vivo. Es un delicioso lugar de visita obligada en el municipio de Santa Rosa de Cabal.
