The success and longevity of a business are often attributed to its executives. However, at Jani-King Gulf Coast, Co-CEO’s Chance Enmon and Casey Lambert are quick to credit their dedicated leadership team and staff. JJ O’NEIL, PRESIDENT

JJ O’Neil started as a salesman in 2006. He was then promoted to Regional Director, and in 2012, he became Regional Vice President to support new office openings and oversee regional directors.

In 2023, JJ was named President of Jani-King Gulf Coast. Known among his peers as “the tip of the spear” in business execution, JJ now oversees the entire organization. He values Jani-King’s family-owned roots and culture-first approach, and he supports over 450 franchise owners with a strong sense of responsibility that he encourages throughout the company.

Melissa Stanga is approaching her fifteenth year, having started as an assistant controller. Over the years, she has transformed the company’s accounting processes and built a strong team around her, enabling the organization to grow and thrive.

Al Hebert brings over two decades of operations experience to his leadership role. He oversees both sales and day-to-day operations across the entire Gulf Coast region.

His role involves supporting regional teams with growth decisions, hiring, performance metrics, and helping them navigate tough choices. What Al values most about Jani-King is the company’s genuine focus on its people. It’s a principle they practice every day and strive to instill throughout the entire region.

Melissa works closely with middle management to help bring people on board. She has a particular talent for leadership development and training; in this, she makes a lasting impact on the organization. In her role, Melissa oversees all finance and accounting functions for the organization.

DESTIN SIMS, GENERAL COUNSEL

Destin Sims has been with Jani-King Gulf Coast for 10 years. She began part-time while serving as a public defender for the City of Hammond Juvenile Court. She had done extensive work with children and was reluctant to leave that role, but the challenges of COVID led her to accept a full-time position with Jani-King.

Having an in-house lawyer as part of the executive team has been invaluable. Destin is involved in day-to-day decisions and has the trust of franchise owners. Having spent years working in Colorado, she’s thankful to be able to come home and be near her family while working for a great, local company.

LEOS AND LIONS FOR

Little Ones

LEOs (Law Enforcement Officers) and Lions for Little Ones is the result of years of planning and hard work by the Southeastern Louisiana University Police Department. The program, developed in 2022, is the brain-child of Captain Ronald Plaisance. He and Sergeant Michelle Blanchard collaborated to establish an organization that collects toys for patients at the Children’s Hospit al of New Orleans throughout the year, with a special emphasis during the holidays.

“I

Captain Plaisance was inspired to create a toy driv e by his cousin, who has been successfully hosting toy drives on the Westbank for the last 15 years. He knew they could help the community come together and give back. Each toy donated is distributed to children who cannot be with their families for the holidays.

“SLU President Dr. William Wainwright's wife Misty has become our #1 spokesperson,” shared Plaisance, “We are so appreciative that she is willing to spread our message. With her help, I know we’ll be even more successful this year.”

Another spokesperson is an officer of few words. Canine Officer Perci, a Yellow Lab trained in explosive detection, is the newest member of the SLU Police Department. Sergeant Blanchard works one-on-one with K-9 Perci, and together they use Perci’s influence to raise awareness of the cause. There have been many Perci appearances, such as the toy drive held at PetSmart on November 15 . “We had a great turnout that day,” Sergeant Blanchard shared.

New and unwrapped toys can be dropped off in the UPD lobby 24/7. Those who prefer to shop electronically can scan the QR code to the right to purchase a toy from the approved list on the UPD’s Amazon page. The online orders will be shipped directly to Captain Plaisance’s team.

Participants can choose toys for every age, ranging from newborn to teenagers. This includes books, games, and electronics. For more information on what types of toys can be donated, consult the Children’s Hospital’s approved toy list. Keep in mind that non-approved toys cannot be donated. The organization is not able to accept monetary donations; however, non-toy items such as tape and wrapping paper are greatly appreciated.

The donated items are first inspected by the hospital staff. The toys are then set out for parents to “shop” and select the ones they feel best suit their child. After which, the toys are wrapped and delivered to the patients on Christmas morning.

When it comes to caring for the parish's seniors, the Tangipahoa Voluntary Council on Aging, a parish-wide agency, is second to none. With five senior centers and a range of programs, they're a lifeline for many older adults in the community. The centers are located in Amite, Hammond, Independence, Kentwood, and Ponchatoula. They are open from 8:30 am - 1:30 pm, MondayFriday. We sat down with Executive Director Debi Fleming and Hammond Area Supervisor, Beverly Brazil, to learn more about their vital work.

More Than a Place to Hang Out

The Council's senior centers are bustling hubs of activity. From exercise classes to arts and crafts, bingo, and Bible study, there's something for everyone. The seniors make friends and look forward to seeing each other every day. "We're all on the same path, just in a different place," Debi says with a smile. “Here, we’re a family. If someone doesn’t show up for a couple of days, we’re going to visit their home to be sure there isn’t something wrong.”

Reaching Out

For seniors who are home-bound, the Council's home-delivered meals program is a lifesaver. Two dedicated drivers deliver meals to around 250 people every week, providing not just nourishment but also a friendly face. They also offer Homemaker Services, which generally include the bedroom, bathroom, living room, and kitchen.

Trained staff visit the homes of individuals who request services such as home-delivered meals and homemaker. Living conditions, isolation, economic situations, and physical limitations are considered and discussed with the individual and their caregivers to determine needs and the services to be provided.

A Labor of Love

The Tangipahoa Voluntary Council on Aging is more than just an organization – it's a labor of love. Debi and her team are dedicated to making a difference in the lives of seniors, and it shows in the way they care for their clients. With a 15-member Board of Directors overseeing their work, you can be sure that every dollar is being used effectively.

The Funding Challenge

Despite their best efforts, the Council faces significant funding challenges. With only 50% of their costs covered by federal and state funding, they rely on local donations, grants, and fundraising events to make up the shortfall. Their annual "Walk for Seniors" fundraiser is a highlight of the year, but they need more support to keep their services going.

Around

Doesn't Have to Be a Problem

One of the biggest challenges seniors face is getting around. That's where the Council's Transportation Program comes in. For just $9 one way, residents can travel anywhere in the parish. Anyone 60 or older is asked to make a donation, if possible, rather than pay the full fee. The Council's drivers are trained to assist seniors with mobility issues, and their vehicles are wheelchair-accessible. Rides must be scheduled 24 hours in advance.

The Council also offers three fixed routes that operate on a loop from 8 AM until 4 PM, Monday through Friday. There are three routes: one in the city of Hammond, one in the city of Ponchatoula, and one that runs from downtown Hammond to North Oaks Medical Center along Hwy 51. The Oliphant Family is Redefining Dining in Tangipahoa Parish

Ifyou’ve ever wondered what really fresh food tastes like, then you need to pull up a chair at Benteaux Cajun Asian Fusion, a family-run restaurant in downtown Hammond. This cozy eatery has built a loyal following—not just for its mouthwatering seasonal dishes, but for the way it sources every ingredient. From eggs and milk to meat and vegetables, nearly everything on your plate comes straight from local farms.

The Oliphant family owns and operates not only Benteaux, but also The Depeaux in Independence. We recently had the opportunity to speak with Chef Trenten Oliphant and gather his insights on local sourcing.

“We’re not just buying produce—we’re building relationships,” says Head Chef and co-owner, Trenten Oliphant. “I know the names of the people who care for the chickens that lay our eggs. Heck, I'm even friends with the cows who produce our dairy products. That connection adds a layer of integrity and flavor you can’t get from a distributor.”

At a time when most restaurants are focused on cutting costs and importing bulk goods, the Oliphants have taken a different route: one that goes back to the roots of good food—literally. The family partners with nine nearby farms, such as Faust Farms in Independence, Sinagra Family Dairy in Amite and Red Hill Bee Farm in Independence. These collaborations ensure the kitchens are always stocked with the freshest ingredients possible, while also supporting our local agricultural community.

And you can taste the difference. The lettuce from Faust Farms is picked fresh and brought to the restaurants within hours, and the farm-fresh eggs are a revelation compared to your average grocery store dozen. A&A Acres is their source for chicken that’s tender and flavorful, thanks to the farm’s pasture-raised, hormone-free practices.

But it's more than the taste—it’s also about sustainability. By sourcing locally, the Oliphants reduce carbon emissions from transportation, minimize packaging waste, and help preserve local farms. This community-conscious approach hasn’t gone unnoticed. Locals have embraced the restaurants not only for their delicious dishes but also for their value. On any given day, you’ll see a mix of families, date-night diners, and solo foodies enjoying meals. This fills the Oliphants with a sense of pride—knowing their dollars are going back into the community.

At the age of nine or ten, long before they could pour a drink, twin brothers Rickie and Dickie Brocato were mopping floors and cleaning the brass spittoons at their family’s business, The Crescent Bar. As a staple in Hammond, The Crescent has brought people together for 87 years, serving as a gathering place for the community across generations.

Brothers Tommy and Vincent Brocato were the first American-born generation of their Sicilian family. Their father, Joe Brocato, immigrated to the United States at the age of sixteen from Sicily to start a new life. As the era of the Great Depression and Prohibition had passed, Tommy opened the doors to the Crescent Bar in September 1938, and he was soon joined by his brother Vincent to help run the business.

In 1941, just after opening the Crescent, Tommy was drafted into the Army and sent to Europe, serving in a tank battalion under General Patton. Dick volunteered for service in the South Pacific. Upon his return home from WWII, Tommy was surprised by a notice from the landlord that the Crescent had to move, forcing its relocation from North Cate Street to East Thomas Street.

Under the care of Tommy and Vincent, The Crescent thrived for more than thirty years as Downtown Hammond grew rapidly throughout the 1950s and 1960s. When the brothers retired in 1972, Vincent’s son Dick took over the business. That same year, Dick’s sons Rickie and Dickie graduated from high school and began working alongside their father behind the bar.

After graduating from Southeastern Louisiana University (SLU) in 1977, Rickie and Dickie took a steady role in running The Crescent. When their father passed away in 1995, these younger Brocato brothers carried on the family legacy while strengthening the bar’s ties to the community and SLU.

In 2010, Rickie bought his brother Dickie out of the business, and a familiar face, Claude Hooks, stepped up to help run the bar. Claude began working at The Crescent in 2000 and quickly became Rickie’s right-hand man before moving into the managerial role. Like many Hammondites, Claude knew of The Crescent long before ever stepping inside. “When our parents went out, they left us three emergency numbers: the Crescent Bar, the police station, and the fire department. They told us to call in that order,” he recalls. On September 15, 2025, Claude became the official owner of The Crescent Bar. Though he does not share the Brocato last name, Rickie describes him as family and takes pride in seeing him carry on the Crescent legacy.

Employees and patrons, past and present, describe The Crescent Bar as a place of life lessons, grace, and kindness. The Brocato family always cared for their people, occasionally helping with college tuition or lending a hand in hard times. When asked where his kindness comes from, Rickie credits his elders: “When they spoke and did things, I paid attention.” Today, Claude Hooks carries on that same spirit as the Crescent’s owner, ensuring the family legacy continues on both sides of the bar.

Scott Henderson is a proud product of Tangipahoa Parish! He is a member of the parish's Henderson and Liuzza families who, for five generations, are known locally for their farms, produce retail markets, and event venues. Scott has enthusiastically made his own mark and added to his family’s tradition of supporting our parish. Raised in Ponchatoula, Scott graduated from Saint Thomas Aquinas Regional Catholic High School (’05).

While attending Southeastern Louisiana University, at the age of 19, he opened what is now Buddies' Steakhouse which has received numerous accolades for “best steak in the parish.” In 2012 Scott and his mother Cindy developed a restaurant concept featuring healthy, fresh, local “fast food” and the first Salad Station was born on Fagan Drive in Hammond. Today, Salad Station has 33 locations in seven states! His most recent venture has found him owning Tommy’s Pizza in downtown Hammond.

Tommy’s has been a passion project and his mission has been to “Make Tommy’s Great Again,” and he’s doing just that. His passion for the restaurant business and work ethic drive his life as he serves the community and provides for his wife, Kaylin and their children Kaylee(7), Preslee (5) and Braxton (3). When not spending time with family and work, these are his 5 Favorite Things…
