Signature SIPS How to Batch Craft Cocktails for a Crowd Editorial Director Lauren Barisic Photographer Don Dizon
There’s something about this time of year that draws people together, often with a drink in hand and food on the table. And while food is foundational to sustaining any event worth attending, spirits tend to be responsible for partygoers getting into, well, the spirit. But when you’re the one hosting the event, the last thing you should be is a slave to your bar. This is where the art of batched craft cocktails becomes a party trick you’ll want to master when playing host.

Invest in Various Vessels
Think About Function
If you don’t have a punchbowl, get one. If you’re already questioning this advice, trust that this is one of those pieces that will get more action than you might anticipate. It’s pretty on display (which should inspire you to find ways to use it more), and its function doesn’t have to be limited to retaining occasional liquid contents (mine has corralled everything from decorative gourds and fruit to dog leashes and dinner rolls).
Speaking of the “roughly” part, not all punch need be spiked. Sometimes it’s even more fun to concoct a versatile alcohol-free (or only mildly boozed) base and then offer an array of spirits for guests to choose between. It’s also lovely to leave a bottle of bubbly out for anyone who likes a little fizz, and nothing says “party” like Champagne. Plus, if you pick an effervescent component (ginger ale and hard cider make excellent alternatives here), consider adding a bit of edible glitter to the mix—when sparkle meets bubbles, the result is glimmer from any glass.
Now for the reasons why the punchbowl is the matriarch of vessels in the realm of premade libations for small- to medium-size gatherings. Firstly, it doubles as a focal point—its prime placement on the table or counter makes it easy to build out your bar setup around it. The wide-open mouth is practically begging for festive floating garnishes—another little detail that makes it look like you put way more effort into this setup than you inevitably will. A pretty pitcher will also suffice—it’s just better to go with a clear glass option so that the contents are visible. People eat (and drink) with their eyes first, so give them something to desire. Beautiful colors, ice shadows, fruit slices or chunks, intact spices (anise stars, cinnamon sticks), herbs (rosemary sprigs, basil or sage leaves), and even whole berries become eye candy when added to the mix. Add a bowl (or two, or three) of whatever featured adornment is on display so that guests may be inspired to garnish their own glasses. There’s a communal vibe that accompanies the punchbowl especially, and this mindset can be carried over to pitchers and even upright drink decanters. When everyone serves themselves from a common setup, the source becomes an interactive point, especially when given the need for a ladle and/or spigot. And everyone drinking “roughly” the same drink has a way of bonding the crowd. Trust that it’ll create camaraderie, which will help fuel the vibe you obviously were after by hosting a party in the first place.
If you did your job right, you’ll need to refill at some point. If you have the means to store more mix in the fridge, do so. If not, you’ll need to make it easy to recreate your recipe fast. This is where keeping ratios simple will benefit you greatly. Use your bottles as “part points” whenever possible. Here’s a favorite holiday recipe—the Fireside Royale Punch—that illustrates this concept well: ½ of a large bottle of pomegranate juice, 2 cans of blood orange ginger beer, ½ of a bottle of spiced rum, and ½ of a small bottle of Grand Marnier, floated with Champagne that is held off to the side. Ginger beer often comes in a 4-pack, so all the ingredients above are simply halved for serving. Either hold their bottles and cans separately (in the fridge or in an ice chest concealed by the tablecloth under the serving station for easy access), or have the flat liquids mixed and ready to be added to the bubbles. Note that anything carbonated should not be premixed so as to keep the sparkle alive. Also, do not forget to have more garnishes on hand in case they’ve been severely commandeered in the self-serve process.
Garnish & Chill Smartly A general note on garnishes: keep them simple. Nothing kills the build-your-own hype like something you struggle to build yourself. For example, if you’re serving Bloody Marys and want to have all the fixings, consider having them skewered and neatly displayed so that all your guests have to do is pick up a stalk and a stick—they should not be implored to figure out how to get all the goods attached to the rim of their glass. Same thinking for anything that goes rimside—precut the slice that makes attachment possible before setting it out. Resist the urge to load up on garnishes, as well. Nothing is more annoying than fighting a barricade of fruit, spices, and leaves that are hell-bent on acting as a tiny dam between you and your next sip. Pick one or two, maybe three—and I say maybe because I do love an orange slice, whole pom arils, and a cinnamon stick placed properly in the punch glass from the above recipe. But that’s where ice can either make or break your sip sanity. Ice! There are a couple of fun methods available here. For the punchbowl concept, a giant ice block functions ideally (since it’ll melt at a slower rate than ice cubes), and it’s an opportunity to add some panache to the presentation. Try freezing a Bundt cake pan filled with water—just dip the exterior in warm water to release the ice mold and place it in your punchbowl before adding the main event. For pitchers or decanters, opt for standard to large ice cubes over pebble or crushed ice, if using any at all, to slow the same inevitable melt. This should go without saying, but only use filtered water for drink ice so as to ensure nothing convolutes the flavor profile. Crushed, cubed, or pebble ice (preference depends on the cocktail) can be held in an ice bucket and should always have tongs or a small scoop conveniently placed alongside. Specialty ice blocks and spheres can be made infinitely ahead of time and held in the freezer. Once out for service, wrapping them in a clean, dry cloth can help insulate the ice and slow the melting. The need for only a single large piece of ice won’t dilute your drinks as quickly and simply feels special. Sometimes it’s nice to “demonstrate” the drink assembly on a communal setup so as to “teach” onlookers how to do it while simultaneously being a good host by making your guests’ drinks. But this method also makes it easy for them to DIY their refills. The guesswork should already be removed from the self-serve setup as much as possible. Following the Fireside Royale Punch garnish example seen here, it is better to place the orange slice at the bottom of the glass to weigh it down, add the ice to keep it in place, ladle in the punch (which will likely come with some straggler arils) and place the cinnamon stick on top with the Champagne to act as both a pseudo-stirrer and a way to release aromatics with every sip. At the end of the day, the best signature sips should feel considered, not complicated. A handsome vessel, smart ice, a well-placed garnish, and a little forethought will do most of the work before the first guest arrives. After all, the point of batching cocktails is not to make your bar look impressive—it’s to make hosting look effortless. Pour accordingly, then step away from the punchbowl and join the party you so graciously arranged for everyone else.

INHERITED I opened my first shop in the spring of 1977—nine hundred square
feet, no heat, no air conditioning, and a hand-lettered sign out front. I was a florist then, teaching myself as I went, filling orders and making deliveries, with my daughter coming in after class to help. Over the
years, the business changed. Flowers gave way to fine china, crystal,
gifts, and a bridal registry, and Vonda’s grew into a larger store in a new location—a destination for generations of Fresno brides and gift-givers. But through all those changes, one idea remained the same: a table set with care tells people that they matter to you.
TASTE M
y daughter didn’t first learn that in the shop. She learned it at home, simply by watching me prepare for people to arrive. Long before I collected fine dinnerware for myself, I understood that a memorable gathering begins with more than what is on the table. It is where people sit, what’s playing softly in the background, the flowers, the lighting, and how a room feels the moment someone walks through the door. The beautiful dinnerware came later. The feeling came first.
Over a lifetime of entertaining, you naturally collect things for different occasions—stainless flatware for everyday and something special for a more formal evening, glasses chosen for whatever is being poured, dishes that move from casual dinners to holidays and celebrations. I have always loved beautiful things, but no plate or glass creates a memorable table on its own. The pleasure is in bringing everything together and, just as importantly, knowing when to keep things simple. The best tables feel considered without feeling contrived. What has surprised me most is seeing that instinct travel through our family. I see it in my daughter, entertaining in Park City, Utah, where the mountain light does half the work for you. I see it in my daughters-in-law, creating traditions in their own homes, and now in my grandchildren, grown and choosing dishes for homes of their own, often with my help. Their tables don’t look like mine, nor should they. Taste isn’t passed down by copying someone else. You take what you grew up with, make it your own, and eventually pass some version of it along.
Features Contributor Vonda Flanigan Photographer Katie Flanigan
Of course, I was doing the same thing long before I realized it. I still make my mother’s meatloaf recipe for Sunday dinner, just as she made it for our family. There is nothing particularly formal about meatloaf, but that may be the point. Tradition isn’t reserved for the good china or important occasions. Sometimes it is simply a familiar dish on the table and the people you love knowing exactly what it will taste like before they take the first bite. Perhaps that is what we sometimes miss about tablescapes. They may look like decoration, but they can become a kind of inheritance—handed down through Sunday dinners, birthdays, holidays, and ordinary evenings. A platter becomes the Thanksgiving platter. A set of glasses comes out for celebrations. A recipe becomes the one everyone expects when the family is together. Eventually, these small rituals become part of a family’s history. Looking back, I realize the most important thing I passed along wasn’t a trade or a particular way of setting a table. It was the instinct to make a room feel welcoming before the first guest ever arrives. Beautiful things can help us do that, but their real value comes from how we use them and the memories that gather around them. A table set with care is simply love made visible. And that may be the most enduring tradition any of us can pass along.

HOSTESS WI TH
T H E
MO S T EST
A SIMPLE GUIDE TO PLANNING, PREPPING, AND PULLING OFF A SOIRÉE THAT FEELS EFFORTLESS, EVEN WHEN IT ISN’T. Features Contributor Micshel Kalkowski Photo courtesy of Soirée by Micshel
When it comes to entertaining, guests may not always remember what they had to eat, but they will remember how you made them feel. It’s important to be prepared so you don’t stress or feel overwhelmed. This will also help you host a memorable soirée without spending the entire evening in the kitchen. Here are a few tips for hosting a successful event. START WITH THE INVITATION
CREATING THE MENU
First of all, what is the occasion? Is it a couples’ dinner party, a girls’ night, birthday or cocktail party? That will help determine the overall theme of the evening. Let the occasion determine the food, drinks, décor, and dress code. Themes always make it fun and feel more intentional. Plus, they are a great guide for where you are headed.
If you are not a wine connoisseur, that’s okay! There are lots of great local wine shops or specialty grocers that will be glad to help with picking out wine at all different price points. Come with your menu planned, and they can help you curate the perfect pairing.
After you have the occasion and theme, it’s time to invite guests. Give your invitation a bit of personality—it sets the tone for the evening. If it’s a casual girls’ night, an informal text invitation will do. But for a more formal dinner party, you might need something a little more polished, like a digital or printed invitation. Don’t be afraid to come up with a clever header like “Less Whining and More Wine” or “Tacos and Tequila Time”. If it’s more of a formal event, “The Epicurean Exchange” adds a bit of intrigue. Make sure to have all the basic information in the text, Evite, or mailed invitation. Include the date, time, location, whether it’s an “open house” or a sit-down dinner, and, of course, an RSVP deadline. For a more formal evening, be sure to include the dress code. If you are having a sit-down dinner, consider sending invitations two to three weeks ahead. For a more casual gathering, seven to ten days is usually plenty.
You don’t need to have a full bar to have a successful event. I like to start my guests off with a glass of Prosecco or a themed signature drink. Hostess tip: have your signature drinks mixed before the guests arrive. Then all you will have to do is add ice, a sprig, or a lemon slice, depending on what you are serving. Don’t forget about your non-alcoholic drinkers. Ensure that there is sparkling water and a mocktail on hand. This makes everyone feel included. Be sure to have plenty of ice, especially if it’s summertime. Keep the garnishes on hand; think Luxardo cherries for your Old Fashioneds or fresh mint for a Hugo Spritz. They are inexpensive additions but make all the difference. It might be worth it to rent glasses that are appropriate for the drinks you are serving. No one wants champagne in a rocks glass! Again, it’s a small expense, but it makes a big impact.
When creating your appetizer menu, think salty + savory + fresh + crunchy. You don’t have to have 10 different kinds either—three to four are plenty. I like to keep it simple. Everyone loves different cheeses, nuts, meats, and fruits with crackers or crostini. I also like to include at least one warm appetizer, like roasted garlic and goat cheese. It makes your house smell amazing and inviting. Include mini plates and cocktail napkins that go with your theme. Hostess tip: know if any of your guests have a food allergy. If your party includes dinner, be sure to have it largely prepared ahead of time. You don’t want to be tied to the kitchen instead of socializing with your guests. Know your guests. Are these people who expect coq au vin, or are they more like meat-and-potatoes people?
TIMING ACCORDINGLY For parties starting at 6:30PM, plan on being ready to go at 6 o’clock. Nothing is more uncomfortable for both the host and guests than when the host is running around. First, prepare your food. Work on your most difficult dishes first. Don’t worry about mixing store-bought with homemade. If it is store-bought, simply take it out of the container and add an edible flower or greenery. Hostess tip: the night before, set your table, prep your ingredients, make dips, arrange flowers, chill wine, and set out the serving dishes you will be using. Setting the atmosphere is so important. Dim the lights, light the candles, play music that isn’t overpowering and is at a nice volume, and create different heights on the table without overcrowding it. Remember to check the bathroom! Make sure it is clean, has fresh towels, dim lighting, an empty trash can, extra toilet paper, and nice hand soap. Hostess tip: don’t use candles that are too overpowering— use them more for lighting and not in a way that overpowers the good smells coming from your kitchen. A good party has a rhythm. When guests arrive, have something immediately available for them, whether it’s a drink or an appetizer. After 20 to 30 minutes, bring out a more substantial appetizer. But don’t fill them up too much if you are serving dinner. Don’t rush dessert—some of the best conversations happen after the meal. You may want to serve decaf coffee or a final cocktail, depending on the mood. About 15 minutes before guests arrive, change your clothes, check your hair, make sure the dishes are done, pour yourself a drink, and take a breath! Then you’re ready to greet people instead of welcoming them while holding a dishtowel. Most importantly, be present and authentic. They won’t notice the missing paint or scratch on your cupboard unless you apologize for it. They are there to enjoy your company, not for a stuffy evening. You don’t have to be perfect. Just be present.

SOCIAL affair Fire and Ice 2026
FIRE AND ICE 2026 Benefiting the Bob Smittcamp Family Neurosciences Institute Photographer Don Dizon Founders Club’s signature event, Fire and Ice, returned for its fourth year on Saturday, September 19th, bringing together 350 guests for an unforgettable evening of philanthropy and celebration. Attendees enjoyed exceptional cuisine, live music, dancing, and an exciting auction, all while contributing critical funds totaling over $560,000 to advance neurosciences care and research. One of the evening’s most inspiring moments was hearing Jace’s story. A Community patient who spent years living with an essential tremor, Jace experienced firsthand the life-changing impact of deep brain stimulation surgery. Today, his tremors are significantly reduced, allowing him to regain independence and enjoy everyday moments that once seemed out of reach. His story served as a powerful reminder of how innovation and philanthropy can transform lives. The generosity and support of the event sponsors, donors, and guests made Fire and Ice an extraordinary success. Together, they are helping advance the future of neurosciences in our community.
