While the Central Valley boasts numerous excellent Asian restaurants, Lin’s Restaurant Group elevates Far East cuisine to new heights. Among their offerings is O-iza Modern Japanese, located in Fresno’s River Park, which stands out as one of the most exquisite Japanese establishments in the area. This fine dining restaurant marries the art of sushi and teppanyaki in an elegant setting adorned with bonsai décor, a sophisticated interior, and a contemporary patio.

For this Power Players Edition of Shake+Stir, CVLUX’s Editorial Director Lauren Barisic and Event Director & Producer Laura Thompson were joined by lady bosses Tracy Kashian, Alma Wolverton, Revay Plunkett, Margot Kim, and Erin Melkonian to savor O-iza’s bright and flavorful dishes, perfectly paired with a selection of cocktails, hosted by Jason Lin, CEO of Lin’s Restaurant Group.

A stunning floral arrangement featuring cherry blossoms and white dendrobium orchids from Botanique Floral Artistry skirted the table, beautifully complementing bright pink satin napkins from The Linen Shoppe, place cards by Modern Press Paper Studio, custom O-iza chopsticks, and Tea Forté’s limited edition Hanami tea boxes gifted to each guest by Sam’s Italian Deli & Market.

After the ladies settled in, everyone selected their own drink from O-iza’s extensive and thoughtfully curated cocktail menu. Among the favorites was the Yuzu Margarita, which combines Sabé Blanco Tequila, Hakushika Hana-Kohaku Yuzu Sake, fresh lemon juice, and blue agave to create a deceptively demure Asian margarita. “This is a must-try for margarita connoisseurs,” Tracy noted. “There are a lot of flavors and yet they all blend so harmoniously. It’s a very smooth drink and easy to sip.”

If Martinis are more your style, the Gyokuru Martini will not disappoint. This cocktail features Hakutsuru Sake Organic Junmai and Hakushika Hana-Kohaku Yuzu Sake, combined with blue agave, fresh lemon juice, matcha, and decadent gold flakes. It is served with a shot of nigori sake, which can be sipped or shot.

Most people don’t think to order pasta at an Asian restaurant, but noodle lovers will be amazed by the Ebi Carbonara. Udon noodles are delicately dressed in a miso beurre blanc with rock shrimp, bacon, prosciutto, furikake, and micro cilantro. “I’ve never had anything like this before,” Erin admitted. “It’s an unexpected dish to find at a Japanese place, yet I’m so impressed by how seamlessly the flavors fuse. It’s creamy but light, and I enjoyed every bite.”

O-iza’s Specialty Maki, or rolled sushi, showcased two stunning creations. The King of the Sea is a feast for the eyes and the palate. The highlight is a truffle butter-baked lobster, presented with Asian pear, asparagus, avocado, yuzu salt, A-5 wagyu, crispy garlic, micro cilantro, yuzu aioli, lobster fruit salad, pistachio, and sweet mirin dressing. “This is one of the most impressive meals I’ve ever seen!” Margot exclaimed, and that seems like an understatement.

The second sushi highlight was the Fujiyama, featuring king salmon, snow crab, mango, and avocado wrapped in soy paper. It is topped with rock shrimp glazed in sweet chili sauce and garnished with micro cilantro. Each piece offers a delightful two-part bite, beautifully combining seafood with tropical and creamy fruits.

The savory section concluded with the presentation of Temaki Ranchi, hand-rolled sushi served in bamboo boats that resemble Japanese-style tacos. Each order is paired with a spring mix salad of Asian pear, crispy taro, radish, kaiware, and black sesame dressing, along with two maki. There are six fillings to choose from: Miso Seabass, Soft Shell Crab, Crunchy Garlic Kani, Dragon Temaki, Mango Ebi, and Surf and Turf. Alma sampled the Sea Bass, noting, “The fish is cooked so well, and the presentation is exceptional. Getting to pick your pair is such a fun way to try a variety of menu options.”

Then came dessert—two to eat and one to drink. For those who enjoy sweet wine, the Hakutsuru Plum Wine offers a pleasing fruity aroma with slightly tart, bright, and tangy notes, making it perfect as an aperitif or dessert wine. Jason had it served chilled with the desserts, though it could easily stand alone as a sweet ending in liquid form.

O-iza’s desserts are the final display of the restaurant’s edible art collection. The Matcha Parfait layers matcha mochi, matcha castella, white chocolate Chantilly, green apple, frosted flakes, matcha ice cream, red bean, and lychee. The Black Sesame Hazelnut combines black sesame ice cream, miso hazelnut mousse, rocher glaze, peanut crumble, toasted sesame tuile, and shoyu malt caramel. Both desserts take foodies on a flavor and texture journey that will leave their taste buds utterly tantalized.

It’s seemingly impossible to leave O-iza Modern Japanese feeling hungry. Asian food enthusiasts will delight in the unique offerings, while novices will discover a whole new realm of fine dining experiences. Despite being stuffed to the brim, all the ladies expressed their eagerness to return. Conversations about their growing businesses, anti-aging regiments, new hobbies, and travel plans flowed, never missing a beat, much like the procession of exquisite cuisine. The next time you’re in the mood for Japanese food, plan a trip to O-iza.

CHIEF CASTO MINDY

Fresno has a new police chief, and she’s a force to be reckoned with! Chief Mindy Casto is a dedicated law enforcement professional with nearly three decades of experience. She is committed to reducing violent crime, enhancing service levels, and strengthening professionalism in the Fresno Police Department (PD). A proud Central Valley native, she exemplifies how a single ride-along gave way to a career that rose through the ranks of the Fresno PD. Now, Chief Casto is responsible for the safety of California’s fifth-largest city, with a population of over one million. “I am honored to serve as Fresno’s Police Chief and to lead the men and women who put their lives on the line every day to keep our city safe,” declares Chief Mindy Casto. Empathizing with the force, she says, “They do the hard work on the streets, often in difficult circumstances, and I will always ensure they are recognized and supported. Together, we will continue our mission to protect, serve, and build trust with our community.”

Over the years, Chief Casto has witnessed the evolving role of police in our community. “Police don’t just focus on law enforcement anymore,” Mindy reveals. “We have to be mental health workers to some degree. Mental health-related issues permeate a great many of the calls for service we receive. We have invested heavily in crisis intervention and de-escalation training to meet the evolving needs of our community, to include partnerships with Fresno County Behavioral Health.” Mindy’s experience with violent crime investigations, crisis response, policy development, labor negotiations, community relations, and technology implementation informs her methodology as chief and shapes the future of the Fresno PD.

Chief Casto continues to play a pivotal role in advancing public safety through innovation, securing funding for equipment and AI-driven policing solutions, and enhancing officer training to develop a more professional and efficient police force. The work is ongoing, and her spirit remains inspiring. She is thus helping to pave the way for a better Fresno. “I like to challenge people that if they want to make a real difference, become a police officer in Fresno,” she urges. “Every single day you will have the opportunity to make a big difference in the lives of others. I tell our newly hired officers at every swearing-in ceremony that they might not change the world, but they can change the world for one person on every call they handle. I also tell them that nothing worth doing is easy, and that becoming a Fresno Police officer is a worthy challenge.”

Being Fresno’s police chief is a 24/7 job. “Right now, I’m all about settling in as chief of police … and preparing the succession plan for the next generation of leadership in the Fresno Police Department,” Mindy shares about her new professional life. “When I’m able to, I like reformer Pilates, reading, and spending time with my husband, family, and dogs. I’m not much of a traveler, so I like doing things that don’t take me too far away,” she concedes. “Personally, I want to focus on health, wellness, and maintaining relationships with my loved ones, both family and friends.” Connection and community are clearly top priorities for Chief Mindy Casto. Under her leadership, the City of Fresno’s public safety measures and initiatives are highly promising—she is indeed the head of a force to be reckoned with.

How Love, Loss, Faith, and Small Steps Can Lead

to New Purpose

There comes a moment—sometimes quiet, maybe crushing—when you realize that life has changed, and it will never be the same again. The plans you made, the roles you embraced, the life you carefully curated—suddenly, everything shifts. In an instant, you find yourself standing at the edge of something new, something that may initially feel completely unrecognizable.

There are many reasons we find ourselves starting over—some expected, others unimaginable. Sometimes we choose this path because there’s a dream we’ve carried for years or finally feel ready to heed that inner voice. Other times, we sense that something no longer works and it’s time for a change. Then there are the moments that blindside us—losses that leave us devastated and force us to begin anew.

When this happens later in life, starting over can feel especially disorienting. We have built lives, families, and identities. We have loved deeply and worked hard. By this point, we have found our voice and rhythm. So when the ground shifts beneath us, it’s more than just change—it’s a complete reimagining of who we are and where we’re headed.

What starting over demands of us is rarely easy. It calls us to carry forward what we’ve learned while loosening our grip on what we’ve lost or left behind. It asks us to trust in possibility, even when everything feels uncertain. It invites us to rebuild, rediscover, reinvent ourselves, and reimagine what life can look like now. And it reminds us that change, whether chosen or not, isn’t the end—it’s a new beginning.

One of the most poignant aspects is realizing how much of our identity was intertwined with what was. Whether it was a role, a relationship, a career, or a version of ourselves we believed was permanent. When everything changes, it’s easy, and understandable, to feel lost, unsure of who you are without the familiar markers that once defined you. But the truth is, when life changes, so do we.

When I lost my husband Mario unexpectedly in 2020, I didn’t just lose him—I lost the life we had built together and the future we had envisioned. I also lost a part of myself. For decades, I had been a wife and a mother—roles that shaped nearly every aspect of who I was. Then, at 54 years old, I became something I never expected: a widow. It was an identity I didn’t understand, I didn’t want, and had no idea how to navigate.

Initially, creating new dreams and starting over felt impossible. It was daunting and painful to imagine moving forward without the life we had built together. However, with time, I began to rebuild from the inside out. While change came unexpectedly later in life, it brought many powerful lessons. One of them is that fear is normal and to be expected. It doesn’t mean you’re not ready; it simply means you’re stepping into the unknown, and that can be frightening. I’ve learned to befriend fear, allowing it to accompany me rather than hinder me.

Just Get Started

Change looks different for everyone and every situation. But this I know for sure: you have to start. Even when you’re scared. Even when you don’t feel ready. You must show up and say yes to opportunities when they arise, because it just might be the break you need. There’s no guarantee they’ll come again. Starting is hard, but it’s the only way to discover what is truly possible.

Confidence Comes

Confidence doesn’t come before you begin. It shows up after. Stepping out of your comfort zone, even in small ways, builds strength you didn’t know you had. Each step fosters courage, and little by little, you begin to find your footing again. As challenging as it is, it’s on the other side of fear that we find our confidence. It’s by walking through it, not around it, that we cultivate the faith that reminds us we have what it takes to create a life we love.

Trust Your Tribe

What helped me begin again wasn’t just time; it was people. Those who showed up and stood beside me—friends who listened, encouraged, and reminded me of who I was when I forgot. Women who shared stories and their strength. They are your tribe, and trusting them helps you trust yourself. Alongside them, my steady and deep faith has carried me even when I didn’t know how to take the next step.

That’s the beauty of women—of mothers, daughters, friends, and sisters. We possess a quiet resilience—often unspoken, yet profoundly strong. We know how to rise, rebuild, and support one another. When one of us is starting over, the way we uplift each other doesn’t just comfort; it transforms.

Starting over isn’t solely about what you’ve lost—it’s also about what you begin to gain: clarity, courage, community, and a stronger sense of who you are becoming. Even later in life—especially later in life. Because we rarely start again with a clean slate; we begin with different circumstances.

This doesn’t mean forgetting. It doesn’t mean leaving behind the love or the life that shaped you. It means honoring all of it, even the difficult parts, as you take one step, then another, into a future that’s still unfolding. It may feel unfamiliar now, but it will eventually become your new normal.

And perhaps that’s what beginning again truly is—not a clean slate, but a brave continuation. A story still being written, with hope tucked quietly between the lines. With the courage to just start, confidence will follow, especially when you trust your tribe and embrace the magic of womanhood. In our journeys, life reimagined unfolds, guiding us toward a new purpose that is both empowering and transformative.

THE SECRET TO OUR SUCCESS

We have continued to show up and put our nose to the grindstone every day, without fail, for almost 20 years. We’ve seen the absolute worst of this industry and we’ve been incredibly blessed to also see the best. We’ve been consistent. We’ve learned from our mistakes and we’ve grown from them. It’s the reason that we now have 90% of our trades in-house—we own the quality, the timeline, and the experience.

NEW SERVICES WE ARE EXCITED TO OFFER

We’re expanding our in-house trade departments to now include cabinetry manufacturing. For a while, we have relied on vendors to bring us quality custom-made cabinets, but we are excited to announce that we will be rolling out our own Trademark custom cabinets. Additionally, we will now be expanding our showroom into a full design center for our clients to see their dreams become reality right in front of them.

LB How did you initially come to be part of the Ruiz Foods family?

KC In early 2001, I received a phone call from an executive recruiter looking for a seasoned marketer with foodservice experience to interview with a frozen food company headquartered in Dinuba, CA. The recruiter had no idea that I was born and raised in the Central Valley and knew Dinuba well. Fortunately, my experience working for the California Tomato Commission and later as a sales and marketing manager for a tomato grower and distributor helped me develop the skills needed to be a good fit for the position. I got the job and have been with Ruiz Foods since March 26th, 2001.

LB How did your upbringing influence your professional development and leadership style?

KC I grew up working in packing houses in Orosi and Cutler every summer and during school breaks. My dad made sure we understood and appreciated the value of physical work, and I really do. Our team members who work in our facilities are the heart and soul of Ruiz Foods. No amount of marketing or fancy packaging can replace the efforts of the more than 3,500 team members who take pride in making great quality food every day. The work they do is the most significant connection we have to our consumers. My leadership style endeavors to embrace that contribution by being transparent, up and down the organization, so our whole team can find purpose in their contribution.

LB In what ways does your professional background inform your approach at Ruiz?

KC I worked for 14 years in the produce industry before moving to Ruiz Foods. Nothing will prepare you for being action-oriented like marketing and selling a short-shelf-life product. It also prepares you for navigating the never-ending onslaught of ever-changing market conditions. I know this a common experience for many who make their home in the Central Valley.

For the last 24 years, my training ground has been Ruiz Foods. I have been learning during every step of the journey…from our customers, industry representatives, Ruiz team members, and the Ruiz family. It has been a great blessing to have worked alongside so many talented and wonderful people who have invested their time and shared so much of their knowledge with me.

LB Tell us about your transition into President & CEO and what your role entails. KC My transition to President and CEO has been an amazing learning experience, both about myself and about many facets of the business. I have been with Ruiz Foods for a long time, so I have had some great exposure, but in the last couple of years that exposure has been amplified by all the marketplace challenges. The former CEO and now Chairman of the Board, Dan Antonelli, created opportunities for me to be engaged in the broader business, including a stint as the CMO and then the COO before taking the helm as President.

The volume of what I have been exposed to is a bit like being dropped in the ocean, but always with a life-preserver nearby. It taught me that I will never, ever, personally know everything there is to know about our business; fortunately, I am working with a remarkable team of leaders, each an expert in their respective areas. My endeavor is to understand the framework and know enough to ask good questions. I really do believe, “All of us are smarter than any of us,” to quote Ken Blanchard. And, even more importantly, it takes all of us to make the business hum.

My job as President and CEO is to serve this team by providing an environment that encourages transparency, communication, and collaboration, and allows everyone to have the opportunity to have a voice. Senior leadership is involved in all the critical discussions about the business so we can ensure that everyone is aligned, and we are moving forward together.

LB How is this “changing of the guard” significant for the future of Ruiz Foods?

KC I am fortunate to be standing on the shoulders of remarkable leaders who have shaped this business over the last 60 years. The challenge moving forward is to propel the company ahead through technology and improve processes while continuing to honor what got us here…great people making great food that our consumers love.

LB What makes your leadership style unique? What are you doing differently?

KC I am all about teamwork and simple, direct communication, so everybody knows where we are going and what we are doing. I am very straightforward and appreciate conversation with folks that are working in earnest to drive results for the business. At Ruiz Foods, we really believe that team members at all levels of the organization are critical to our success, so keeping them informed is a top priority. As our founder Fred Ruiz has often said, “Our team members are our secret sauce.”

LB How are you too paving the way for others in this industry?

KC If you are walking the road, then you are paving the way, whether it is your intention or not. The ones that have come before me have left a legacy of knowledge, both what works and sometimes what doesn’t. I will strive to share everything I learn along the way, ensuring that whoever takes the baton from me can lead us to even greater success.

LB How are Ruiz Foods’ Central Valley roots still part of the brand’s identity and evolution?

KC Being from the Central Valley of California is to know great Mexican food and Mexican food is the heart of our El Monterey® and Tornados® products. The recipes from Fred Ruiz’s mother, Rose, are the inspiration for many of our authentic products and that will never change.

LB As a family-owned company that was founded in the Central Valley, share about the significance of Ruiz Foods now being a nationally distributed brand.

KC The business was founded in Tulare in 1964 by Louis and Fred Ruiz, a father and son team whose mission was to bring great tasting Mexican food to small format stores in the Valley. When the business first started, they never dreamed that their work-ethic, tenacity, and commitment to great food would take the business as far as it has come. They are the embodiment of the achievement of the American Dream. Our El Monterey® burritos, chimichangas, and taquitos are in grocery, club, and dollar stores across the U.S. and Canada and our Tornados® roller grill products, are sold in convenience stores across the U.S. and Canada as well. This level of success stems from a commitment to the quality of the food, a constant effort to delight consumers, strong support from our suppliers, and building great relationships with our incredible customers.

LB What does induction into the Convenience Store News Hall of Fame mean to you?

KC It is an absolute honor, both for me and for all of us at Ruiz Foods. We are so proud of the growth of our Tornados® for the roller grill and for the opportunity to bring Mexican inspired products to our consumers. It has been a true partnership with our C-Store customers, working together to bring great food to the C-Store shoppers. This is an industry that really strives to continue to evolve. It has been wonderful to have been a part of that evolution over the last 20+ years.

LB Tell us about your family and hobbies, as well as any other passions.

KC I have been married for 25 years to my best friend, Chris. He is an amazing partner and challenges me to be a better version of myself. I am very sure I would not have had the wonderful career that I have enjoyed had it not been for his partnership in my life. We have an incredible daughter, now 22, who is stepping into her own with the beginning of her adult life. It is a joy to see our child find her place in this world. As for my hobbies, I weight train, I love to read, and my husband and I both enjoy good wine.

LB What are you most looking forward to in the coming years, both professionally and personally?

KC I feel like we are just starting to hit our stride for our next wave of growth. Fortunately, consumers love Mexican and Mexican-inspired food, and we do that better than anyone. It’s our time to shine and we are. Nothing could give me more personal satisfaction than leading this incredible team through this next phase.

On Saturday, March 29th, the Hinds Guild of Hope hosted its inaugural Champagne Brunch at Pardini’s Catering & Banquets in support of the Hinds pediatric and children’s grief support programs, including the Angel Babies program for parents who have lost an infant or child and the Circle of Friends program for children who have experienced a loss. Guests enjoyed a day filled with refreshing mimosas, a delicious catered brunch, and exciting opportunities to win raffle prizes. Pediatric Medical Director, Dr. David Steinhorn, spoke passionately about the profound impact of these programs on families in the community. The generous funds raised by the Hinds Guild and its sponsors, donors, volunteers, and community, who come together to support this vital program for children and families, ensures that these much-needed services continue to provide hope and healing.

Fresno’s finest gathered for an unforgettable evening of glamour, generosity, and goodwill at the Santé Health Foundation Luxury Gala, raising an incredible $227,000 to support Habitat for Humanity’s Firebaugh Housing Development. Held at the elegant Fort Washington Country Club on Saturday, April 12th, the night brought together over 200 community leaders, philanthropists, five local health care systems, and supporters who came ready to give and celebrate. Guests enjoyed a lively evening of fine dining, live music, dancing, and a thrilling live auction, all in support of building safe, stable homes for local families in need. From heartfelt speeches to high-energy bids, the event was filled with laughter, connection, and community spirit. The funds raised will help complete seven new homes in Firebaugh, transforming lives and neighborhoods one house at a time.

Founders Club’s second annual Charity Poker Tournament was a huge success on Friday, April 11th at Audi Porsche Fresno. More than 140 guests partook in a great evening filled with exquisite food, philanthropy, and friendly competition. The event was well-attended, and the players continued until a final winner was declared. In the end, over $60,000 was raised for Community Health System’s Bob Smittcamp Family Neurosciences Institute.
