a sweet start Classic Homemade Jam Donuts Ingredients

For the dough 500g (4 cups) all-purpose flour 7g (2 1/4 tsp) active dry yeast 250ml (1 cup) lukewarm milk 50g (1/4 cup) granulated sugar 60g (1/4 cup) unsalted butter, softened 1 large egg 1/2 tsp salt Vegetable oil, for frying For the filling Your favorite jam (strawberry, raspberry, or apricot work well) Powdered sugar, for dusting

In a small bowl, dissolve the yeast in lukewarm milk. Let it sit for about 5 minutes until it becomes frothy.

In a large mixing bowl, combine the flour, sugar, softened butter, egg, and salt.

Pour in the yeast mixture. Mix until a soft dough forms.

Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour or until it has doubled in size.

Roll out the dough on a floured surface to about 1/2 inch (1.25 cm) thickness.

Using a round cookie cutter or a glass, cut out donut shapes. Place the donuts on a floured baking sheet and cover them with a kitchen towel. Let them rise for another 30 minutes.

Heat the vegetable oil in a deep fryer or a heavy-bottomed pan to 350°F (180°C).

Carefully add the donuts to the hot oil, frying them for about 1-2 minutes on each side until they turn golden brown. Use a slotted spoon to remove the donuts from the oil and place them on a paper towel-lined plate to drain excess oil.

Once the donuts are cool enough to handle, use a piping bag or a small knife to fill them with your favorite jam.

Dust the filled donuts with powdered sugar. Serve warm and enjoy your homemade classic jam donuts!

asmania’s Huon Valley is known for its chilly winter mornings, lush green forests and incredible produce. A patchwork of apple and pear orchards, blueberry farms and hazelnut crops scatter this stunning region of Australia’s most remote state. With so many cider houses already showcasing the region's incredible produce, friends Adam Eaton, Calypso Brown and Max Rawicz thought it was about time a distillery opened the flavours of the Huon Valley to a new audience; thus, Tasmaniac Distillers was born.

Following their launch in July of this year, Tasmaniac Distillers has released three cornerstone products under Head Distiller Adam Eaton. Tasmaniac’s Trademark Gin, a contemporary juniper-forward gin boasting Huon Valley apples, a Coffee Liqueur with hints of cherry and hazelnuts on a bold amaro base, and their Strawberry Apero, a fresh and playful bittering spirit for any aperitivo fan.

This modern Australian distillery is the brainchild of fashion designer Calypso Brown, currently also at the helm of outdoor clothing brand Andrs; awarded filmmaker Max Rawicz and distiller Adam Eaton. The trio met as musicians in Melbourne’s music scene before eventually finding themselves all living in Caypso’s home state of Tasmania. Adam, a seasoned cocktail curator for awarded bars and restaurants across the globe, saw a niche in the market; he wanted to create spirits he saw missing from menus, “spirits that are interesting, that have a good purpose”.

Under Calypso’s careful eye, Tasmaniac scoured the market for the most sustainable suppliers and packaging, refusing to compromise on quality and supporting local suppliers at every opportunity. She says, “Growing up in Tasmania has instilled within me a desire to safeguard and nurture the environment I call home. Thus, sustainability has seamlessly become an inseparable and indispensable aspect of Tasmaniac Distillers.”

With the launch of their brand, consumers have been delighted by Tasmaniac’s high-quality, playful video content on their Instagram, stewarded by Max. “The underlying philosophy at Tasmaniac Distillers is to maintain a lighthearted approach and enjoy the process, all the while highlighting key aspects of our business,” he shared. The trio even make all the music on their social media, playfully masquerading as the Tasmaniac House Band. Max shares, “Through our unconventional methods and unique perspective, we aim to establish a genuine connection with our customers, showcasing our distinctiveness in an engaging and memorable way.”

Spaghetti with Courgettes, Rosemary and Mascarpone

Green Rice with Garlic, Parsley & Mussels

This is one of those Italian pasta recipes that’s so simple you can’t believe how wonderful it tastes when you check the ingredients. I can’t think of any basic food where the expression ‘less is more’ fits better than pasta. It’s a source of some irritation to me that some people in the UK still think that the ratio of sauce to pasta should be at least 50/50 if not 70/30. Am I alone in finding a mound of tomato sauce with a few strings of spaghetti a profoundly depressing sight?

I love these Spanish paella-type dishes. There’s a similar, but slightly more complicated and expensive, version of this recipe in my book Long Weekends.

I remember filming it at a restaurant on the beach in Cádiz. I chose the arroz verde, but the crew went for seafood paella coloured with the extremely bright yellow of fake saffron. The camera pulled away from my demure green and white bowl to reveal everybody else wearing sunglasses while eating.adding to it ingredients such as capers, preserved artichokes, mint, beans, sun-dried tomatoes and spring onion (scallion).

The dip is perfect spread over crusty ħobż. You can even keep it cold and pack it for the beach.

Ingredients (serves 4) 4 tbsp olive oil 600g courgettes, grated 1 garlic clove, chopped Zest of 1⁄2 unwaxed lemon 1 tsp chopped fresh rosemary leaves 1/4 tsp chilli flakes 90g mascarpone 50g Pecorino or Parmesan cheese, grated 400g spaghetti Salt and black pepper

Method

Heat the olive oil in a large pan and add the grated courgettes, garlic, lemon zest, rosemary and chilli flakes. Cook gently over a medium-low heat for 20–25 minutes until the courgettes are very soft. Stir in the mascarpone and two-thirds of the cheese, then taste and season with salt and plenty of pepper.

Cook the spaghetti in salted boiling water according to the packet instructions. Drain, add the pasta to the courgette sauce and stir well to combine. Serve topped with the remaining grated cheese and freshly ground black pepper.

Ingredients (serves 4-5)

60ml olive oil 60g shallots, finely chopped 12 garlic cloves, finely chopped 1 litre chicken stock 100g flatleaf parsley, leaves chopped 1½ tsp salt 400g short-grain paella rice 500g raw mussels, scrubbed Juice of ½ lemon To serve Aioli

Method

Heat the olive oil in a shallow flameproof casserole dish over a medium heat. Add the shallots and garlic, then fry gently for 5 minutes until soft. Stir in the stock, parsley and salt and bring to the boil.

Sprinkle in the rice, stir once, then leave to simmer vigorously over a medium-high heat for 6 minutes.

Put the mussels on top and shake the pan briefly so that they sink into the rice slightly. Lower the heat and leave to simmer gently for another 12 minutes.

At the end of this time, almost all the liquid should be absorbed, the mussels opened and the rice will be pitted with small holes. Squeeze over the lemon juice and serve with aioli.

Chicken, Lemon and Garlic Tray Bake I suppose I should have asked for this recipe from Lulu Bonneville, having enjoyed it at a lovely long lunch with her and Hugh (aka Lord Grantham). But what I love doing is taking someone’s recipe that I really like and not copying it but just paying homage with my own version. I love getting recipes from those understated but really good cooks who manage to produce something delicious and are also so organised that they are around for the glass of champagne on arrival. They just seem to magic the food up.

Ingredients

4 tbsp olive oil 12 chicken thighs, skin on and bone in Juice of 1–2 lemons 5 garlic cloves, chopped Small bunch of thyme, leaves stripped from stalks 3 courgettes, cut into thick slices on the diagonal 2 fennel bulbs, trimmed and sliced 8 new potatoes, scrubbed and cut into thick slices Sea salt and black pepper

Method

Preheat the oven to 220°C/Fan 200°C. Add a small amount of the oil to a large frying pan and place it over a medium-high heat.

Working in batches, fry the chicken thighs for a few minutes until the skin has taken on a deep golden colour. Turn the chicken over and cook for a minute or so on the underside.

Mix the lemon juice, garlic, thyme and the rest of the olive oil in a bowl. Arrange the slices of courgette, fennel and potato in a large roasting tin and pour over two-thirds of the lemon and oil mixture. Toss to coat the vegetables and season with salt and pepper.

Arrange the chicken on top, skin-side up, and pour over the remaining lemon and oil mixture. Season the chicken with salt and pepper. Bake for 35–40 minutes until the chicken skin is crisp and golden and the vegetables underneath are tender. Nice with a green salad or green beans.

SALSA Dice mangoes and combine them with diced red onion, jalapeño, cilantro, lime juice, and a pinch of salt for a vibrant and refreshing mango salsa. This pairs wonderfully with grilled chicken, fish, or as a dip for tortilla chips. Add mango salsa as a topping to tacos, quesadillas, or grilled shrimp for a burst of tropical flavor.

FRESH! Simply peel and slice a ripe mango to enjoy its juicy, sweet flesh. You can also cube it or cut it into strips for a convenient, on-the-go snack. GRILL Heat up your grill and lightly oil the mango slices. Grill them for a few minutes on each side until they develop grill marks and caramelize. Grilled mango makes a delectable side dish to complement grilled meats or a sweet addition to salads.

SMOOTHIES Blend ripe mango chunks with yogurt, a splash of orange juice, and a drizzle of honey for a creamy and satisfying mango smoothie.

For a tropical twist, incorporate coconut milk and a dash of vanilla extract into your mango smoothie.

DESSERT Create a refreshing mango sorbet by blending mango puree with sugar and lemon juice, then freezing the mixture until firm. Make a classic mango lassi, a creamy and cooling Indian drink, by blending mangoes with yogurt, milk, sugar, and a pinch of cardamom. SRI LANKAN CHICKEN CURRY (SERVES 4) Ingredients

1.5-kilogram bone-in skin-on chicken thighs 3 tablespoons coconut oil 4 cardamom pods, bruised 3 dried chillies 8–10 curry leaves 2 onions, finely chopped 2cm piece fresh ginger, peeled and grated 4 cloves garlic, finely chopped 1 teaspoon ground turmeric 2 teaspoons ground paprika 1 teaspoon ground cumin 1 teaspoon ground coriander ½ teaspoon ground fennel 250ml coconut milk 1 stem lemongrass, bruised 1 cinnamon stick 1 teaspoon salt

Heat oil in heavy based pan and add cardamon pods, chillies, and curry leaves. Gently fry and then add onion, ginger and garlic and cook for approx 2 minutes. Add in the ground spices, followed by the chicken thighs.

Stir everything together, add in the lemongrass and cinnamon stick, half of the coconut milk and cook slowly for 50 minutes.

Stir through the remainder of the coconut milk, season with salt and a good amount of black pepper and cook for 10 more minutes. Serve over hot pandan rice.

SRI LANKAN DAHL (serves 4)

I often make an Indian style dahl but this one has coconut milk and is a great option. I love it served with the potato bean curry and pandan rice. It is also perfect for a vegan option.

Ingredients

1 cup red lentils 2.5 cups water 1 small onion chopped 1 small tomato chopped 1 teaspoon ginger minced 3 cloves garlic sliced 1 green chilli halved 2 sprigs curry leaves 1 teaspoon turmeric powder 1 teaspoon red chilli powder/cayenne pepper 1 teaspoon cumin powder ½ tsp coriander powder 1 tsp salt ½ cup full fat coconut milk

Rinse the red lentils until the water runs clear.

Into a pot add red lentils, 1.5 cups of water, chopped onion and tomatoes, green chili, curry leaves, minced ginger, sliced garlic, turmeric powder, red chilli powder, cumin powder, coriander powder and salt. Bring to boil.

Turn the heat to medium, cover the pot and cook the lentils until all the water is absorbed and lentils are cooked through.

This will take about 15 minutes.

Add the coconut milk and 1 cup of water, stir to combine.

Cover and let it simmer for 5 minutes. Check seasoning and add more salt if needed.

Have all your ingredients ready and par boil your potatoes until almost cooked through. Drain and set aside.

Fry the curry leaves in oil and then add the cardamon pods, sliced onion and sauté for two minutes before adding fresh chilli and dried spices and mustard seeds Add in the green beans and water cook until the potatoes start to break up and the beans are cooked to your liking; add in any extra water if it starts to stick. This can be a drier than normal curry so you can add extra water or 1/2 a cup of coconut milk if you prefer more gravy.

Top with fresh coriander and serve.

Cut the stems from the eggplants and slice in half lengthways and then cut into half moons. Add oil to a saucepan or pot and fry the eggplant in 2-3 batches. You want it to be soft and sticky and browned. Remove from the pan and set aside.

Add the onion and sauté until starting to caramelise. Add the garlic, ginger, curry leaves and chilli and sauté for a minute.

Add the eggplant back in and add the vinegar, sugar, turmeric and mustard seeds.

Season to taste with salt and pepper and sauté for another 20 minutes until sweet, sticky and salty.

Rub the Fin and Feather Rub all over the flesh of the salmon, then cover and set aside in the fridge to marinate for 2 hours.

Insert a meat probe into the centre of the salmon, then place the fish, skin-side down, on the barbecue grill. Top the salmon with the orange slices, close the lid and cook for about 45 minutes, until the internal temperature of the fish reaches 60°C.

Preheat a Traeger grill or oven, on 180°C for 15 minutes.

ANTARCTICA A stark-white icy wilderness with iconic wildlife at the end of the Earth.

Polar desert. The words conjure a bonechillingly cold and skin-parchingly dry landscape, of white ice storms that blur the horizon, of impenetrable and imposing mountains and hell-bent face-whipping wind. Antarctica, the world’s most remote and least-touched wilderness, a final frontier for humanity, can be just such a place.

But on other days it’s a wonder: of gem-blue glaciers, luminescent ice floes, eye-squintingly clear light and crunchy icysculpted snowy topography glistening as far as the eye can see.

Incredible wildlife, both marine and terrestrial, has flourished here on its own terms. Penguin rookeries dot the coastline and giant albatross soar in the sky above.

Whales (which have been protected here since 1994 as part of the Southern Ocean Whale Sanctuary initiative) patrol the fathomless waters, sending occasional spouts of water into the air. Seals sunbake on great hunks of ice before slipping into the water, regaining their agility as they dart around looking for fish.

This huge continent, covering 14,200,000 square kilometres (5,500,000 square miles), occupies the southern-most curve of the planet with the geographic South Pole (quaintly denoted by a signpost) sitting just west of its centre. The entire Antarctic region, delineated by its coldwater boundary, takes up a mighty 20 per cent of the Southern Hemisphere.

Antarctica itself is the fifth-largest continent, a fact often overlooked due to its location at the end of the Earth. On traditional maps, ‘The White Continent’, as it is sometimes known, is mostly presented as white skirting at the bottom of the globe.

Upending the globe reveals Antarctica in its entirety, a roughly circular territory sitting neatly within the Antarctic Circle.

This huge area is mostly dominated by the Antarctic Ice Sheet, a single thick frozen mass stretching over the land like wedding cake icing. Averaging a depth of 1.9 kilometres (1.2 miles), it contains 70 per cent of the world’s freshwater reserves.

When snow and ice conditions are at their wintry coldest (the temperatures in Antarctica are the coldest on Earth − 89.2°C/−128.6°F is the record low), this remarkable ice phenomena can extend some 16 million square kilometres beyond the edge of the continent creating floating ice shelves that are tangible enough to be named (Ross Ice Shelf and the Ronne Ice Shelf are two examples). Consider this: without ice, Antarctica would be about the size of Australia; with ice, it doubles in size.

The ice sheet follows Antarctica’s mountainous contours, peaking at 4000 metres (13,100 feet) near the centre of the continent. Its mountain ranges are similarly epic; the highest, Vinson Massif, tops out at 4892 metres (16,050 feet). On a good day, the views from up here – for the few who tackle the climb – are almost beyond the realms of earthly imagining. Big yawning celtic blue skies; snow as trackless and fresh as sand drifts in the desert; black rock mountain peaks, chipped and chiselled like chocolate brownies and dusted in a fine layer of icing sugar.

The surrounding Southern Ocean is equally mesmerising. An upwelling of the cold Antarctic water promotes ecosystems of algae and phytoplankton, the linchpin in the food chain for iconic Antarctic wildlife, including a plethora of fish species, whales – such as minke, sperm and humpback – and enormous leopard seals that feast on penguins.

Plants have been less adaptive, save for green and yellow lichen and moss growing on the exposed rocky regions of the coast.

This delicate epically slow-growing ecology is miraculous in its own right.

Antarctica is a continent uniquely free of native human inhabitants (although seven nations stake a claim: Aotearoa New Zealand, Australia, the United Kingdom, Chile, Argentina, France and Norway), but humanity’s influence has been felt from afar, especially with regards to the climate crisis.

While I was researching this book, three disheartening news reports came out of Antarctica. In late 2022, the Australian Antarctic Program revealed in a press release that the number of Adelie penguins across 52 islands near the Mawson Research Station on the East Antarctic coast has dropped by 43 per cent, ‘a loss of some

154,000 breeding birds’. The decline is ‘triggered by changed environmental conditions’.

At around the same time, the US Fish and Wildlife Service officially added the emperor penguin, ‘a flightless bird from Antarctica’ whose colonies are depicted in the lauded March of the Penguins film, to the threatened species’ list, observing that the species ‘is likely to become endangered within the foreseeable future’. It named climate change as the emperor penguin’s ‘most substantial threat’.

Meanwhile the CSIRO, an Australian government agency responsible for scientific research, published the ‘Vulnerability of Denman Glacier’ research paper that reported that East Antarctica’s Denman ice shelf, a glacier holding a volume of ice equivalent to a 1.5 metre (nearly 5 foot) rise in sea level if melted, is vulnerable to warming sea water. ‘We estimate that the amount of warm water [affecting the glacier] … is sufficient to melt 70.8 billion tons of ice each year’, the paper said.

One way to support Antarctic wildlife from home is to research the seafood you eat. Patagonian toothfish and Antarctic toothfish, for example, are large, deepsea fish found as low as 3000 metres (9800 feet) on the edge of the Antarctic shelf in some of the world’s last ocean wildernesses. These incredible fish live as long as 50 years and breed quite late in life.

They’re often caught before they have had a chance to breed. In the 1970s, the fish were renamed ‘Chilean seabass’ to make them more appetising to diners. By the 1990s the sweet meat had become a menu hit and has since been fished, both illegally and legally, to within an inch of the species’ life in some waters. Simply put, if you see Chilean seabass on a menu, or Patagonian or Antarctic toothfish, don’t eat it.

Tourism is the next challenge. As one of the most enigmatic wilderness destinations on the planet, visiting the region has become the ultimate in bucketlist travel, with prices becoming cheaper and more ships arriving each year. The legacy of early explorers and Amundsen, Scott, Mawson and Shackleton’s expeditions echo down the ages and inspire modern-day intrepids.

The International Association of Antarctica Tour Operators (IAATO) reported 74,401 (registered member) visitors travelled to Antarctica between October 2019 and April 2020, up from 56,000 in the previous season and the most ever recorded. The numbers in the years since have been affected by the Covid-19 pandemic but are expected to continue to rise.

This figure amounts to a lot of cruise ships and plenty of wear and tear on the fragile ecosystems. There are plenty of risks too, from fuel and raw sewage pollution to non-native species invasion and animal habitat disruption.

Visitors going to Antarctica have mindful choices to make too (although not many). Ensuring that tour operators are members of the IAATO, and that – importantly – the self-managed association is following its own set of guidelines for ships and tourists (including passenger and onshore visitor limits and appropriate staff-to-passenger ratios) is a starting point.

Choosing smaller expedition ships to travel on, especially those that have introduced genuine sustainability measures, is another important way travellers can help.

Most cruises to Antarctica start from Ushuaia on the southern-most tip of Argentina and venture across the Drake Passage, stopping at intriguing historical and natural world destinations along the way. The South Orkney and Falkland

islands are known for their king penguin and southern elephant seal colonies, and birdlife respectively. South Georgia is the historic place famed for being the final resting place of aforementioned Antarctic explorer Sir Ernest Shackleton.

The highlight, of course, is the Antarctic Peninsula itself. Guests on bigger cruise ships can’t make land, but those on smaller vessels can adventure into this epic wilderness on zodiacs, cruising across some of the most captivating marine-rich waters on the planet, with every expectation of seeing breaching whales and seals slipping through the blue depths. Stepping onto the icy shores will put colonies of penguins well within your viewfinder.

So-called ‘deep-field’ visitors – those few who travel to the interior – can arrive by plane, but they’ll have to pay the price of staying in necessarily uber-expensive camps. From these exceptionally remote campsites, modern-day adventurers have awesome opportunities to follow in the footsteps of explorers on wilderness expeditions to the South Pole, summiting Vinson Massif, abseiling, and hiking and skiing on some of the purest, crispest, whitest snow on the planet.

Antarctica is the planet’s last frontier, a wondrous white wilderness where wildlife rules. Whether the sun shines or the storms blow, this is hallowed ground. Those who stand on it are the privileged few.

FIORDLAND NATIONAL PARK South Island Aotearoa New Zealand A glacier-sculpted alpine landscape of fairytale forests and formidable fiords.

A kayak trip on the waters of Fiordland National Park reveals an amphitheatre of ancient scenery. Reflected in the tannintinged water are wobbly triangles of snowcapped granite mountains and clouds like puffs of mist on a mirror. From faraway heights the thin white stripes of falling water are exclamation marks against deep green vegetation. It’s a heavenly view.

Covering 12,607 square kilometres (4868 square miles), Fiordland National Park, in the south of Aotearoa New Zealand’s South Island, is the largest of the country’s 14 national parks, covering some 5 per cent of the country. It is a raw and largely untouched landscape of glacierscraped and sculpted alpine mountains, deep fiords (or sounds) and dense fairytale forests full of ferns, mossy tree trunks and an undergrowth of microscopic communities.

Part of Te Wahipounamu UNESCO World Heritage Site, the park’s formidable beauty plays out in many ways. Mighty snow caps, from the southern part of the Southern Alps/Ka Tiritiri o te Moana to the northern Darran Mountains, rising to just over 2500 metres (8200 feet), are prone to uncontrollable avalanches. The park’s rain drives hard and its rivers roar, funnelling water through canyons and over some of the highest waterfalls in the world. Its fathomless sounds – carved trenches, the creative work of glaciers that retreated at the end of the Ice Age – can reach 40 kilometres (25 miles) inland, their steep-sided U-bends and wends creating magical nature-scapes filled with rainforest, birdsong, pristine potable water and a biodiversity of plants and animals.

Te Rua-o-te-moko and Shadowland are names given to Fiordland by the Ngai

Tahu Māori People. While they have always known it well, few early Ngai Tahu People opted to live in the region, given the unforgiving terrain and inclement weather. But they did hunt seals, gather seasonal foods and search for precious takiwai, a translucent greenstone also known as pounamu or New Zealand jade.

The land’s legacy of impenetrability has left natural arenas that nobody has even seen; scenery so ancient and preserved that it is considered the most representative of what was once the supercontinent of Gondwana, which included Antarctica, South America and Australia.

The most well-known fiords, Milford Sound/Piopiotahi, Doubtful Sound/Patea and Dusky Sound/Tamatea, are places to encounter bottlenose dolphins, known to swim alongside kayakers, and New Zealand fur seal, once hunted for their skins but now thriving. Whales slink in these protected waters too.

On forested inclines along the watery edges there are habitats of endangered bird species endemic to Aotearoa New Zealand, including Fiordland crested penguins, flightless kakapo parrot and the infamously pesky kea. The takahē, a flightless bird thought to be extinct mid–last century, has recovered in sanctuaries around the country.

Fiordland is one of the few places it exists in the wild.

In reserves throughout the park, black coral usually found at 300 metres (1000 feet), can be found at just 40 metres (130 feet) – the fiords have a discernible bottom layer of saline water and a top layer of freshwater that is naturally stained by the tannins of rotting tree trunks and leafy vegetation. This tinged top water blocks the sun’s rays enabling typically deep-water creatures to live in shallower conditions.

It is one of the park’s marvellous natural quirks.

Kaitiakitanga, or stewardship of the natural world, has long been practised by Māori communities. Mercifully, at least

one colonial had the same pioneering idea. In the late 1800s Richard Henry flagged Resolution Island within Dusky Sound/Tamatea as an ideal sanctuary for threatened species like the kakapo and kiwi. Today Dusky Sound/Tamatea is still blissfully remote and largely pristine. But the work to stymie the island’s invasive nonnative flora and fauna is ongoing.

Over-tourism is another Fiordland challenge. But the Covid pandemic might have set the wheels in motion for change.

In 2022, the Aotearoa New Zealand government flagged Milford Sound/ Piopiotahi as a possible test case for reshaping the way the country does tourism sustainably. The approach touted capped visitor numbers, limited tour buses, and visitor fees to put tourist dollars directly back to the local community as possible solutions.

Fiordland, accessible via the towns of Te Anau and Manapouri, is the most popular national park in Aotearoa New Zealand with upwards of half-a-million annual visitors. Most are magnetically drawn to the most accessible destination, Milford Sound/Piopiotahi. Among its attractions – boat tours, kayaking expeditions, walking and trekking – the 54-kilometre (34-mile) multi-day Milford Sound Track is the most well-known, attracting about 14,000 trampers (trekkers) per year.

For those seeking a little more breathing space, Fiordland has around 450 kilometres (280 miles) of other walking trails, including Kepler and Routeburn, both designated Great Walks of New Zealand. Or, get out on a kayak. Sneaking around secluded bays to slip that paddle into silky-smooth waters is a rare dip into an untrammelled wilderness.

Can you share your culinary journey and how you became the Head Chef at Aragu Signature Restaurant? What inspired you to pursue a career in the culinary arts?

I started cooking in a professional kitchen in Kandy, Sri Lanka at the young age of 16. My 27-year career includes stints at multi-award-winning establishments such as Alain Ducasse au Plaza Athénée and Renee Redzeppi's NOMA, as well as a year in the private kitchens of the Jordanian King and Queen. I was Chef De Cuisine at the Maldivian resort Huvafen Fushi, where I met Czech billionaire Jiri Smejc, who was a guest there. When Smejc went on to establish Velaa Private Island, he chose me to be part of the opening team. That was 12 years ago and I have since risen the ranks to become Culinary Director of the entire island resort.

Maldivian cuisine is known for its unique flavours and ingredients.

Could you tell us about some of the key elements that make Maldivian cuisine so special and distinct from other regional cuisines?

Maldivian cuisine's uniqueness arises from its reliance on abundant seafood like tuna and innovative use of coconut in various forms. Local spices, cultural influences, and traditional cooking methods add distinct flavors. Signature dishes like "mas huni" and resourceful practices showcase its identity.

As the Head Chef at Aragu Restaurant, how do you incorporate the essence of Maldivian cuisine into your dishes?

When conceptualising a dish, my primary focus is always to showcase the best the Maldivian land and waters have to offer, I pair that with techniques and presentation resulting from my European training and wherever possible try and include influences from my Sri Lankan heritage. As an example, the Reef Fish, Consommé, Drumstick Leaves, is where the Maldivian staple, Garudiya (a clear tuna fish broth), is represented as a French consommé. This dish also includes moringa which is an often used

addition to seafood curries in Sri Lanka.

All of these elements come together seamlessly and deep umami flavours are presented with refined simplicity.

Velaa Private Island is located in a remote setting. What are some of the challenges you face in sourcing fresh and high-quality ingredients for your dishes? How do you overcome these challenges to maintain the standards of the restaurant?

Owing to our location within the Maldives, the biggest challenge is accessibility to a variety of fresh, global ingredients. While we have established a strong network of trusted suppliers over the years, we believe the best way to mitigate challenges around international supply, is to allow the culinary team to be inspired by what the local land and sea offers. From yellowfin tuna, which is my favourite ingredient from the Maldives, to fresh catch-of-the-day Maldivian lobsters and crabs, and locally available vegetables such as pumpkin and nuts like the kanamadhu (sea almonds). Although local supply may not always be consistent, the kitchen team has worked out a system to efficiently modify menus based on availability and seasonality. Our guests are among the world’s most discerning global travellers, and we are always looking for ways to create a memorable dining experience that goes beyond even that of a three-Michelin starred meal. They challenge us and we are kept on our toes to provide bespoke, luxurious service.

Sustainability is a crucial aspect of modern dining. How do you integrate sustainable practices into your cooking techniques and ingredient sourcing, especially considering the delicate ecosystem of the Maldives?

Aragu's menu uses only the finest organic produce and carefully selected ingredients from sustainable suppliers around the world. However, I prioritize local sourcing to reduce energy consumption in production, transport, and storage. Supporting local fishermen and sustainable agriculture fosters fair development. Challenges arise in the Maldives due to lack of controls on

fishing. Over time, I've observed declines in species like rock lobster. To address this, we enforce size regulations and avoid female lobsters with eggs. Sustainability guides my seafood choices, whether local or imported.

Aragu Restaurant is known for offering a luxurious and immersive dining experience. Can you share some insights into how you create a memorable culinary journey for your guests while highlighting the local culture?

When creating a dish, I always put the local land, waters and community first.

It is my way of giving back to the place and people. Local Maldivian flavours and ingredients inspire me, and I continually seek elegant and refined ways to spotlight them in my dishes. At Aragu Restaurant, we make dining special by combining luxury, immersion, and local culture.

Our menus mix local and global flavors, giving a unique experience. We use local ingredients and cooking styles to showcase the Maldivian food culture.

How can we incorporate Maldivian flavours into our cooking at home?

To add Maldivian flavors to your home cooking explore spices like cardamom, cumin, and cinnamon. Incorporate coconut milk and fresh seafood for authenticity. Try Maldivian recipes like "Garudhiya" (fish soup) or "Mas Huni" (tuna salad). Include chili for a hint of heat, adjusting to your taste.

We catch up with Belinda Glynn, founder of Australian fashion label OnceWas and find out what inspired her fashion journey and business.

Tell us about OnceWas and your business journey.

OnceWas is a Melbourne based luxury womenswear brand designed and owned by myself and my business partner, Linda. Our vision is to create unique investment pieces for women seeking effortless, stylish and timeless clothing with transitional wearability and versatility. Underpinned by a signature aesthetic, OnceWas collections feature exclusive prints accented by luxurious leathers and fabrics that have an emphasis on natural fibres. Upholding the quality and wearability our loyal customers have come to expect is of the utmost importance to us day in and day out.

Through this dedication, we’re proud to say that OnceWas has earned a reputation as one of Australia’s most coveted boutique labels. While both Linda and I have worked for the brand since its inception, we actually bought the business from the previous owner in 2020 and have been running it together ever since. It was a big leap of faith, especially taking over in the height of the pandemic, but we’re so proud of where we are now and how far we’ve come already.

How did you know you wanted to pursue a career in fashion and design?

I grew up in South Africa and from a very young age I knew I wanted to be a designer.

I was always playing with clothes and “designing” outfits for friends since I was small. As I grew older, I was going back and forth between a few career options, all centered around some form of design, when my dad asked me “what would you do if you weren’t being paid?” And the clear answer was fashion design. After school I went off to study at a prestigious Fashion College in South Africa after which I moved to the UK and eventually found myself in Australia. When I first moved here, I started working at a fashion wholesaler in product development, essentially for experience and as a way to get my foot in the door of the fashion industry. A few years later I was offered a position working as a designer for the company that then owned OnceWas. Looking back on my career development, one piece of advice I would offer young designers would be to seek out a mentor while also working your way up. Knowing the ins and outs of the fashion business and

the process of designing and producing garments from the ground up, has been invaluable in my career.

What has been the most challenging aspect of running your own business?

Surprisingly, the most challenging aspect has been making the time and space to be creative while juggling all of the business aspects of the brand. The financial and marketing sides of the business demand constant attention so it takes a lot more conscious effort to set aside time to get into a creative flow.

We’ve started with New Zealand where we find the market, and of course the seasons, to be quite similar, and have set our sights on Europe over the next 12 months. For myself, my focus over the next year or so would be to grow my team so I am able to delegate more of the day to day, allowing me more time to focus on design and the financial side of the business.

How do you want your customers to feel when they wear OnceWas? Personally, I'm inspired by designing clothes that make women feel confident, comfortable, and good about themselves and that's what OnceWas is all about. Every aspect of what we design is intended to celebrate the female form in every shape and size and we want to make women feel amazing inside and out when wearing something from OnceWas. How does OnceWas consider sustainability in business decisions?

Sustainability underpins a lot of business decisions here at OnceWas. We consider sustainability when choosing fabrications, manufacturers and even when expanding our size ranges. We prioritise small batch production to reduce excess and unnecessary waste while designing high quality investment pieces that won’t go out of style, enabling our customers to wear them for years to come.

Can you share a styling tip you live by?

When designing our collections, even though we use a lot of unique patterns, we also like to use colours in the same tonal ranges so you can mix and match pieces from one capsule to the next. Personally, I love using pieces that can be worn in a variety of different ways to enhance each individual’s style. To me, that’s a sign of a good garment and builds a versatile and chic wardrobe.

What’s next on the horizon for you and the brand?
