4 whole unpeeled potatoes 1 large cleaned octopus (1kg or 2lb) 1 bunch of parsley Oregano 2 onions, chopped roughly 2 bay leafs (laurel) 4 cloves of garlic, chopped Flor the sal (sea salt) Black pepper Extra virgin olive oil Spanish smoked paprika powder

METHOD (50 minutes) Boil the unpeeled potatoes for 25-30 minutes in salted water.

Boil water in a large casserole pot. Add salt, bay leafs, parsley, oregano, onions.

Dip the octopus in the boiling water and take out immediately. Repeat a few times to soften the meat. Then leave it to boil for 30 minutes.

Preheat the oven to 180°C Cut the boiled potatoes into thick slices. Arrange them on one side of an oven plate.

Chop the octopus in slices and arrange them together with the cooked vegetables at the other side of the plate.

Sprinkle the chopped garlic on top. Add flor de sal, pepper and paprika. Put in the oven for 1012 minutes.

The tradition in Spain is to arrange the potatoe slices on a wooden board and display Your the octopus bits on top. Serve with favourite food?

STEP 1: Prepare the herb blend in a small bowl: 1 cup chopped fresh parsley, 1/4 cup fresh lemon juice, 1 tablespoon olive oil, 2 minced garlic cloves.

STEP 2: Prepare the broth in a large saucepan by combining 1 cup of water, 1 teaspoon saffron, 1/2 L chicken broth. Bring to a simmer (do not boil). Keep warm over low heat.

Step 3: Prepare the paella. Heat 1 tablespoon of olive oil in a large paella pan over medium-high heat.

Add 4 chicken thighs and bake 2 minutes on each side. Remove from pan. Add 200g of sliced Spanish chorizo sausage and 100g of prosciutto. Saute 2 minutes. Remove from pan. Add 8 jumbo shrimps.

Saute 2 minutes. Remove from pan.

Reduce heat to medium-low. Add 2 chopped onions and 1 chopped bell pepper. Saute 15 minutes, stirring occasionally. Add 2 chopped tomatoes, 1 teaspoon sweet paprika, and 3 minced garlic cloves. Cook 5 minutes. Add 600g rice. Cook 1 minute, stirring constantly. Stir in herb blend, the broth mixture, chickensausage mixture, and 100g peas.

Bring to a low boil. Cook 10 minutes, stirring frequently. Add a handful of mussels to pan, nestling them into rice mixture. Cook 5 minutes or until shells open. Discard any unopened shells. Arrange shrimps heads down, in rice mixture, and cook 5 minutes or until shrimps are done. Sprinkle with the juice of 1 lemon. Serve to friends and loved ones.

Spanish wine tradition could be summarized as ‘value’. You simply get much more for your money. The Rioja region is certainly the best region for Spanish red wines.

There are actually three sub-regions or unique districts that compose the Rioja: the two cooler climates of Rioja Alta and Rioja Alavesa and the balmier region of Rioja Baja.

The Rioja region produces the majority of its acclaimed red wines from the Tempranillo grape in addition to growing and utilizing Garnacha, Mazuelo and Graciano, which are often used for blending with Tempranillo. Viura is the dominant white grape grown in the Rioja region, but keep in mind white wine only accounts for about 10% of Rioja’s total wine production.

Rioja wines are classified by the time they have spent aging in-house and are not released until they are ready to drink. This makes finding a very drinkable, foodfriendly wine upon purchase much more likely. The three Rioja red wine classifications, as found on the front or back Spanish wine bottle labels are: Crianza: This is a fresh, fruit-forward youthful red wine that is aged in oak for a minimum of one year and then spends another year aging in the bottle. The Crianza is a well-priced Spanish wine and averages around €10 a bottle. Crianza has a reputation for being a perfect partner when it comes to pairing with food – give it a whirl with novel Spanish commodities like tapas. This is an easy-going, everyday wine

that will not disappoint and offers good, consistent value year in and year out.

Reserva: The Reserva is a bit more complex and pricier. Again, Spain’s beloved Tempranillo is the dominant red grape and makes its presence known with commanding cherry flavours. The aging requirements for a Reserva are a minimum of one year in the barrel and another two years aging in either the barrel or bottle.

The price point for a Reserva ranges from around €15 to over €35. Reserva is a very versatile red wine that eagerly complements an assortment of food options. Consider pairing it with grilled dishes, fish, beef, lamb and it’s made for jamón (ham).

Gran Reserva: The best Rioja red wines are named Gran Reserva. These wines require barrel aging for two years and must have another three years (minimum) of bottle aging before they are released, making them a terrific wine find as they have already enjoyed 5 years of aging before they may even grace the merchant shelves. The Gran Reserva is not made every year but enjoys its high status because it is only made in extraordinary vintages. The Gran Reserva boasts both depth and body, intrigue without pretence and elegance without breaking the bank, as it starts at around €20 a bottle and rivals many New World reds that are asking triple the price.

There are many good Rioja wines to drink.

But if you cannot choose, here are some producers to try: Montecillo, La Rioja Alta, Marques de Caceres, Baron De Ley, Muga, Campo Viejo.

PERROS DE AGUA ESPAÑOLES or Spanish water dog is a breed of dog originating from Spain. This breed has been recognized by the FCI for about 30 years. It is as number 336 in Group 8 (retrievers and Water Dogs), section 3 (the Water dogs) placed.

The Spanish water Dog is a real working dog. In Spain The breed is traditionally used as a shepherd dog, Fishermen’s help, guard and Hound. The Spanish water dog is a robust looking dog, with a curly fur that does not hair. The fur is completely shaved off one or two times a year.

The Spanish water dog occurs in different color strokes. There are plain black and brown dogs, but also brown-white and black-and-white.

Former tennis player Thomas Muster says Rafael Nadal is the best claycourt player ever. Nadal is number two in tennis in the world. But he is the undisputable clay court number one.

Raphael Nadal was born in Mallorca. He still lives there. He turned pro in 2001.

Today at the age of 32 the Spaniard has an impressive tennis career. He won 80 career titles overall, including a record 57 clay court titles. With 81 consecutive match wins on clay, Nadal holds the record for the longest single surface win streak in the Open Era. In the interview to La Gazzetta Dello Sport, Thomas Muster commented on Rafael Nadal’s clay-court dominance: “Rafa is the strongest over on this surface, there is no doubt about it.

Otherwise, you do not win the French Open so many times (all-time record of 11 times), and he did it in the last years as well, going through all the injuries he suffered. Apart from the amounts of

successes in Rome, Monte Carlo and Barcelona as well, he is really the best out of any era on clay”.

Nadal was due to start his season at the 2019 Brisbane International, but withdrew shortly before his first match due to an injury. He was seeded second at the 2019 Australian Open to reach his fifth Australian Open final. This was the first time that Nadal had advanced to an Australian Open final without losing a set. Nadal lost the final in straight sets to Novak Djokovic, winning only eight games for the match, and marking Nadal’s first straight-sets loss in a Grand Slam final. Nadal next played at the 2019 Mexico Open where he reached the second round, losing to Nick Kyrgios in three sets despite having three match points in the third set.

Rafael Nadal is a star also in the literal sense. An asteroid discovered at the Observatorio Astronómico de Mallorca was named after him.

Tarifa at the south-west coast of Spain, is of course the European hotspot for kitesurfing. If you want to spend your time amongst thousands of like-minded surfers Tarifa is the nirvana.

But you can find deserted kitesurfing beaches along the Spanish coastline too. Find the best kitesurfing lagoons and sandbars to guarantee those perfect kite sessions.

Kitesurfing Barcelona is a good option. There are plenty of partners to ride with around Valencia and Malaga before you arrive at Gibraltar and then reach the Atlantic facing coast and then on to Tarifa…

There are strong kitesurfing scenes around the favourite northern cities of Bilbao, Santander and San Sebastian. When kitesurfing waves is more your thing, then northern Spain is your region.

Further west you get the more deserted and the more extreme conditions. In Galicia you could find yourself riding alone.

Formentera is the smallest of the Balearic Islands. Calm and authentic. This former hippie resort, where Pink Floyd made one of their albums, still bears witness to its rustic and relaxed charm. Mainly flat and sandy with magnificent, unspoilt beaches with crystal clear waters. The island is perfect for cycling, walking, snorkelling and sailing. Only a few cultural or historical attractions. Formentera has no airport. Take a ferry from the Spanish mainland of from Ibiza. You could also hire a yacht in Ibiza and discover Formentera on your own pace.

Unesco World Heritage Formentera’s sea is very clear and has transparent, sparkling turquoise water thanks to the presence of the largest area of Posidonia Oceanica sea grass in the Mediterranean Sea. This ancient sea grass is the oldest living being in the entire world and was declared a Unesco World Heritage site.

This makes Formentera excellent for snorkelling and diving.

Where to go and sleep San Fernando is the most centrally located of Formentera’s villages and a great base from 92

which to explore the island. It has a sleepy, laid-back, hippy kind of atmosphere and yet the village is still very functional with banks, a post office, Internet cafe, bars and restaurants.

Route Starting Point: Puerta del Mar Being attcked from the sea several times in history Alicante has always been a walled city.

16. Town Hall of Alicante (photo) This first Town Hall was destroyed by bombardments in 1691. The Town Hall that we can visit today was built at the beginning of the 18th Century.
