Daarbij wordt ook veel rekening gehouden met het praktisch zijn en de juiste huiselijke sfeer, bijvoorbeeld door antiek te mixen met nieuw waardoor uw huis geen showroom wordt. Ook gaat de aandacht uit naar natuurlijke materialen. Nu we alweer ruim 3 jaar in de Costa Blanca Noord wonen, kennen we intussen de pareltjes om bijvoorbeeld uw keuken of sanitair uit te zoeken, maar ook de super toffe marktjes voor de accessoires met een verhaal. Deze keuken is bijvoorbeeld van Creativ Cocinas. Ook ga ik graag shoppen met u en kunnen we onderweg een lekker eetadresje aandoen. Naast Nederlands, Engels, Duits en Frans spreek ik ook genoeg Spaans ;)

Styling in the broadest sense of the word: choice of materials and colors at the start of the (re)construction. A lot of attention is also paid to the exterior, so that the object fits into its environment and inside and outside become one as much as possible. Practicality and the right homely atmosphere are also taken into account, for example by mixing antiques with new so that your house does not become a showroom. Now that we have been living in the Costa Blanca North for over 3 years, we know the gems to, for example, pick out your kitchen or sanitary ware, but also the super cool markets for accessories with a story. BonAmb, Javea **

In Javea, you can find BonAmb, a two-Michelin-starred restaurant run by chef Alberto Ferruz and his team. They are celebrated for their innovative Mediterranean cuisine using locally sourced, seasonal ingredients. BonAmb is also a visual treat, boasting stunning views of the Montgó Natural Park and the Mediterranean Sea.

L’Escaleta, Cocentaina **

L’Escaleta, located a little inland on the Costa Blanca, boasts two Michelin stars. Run by chef Kiko Moya, the menu is a beautiful amalgamation of modern and classic dishes, influenced by Mediterranean cuisine. They take great pride in using herbs and spices from their own garden.

El Xato, La Nucia *

In the town of La Nucia, near Altea and Benidorm, you’ll find El Xato. The restaurant, with its one Michelin star, is famed for traditional Spanish cuisine with a focus on rice dishes and fresh seafood. The charming 19thcentury building it’s located in only enhances the dining experience.

Peix & Brases, Denia *

Peix & Brases, a one-starred restaurant in Denia, offers a wonderful menu comprising seafood and grilled meats. Located almost opposite Denia’s marina, the establishment provides magnificent views of the Mediterranean Sea.

Beat, Calpe *

In Calpe, you’ll find the one-starred restaurant Beat, run by chef Jose Manuel Miguel. The restaurant is known for its fusion of Mediterranean and Asian cuisine. It is located in The Cookbook Gastro Boutique Hotel & Spa.

Casa Pepa, Ondara *

Casa Pepa, located in Ondara and founded by chef Pepa Romans, has held one Michelin star since 2012. The cuisine is a modern interpretation of Mediterranean dishes.

Orobianco, Calpe *

Orobianco is a one-Michelinstarred restaurant in Calpe known for its contemporary approach to Italian cuisine. The gastronomic director is Paolo Casagrande, previously chef de cuisine of the threeMichelin-starred restaurant Lasarte in Barcelona.

Audrey’s, Calpe *

Audrey’s, located in Hotel AR Diamante Beach in Calpe, is another Michelin-starred restaurant in the region. Rafa Soler, the chef, experiments with traditional Mediterranean cuisine.

Baeza & Rufete, Alicante *

Enchanting seasonings

Spain’s colourful tapestry of culture, tradition, and culinary brilliance is woven with threads of aromatic herbs and spices. These natural elements not only add distinctive flavours and aromas to Spanish cuisine but also serve as a testament to the country’s rich history and gastronomic diversity. From the sizzling paella to the hearty gazpacho, these dishes would not be the same without the power of these enchanting seasonings.

Paprika

Or “Pimentón,” is arguably the most recognized spice in Spanish cuisine. Its characteristic smoky flavour and intense colour are derived from dried peppers, which are grounded into a fine powder. There are three main types of Pimentón: Pimentón dulce (sweet and mild), Pimentón agridulce (bittersweet and medium-hot), and Pimentón picante (hot). This spice is a key ingredient in Chorizo, a popular Spanish sausage, and the star of the show in many regional dishes, such as Galician octopus.

Saffron

Another iconic Spanish spice is saffron, which gives paella its iconic yellow hue and subtle earthy flavour. Known as “Oro Rojo” or Red Gold, saffron is the world’s most expensive spice, owing to the labor-intensive process of harvesting it from the Crocus sativus flower. The La Mancha region of Spain is renowned for producing high-quality saffron, and the spice is protected under the Denomination of Origin status.

Parsley

Besides these spices, various herbs play a crucial role in Spanish cuisine. One such herb is parsley. This vibrant green herb is used fresh in a variety of dishes, including the beloved Spanish omelette and the flavourful “al ajillo” garlic sauce. Parsley’s fresh, slightly bitter taste perfectly complements the strong flavours in Spanish cuisine.

Rosemary

Another favourite herb, adds a fragrant flavour to meats, stews, and even desserts. Its balsamic scent is particularly appreciated in lamb dishes, such as “cordero asado,” a traditional roasted lamb dish. The herb is so loved that it even has a place in Christmas traditions where it is burnt as an incense.

Thyme

With its subtle, dry aroma and slight lemony flavour, is another herb often used in Spanish cooking. It is an essential part of the “adobo” marinade, used extensively to season meats before cooking.

Bay leaves

Used both fresh and dried, bay leaves are another herb common in Spanish cooking. The robust flavour of bay leaves can be found in a variety of dishes, from slow-cooked stews to seafood dishes, imparting a distinctive yet subtle bitterness that enhances the overall taste.

Garlic

While exploring Spanish herbs and spices, it would be remiss not

to mention garlic, an allium that’s practically a staple in Spanish cooking. From the potent “alioli” sauce to the simple “ajo blanco” soup, garlic’s pungent flavour is an integral part of Spanish culinary identity.

Furthermore, Spain’s geography and climate make it an ideal environment for cultivating a wide range of aromatic plants. It is common to find regionspecific herbs and spices that lend unique flavours to local dishes, such as the Andalusian oregano or the Basque “Espelette” pepper.

For me, the joy of savoring a delectable dish extends beyond just the food. The ambiance and the companionship significantly contribute to the overall experience. Now, let’s venture into crafting a delightful Moorish eggplant recipe. But first allow me to offer you a concise history of its origins that you can share with your table guests.

Carola

The Moors and Spanish cuisine

Just a very short history lesson. The Moors crossed the Strait of Gibraltar in 711 and rapidly conquered the Iberian Peninsula. The Iberian Peninsula became a province of the Moorish empire under the name of al-Andalus, so hello Andalusia!

The history of many of the beautiful villages on the Costa Blanca is also largely Arabic, and you can tell by the names that start with Beni. Just think of Benissa, ‘Ben Isa’ means ‘sons of Isa’. You can add to the list yourself: Benidorm, Benitachell, Benidoleig, Benigemabla, etc.

In 1609 the Moors were expelled from this area, and it was then repopulated by the Christians from the Pyrenees, Catalonia and Aragon. This is celebrated annually during the wellknown fiësta Moros y Christianos.

Fruit, vegetables and spices

In addition to all the architecture and science, the Moors also had a major influence on Spanish cuisine. They introduced many different fruits and vegetables, such as chickpeas and limes. The Moors also brought rice, spices, and dried fruits.

Especially in the south, the Moors have left an indelible impression. Through new agricultural techniques such as irrigation works, the Moors succeeded in cultivating land that had lain fallow until then and obtaining a rich yield from it.

New crops were introduced such as rice, aubergines, artichokes, and asparagus, as well as spices yet unknown in the Western world such as pepper, cinnamon, and cumin. They found their way into Spanish cuisine.

The introduction of courses

The Moors also introduced the now familiar way of eating, with a meal with several courses instead of putting all the dishes on the table at once. One of their aperitifs, meze, is the forerunner of tapas. As well as paella by the way.

There are several stories about the origin of Paella. One of them is that Moorish kings regularly had leftovers of rice, chicken, and vegetables after their meal. Their servants took these leftovers home. The story goes that the word ‘paella’ comes from the Arabic word ‘baqiyah’: leftovers.

In honour of the Moorish influences, let’s prepare a delicious oven dish, with many of those beautiful ingredients and flavours.

RECIPE: Moorish Eggplant

Sufficient for a tapas dish or side dish. Doubling the ingredients will make a delicious vegetarian main course.

Ingredients

• Can of tomato frito

• Olive oil

• Pepper and salt

• 1 tablespoon ras al hanout seasoning

• 2 shallots, finely chopped

• 2 cloves of garlic

• 5 tablespoons of walnuts, chopped or in a mortar

• Splash of white wine or sherry

• 1 large aubergine

• Handful of pine nuts

• Parsley, finely chopped

• Parmesan cheese or Manchego

Preparation

• Cut the eggplant lengthwise into very thin slices

• Wide slices can also be cut in half lengthwise

• Brush with olive oil and sprinkle with salt and pepper

• Bake them in the grill pan until the slices are thin and manageable. The leftovers of the eggplant you cannot use as a slice can be cut very finely.

• In the same pan, fry the chopped shallot, the chopped garlic and the chopped or crushed walnuts with the ras al hanout seasoning. Also add the leftover eggplant.

• Deglaze with a dash of white wine or sherry and add 2 tablespoons of tomato frito

• Place a scoop of this mixture on each eggplant slice and roll up

• Grease an oven dish with some oil, put the rest of the tomato frito in the dish and place the eggplant rolls on top

• Sprinkle with some grated cheese

• Place in the oven at 200 degrees for about 15 to 20 minutes

• Toast some pine nuts and sprinkle the rolls as they come out of the oven

• Optionally add some chopped parsley

Mediterranean inspired art by Peter Engels

Artist Peter Engels made paintings at the Mediterranean Coast this summer. He immersed himself in a real ‘workation’ at an inspiring location with sea view. Away from the rat race. No emails, no phone, no TV, no visitors. He painted some striking portraits, including this unique ‘Look at the Sky’.

Mediterranean atelier

Since his youth, artist Peter Engels, who originates from Belgium, has had a special feeling for the Mediterranean Sea, where he often spent summer holidays as a young boy. From Italy, Monaco, the French Riviera and the Spanish coast, there are places that are etched in his memory. They evoke a special feeling in him. Ideal locations to a retreat with the painter’s easel.

After Peter Engels became famous around the year 2009 when his Nelson Mandela portrait that appeared on the

world’s largest billboard in New York’s Times Square on Mandela’s birthday, Prince Albert of Monaco bought the portrait that Peter Engels painted of the Prince’s mother, Princess Grace.

Anecdote

A fun fact is that after one of those exhibitions in Monaco, Peter Engels left Monaco at night. The police stopped him and found an SUV loaded with paintings very suspicious at three o’clock in the morning. Peter Engels told them that he was the painter of the Princess Grace portrait, which had been in all the newspapers. They saluted, apologized, and even escorted him.

Estée Lauder

Some fine exhibitions followed in Monaco. There Peter Engels met a couple from Cannes who commissioned him to paint a special portrait. They bought and restored Estée Lauder’s villa and wanted to revive the estate with a large painted portrait of her.

The mayor of the medieval village of Mougins, just above Cannes, commissioned Peter Engels to make a large sculpture of Michelin star chef Roger Vergé. He became world famous as one of the fathers of nouvelle cuisine. During the Cannes Film Festival, all the big stars dined with chef Roger Vergé, he was that famous. Today, on the village square, opposite Vergé’s star restaurant L’Amandier, stands his large sculpture in beautiful rusty Corten steel, signed ‘Peter Engels’.

Look at the Sky

Inspiration comes with the right atmosphere, was the thinking behind the trip to the Mediterranean. A pleasant climate, beautiful light, spicy scents, umbrella pines, palm trees, they all play a role that should not be underestimated when creating a new painting. Add a glass of wine, olives and a southern playlist, and the tone is set. That whole atmosphere is contained in that one painting titled ‘Look at the Sky’.

The first day, after a swim in the pool and a strong cup of coffee, Peter Engels put his easel on the terrace overlook-

ing the sea. This became his open-air studio, and he started a painting that breathed the whole atmosphere that the artist was experiencing. On a canvas 140 cm high and 100 cm wide, he made the first knife strokes of “Look at the Sky”.

Painted with the palette knife in mesmerizing shades of turquoise and blue, ‘Look at the Sky’ symbolizes the vastness of dreams and the courage to pursue them. Created in the enchanting Mediterranean setting, this work of art reminds us never to lose sight of our ambitions, our dreams.

The Influence of the moon is magical. For me, the moon has always had something magical about it. Besides the fact that I find the moonlight beautiful - and here in Spain, I can enjoy it much more often than I used to in the Netherlands - it has a certain allure for me. The moon’s energy intrigues and inspires me.

Did you know that the phase of the New Moon is the beginning of the lunation, the synodic month that lasts about 29.53 days? A lunation is the time period from new moon to new moon.

Did you know that the New Moon is traditionally seen in many cultures as a time for new beginnings, fresh starts, and setting intentions? It’s a time when people often hold ceremonies and rituals to determine their goals for the coming moon cycle.

Did you know that during the New Moon, when the Moon and the Sun are in the same direction as seen from Earth, the gravitational forces of the Sun and the Moon come together? This phenomenon can lead to higher tides, known as “spring tide.”

Moon phases

The moon goes through various phases in 29.5 days. From the invisible new moon to the radiant full moon, and back again. These phases have traditionally been associated with cycles of growth and withdrawal, of sowing and harvesting, and of renewal and letting go.

You, as a human, can experience the influence of the moon’s phases, just like the ebb and flow of the ocean, driven by the moon’s gravity. Perhaps you recognize that you sleep worse during a Full Moon? That you feel more restless and might even have a slight headache. During the New Moon, people often report feelings of introspection and reflection in which you may feel more tired or have a greater need for peace and quiet.

DAY TRIP ALICANTE

If you have just one day to spend in Alicante, Spain, don’t worry - there’s a way to experience its beauty and rich culture. Here’s a guide to help you make the most out of your 24 hours in this vibrant coastal city.

Start your day bright and early at the Alicante Mercado Central. The lively market, open from 7 am, offers a peek into the daily life of the locals. Sample fresh produce, baked goods, and immerse yourself in the delightful chatter of Spanish.

After breakfast, get ready for an adventurous walk up to the Castell de Santa Barbara. The pedestrian-only path, reminiscent of the Great Wall of China, takes you through stunning views straight to the castle. Open from 10 am, the castle’s panoramic vistas of mountains and the city below are worth the exertion.

Post the castle visit, stroll through the charming narrow streets of the Casco Antiguo, the old town of Alicante nestled under the castle. The architecture and the laid-back vibe make for an appealing walk. It’s also a perfect time to grab a baked treat from the market.

A visit to the MACA - The Contemporary Art Museum of Alicante, is recommended, especially if it’s a rainy day. This museum, open from 10 am to 8 pm, offers an extensive collection of 20th-century and contemporary art.

Once you’ve had your fill of culture, head to the Explanada de España. The picturesque promenade, lined with palm trees and cafes, sits right next to the water

and is perfect for a leisurely walk or rest.

Time for some archaeology. The Archaeological Museum of Alicante or MARQ provides an interactive experience, walking you through different archaeological methods and techniques. And if you still have some energy left, visit Lucentum, an ancient Roman town, now Alicante.

Finally, end the day Spanish style with dinner at 9 pm. Alicante’s coastal location ensures the freshest seafood - tapas of squid, anchovies, or Bacalao (Atlantic cod) are a must-try.

DAY TRIP VALENCIA

Discover the enchanting city of Valencia in just 24 hours with this ultimate guide that explores both its ancient history and modern marvels.

Kick off your day at the Central Market, one of Europe’s largest markets, boasting over 8,000 metres of fresh local produce and enticing food stalls. Immerse yourself in the bustle of this Art Nouveau and Gothic-inspired building, sampling the fried dough or fresh fruit for breakfast.

After filling up, delve into Valencia’s history at the Silk Exchange. This UNESCO World Heritage Site is a testament to Valencia’s affluent past. Opt for an audio tour to unravel the architectural magnificence of this 15thcentury building.

Continue your historic tour at Valencia Cathedral. Opening at 10 am, the cathedral captivates with its Gothic and Baroque influences. Don’t miss the grand
