Potato, Bacon & Kale Bake Serves 4 1
Peel and slice the potatoes. Pour the milk and cream into a large pan. Add a generous sprinkling of salt, pepper & nutmeg. Turn to a very low simmer. Add 2 or 3 cloves of garlic. Do not let it boil over. Add the potatoes and simmer for 5 minutes.

Grill the 6 rashers of bacon until crispy. Chop/shred a head of winter greens or kale - destalk if you find them too tough. Flash boil for about 1 or 2 minutes.

Take a deep casserole dish , layer the ingredients starting with the potatoes, followed by the bacon and greens. Continue to layer and top with a final layer of potatoes.

Pour the milk/cream mixture over the layers and bake for about 35 minutes in the oven at 190C/375F/gas mark 5.

Essaouira Morocco By Solange Hando In the vast luminous bay of Mogador, a quaint blue and white town l ooks dow n on fi ne tingling sa nds, its ancient gates and minarets nestling inside the ramparts like a pearl in an oyster shell. Lapped by the Atlantic Ocean on the s unny Moroccan coast, Essaouira is an enticing alternative to the modern resort of Agadir. Yet you never know whom you might meet on your way to the beach. Film producers and stars have long discovered the secret, following the likes of Jimmy Hendrix, Orson Welles and Hitchcock. Both ex otic and unsp oilt, this has proved the perfect spot to shoot box office hits, Alexander the Great to name just one. Most visitors are day trippers from Marrakech, keen to chill out on the beach, though there is plenty of scope for the active sort, surfing, exploring the dunes on a camel, cruising to t he Purple Islands, home to thousands of birds, or horse riding along the s ugar cane river. Others head for the former hippie village of Diabat to gaze at the old sultan’s palace half buried in the sand or just walk for miles along the beach where the scent of white broom fills t he air.

Briefly settled by the Portuguese in the early 1500s, coveted at times by various western powers, Essaouira came into its own i n the 18th century whe n a French architect was directed to build the fortress and redesign the medina. Further improvements foll owed and before long, this was Mor occo’s most important port, the place where goods fr om the caravan trade could have access to the rest of the world. It became know n as the ‘port of Timbuktu’. Trade dwindled over time but today, bastions and crenellations still mingle their golden reflections i n the harbour where trawlers unload their catch and nets dry on the quay among screaming gulls, crates full of fish, s hipwrights a nd a whole flotilla of little blue boats bobbing in the dazzli ng s un. From there it’s only a few steps to the al fresco restaurant s serving royal mint tea and grilled sardines, cousc ous, le ntil and tomato soup flavoured with ginger, cinnam on a nd pepper, or the ubiquitous tagi ne, a fragrant fish, meat or vegetable stew which simply melts in your mouth. Meanwhile, beyond the Sea gate, the old town beckons with bustling alleyway s, mosques a nd

holy s hrines, stalls brimming with spices and fruit, rooft op restaurants and s haded squares and courtyards where cool fountains gurgle among potted plants. It’s a World Heritage Site and a feast for all the se nses, echoi ng with t he tapping and chiselling of artisans who carve orname nts from precious t huya wood. It’s also a great place to bargain for carpets and rugs, silver jewellery, brightly-painted pottery and Argan beauty products. Protected by UNESCO in south west Morocco, Arga n trees yield the world’s rarest oil and the wome n’s cooperatives around Es saouira produce some of the most sought after natural cosmetics. Late afternoon is a lovely time to stroll along the bastions, still lined with 200 year old cannons. Enjoy the bree ze, the gl orious views over the tow n and harbour, the great sweep of the beach, the islands, the dramatic rocks to the nort h, battered by the waves, and the fabul ous sunset, all red and gold, over the ocean. But hurry before the crowds arrive and just like the stars, you might se e this little gem at its best, colourful, pristine and truly authentic.

Edna and Mr P ……Don’t Get Conned! [Murray] I am dropping the tales of Edna and Mr P this mont h to remind you of a serious sit uation which I have written about before but which is still goi ng on. Con-mercha nts pressurisi ng elderly and vulnerable people into b uying, ofte n inappropriate, mobility equipment at grossly inflated prices. Recently I heard about a resident at a local care home w ho was contacted, out of the blue, by a slick salesman w ho i nsisted in visiting her. He came along one eve ning and spent hours persuading her that she ne eded a new mattress she didn't want. He gave a whole spiel about medical reasons a nd therapeutic benefits - he was eve n wearing a pseudo-medical tunic to give some sort of impression of profe ssi onal training. Eventually s he was s o confus ed and stressed that she paid over £1800 j ust to get rid of him. Fortunately, the next day, a carer (one who does actually care!) heard about this and got her, reluctantly, to cancel the order and seek a refund. After quite a deal of hassl e, and because she had paid by credit card, she did eventually get her money back. Incidentally, the type of mattress she had ordered would have cost under £50 0 from ourselve s, that is considerably less than one third of what s he had paid! Attempts to contact the company were hampered since no telephone number was provided and extensive searche s only traced them back to a Call Centre address.

But what’s so special about ground cover growing, when is it most useful and when should you start?
