Cake and Bake Lemon Curd Cookies Crisp and buttery with a tangy lemon flavour these delicious home-made cookies taste divine. You can change the flavourings if liked, try orange zest with fine shred marmalade or replace 1tbsp of the flour with cocoa powder and fill with chocolate and hazelnut spread for a moreish choc and nut version!

Ingredients:

1 Place the butter and sugar in a large bowl and beat

50g butter, softened 1 tsp finely grated lemon zest 85g caster sugar 1 medium egg, beaten 175g plain flour, plus extra for dusting • 4 tbsp good quality lemon curd • Icing sugar, for dusting

TIP The chilled dough will keep in the fridge for 2-3 days. Leave at room temperature for about 20 minutes to allow the dough to soften a little before rolling out otherwise it may crack.

Line two baking sheets with baking parchment. Roll the dough out on a lightly floured surface to a 5mm thickness and using a 6cm round cookie cutter stamp out 16 circles, re-rolling the dough as necessary. Place the circles of dough on the baking sheets. Spoon about ½ teaspoon of lemon curd in the centre of each circle then pull up two sides of the each circle and pinch together tightly to seal. Chill in the fridge for a further 30 minutes. Bake in the preheated oven for 12-14 minutes until pale golden. Cool for 5 minutes then transfer to a wire cooling rack and leave to cool completely. Serve dusted with icing sugar.

FIFA World Cup 2014 - Brazil If there was ever a best time to visit Rio de Janerio in Brazil it would have to be during the world famous Rio Carnival, held every year just before lent. Or for every football fan it would be right now - while Brazil are hosts of the FIFA 2014 World Cup. An event which is unlikely to occur again in Brazil during my lifetime this was truly one of those trips of a lifetime and one to cross off the bucket list. Having read “Zico A Lesson In Living” a biography of the legendary Brazilian footballer a couple of years back, I’d been dreaming of going to the Maracanã to watch a match. The stadium was built for the FIFA 1950 World Cup, the attendance at the final game of that tournament was 199,854. Major reconstruction work was carried out on the stadium prior to the 2014 World Cup and the forthcoming Olympics and Paralympics in 2016, and it now seats 78,838 spectators. The first game of the 2014 World Cup to be held in the Maracanã was a 2-1 victory by Argentina over BosniaHerzegovina on Sunday 15

June and I was one of the 74,738 there to savour the moment and what a moment it was! The atmosphere inside was electric and that was with one hour and thirty five minutes to go before kick off, when the stadium was only half full and the atmosphere built up from there, truly amazing. Every game I’ve ever been to the fans are segregated so this was a new experience having everyone mixed together - the banter, singing and chanting was brilliant, between the Argentina fans, Bosnia fans and the local Brazil fans joining force with Bosnia. Things threatened to spill over at one point but the perpetrators where soon calmed down. Then to see Messi score was the icing on the cake and the Argentina fans went wild. The defining moment of the trip though was down at Copacabana beach after the Russia v Belgium game. The FIFA fan fest area was packed for the USA v Portugal game so we strolled along the black and white patterned promenade of Copacabana beach and stopped at one of

the many kiosks dotted along the 4km stretch of beach. We quickly settled into the relaxed atmosphere and enjoyed a cold drink and a plate of fried shrimps complete with tail and eyes! While watching the game unfold. Hawkers selling all manor of things prowl between the tables offering their wares. Among them came along three young boys, 7 or 8 years old at most with sad faces selling sweets. Until one of them spotted a burst football left lying on the beach. Their eyes lit up like it was Christmas. Off they ran to the goal posts under the weak floodlight glare. They kicked off their flip flops, lay down their sweets at the side of the goal post and played football on the beach. One would keep goal while the others took shots. Before long their jackets came off to reveal their yellow Brazil tops with Neymar Jr 10. For about 20 minutes I watched as those original sad faces turned to joy. It’s really was one of those defining moments of the trip when you see how something so little can bring so much joy.

Stars of the New York Motor Show By James Baggot The New York Motor Show might not be the biggest event on the automotive calendar, but there were still some treats in store for car fans in the Big Apple. Land Rover Discovery Concept It was launched on an aircraft carrier, next to a spaceship, with the Manhattan skyline as a backdrop - this launch is a massive deal for the manufacturer. It’s packed with tech, including augmented reality that can project sat nav directions onto the smart glass windscreen, gesture controls that open doors without touch and the ability to remotely drive the car using a tablet or smart phone. How much will make it into production is unclear, but it’s exciting stuff. Mercedes S63 AMG Coupe The world’s chief executives are sure to make their next meeting on time thanks to this luxury missile. With 577bhp under the bonnet, the monster S63 AMG Coupe can hit 60mph in just 3.9 seconds. It has a 5.5-litre turbocharged V8 engine and an interior that’ll please those used to five star hotels. Air suspension, an imaginatively-titled Magic Body

We’re not sure which term the Germans prefer, but all we know is the BMW M4 looks absolutely stunning with its roof chopped off. The M4 features a clever threepiece folding metal roof and some not-so-subtle design tweaks. These include quad tailpipes, a larger front bumper and a tweaked kidney grille. The convertible will go on sale in September costing £60,730 with a 3.0-litre turbocharged six cylinder. The 0-60mph time is now down to 4.6 seconds. Ford Mustang 50th Anniversary It wouldn’t be an American motor show without some muscle, and thankfully Ford has been taking its protein shakes and come up with this. The night before the show, Ford chopped one up and rebuilt it on the 86th floor of the Empire State Building, recreating a stunt they pulled off with the original back in 1954. It’s only available in blue or white, has a retro four speed auto box

and chrome detailing. Under the “hood” is a 5.0-litre V8 producing 414bhp. Kia Sedona At last, Kia’s not-so-pretty Sedona MPV has been given the same plastic-surgery treatment as the rest of the range. The new model might still be a little bit van-like, but with the trademark Kia tiger nose and smart headlights, it looks a lot more stylish – and it needed it. The MPV has seating for eight as well as some clever trickery that can fold seats away and remove them. BMW X4 There were a number of models that didn’t make our top cars of the show cut, and this X4 was very nearly one of them. Let’s face it, the crossover fell out of the ugly tree and hit every branch on the way down. The maker has form here apparently 240,000 people bought the equally visuallychallenged X6. Borrowing engines from the X3, the X4 will go on sale priced from £35,590 – that’s a lot of money for a car only a mother could love. So why’s it included here? Well, we like manufacturers being brave – and revealing this with a straight face was certainly that!

Marla Cilley The Fly lady Slow down you move too fast. We are all in such a hurry these days that we don't take time to stop and smell the roses. We hear ourselves say "I don't have time" yet we waste more time searching for things. If we could recoup those hours we spend each day looking for keys, shoes, socks and purses; then we would relieve most of the stress in our lives. From the time we get up in the morning till our heads collapse on our pillows; our bodies are in a constant state of chaos. We keep doing the same things and we can't see a way out of our stressed filled merrygo-round. Most of the time, we don't even feel the stress because our bodies have become immune to the adrenaline. Eventually it is our bodies the fall victim to the over-flow of adrenaline. Our immune systems go haywire. We no longer can fight off colds and our heads hurt; then we find that our muscles and joints hurt. What can we do to stop our bodies from rebelling. Most of us have two speeds: Ninety miles per hour or dead stop. We feel invincible when we are at full throttle. We even pride ourselves at being so good at multi-tasking! The truth is that we only think we are good at doing more than one thing at a time. The reality is most things are half done and really never finished. I have a set of simple little rules that will help you get off of this horrendous carnival ride.
