I set up my business because... I was a customer first, then my family were also customers, I liked seeing my family thrive and look and feel healthy. Cake and Bake Panforte de Siena This sweetmeat is a traditional Italian Christmas treat packed with nuts, figs, honey and warming spices. It can be made a couple of weeks before Christmas just wrap well in greaseproof paper and store in an airtight container.

Ingredients: • 150g whole blanched almonds • 125g pistachio nuts • 175g dried figs, chopped • Grated zest of 1 orange • 75g plain flour • 2 tbsp cocoa powder • 2 tsp ground cinnamon • tsp ground cloves • 115g caster sugar • 175g runny honey • Icing sugar, for dusting

TIP You can vary the fruits and nuts used in this recipe - replace the figs with chopped candied peel, dried apricots or glace pineapple and instead of pistachios try toasted hazelnuts.

Makes 25 squares Ready in 1½ hours, plus cooling

1. Preheat the oven to 150°C/130°C fan/gas 2. Grease a deep 18cm square tin and line the base with baking parchment. Toast the almonds under a medium grill until just golden then roughly chop. Mix in a bowl with the pistachios, figs and orange zest. 2. Sift over the flour and cocoa powder and stir well. Then stir in the cinnamon and ground cloves. Set aside. 3. Put the caster sugar and honey in a heavy-based pan and heat gently until the sugar has dissolved. Bring to the boil then let the syrup bubble gently for about 5 minutes, without stirring the mixture, until it begins to thicken. 4. Remove the pan from the heat and quickly add the nut and flour mixture stirring well with a wooden spoon. Spoon into the prepared tin and smooth the surface using the back of a damp spoon. 5. Bake in the preheated oven for about 1 hour then remove the cake from the oven and leave in the tin until completely cold. Remove the cake from the tin, peel off the lining paper and dust thickly with icing sugar. Use a sharp knife to cut into squares to serve.

Snowdrops, Piglets & More At Cambo On 13 November, Mad Hatter, Grey Matter which brought an exciting range of family events and workshops during the summer, begins a series of free winter talks. Christine Tansey and Professor Andrew Millar of Edinburgh University will introduce phenology (the study of periodic plant and animal life cycle events and how these are influenced by seasonal and inter-annual variations in climate), and research on the circadian clock and how organisms coordinate their biology and behaviour with daily and seasonal changes in the daynight cycle.

On 19 February, Drs Duncan and Gollek, (Languages & Learning Lab, Dundee University) will share their research on language development. (www.camboinstitute.org.uk ) The Winter Garden is now magnificent from November right through to April and Head Gardener, Elliott Forsyth, will lead a guided tour on Sunday 8 February, following his RHS illustrated talk on ‘Cambo throughout the Year’. Snowdrops, and piglets, are of course the highlight of February/early March at Cambo and Snowdrops by Starlight will

light up the woods once more from 11 to 15 February inclusive, giving visitors the chance to enjoy the spectacle of both the snowdrops and magnificent trees in the woodlands being lit up. In 2015 it will be all systems go at Cambo as work will begin on the dismantling of the old glasshouses in the walled garden, providing a variety of interesting events and workshops in which all the family can be involved, and on the long-awaited transformation of the historic stable block into a visitor and learning centre.

South America The Iguazu Falls By Solange Hando The natives called them ‘big water’ and with an average flow of 10 million litres per second, Iguazu takes your breath away, thundering water, gusty winds, relentless spray and great clouds of mist rising above sub-tropical forest. Visitors are likely to get wet but no one seems to mind for in this wild awesome place, Iguazu is no ordinary cataract. Just imagine a dark basalt cliff face, 2.7 km long, shaped like an inverted letter J, streaked by up to 300 glistening waterfalls, each one with its own name, plunging 60 to 90 metres, from the upper to the lower Iguazu river. ‘Santa Maria’, exclaimed Spanish explorer Cabeza de Vaca in 1541 when he discovered one of the most powerful cataracts. Santa Maria, as it is still called, is on the Brazil side but Argentina claims 80% of the falls, including the highest, the Devil’s Throat, reached by an eco-train and a kilometre long walkway across the upper river. ‘Argentina has the falls, Brazil has the views’, they say, and this is certainly true. In Argentina, visitors arrive at

16

the top of the Devil’s Throat, with just a partial view of the other falls, while on the Brazilian side, they take in the whole panorama, first from above and then, even more impressive, from below. You cannot beat the excitement as you make your way down the steps to the central point of the falls and along the amazing ‘cat walk’ which takes you to the heart of it all, soaked to the skin but exhilarated. Dwarfed by the mighty curtains of water roaring all around, you stand and stare as rainbows come and go like magic. No one wants to leave but there are other treats in store. Those who are brave enough can shoot the rapids on inflatable speed boats, right up to the base of the Devil’s Throat, while others might prefer a helicopter ride for a brief but unforgettable bird’s eye view of the falls in their pristine emerald setting. Surrounded by rainforest, with visitors’ facilities well out of sight, Iguazu is protected by UNESCO with national parks on both sides of the border. On quiet days, you may well spot some of the wild life close to the water,

from racoons and monkeys to parrots, macaws and toucans splashing myriad colours in the trees. Caimans bask in the lower reaches and there are jaguars and coral snakes deep in the forest. The nearby bird park offers a great alternative for wild life enthusiasts, dedicated to conservation in its own patch of rainforest. As one would expect, the Iguazu falls vary according to season, often at their best around April-May when there is still plenty of water and skies tend to be clear. Today, however, climate change offers no guarantee. In 2006, a six-month drought left scores of visitors gazing in disbelief at barren cliffs and rocks. Yet, for those who have seen all the greatest falls in the world, Iguazu is top of the list for its panoramic views and unspoilt natural setting. Even Eleanor Roosevelt, first lady of the United States, was said to agree when she set eyes on this gigantic canyon, born from tectonic movements which began some 150 million years ago.

A Tribute To Ian Birrell 16th September 1943 - 7th October 2014 My dad - Ian Birrell, who was the well known face of the Craw’s Nest Hotel in Anstruther for many years, sadly passed away in October, five years after being diagnosed with the degenerative brain disease Progressive Supranuclear Palsy (PSP). Back in 2009 we’d never heard of PSP and surprisingly it appears neither had many of the medical profession with whom he would come into contact during the next five years. Mum always made a point of carrying the PSP Association cards with her which clearly set out the symptoms of PSP. Generally they include loss of balance and unexpected backward falls , stiffness and eye problems. These can include difficulties in looking up or down, focusing, double or tunnel vision and dislike of bright lights. Some people can experience behavioural and cognitive changes – depression, apathy, clumsiness, or tiny, cramped handwriting. Early on, symptoms may resemble those of other neuro-degenerative diseases such as Parkinson’s disease, Alzheimer’s disease or Motor Neurone disease. As a result many people are initially misdiagnosed. As PSP progresses, symptoms increase. There may be problems with swallowing, slurred speech, recurrent falls, irritability and apathy, slowness of response and severe difficulties walking. Sometimes the eyelids close involuntarily and it becomes increasingly difficult to look up or down. Emotional lability, such as laughing or crying inappropriately, may be another feature and there can be incontinence. The average life expectancy is around seven years from onset. However, every case is different – and as we have discovered through PSP support group meetings there is considerable variation in the symptoms and rate of progression in each individual.

met mum - Elizabeth Clarke at his future father-in-law - Eddie Clarke’s Café on Shore Street, Anstruther. They were married in 1968 and had two children Liza (me) & my brother Ian. The Craw’s Nest was opened in May 1965 and two year later Ian joined the business, even though his mother didn’t think he’d do, as he was “too reserved”. It did work out and “Cuddles” as he was know to his friends and also a name he gave to people he knew was the face of The Craw’s Nest until he retired in 2000. Over the years he served as president of Fife Licensed Trade Association and was twice president of Anstruther Rotary Club. Always involved with their annual Charity Christmas Postal Service and would often be seen at the end of the sponsored Coastal Walk presenting medals to the participants. For his services to Rotary he was awarded the Paul Harris Sapphire Award. After he retired Ian enjoyed a few years of baby sitting service for his grandson Scott and caddying at Crail & Kingsbarns but only after he’d finished his hoovering and dusting duties at home! He took great joy in following Scott and his pals play football for the Primary School, Pittenweem Rovers YFC and Dundee United before PSP started to take hold. Ian has left a lasting legacy having decided to donate his brain & spinal cord to the University College London Queen Street Brain Bank. They specialise in the research of neurological disorders such as PSP. As a family we have been overwhelmed by the love and support, the many cards, flowers & donations we have received and of course the amazing turnout of family & friends to honour Ian at the memorial service in the Craw’s Nest. It’s amazing that one man can touch so many people around the world. And the fact so many people have said they’d never heard him say a bad word about anybody and that he was one in a billion really sums up the character of the man I was proud to be able to call my dad.

Ian was born and brought up in Danbury, Essex and first came up to the East Neuk as a youngster to recuperate from an illness. He was put on the train with a tag around his neck, a bit like Paddington Bear and spend time at his aunts in Cellardyke & Pittenweem. For years it was Charlie & The Chocolate Factory by Roald Dahl., as I wasn’t really one for reading. But while transiting through an airport in the USA a few years ago I picked up a copy of The Automatic Millionaire by David Bach, it was the best $20 I’ve spent, he makes getting you finances on track so easy.
