HELLO EM READERS! I love the magazines we create at Idaho Media. Over the past few years, that passion has grown as we funnel the behind-the-scenes content onto social media, enhance our website with added-value, and even create an Eagle sticker that manifested from covering the Eagle Community Food Bank (see the sticker on Instagram). It’s lovely to create a magazine and watch it physically and digitally flow into other channels. Here’s to 2020.

In this issue, we share stories of love and food from three Eagle restaurant owners and their significant other. We thought reminiscing of time together would be a good fit for Valentine’s Day instead of the traditional “his and hers gift ideas.”

We talk with Mayor Jason Pierce on the philosophy of “Eagle First” and what that means. Pierce and his family have been a staple in the Eagle community, from city council to coach life. Read the “why” his heart is all in!

Creators and makers of the world make it better, and A.J. Eaton does precisely that. Coming from a creative conscious family, it is not surprising to see his activism on Facebook or to see his directing accomplishments with the new movie documentary “David Crosby.” He’s pretty inspirational.

EAGLE SENIOR CENTER

“In 1976, Eagle Senior Center opened in the small town of Eagle, ID. Since then, Eagle has grown and the Center has become an important congregating place for the senior community.”

The Senior Center’s fortuitous location on the north side of Olde State Street in the downtown Historical District is adjacent to Arboretum Park’s walking paths, picnic tables, and shady trees. The Center is within strolling distance to Eagle Library, Historical Museum, City Hall, Post Office, shopping, restaurants, Heritage Park, coffee shops, Chamber of Commerce office...basically the whole “kit & caboodle” offered in the Downtown District.

Membership is a very reasonable $3.00 per calendar year.

A visit to the Center’s Office Staff on site during business hours will take care of signing up new members. While there, check out the gently used items in the Center’s Thrift Shop. The Seniors are well organized with a membership Board of Directors chaired by Sylvia Carney, and includes a liaison City Council member.

Members can enjoy a low-cost healthy Hot Lunch four days weekly at Noon on Monday, Tuesday, Thursday and Friday provided by Metro Meals on Wheels. In the past, Eagle’s Mayor has been known to drop in from time to time for lunch and visit with members. The monthly

menus are featured Online at the Center’s website eagleseniorcenter.com/ “More than 80 seniors participate weekly” in programs at the Center, including scheduled card games of Pinochle, a ladies Bridge group, Bingo, and a pool table for playing Billiards. Low key exercise classes are offered 3 mornings weekly, one being Fit ‘n’ Fall. A variety of special event day trips and visits to restaurants in nearby cities are scheduled regularly, utilizing two new transportation vans provided by the City. Such events are listed on a Calendar at the Center’s website, and sign-ups are required.

An additional convenience is the Center’s Hall or Game Room can be rented for an event or gathering. For a reservation, “all arrangements must be made during office business hours on Tuesday or Thursday @10 am - 3 pm.

No Smoking is allowed inside the building; alcoholic beverages are allowed on premises provided renter has a permit from the City of Eagle.” Tami Galt is the Office Manager.

Three local couples reminisce with laughter as they reflect on life, first dates, how they met, and what they cook for each other. A stable relationship is a blessing and is to be cherished. __________________

Chad & Amy - Bella Aquila How did you meet? Chad and Amy worked for a camera store chain.

Amy was offered a promotion to be the manager of the store, which she declined because she was still in college. Chad was managing a smaller store, so when Amy refused the promotion, she suggested that Chad was ready to handle the larger store. The truth is she thought he was cute and wanted to ask him out. The company had a No Dating policy, so as soon as they started dating, they reported the relationship, and Amy was transferred to a store closer to my house.

First dinner together? Amy took Chad to an Indian restaurant for their first date. She frequently took her first dates there, figuring if they could handle the spice, then they might be able to deal with her.

In business together? From working together previously, they already knew it could work, and it wouldn’t be an issue. Owning a business together was a dream of theirs, and they enjoy the time together.

Do you cook for each other? Chad cooks, and Amy bakes. He prepares the meal, and she bakes the bread and also the dessert. Chad recently perfected one of her biscuit recipes, which she is flattered by, however, she like, “Hey, that’s my job!”

Randy & Tawnie - Ahi Sushi Do you cook for each other? Randy and Tawnie have cooking competitions when they are bored! Randy cooks Hawaiian and Asian foods, and Tawnie cooks more Italian style foods and baked goods.

How do you celebrate each other? These two are “true foodies” at heart, and when they go out to have a good time, they usually go out exploring new eateries or head to one of the favorites on their go-to list! They tend to get adventurous when they travel — eating off the main path and finding the “hole in the wall” restaurants. They are the best kind.

How’d you meet? Tawnie was late for work and cut Randy off to get the last parking spot. She was running late for work, and she remembers him staring at her, like “Ummm...hello.” She motioned to her watch and mouthed, “Sorry, I’m late for work.” Little did she know, he worked at the same restaurant. When Tawnie went to apologize, he asked her out for a drink — and now five kids, four dogs and seven chickens later — it was meant to be.

First dinner together? Randy swept Tawnie off her feet with tacos and enchiladas from a drive-thru Mexican Restaurant, Roberto’s in San Diego, on 4th Avenue.

CJ & Cassie - Rembrandts/Caci Grill Do you cook for each other? CJ and Cassie do cook for each other; however, there is a clear difference between Cassie cooking to live and feeding a family quickly and efficiently, and CJ’s elaborate, decadent dinners that are elegantly plated for three enthusiastic children.

Cassie decided long ago that if CJ decided to take over her cooking with extra spices or sauces and uncovered flames in the kitchen, it was well worth letting him take over…CJ can turn some simple dinner into something fantastic.

How did you meet? Cassie and CJ met in college. Cassie had just moved from Kenya, and her roommate took her to church, where CJ’s father happened to be the youth pastor. They went on one date, which Cassie describes as the “worst date ever,” and then didn’t see each other for the next seven years. In 2010 they ran into each other at Starbucks and ended up sitting over coffee for several hours, a much improved second date. Ten years later, they have three beautiful children and still make each other laugh.

In business together? Being in business together has challenges and rewards.

We now have two open restaurants, Caci and Rembrandts, with more in the books and on the way. CJ thinks that being successful in business is not only about the partners that allow him to follow his dream, but it’s the daily sacrifice everyone, including the children, make at home too. Whether it’s late nights, early mornings, or long weekend shifts, he wouldn’t be able to do this work without the support of his wife and all that she does to take care of the home and family. CJ said that being a successful man in this business is directly related to having a successful relationship with his wife and his partnership with her. ¢

ommunity is such an integral part of what makes Eagle a desirable and sought-after location to raise a family, build a business, and connect with other citizens. Growth, infrastructure, and education are some of the hot-button topics during this mayoral election. Eagle Magazine was privileged to speak with Mayor Elect, Jason Pierce, and learn more about what is most important to him and his vision for the future of our tight-knit community.

Pierce and his family have been an active part of eagle for the last 16 years. Their relocation to Eagle was based primarily in the desire for a safe, welcoming place to raise their 2 children, Brandon and Brianna. The smalltown feel, open spaces, four seasons, and beautiful foothills were enough for the Pierce family to make Eagle home. Jason loves baseball and shared that his favorite parts of coaching are being able to spend time as a family and seeing the kids he coached grow up. He loves getting to catch up with them and hear about their lives. He has spent time coaching for West Valley Little League’s spring, all-star, and fall ball teams.

Volunteering for the City of Eagle, Pierce has served on Eagle’s Parks and Pathways Committee, Eagle Planning and Zoning Commissions, Eagle Urban Renewal, and Eagle City Council. He loves to talk about all things Eagle and shared, “I like to hear about the good things, the bad, and the ugly. Anytime you see me out and about, don’t hesitate to come and talk with me about our great city. The only way we can continue to make Eagle the best place to live in the Treasure Valley is to have resident input.”

His ‘Eagle First’ philosophy is at the base of all his decisions. He challenges Eagle residents to do the same when it comes to supporting local businesses, charities, schools and residents. Pierce’s platform makes this philosophy apparent. He is a staunch proponent of keeping Eagle’s water local. He is opposed to a sale to Suez and would love an opportunity to continue his support for the litigation to prevent Suez from acquiring the water company.

As Eagle’s popularity continues to increase, a focus on infrastructure, preservation of Downtown Eagle, and options for education are an incredibly high priority. Pierce supports lower density developments and shares, “We cannot stop development, but we can have better influence on the type of developments going forward.” He is an advocate of Eagle citizens playing an influencing role in the development of Avimor and hopes that community activism can ensure its creation lands in alignment

with the needs of our citizens and the quality of our beloved foothills.

Pierce’s emphasis on collaboration is a strong summation of his belief system. He outlines, “The problems facing Eagle are structural, complex, and dynamic, and no one can solve them alone. As your Mayor, I commit to a balanced approach and bring together ACHD, West Ada School District, innovative companies, strong local governments, tireless non-profits, and hard-working residents to develop solutions that work for everyone. EAGLE WOMAN’S JOURNEY Toward natural wellness

In 2013, when Chantel Wiles’ three-year-old daughter began suffering from an on-going flu-like illness, the young mother grew concerned as doctors brushed it off as reflux or stress. Determined to find the root cause of the mysterious symptoms, Wiles consulted a holistic nutritionist who taught her the basics of natural health. As she began to change her diet and pay closer attention to the source of their food, Wiles’ daughter’s symptoms and general health improved.

Over the following years, Wiles became passionate about understanding the origin of the food and products we consume every day and how they affect our overall health. Her mindset shifted from passively accepting what grocery stores offered to critically thinking about what food and products she might be able to make herself. Since then, Wiles has taught herself how to make numerous items, from sourdough bread

and yogurt, to hand soap and cough syrup. It has given her a sense of comfort, confidence and satisfaction to be able to make so much of what her family needs, naturally.

To source the ingredients and materials for this passion, Wiles dreamt of one day having her own small farm. This dream came true last year when Wiles moved to a one-acre property in Eagle with her husband, their three children ages nine, three and four months, plus a few chickens, 14 fruit trees, four walnut trees and plans for goats next spring.

With an abundance of produce suddenly on her hands and not being one to waste, Wiles quickly learned how to can and freeze the food. She takes great joy in being able to control how her family’s food is processed and stored, such

In order to utilize all of the food now being generated by her small farm, Wiles has also learned a number of new recipes, such as using their surplus of walnuts to make the Italian liquor, Nocino.

In addition to the health benefits received by sourcing and making much of their own food, Wiles is grateful to be able to impart this appreciation for food onto her children. This last summer, over the span of weeks that the family was growing carrots in their garden, Wiles’ three-year-old son was perplexed by his mother telling him the carrots were growing. He couldn’t see any evidence of growth since he didn’t understand they were growing underground. When it came time to pick them, Wiles realized her son’s epiphany when she saw the amazed expression on his face as he pulled the mysterious carrot out of the ground.

With a bachelor’s degree in Business from the University of Phoenix and in the process of completing the Master Herbalist and Holistic Health Practitioner program through Genesis School of Natural Health, Wiles is looking to expand the benefits her passion has brought to her family to share them with the larger community.

Through local opportunities like helping manage the Boise Natural Parenting Facebook group and having recently joined the Idaho Breastfeeding Coalition on a taskforce to recognize local businesses who support breastfeeding mothers, Wiles is excited by the possibilities her passion has in store for her.

Roghani’s mother founded Camille Beckman in 1984 and took herbalist courses through much of her childhood. She always

GETTING TO KNOW DR. MARIA Local chiropractor talks about raising a family in Eagle and owning a business

Today, she and her husband are the only board certified functional neurologists in the Boise area. Outside of the practice, Dr. Sirucek most enjoys connecting with other families in the Eagle area.

Dr. Maria, as she is known at Sirucek Chiropractic Neurology Clinic, is originally from Peru. She moved to the U.S. and attended Boston University in Massachusetts, where she earned her degree in Human Physiology.

Though Dr. Maria placed among the top in her class at Boston University, she decided to focus her career outside of prescription medicine.

“My mother struggled while taking several different medications without success,” Dr. Sirucek explained. “Watching her recovery once she turned to chiropractic care showed me a different way to help people. I wanted to know the science behind adjustments and how chiropractic care affects neurological pathways of the brain.”

She moved to California to attend Life Chiropractic College West, where she met her husband, Dr. Dax, who hails from Twin Falls. Dr. Maria graduated from Life Chiropractic College West with honors and received the only clinical recognition excellence award for her class. She then went on to complete an additional post-doctoral certification in functional neurology through the Carrick Institute.

Currently, she is enrolled in a certification fellowship program for biomechanical engineering of the spine through the Buffalo School of Medicine.

In 2008, Dr. Maria and Dr. Dax opened their practice in Boise. In 2012, they moved the clinic to Meridian. Through her practice, Dr. Maria has continued to promote a healthy lifestyle and drug-free options for healthy living.

Outside of her practice, Dr. Maria loves being a part of the Eagle community. For her and her family, Idaho is home.

For Dr. Maria, the connection to other mothers in the community has been vital to success. She leads her local chapter table of Moms with Preschoolers (MOPs), where mothers of young children can gather and support one another face to face.

The opportunities to bond as a family are another major draw to the Eagle community for Dr. Maria.

“My children love the farmers market, and the events the City puts on – like Eagle Fun Days.”

Dr. Maria and Dr. Dax have hopes to continue to grow in the Treasure Valley community.

They actively support nonprofits that benefits different demographics in the area, such as the Eagle MOPS group, the Boise Rescue Mission, and the SUDEP local epilepsy non-profit foundation. Our intimate connectedness with nature is the fulcrum of what it means to be human.

When we immerse ourselves in the natural world, we’re challenged to stop and admire the sheer synchronicity and glory of life itself. In these moments, we understand our place and our impact on the world around us. Idaho houses a plethora of wild spaces, one of which was home to A.J. Eaton.

Eaton, from Pocatello, spent his youth exploring the wilderness surrounding his home. His family’s remote location offered only one TV channel which pushed him and his brother, Marcus, to discover the intricacies of the world off the screen.

As they grew, Marcus picked up a passion for music and A.J. found a love for film.

When Marcus introduced A.J. to David Crosby, their unique combination of skills and adorations would allow for a beautiful collaboration of creative expression. Marcus was collaborating with Crosby on Croz – which was his first solo recording project in twenty years. A.J. Eaton, having grown up around musicians his entire life, could understand and appreciate the sensitivities of what A.J. calls Crosby's current third act renaissance.

“I visited with David about the jazz inspired chord changes and realized this was the exact type of conversation he was yearning to have -- not the typical ‘what was it like at Woodstock’ he’s used to hearing-- and his mind was just as lucid and intelligible as his new songs. I made the suggestion that we should shoot footage, if only just for posterity, and he agreed. The moment I arrived with my crew and focused the camera on Crosby, I became aware of how cap-

MINI HORSES BRING BIG JOY Spreading joy, hope and healing

During Laurie Bell’s 21 years as an elementary Physical Education teacher, she learned how crucial it was to celebrate her students’ strengths and nurture their resilience in trying new things. “My overall goal was to create an environment where we built each other up and were not afraid to fail.”

In 2009 when Bell made the leap to start Mini Joys, a nonprofit outreach that uses gentle miniature horses and volunteers to bring joy and hope to those who are struggling, this philosophy carried over in the development of the programs. “We want our participants to value themselves as they celebrate their strengths, and learn to accept that we all have areas of weakness and challenge.”

Whether it is at-risk youth who have gone through trauma, a family with a terminally-ill child, senior veterans, or children with disabilities, the connections made with miniature horses are powerful.

“Horses are extremely perceptive animals, a fairly large portion of their brains are dedicated to emotions and feelings,” asserts Bell.

Through facilitated interaction with Mini Joys’ horses, programs strive to allow “walls of hurt and sadness to break down and impactful communication to take place between the social worker, teacher, counselor, or the staff or volunteers.”

At Mini Joys Laurie Bell is the sole staff and stays quite busy as the Executive Director, program developer, volunteer trainer and coordinator, curriculum writer and head barn pooper-scooper. She is proud of the fact that they keep the expenses “mini” and the outreach large. Mini Joys relies on about 50 huge-hearted volunteers that carry-out around 45 large group programs yearly, providing outreach to school special needs classrooms, shelter homes, assisted living facilities and the Children’s Hospital. Bell explains, “For the group programs at the Mini Ranch we use large teams of 14 to 18 volunteers as we have the whole herd in action…4 miniature horses, the sometimes-sassy little donkey, and 2 little goats. The guests also enjoy the picnic area, and the wheelchair accessible treehouse.”

Yet Mini Joys is much more than the adorable miniature horses, volunteers have an immeasurable impact and set the tone of joy, acceptance and encouragement that permeates the organization.

Bell feels blessed by the deep relationships and connections she has developed over the years. “Like a mom and grandmother who we got to know when their only child (and only grandchild) was battling terminal cancer. This sweet little boy lost his battle, and we stayed beside this family through that horrible journey. His mother and granddaughter now both volunteer with our team, and we could not be more grateful for their willingness to love on other children despite their incredible loss.” The volunteer team is a close-knit community that helps each other, as well as those they serve. Bell reflects, “I have come to learn that we ALL face challenges and heartache on this journey we call life and our volunteer crew is no exception. We have come alongside each other through so much these past years.”

The mission of Mini Joys is to spread joy, hope, and healing.

Whether as a participant or volunteer, the perceptive and unconditional love of animals can help break down walls of pain and mistrust, allowing joy, confidence, and resilience to seep in. As a girl Ballard remembers playing under the big weeping willow tree in her front yard, her vinyl black Barbie case open with Barbie’s white lace and tulle wedding dress there on the little plastic hanger. As she grew older, she imagined herself “in a long flowing romantic gown with a cathedral length veil.” A gown she remembers wearing fondly one summer day long ago. When people ask Becky or Alex Macdonald how long they’ve lived in Idaho, Becky smiles, “Since day one!” The Eagle High sweethearts grew up here and became involved in real estate as newlywed college students. “We still own our first home in downtown Eagle. It was a real fixer-upper when we bought it almost 20 years ago,” Alex explains. “Now it’s a cute, little rental.”

When Alex took his first job as a high school math teacher, the couple moved to a mountain town in upstate New York “We bought a 100-year-old farmhouse and Alex put his builder’s aptitude and construction management minor to work making it a wonderful investment. Its sale helped us build our dream home here,” Becky said.

After their first daughter was born, they moved onto the small acreage where Becky grew up. Alex was the contractor for the home they now call “Mini Mac Farm”. They love raising their three children there and sharing the joy the animals and garden bring.

Alex always had a heart to transform forlorn houses into homes. In the beginning, he did all the work himself while finishing college.

He became a Realtor while also balancing a decade long career in education. After becoming an associate broker, he and Becky decided to devote all their time to real estate. Last spring, they celebrated the grand opening of Adam Alexander Real Estate.

“Our office building was originally a farmhouse surrounded by around 20 acres. We worked hard to restore its original charm and enhance Old State Street with its renovation,” Becky said.

“We were so happy to come home,” Alex reflected. “But our time away gave us real insight into what it means to be the new guys in

town. That’s one of the reasons we are so welcoming to people just moving here. Who can blame them? It’s a great life!”

Rethink your drink!

There’s nothing quite like an ice-cold soda on a warm day, or maybe a hot cocoa on a chilly winter morning. I get it, the right beverage can put you in a good mood or just hit the spot. Both of these drinks, though, along with a host of others, fall into a category called sugar sweetened beverages (SSBs). These include fruit and juice drinks, sports and energy drinks, sweetened teas and coffees, chocolate milk, even flavored water. The odds are you drink at least some of these. In fact, I know people who have at least one soda every single day and that concerns me. Why? Sugar! Lots of sugar!

A typical 20 oz. soda has 15 to 18 teaspoons of sugar.

Guess what folks, that’s about the same as three chocolate bars!

The recommended daily limit of sugar for the average adult male is nine teaspoons (or roughly 36 grams), an adult woman’s recommended daily limit is only six teaspoons.

One soda and those numbers are toast!

What you drink affects your teeth due to sugar and acidity. The hardest substance in our body, the outer enamel layer of our teeth, actually begins to dissolve at a pH less than 5.5. Remember, the pH acid scale is kind of backwards, meaning higher numbers are less acidic.

For example, water has a pH of around 7. An average cola has a pH of about 2.3. But get this, the pH of acid in a car battery is 2.0, just three tenths less than cola!

It makes my teeth hurt just thinking about it. The loss of enamel, through the effects of acid, is what causes cavities. SSB’s are doubly harmful because they’re acidic and full of sugar. The bacteria on our teeth feed on sugar and the byproduct they produce, all over our teeth, is…you guessed it, acid! And don’t think you’re skating by because you drink diet soda. It’s just as bad for your teeth.

Then there are the effects on your body. If you drink an eight ounce SSB every day for a year, count on gaining about 15 pounds—that’s 55,000 calories. Research has shown you’ll have a 26% greater risk of developing Type 2 Diabetes, and even a higher risk of stroke, too.

Do yourself a favor next time you’re thirsty, rethink your drink and choose water. It’s good for your teeth and it’s good for you.

DOWN MEMORY LANE A brief look into eagle’s past

“A people without the knowledge of their history, origin, and culture is like a tree without roots.” – Marcus Garvey, publisher, journalist, activist, and orator What was once a small 1970s town with a humble population of about 300, Eagle, Idaho has grown to become a pinnacle of dining, art, culture, and recreation in the Treasure Valley. Not to mention, its aesthetic and reflective beauty, melded together by the surrounding natural landscapes and awe-inspiring architecture.

The early days of Eagle echo most of historic Idaho: the gold rush. Hopeful families flooded the West in search of a better lease on life, namely, a few gold nuggets to pad their pockets. And, like many before them, Idaho’s wild and untamed land and temperate seasonality enticed them to stay.

One of the most prominent names in Eagle homesteading was Truman C. Catlin, who saw that there was much more than gold to be found in the fertile soils of The Gem State, the very nature of the soil was what he was going to make his future on. And so, he, along with several others, purchased a large plot (land that makes up what is now Eagle Island State Park), and began to quite literally sow their future in farming. The plot was named as such due to the vast amount of Eagles in the area at the time.

Another notable name is the history of Eagle is the Thomas Hugh Aikens, who bought land and water rights around the same area as Catlin in the late 1800s, which seems to

be where the City of Eagle got its start.

From there, Aikens and other prominent early settlers began to build—schoolhouses, bridgeways, water-front property, and of course, farmland.

By the 1900s, the economy soared and business began to boom. Buildings went up left and right, leaving behind some of the most striking architecture in the Treasure Valley. The very history lives within the stone walls and rising brick buildings that line the streets.

One of the first buildings to go up was the Eagle Drug Store in 1906, followed by the first bank in 1910 and a custom meat-cutting shop at the Boise Valley Packing Company building in 1913. With each passing year, Eagle grew. Orville Jackson’s prominent drug store moved to the main strip, where it still retains the original name and signage, even 100 years later. ¢ To read more about Eagle’s timeline, visit www.buildidaho.com

Dressage: the art of riding and training a horse in a manner that develops obedience, flexibility, and balance.

At Eagle Magazine, we like to focus on people. There is so much going on in the day-to-day that is becomes ever-more imperative to hear the stories of the people that make up our beautiful valley. And it is with great pleasure that we share this story with you.

“I started riding in Germany when I was 5 years old and competed in my first Dressage show at age six. Dressage is very popular in Germany, where I was able to

receive an excellent classical education in Dressage, show-jumping, and some eventing. But Dressage became my passion and brought me to the US in 2008 to ride for my sponsor on the East Coast. While living there I met my husband Roman and moved to Idaho for him. We were married in 2011 and our son Nikolai was born in 2012. I absolutely love living and training in Idaho. It is the perfect place to raise children and horses,” explained Nadine Schwartsman, as she shared her story.

Idaho, full of endless trails and public lands, provided Nadine with the landscape

to do what she loved. But “after moving to Boise, I realized that there was a need for a high-end equestrian facility to serve the Treasure Valley. Such a facility would also allow me to chase my own lofty goals of representing the US on the world stage.”

And so, Nadine did just that. For the last four years, she has been able to compete in national championships; with her experience in tow, Les Bois Dressage wins and places at National and International competitions. But beyond that, Nadine has had the opportunity to coach others to rise within equestrian arts.

Les Bois Dressage has been incredibly successful and they consistently have around 40 horses at their facility, plus an additional 50 or so on their waiting list at any given time. They’ve had to expand twice since they opened their doors in 2012 and boasts an Olympic-sized indoor riding area, two regulation-sized outdoor arenas, and more than 80 acres.

Nadine aims to continue to grow the program and eventually produce an Olympic horse raised right here in Idaho! “My biggest goal is to make the US Team but there are many small goals that are paving the way to future success. I truly enjoy the daily process of training and celebrate even the smallest victories with my horses. They are not a piece of sports equipment, they are my partners and best friends.
