What is...

MANFOOD?

Manfood is just that: the kind of simple, great tasting food that you can grab out of the cupboard and enjoy with cheeses, cold cuts, pies or meat.

ABOUT US Manfood was started by two men – Jon Honeyball and Andre Dang from their kitchen in Warboys.

Andre, a former buyer for Harrods and Selfridges, was inspired by his own (and his family’s behaviour): from experience, when men come home, they raid the cupboards and fridge looking for snacks or something to munch. They want instant gratification.

The Manfood recipes came about as a direct result of Jon complaining about a lack of properly crisp, chunky pickles. He was fed up of buying jars only to find bland, wet mush inside. And so Andre took up the challenge to make the perfect pickle. Beginning with piccalilli, he then developed recipes for Bread and Butter Pickles, Smoked Tomato Sauce and Achar.

Today, the range has grown from the initial pickle selection, to over twenty seven different products. We are proud to be stocked in farm shops, independents and food halls both in the UK and abroad.

The range is the perfect accompaniment to a fridge buffet, a cheese platter and a must have for your barbecue.

PICKLE RANGE Achar Pickles A sweet and sour Malaysian peanut and chilli vegetable pickle, this is based on Andre’s Mum’s recipe. Not too spicy, this is great with a curry, though friends have been known to just eat it from the jar with a spoon!

Ingredients: Cucumber, carrot, green beans, cauliflower, red chilli puree, onion, sugar, cider vinegar, sunflower oil, crushed peanuts, shrimp paste (shrimp (crustacean), salt), turmeric.

Bread & Butter Pickles An American inspired pickle with an Asian twist. Sliced cucumbers and shallots in a sweet and sour spiced marinade with a hint of cinnamon and star anise.

Ingredients: Cucumber, shallots, sugar, cider vinegar, salt, ground turmeric, coriander seed, black peppercorns, yellow mustard seed, red chilli flakes, ground cinnamon, star anise.

Piccalilli, The first recipe we ever made when we developed the brand!

A chunky mix of crisp garden vegetables in a mustard sauce.

Lightly sweetened with honey. Enjoy with cheese and some thick sliced ham.

Ale Chutney A seasonal spiced chutney made from plums, sultanas and apples. The secret ingredient is a dark ale with chocolate notes.

Chip Shop Curry Sauce

A tangy glossy sauce ideal for use as a marinade or for brushing on to your choice of meat or fish.

A traditional favourite. This mild curry sauce is best served warm, and can also be used as a cooking sauce.

BEER JELLIES A new range of jellies using beers to give a depth of flavour and sweetness. Use as a glaze for meat, stir into gravy or simply as an accompaniment with cheese.

Asian Spiced Ale Jelly An Asian inspired jelly. Excellent with duck and game.

Beer Jelly

A savoury jelly with the dry heat from ginger and pepper. Try with fish or cheese.

SERVING SUGGESTIONS The Manfood range is quite wide ranging and versatile, so we encourage you to experiment and find your own flavour combinations and pairings. That said, here are a few ideas that we do at home:

Indian Range

Sauce Range

Mango chutney - serve with poppadoms as an intro to an Indian feast or blitz with some water and use to make a great marinade for chicken & fish.

Satay sauce - add a little water to loosen, then use as a stir fry sauce, or warm and use from the jar as a dip for skewers or use to make a traditional Malaysian salad with beansprouts, boiled egg, cucumber and prawn fritters.

Chilli sauce - stir a teaspoon into some creme fraiche to make a hot dip or marinade, or add a spoonful to tomato juice for a fiery bloody mary mix Dried fruit chutney - great with cheese, or serve as an alternative to lime pickle (for those who donâ&#x20AC;&#x2122;t like the sourness) Spiced tomato chutney - excellent to accompany Indian food or use as a base to make curry: brown your meat, then pour over chutney with some extra water to loosen if desired.

Chip shop curry sauce - warm and use as a sauce with chips or sausages. Also use as a cooking sauce for mild curries or use to make a cheatâ&#x20AC;&#x2122;s chicken katsu or fish curry Beer BBQ sauce - use to glaze ribs, excellent for pulled pork can be used as a burger sauce.

Smoked tomato sauce - stir into mayonnaise for a smokey Marie Rose sauce for prawns; use as a cooking sauce for pasta or a base for casseroles; great alternative to ketchup.

SERVING SUGGESTIONS Pickles

Smokehouse Range

Piccalilli - excellent with cold cuts, pork pie &amp; ploughman’s lunch. Works really well with slightly runny in the middle Scotch egg.

Smoked corn relish - great with burgers, or add to some deseeded chopped tomatoes and coriander for a smoky salsa

Bread and Butter pickle - good with smoked fish, pate, but also on a burger or try draining and mixing with natural yoghurt for a cheat’s raita

Beer & Smoke pickle - great with burgers or serve with salt beef

Achar - use as a vegetable dish with curry and rice, or as a supper dish, try warming through and serving with buttered fried eggs

Smoked onion relish - use to make an onion gravy, top burgers or mix into sausage meat to make a smoky sausage roll

Ale chutney - very good with cheese. Try spreading on bread and using it in a cheese toastie.

Smoked garlic mayonnaise - serve with a salad, top burgers, use in sandwiches or serve with grilled prawns.

Beer Jellies

Cocktail Jams

Plain beer jelly – try a spoonful stirred into gravy or sauces to add shine and a touch of maltiness.

Chilli beer jelly – add a few tablespoons to some part cooked cocktail sausages. Toss through and allow to melt, then place back into the oven to finish cooking for sticky chilli sausages.

Mojito marmalade – try in the middle of a coconut cake, or for something completely different, pair with roast lamb as an alternative to mint jelly.

Bellini jam – try slicing a Camembert or Brie in half, sandwich together with Bellini jam, then bake in the oven until oozing.

Asian beer jelly – melt a few tablespoons with a tablespoon of water, then brush on to partially baked or grilled ribs to make sticky oriental ribs.

Bramble jam – try melting some tablespoons in meat juices for a fruity sauce that goes well with Venison or Duck.

Lemon & Ginger beer jelly – pairs beautifully with cheese as an alternative to quince jelly.

Negroni jam – perfect with scones and clotted cream, or as a filling for a Victoria sponge.

Asian Fusion Range Wasabi Mayo - this creamy mayonnaise works vey well with fish, so try in a raw cocktail; use as a dip, or for something different, use to make a California roll or a Poké bowl, served with rice, salad and diced raw tuna.

Korean Taco Sauce - use as either a drizzling sauce, or a marinade. The perfect recipe, is to quickly stir fry some strips of beef, and serve in a taco alongside kimchi for crunch. Serve with more sauce drizzled over the top.

Vietnamese Pickled Onion - a sweet, lightly spiced onion, try this as a filling in a traditional Banh Mi sandwich - halve a crusty baguette, spread some of the Wasabi Mayonnaise on, then layer with sliced caramel roast pork, slices of pork terrine and finish with the onions.

Filipino Adobo Wing Sauce - marinade some chicken wings in this sauce, and cook on the BBQ, or deep fry the wings and slather in this sauce and finish in the oven to let them go sticky.
