Pig zen We’ve all heard of the dog days of summer, but pig days? Yep, the wildly popular piglet yoga is back Wednesday evenings at 6 p.m. throughout the summer (no classes June 26 or July 17).

The sessions take place at Amazon Acres (formerly Avalon Acres), a wedding-venue-turnedanimal-sanctuary located on the lush banks of the Florida River south of town.

For those not in the know, what started as a joke a few years ago has blossomed into Durango’s yoga sensation.

“Who knew yoga with piglets could be so fun?” instructor and pig wrangler Megan Lott said. “And the piglets aren’t the only ones getting on the mat, the grazing pigs and miniature donkeys at Amazon Acres are active participants as well!”

And to up the cuteness quotient, there are five new piglets this year to fawn over. “Put your visions of wallowing in muck with hogs to rest, this place is beautiful and pigs are not only charming, but extremely clean,” said Lott.

The class is described as a dynamic flow that can easily be modified for all levels and abilities, ensuring a fine time for newbies and veteran yogis alike.

“Just come with an open mind and sense of humor,” said Lott. “Desperate times call for desperate measures, things are getting a little tense globally lately, and I think we could all use a little silliness.”

The barn door opens every Wednesday at 5:30, and classes are $15-20 on a sliding scale (BYOmat and block.) Due to popular demand (who knew?), attendees are advised to RSVP in advance to secure a spot by e-mailing megan lott@gmail.com.

LaVidaLocal River of Lost Soles It’ll be fun, they said, handing me a wetsuit and some booties. Just remember to keep the pointy side down, they added, referring to the old school 5-inch Presta valve protruding at a dangerous angle.

And with that, I was dispatched a black innertube ala a Country Time lemonade commercial and waded into the rushing torrent.

However, what ensued was about the furthest thing from a relaxing summer float as one could conjure. As soon as I wedged my neoprened posterior into the doughnut hole, it was more like something out of Mr. Toad’s Wild Ride.

It was spring in the Yampa Valley, and the usually idyllic and demure Yampa River was angrily churning with more than 3,000 cfs of fresh snowmelt.

Within mere seconds, I was whisked away from my tubing partners and found myself at the river’s mercy. For a girl from the Land of 10,000 Lakes, whose idea of water adventure heretofore was pontoon rides and the occasional riverside kegger, it was nothing short of terrifying.

For the next few minutes – which seemed an eternity – I clung onto the flimsy piece of rubber keeping me alive, while getting may-tagged like a load of dirty laundry. Finally, after a near-death chundering in a feature fittingly known as the A-Hole, I managed to drag my own sorry one to shore, claw up the embankment and once again kiss terra firma. Downstream, I saw the three bedraggled others in my fooltilla do the same, like drowned rats flushed from a firehose.

And so went my introduction to Whitewater 101. It was your standard affair: clueless girl, no life vest, wellmeaning but overzealously adventurous boyfriend and really no business being out there. (Although I do deserve points for having a wetsuit and booties. And not getting impaled on the valve.)

Remarkably enough, that little episode of “Faces of Death” did not dissuade me returning to the water. Rather, it inspired me to learn the basics of river safety and be prepared in the event that the river has its way with me (which it always does sooner or later). Because if there’s one thing I learned that day, the river is not messing around. (That and perhaps I should find a new boyfriend who’s not out to kill me.)

The point in telling you this, dear reader, is not to scare you from ever going near moving water again. (Remember, 90 percent of river accidents happen on shore. I heard that once from a park ranger, so it must be true.) Rather, it’s to prevent you from also becoming a floating yard sale .

See, while the above scenario easily could have been ripped from the pages of Darwinism, Natural Selection and You, I like to think of my 23-year-old self in this instance as simply ignorant rather than stupid. And yes – there is a difference. Ignorance is not knowing what you don’t know, whereas stupidity is not knowing but acting like you do.

The reason I bring this up is because I’ve been privy to quite a bit of “ignorance” on the river as of late – a simple, basic lack of information. I’m all for running the gnar and having fun out there, but a little prevention goes a long way – much in

the same way I would have appreciated someone slapping a life vest on me or just slapping me upside the head all those years ago.

Over the years, I have fished more than a few cotton-clad, blue-lipped floaters from the Animas. And it is never fun to watch someone dry heave on the side of the river after doing the Ethel Merman through the play park. Just the other night, I watched in morbid fascination as a raft got side-surfed in a hole above Smelter. The captain dove out like a rat fleeing the Titanic, leaving his panic-stricken passengers to fend for themselves. (Alas, once the boat was spit out, the lone remaining passenger had a perfect line, all the more miraculous given she didn’t have a paddle.)

Then there are the hapless tubers who took to the Dolores River at 3,000 cfs and the countless scantily clad tubers during high water, giving whole new meaning to shrinkage.

The point of calling out such folks is not to look down my smug plugged nose at the misadventures of others.

Rather, it’s to offer a few simple tips so everyone stays safe and warm and lives to drink that dank booty beer at the take-out.

• The river is cold! Like 45 degrees cold. You know what else is 45 degrees? Ice water, hell frozen over, a Slurpee and the rings of Uranus. You wouldn’t submerge your barenaked self in those, would you?

• Cotton may be the fabric of life, but when drenched in frigid water it becomes the fabric of death and will suck the life out of you faster than a trip to the DMV. It also dries at a glacial pace, ensuring your teeth will be chattering until they wear down to little nubs. Please, for the love of god, wear some neoprene or at least a fleece or spray jacket. They may not look cool, but neither do teeth nubs. (Shameless plug: for up-to-date river flows, go to durangotelegraph.com) • Booties are not just for slapping. They actually keep your feet warm and protected from sharp rocks in the event of an unplanned wet exit. At the very least, please wear proper footwear that is attached to your feet. Lake Powell does not need any more orphan flip flops, and we don’t want to become known as the River of Lost Soles, do we?

• Put the “u” in self-rescue. If this entails loosening your death grip on your paddle or the raft’s chicken line so you can bust a move to the nearest eddy, so be it.

You gave it a good effort, and someone in Farmington will be psyched to have your raft (just kidding – no one down there rafts.)

• Never dive from the raft. Even if you are Greg Louganis, and even if you are wearing a helmet. Plus, if you abandon ship, you probably will not have a girlfriend at the take-out. Or really any friends for that matter.

• This should go without saying, but never attempt to run the river without a PFD (aka personal flotation device, aka life jacket, aka life p’rsrver.) Same goes for Fido. I don’t care how well a swimmer you fancy yourself and your canine companion. Unless you have gills, you’re no match for the river gods (who issue extra-savage beatdowns to anyone not wearing one. Why tempt them?)

• And last but not least, always keep the pointy side down. It’s no fun being up shit creek.

The studio hoped the bags might “develop a healthier way to address personal and collective issues in a public setting,” but I’m pretty sure they failed, because the installation was temporary. Buzz over chainsaws was merited To the editor, As a former ranger in the Weminuche Wilderness for the San Juan National Forest, I was ecstatic to learn of the agency rescinding the approval to use chainsaws in the wilderness area to clear trails. I applaud the organizations Great Old Broads for Wilderness, Wilderness Watch and the San Juan Citizens Alliance for their quick action to bring this matter to the attention of the public. Now, more than ever, the public needs to get involved and speak up in matters of our public lands. As the remaining wild country shrinks in our nation, we must remember Aldo Leopold’s view that we belong to a community on this Earth, and in consequence, we owe a duty.

Working as a wilderness ranger, I became intimate with the traditional cross-cut saw to clear trees and found beauty, energy efficiency and satisfaction in this tool. I personally feel that the demands of the forest management cannot be met with current staffing cuts and budget decreases over the years. We must rethink, collaborate and be patient to mitigate the issues the San Juan National Forest is facing presently and for the future. Yet we must still maintain the high standards of the Wilderness Act that makes the Weminuche Wilderness unique.

We must remember, as Edward Abbey states, “The idea of wilderness needs no defense, it only needs defenders.”

U.S. health care a sinking ship To the editor, A solid majority of Americans (70 percent!) support a health-care system automatically available to everyone, such as NIMA (National Improved Medicare for All).

But in this representative nation, that’s not what we4

have by a long shot. Among nations, America is the oddball, making health-care access an issue of wealth. Got lots of dough? Well then, you can probably receive good care here in the U.S. But if you are among the rest of us – the 95 percent of Americans who work for a living – you know what “paycheck to paycheck” means, and you probably live in the shadow of fear about possible medical bills.

Our health-care system gives free rein to insurance companies to play the numbers against their customers. “Let’s see. What strategy gives us max profit and least value to our claimants? How can we jack around the benefits this year to leave our customers’ heads spinning, while granting us most leeway to skip out on our obligations?”

Wendell Potter, a former health insurance executive who found his way back from the corporate world to conscience, describes in detail the psychopathic shenanigans regularly pulled by insurance companies to deprive ill and injured Americans of the treatment they have paid for. America, have a good look at his descriptions please, then doff your cap to the ingenious modern American insurance profiteers who control your health outcomes. (healthinsurance.org/authors/wendell-potter/ ) And let’s look at those health outcomes which derive from our cut-throat profit-driven system. A study published in the Lancet, the Healthcare Access and Quality (HAQ) Index, ranked the U.S. 29th, far behind the pack of other First World nations, and even some impoverished ones. In the World Health Organization’s (WHO) overall health-care system assessment, our “greatest-of-all-nations” is way down around Slovenia. In the case of basic human care, we’re hardly great. We’re pitiful.

Every other industrialized country, including many European Union nations, Canada, Japan and Australia, provides every citizen with lifelong, comprehensive, effective care for half the price we pay. Picture having all your loved ones automatically covered from birth to death, and covered very well. Are these countries wealthier than we are?

Not at all. They just don’t buy the guff that “we can’t do it

The U.S. pays $3.5 trillion per year for health care, well over $10K for every man, woman and child in the country. Most of us get poor coverage, substantial wait times, a scanty list of “preferred providers,” and the pleasure of being jacked around when it’s time for a claim to be honored. Many Americans can only afford a policy with a deductible far higher than their accessible savings, creating a spring-loaded trap-door to bankruptcy. The majority of American bankruptcies are due to medical bills: Kaiser Family Foundation tallies more than 1 million medical bankruptcies per year in the U.S. So this is America: sky-high rates with astronomical deductibles, poor outcomes, slipshod coverage with complex coverage loopholes, and – oh yes – a million healthcare bankruptcies per year. Let’s call it what it is: our very own All-American Titanic Health-care disaster. The strange thing is, all folks onboard could survive, and very nicely, if resources were shared intelligently as in a NIMA system (like they do in the Modern World). Yet, I repeatedly hear of Americans hugging their position on an insurance lifeboat, afraid of giving up their crappy but privileged seat, while millions of their uninsured neighbors flounder around them in the frigid waters.

NIMA is a cheaper, more efficient solution that would cover everyone. Speak up. Take a stand. Join us at one of Healthcare Durango’s monthly presentations. The next one is Sat., June 29, from 3-5 p.m. at the Durango Public Library, including a film and talk about “Big Pharma.”

Medicare vs. Medicare for All To the editor, Consider Medicare for All like Medicare on steroids.

There are differences, but legislation currently before Congress represents our best chance to cure our sick health-care system.

Polls show 70 percent of people like Medicare, which

parlays payroll taxes to fund most of the coverage for people 65 and older and those with disabilities. People often purchase additional private plans to fill in coverage holes. Private plans include premium payments and outof-pocket costs.

Even though Medicare covers the least healthy people who need the most care, it’s far more efficient than private health insurance plans. Medicare’s overhead costs are about 2 percent compared to private insurance in the Affordable Care Act with overhead costs around 20 percent.

Expanding Medicare to cover everyone means it would be modeled after the existing Medicare “system” but with improved coverage. The publicly funded plan would simplify health care for both the patients and providers. A simplified system would also serve to reduce costs.

Medicare for All would protect everyone from birth – not only those over 65. As the bills are written now, Medicare for All will include more comprehensive coverage, including dental, vision, hearing, long-term care and medications, without premiums, nor deductibles.

All providers are likely to participate because the new system will cover everyone. Improving access to doctors and hospitals. No more networks and denial of service. Our health care will be back in our doctor’s hands, not the insurers.

What a ride BMX community pays tribute to family who helped build local track

t all began about 20 years ago. Twice a week, Danny and Sandy Myers traveled with their kids to a dirt track in Aztec to race BMX bikes. Even though Durango had always been known as a cycling community, there was no BMX track in town. In fact, Aztec hosted the only one in the Southwest.

So the Myers, along with a handful of other Durango families who made the weekly pilgrimage, decided to do something about it. They went to officials with the City of Durango and asked for help. What they needed was land to build the track.

After some time and persistent prodding, the city agreed and allowed the local BMX community to start building a track at Cundiff Park on the south side of town. At the time,

“So many people pulled together,” Ashley Tokarczyk, who raced alongside the Myers for about a decade, explained. “The support in this community was really great.”

And, it wasn’t just the Durango community.

Tokarczyk said people who worked at the tracks in Aztec and Cortez, which was built before Durango’s, also helped out with the first races. From manning the finish line to tallying up the scores, people from across the area came together to make those first years successful enough that the city never stuck to its two-year term.

The very first race was held June 20, 2002, at the same time the Missionary Ridge Fire raged in the north end of town. That summer, the track hosted 76 racers in the Race for Life, a benefit for the Leukemia and Lymphoma Society that remains a signature BMX event around the country today.

Not long after, Durango BMX hosted a state championship race with about 150 racers in attendance.

Although the local track was an immediate draw 4

for competitors, it went through its share of rough patches. None of the events were backed by big budgets or tax revenues.

Everything was donated, and everyone was a volunteer.

“There was a time when the turnout wasn’t what we hoped for,” Tokarczyk explained.

It’s one of the reasons that the work families like the Myers put into the track and the BMX community in those early days was so important. Without their efforts, it might not have worked.

Those who raced in the early years talked of how Sandy Myers first introduced them to a sport that would shape their lives, of how the Myers family attended city meetings and pushed for the opportunity to bring BMX to Durango, and how they persisted when equipment at the track failed and times were tough.

“I’ve definitely realized the scope of it now that I’m older, how much of their lives they sacrificed to make it all happen,” Dakota Myers, Danny’s and Sandy’s eldest son, said.

What the Myers gave, according to those who know them, was time, hard work and, most of all, passion.

It certainly took a community of racers and families to make a go of it, but this Friday, the spotlight will be on them with the “Danny and Sandy Myers BMX Tribute” starting at 6 p.m. Fri., June 21, at the BMX track at Cundiff Park.

In addition to the regular Friday night races, the event features a potluck BBQ, tributes to the Myers family, bike parade and presentation from City Parks and Recre-

“Seeing the impact they’ve left, creating things that’ve lived on,” Dakota added. “It’s pretty amazing. I’m definitely proud of them – and grateful.”

Almost two decades later, the track is considered by many to be one of the best in the state.

Durango BMX racers have racked up hundreds of local, state, national and

world championship titles over the years.

They’ve gone on to enjoy successful cycling careers and become the next generation of role models – even national mountain bike champion and Olympic hopeful Christopher Blevins started his career on the local BMX track.

Instead of wondering if the sport would last its first two years, the city has adopted Durango BMX. It’s now a signature offering from the Parks and Recreation Department and popular draw for kids’ camps.

The track often hosts championship races and USA BMX sanctioned events.

“It’s great to see BMX blossom,” Tokarczyk said. “To see the turnout in the last few years is awesome.”

Tokarczyk, who grew up next door to the Myers family, said it was Sandy who first introduced her to BMX. Before the Durango program was born, Sandy Myers would take her to watch the races in Aztec.

It didn’t take Tokarczyk long to become hooked on BMX and cycling. Like Dakota Myers, she ended up racing for about a decade – and even took home national and world championship titles.

The real game-changer, though, was having the track in her hometown. Tokarczyk said it gave her the opportunity to focus on racing. Instead of getting into trouble, she would wake up before school to run sprints in the street outside her house and then head straight to the track to train after school. She said she learned about hard work, traveled the country and met amazing people who became family.

“It was in my life every day,” she added.

“BMX really shaped the person I am.”

Although she is now mostly a mountain biker, Tokarczyk still drives out to Aztec and Cortez to visit the people she raced with years ago. She even helps out at the Durango track when she’s needed.

But none of it would have been possible without the dedication and passion of local families like the Myers.

“I think the Myers family deserves a lot of recognition,” Tokarczyk said. “They’re both really giving … I think it’ll be special for them.” n

MountainTownNews Avalanche debris blocks trails and roads TELLURIDE – Debris and damage from avalanches continues to block mountain trails and roads in Colorado, the residue of an uncommonly snowy winter.

Pearl Pass Road in the Elk Range between Aspen and Crested Butte, may not be open at all this year. One of the slides that tumbled down into Castle Creek often does so, if not as wildly as it did this year, taking out aspen trees. But another massive slide punched a new path through a forest of spruce trees. Some were 100 feet high and may have been 200 years old.

All these giant sticks along with still melting snow remains at the bottom of the slopes, covering the road. There were also several slides above that monster. Pitkin County, however, will put little, if any, effort to getting the road open this summer, because of higher priorities, reports The Aspen Times.

Carl Buckingham, who seems to wear the title of mayor of Pearl Pass, although there is no town or even hamlet along the way, tells the Times that the road is “one of the classic, hard-core Colorado four-wheel-drive trails. It’s well used.”

In the Bear Creek Valley, the backdrop for the Telluride Bluegrass Festival, the hiking trail remains blocked and will likely remain that way for some time. You can smell the cause of this blockade well before getting here: the powerful scent of acres and acres of freshhewn pine, reports Suzanne Cheavens of the Telluride Daily Planet.

Lingering in mid-June was compacted snow, 20-foot-deep, thick with wood.

“Trees – both aspens and conifers – are snapped like toothpicks everywhere you look, and an expanse of snow blanketed in pine needles and boughs stretches over the trail for about the length of a city block,” she wrote.

A 6.5-mile path that runs parallel to Interstate 70 between Frisco and Copper Mountain also will likely remain blocked until probably mid-July. The pathway was buried under tons of debris in March, when all 23 chutes in Tenmile Canyon slid. The debris piles range from a few feet to up to more than 20 feet for a mile.

The path is part of an extensive network of bicycle trails that would allow a person to pedal from Dillon and Breckenridge across Vail Pass and to Glenwood Canyon. The Vail Pass segment has been cleared.

Other roads have opened but belatedly. That includes Kebler Pass, near Crested Butte, which opened June 13. But there have been later openings. In 1995, it remained closed until July. Two years prior to that, it remained closed till June 22, Marlene Crosby, the Gunnison County public works director, tells the Crested Butte News.

Paper or plastic? Bag debate continues CRESTED BUTTE – Crested Butte’s ban on plastic bags has gone relatively smoothly since it went into effect in September 2018, reports the Crested Butte News.

Prodded by a student from Crested Butte Community School, the town adopted the ban in 2016. But the ban is described by the news as a soft one. For example, some businesses were given extensions until April, to use previously purchased bags.

What sets Crested Butte apart from some other towns with plastic bans has been a program called Boomerang Ban. Businesses get handcrafted bags that can be used, reused and returned by customers. The stores give them out to customers with the understanding they will be returned. Not all are. But there is the option of paper bags, at a nickel – which some stores will swallow.

That brings up the question of paper or plastic? Which has the greater environmental harm? Paper bags require more energy to produce. Then again, cloth bags are not without fault. A U.K. study found that to have a reduced global warming impact from singleuse plastic bags, a cotton bag would have to be used 131 times. That said, cotton bags do biodegrade, unlike plastic, and rarely end up in the stomachs of whales or festooned on barbed wire fences like petrochemical prayer flags.

In Canada, that debate didn’t deter Prime Minister Justin Trudeau from announcing a ban on single-use plastics in Canada, possibly by 2021. This ban includes not only bags, but straws and cutlery. “The federal government is moving forward on a sciencebased approach to establishing which harmful single-use plastics we will be eliminating as of 2021,” said Trudeau.

In Whistler, Arthur De Jong believes that opens the door for Whistler to levy a plastic-bag ban by summer’s end. “Whistler is be-

ginning to look a bit of a laggard on banning single-use plastic,” De Jong told Pique Newsmagazine. “It’s time to move on this.”

Unlike mountain towns in Colorado, California and other states, Whistler felt hemmed in by provincial laws that precluded local authority. Idaho has a similar preemption of local authority.

New efforts to harness energy of water WHITEFISH, Mont. – Reconstruction of an old, abandoned hydroelectric generation facility at Whitefish in 2012 will have paid for itself this year, 15 months ahead of the original estimate. This has motivated the city’s public works department to look at other possible places where electricity can be generated from water flows.

“It would be hard to find a place that would have the same output as this one, but we’ve looked at where else we could put one,” Craig Workman, the public works director, told the Whitefish Pilot.

The existing hydro system was first installed at the reservoir built for needs of the city’s water treatment plant reservoir in 1983 but was damaged twice. The first time, debris damaged the Pelton wheel. The second time, a lightning strike damaged the generator.

Electricity from the hydro project goes to Flathead Electric Coop, which paid $400,000 in advance. Also helping get the project going was a $200,000 federal grant.

In Colorado, Gunnison County Electric Association has allocated $1 million to install a hydroelectric generator on Taylor Dam, which is in the Sawatch Range near Crested Butte. The 200-kilowatt generation is the amount needed for the round-the-clock minimum releases of water required at the dam.

Bart Laemell, a director of the co-operative, says the plans call for expansion to be able to generate up to 4 megawatts, or 20 times the capacity. The dam operated by Uncompahgre Valley Water Users Association was built to benefit farmers in Montrose and Delta.

Herd of antlered people at tax meeting JACKSON, Wyo. – Some 50 people showed up at a recent meeting in Jackson, some with headdress. The intent was to represent antlers, such as what you see on deer, elk and moose.

The subject was how to apportion proceeds of a proposed 1 percent sales tax increase that would yield $62 million. Elected officials in Jackson and Teton County have a firm idea of how they want to spend $57 million. The largest sum would go to expansion of the recreation center, described by one speaker as “bursting at its seams.” They also think money needs to go to wildland fire equipment and stormwater infrastructure, among other purposes.

But that leaves little money for many would-like-to-have projects. High on the list is highway wildlife crossings. The current cost estimate is $15 million. One idea is to give just half of that, reports the Jackson Hole News&Guide.

And that’s where the antlered people came in. The Jackson Hole News&Guide reports that one of them, Melissa Wandursky recalled for officials sitting with a doe as it died in her yard after colliding with a vehicle.

“To see the fear in that animal’s eyes as it was suffering as probably one of the toughest things I’ve ever had to do,” she said.

Wyoming wildlife officials also support the crossings. What is envisioned would be a mixture of crossings, such as in Colorado across Highway 9, between Silverthorne & Kremmling, & even more prominently in Alberta, between Banff and Lake Louise, but also fencing.

The Jackson Hole Wildlife Foundation says the $15 million would be the minimum required to complete two of the highest priority crossings as well as provide temporary solutions, purchase easements and cover engineering costs.

The foundation reports that upward of 180 larger animals get killed on highways in Jackson Hole each year. Three years ago, 265 mule deer, 46 elk and 18 moose died.

Steamboat has a farm-to-toke rule STEAMBOAT SPRINGS – Perhaps singularly among Colorado’s towns and cities that authorize sale of cannabis, Steamboat Springs has a farm-to-table component. It’s called vertical integration.

Under a former law, each dispensary must produce or manufacture 70 percent of its own products, and this must occur within the city. A new city law lowers that requirement to 50 percent, reports the Steamboat Pilot.

Anywhere but salad

A

radish sends mixed messages. It can look like something designed by Willy Wonka, but taste like mustard gas. In perhaps the ultimate bait-and-switch of the vegetable world, eating a radish can feel like leaning in for a kiss and getting slapped. Which I’m not saying is a bad thing. The key is to get as much mileage out of that slap as you can.

Too often, radishes are sliced into salads, which doesn’t offer enough contrast to let them shine. The company of other raw plant parts brings out unflattering sides of a radish, and likewise, can make the entire salad too harsh.

But it doesn’t take much to let a radish shine. Just a fresh baguette and butter.

For hundreds of years prior to the advent of avocado toast, French chefs have laid thin slices of salted radish upon heavily-buttered bread.

It’s a simple recipe, but not at all plain. The radish’s watery, pickle-like crunch adds texture to the yeasty, crusty medium. Disarmed by salt and harnessed by butter, the root’s pungency is put to work, without the slightest foul whiff to be sniffed.

I make radish toast on sourdough, with a few thin slices of onion. The key is to not skimp on the butter, and don’t forget the salt.

Indeed, salt alone makes a big difference with a radish, countering its feisty flavor with an equal but opposing salty force. On cut radish, a pinch of salt pulls droplets of radish water from the white faces. The slices become translucent, like pieces of sushi, and deliver a brief, salty, wasabi-like hit. A simple plate of salted radish makes great palate cleansers between courses. Or soak radishes

with salt in water. They crisp up a little, but stay mild.

Another way to tame a radish is with heat, in both temperature and spicy senses of the word. Radishes get mellow with cooking, their pungency replaced with sweetness.

Spicy heat, meanwhile, fights fire with fire, building a spicy bridge between a radish and the rest of a meal.

In the Himalayas, they employ all of the above radish tactics. Phagshapa is a pork and radish-based dish that uses not only chile but also ginger and onion to convene a powwow of pungency.

Phagshapa was one of my favorite dishes during a brief time I spent in Bhutan. Thanks to sadomasochistic levels of hot pepper and ginger in a properly prepared rendition, this is not a dish for the faint of heart, mouth or belly. If I gave you the recipe, I would feel responsible for your safety.

But don’t blame the radish for that drama. It is sweet and mellow by serving time, thanks to the cooking. Next to the chile and ginger, the radish is a refuge from the more intense flavors, while contributing a subtle layer of umami.

Whatever a radish is cooked in or on, be it pizza, stew or frittata, it has a way of quietly making food taste better without being obnoxious.

Radish frittata is my new world answer to phagshapa (it even rhymes!), with bacon taking the place of pork.

And in a nod to France, my frittata contains butter.

It consists of a crispy matrix of bacon and potato, embedded with radish slices and whole radish leaves and other select flavorings, and topped with a fried egg – or impregnated with a beaten egg.

We use the radish leaves because they are tender and tasty, contain more nutrients than the roots, and because

there is not a single reason not to. Some radish varieties are grown specifically for their leaves, though any radish leaf is worth eating. But not in salad, as some radish leaves can be fuzzy if eaten raw.

In the radish frittata, they add to the matrix and are a welcome splash of green. My radish frittata may not measure up to a French radish sandwich or Bhutanese phagshapa in terms of pure elegance or cultural importance, but it’s an American-style way to eat radish that borrows from the best and tastes good with coffee.

Radish Frittata Quantities are for a solo portion.

1 piece bacon, sliced into pieces of less than half-inch 1 golf ball-sized potato, peeled or not 1 tablespoon olive oil 1 pinch salt 2 pinches pepper 2 radishes, trimmed and sliced, leaves rinsed 1 clove garlic, minced Jalapeño or other hot pepper, chopped or crushed 1 teaspoon butter 1 egg, beaten or sunny side up Add the chopped bacon to a heavy pan on medium heat and then the potato (which I grate directly into the pan, because I hate dirty dishes). Unless the bacon is super fatty, add olive oil. Stir at a medium pace, allowing crust to form and brown but not burn on the bottom before scraping it off the pan. Cook for about 10 minutes, until it looks like a splintered bird nest.

Beat the egg, if going the beaten route, with a tablespoon of milk, cream or water.

Push the potato matrix to the side of the pan, and add the butter, garlic and radish parts. When the radishes are wilted and soft and you can smell the garlic, about two minutes, stir everything together and spread it out. Make a little dimple in the pile, like a nest, to catch the egg.

Crack or pour the egg into the dimple, and allow it to cook, unstirred, for about two minutes, uncovered. If the egg is sunny side up, add a teaspoon of water to the side of the pan and put a lid on, to steam the top. If using beaten egg, give it a few stirs to break it up and turn it over, so all the egg cooks. Serve hot. n

Dear Rachel, Headlights have gotten too bright. It’s to the point where I can’t even see the road when there’s an oncoming car. Flashing them would give away that I’m also a jerk leaving my brights on all the time. How else can I communicate to the other jerks on the road?
