As we head into the season of giving, Durango School District 9-R has reopened its food pantry after a hiatus. The pantry, which is located in the DHS Health Services Center, will be open from 9 a.m. – 12 noon on Saturdays. The goal of the food pantry is to support local families and students by supplementing their weekly food supply.

The food pantry is also in need of donations of nonperishable food, including canned goods such as refried beans; pasta sauce; crackers; snack items; jelly and Nutella; breakfast items; and instant items. Food donations can be dropped off at the District Office, 201 E. 12th St., or EXIT Realty Home & Ranch, 1032 Main Ave.

Hikers now have their own route to Telluride’s iconic Bridal Veil Falls. This week, San Miguel County announced it had opened the new Bridal Veil Trail for public use. Located entirely on county property, the new half-mile trail is a safety improvement over the old one, which used to follow a county road frequented by motorists. It also creates a more direct route to the scenic waterfall.

Town of Telluride Program Director Lance McDonald said the new trail shortens the distance for pedestrians by half. “The goal of the trail is to provide a safer and more interesting route for pedestrians to reach the bottom of the falls,” he said. “We hope that this will be the start of additional trails in the area.”

The trail was built in partnership with the county and the Town of Telluride and built by workers from the Southwest Conservation Corps.

The Town of Telluride paid the cost of environmental studies and building the trail; maintenance will be performed by San Miguel County.

Stars, stripes and bacon Freedom isn’t free, but for veterans next Mon., Nov. 11, breakfast will be.

In honor of Veterans Day, the Irish Embassy (8th & Main) is offering free breakfast to veterans and active duty military from 8 a.m. – 12 noon.

“It’s because of our military and veterans that we have the freedoms we enjoy every day, and we appreciate all of those service members,” Embassy owner Mike Graham said. “We’d like to give back to them on the day they are honored.”

Active and reserve veterans with military ID will receive a free meal (including non-alcoholic drink) from a select breakfast menu.

LaVidaLocal Pummeled by politics I don’t believe in writer’s block, but there I was – with my deadline staring me down – experiencing writer’s block. I was trying to write something political before the election results came in. I tried the same thing before the 2016 presidential election, and ended up scrapping the piece just before we went to print, asking for a couple more hours on Wednesday morning from the lovely editor of this newspaper.

Two years ago, the tone was softer. I suppose you might want to revise this piece now that Trump has been declared the winner, Missy wrote me over email. And so I did.

This year, the tone from Missy was different, you better have that piece done bright and early on Wednesday or I will pummel you.

Hmmmm, I guess the Trump years have changed us all. And Missy plays hockey. Sure I may be a tone and fit rock climber, but I might not survive a big check to the ribs. So here I am, terrifyingly pounding on these little letters on my keyboard, the historical writer’s fear of his editor running through my veins.

Wouldn’t that make a great headline for bigger media outlets though? “Small time Trump critic assaulted by his editor” would surely be great click bait for Fox News or CNN. Missy is all talk though, and I’m not one to miss a deadline. One thing I learned about writers block is that when you have a deadline, or better yet a drop deadline (yeah it’s real and serious) those words start a coming. And now I’ve got some concrete results to reflect on as well.

But, as I contemplate a regurgitation of the results from last night, my mind becomes frozen and bored. Yes, I’m happy that we have some checks and balances in Congress now that the Democrats control the House. It’s exciting to see more diversity in every way in our elected officials and candidates, or as Barack Obama said, “The more Americans who vote, the more our elected leaders look like America.”

As I think about it more, I start to wonder how I got so interested in politics in the first place. Before Trump came along, I can’t say I was all that engaged. And quickly went from engaged to enraged. Politics became personal. But why wasn’t I just as engaged when Obama, someone I supported, was president?

I think the answer lies in the anger. I’ve always been motivated by anger, and I don’t think I’m alone in this, especially when it comes to politics.

Anger has motivated me to follow the Trump administration. I undoubtedly

know the names of more officials in the Trump administration than the Obama administration. I’ve watched more press conferences with Sean Spicer and Sarah Huckabee Sanders than I care to admit.

Anger can be dangerous, too. When anger turns to rage, especially in people with mental problems, the results are tragic. I’ve managed to soothe my anger with time outside, hip-hop cranked to the highest point on the dial, and by the love of my friends, family and girlfriend. And love does a lot for anger.

I’ve also heard this whole thing that “America is more divided than ever,” which is probably true. But in some ways it also feels laughable, as if America was built on some pristine landscape with pure intentions and was once peacefully united.

America was taken by genocide, built on the backs of slaves, with rich white men in control – all while exploiting all the poor people in its path. Or, as my homey Oddisee, the rapper says, “How are you going to make us great, when we were never really that amazing?”

Any good that has ever been attained in the United States was hard fought and met with great opposition.

As I digress here, it’s got me thinking what has really changed for me politically in these crazy Trump years? I guess it’s a couple realizations. The first is that disillusioned belief that after Obama our country would be more civil, mature and refined. I was wrong about that, obviously.

The other realization is that I have to make more concerted efforts to protect what I believe in. One of the biggest things that relates to me personally was Trump’s rescinding of Bears Ears National Monument. While that is a very complex issue, I felt in my heart that Obama was doing the right thing by creating it. It was wrong to take it away, and I’ve spent hours upon hours writing about that place, and its importance to America’s soul. So much writing that I have a book coming out about my experiences there, The Desert, which I’m releasing on my 40th birthday this December.

There’s a million other issues, and a million other things to write about. For now, it seems like a trip to the desert is in order, to unplug from all this madness, and find some peace of mind and meditation. Because no matter what is happening in the world, the land that is (should be) Bears Ears National Monument always seems to say, “this too shall pass.”

We got it pretty doggone good To the editor, Hi, Durango! I knew you when you were a puppy! You were all cuddly and sloppy with dreams I have witnessed unfold in our river trail, rec center, community support systems, festivals, street dances and on and on for four decades.

I have watched you stretch and grow with all that growing puppy pain when the bones are expanding faster than the ability to understand what the heck is happening anyway!

The county commissioners and City Council were constantly at logger heads about how change was to come about – much like our Congress today – as the little town was discovered by “outsiders” like me. The commissioners wanted nothing to do with regulations that infringed on how they had always lived and the city councilors recognized the need for them so that we could grow with a comprehensive plan. Each was right in their own way.

I have witnessed these two entities that represent all of us eventually find compromises and learn to grow together with a common vision for the common good. Like a puppy, Durango has grown into a robust and healthy promise fulfilled. We recognize that we are all very different and we celebrate our differences – it is the spice of life!

William Blake wrote, “Why stand we here trembling around, calling on God for help, and not ourselves, in whom God dwells?”

Life works in our little corner of the world – can we bottle this and send it to Congress – along with a healthy dose of LSD for each of them? (Professionally supervised, of course!)

‘Medicare Advantage’ has none To the editor, Notice all the ads on TV for Medicare Advantage health insurance? It is that time of year for us to sign up for or change health insurance coverage.

Americans already pay almost three times more for our health care than Canadian citizens and most other industrialized nations. This outrageous cost is mainly due to high overhead of private insurance companies in America.

Republicans are major supporters of Medicare Advantage insurance policies because they force our federal tax dollars to be spent on private insurance companies at a much higher cost than the Medicare program, run by our government.

Since Medicare Advantage was created under G.W. Bush, our tax dollars have heavily supported this insurance plan. This program creates a circle of our tax dollars supporting a much more expensive health insurance through private companies, which in turn, support Republican candidates.

Medicare Advantage is a quiet sabotage of “Medicare for All” (as in Canada.) Republican supporters make sure the circle keeps going, claiming no funds are available for a less costly system. They are also lying to us as they are working on ending protections for pre-existing health conditions. Texas, along with 20 other Republican-controlled states, are in court to kill this protection as I write this.

Spectrum doesn’t offer a fair trade Dear Sirs, I’m very disappointed with the cable service I bought from Spectrum Cable. I made good for your service, and all you can say is we have an outage. So what I have to accept is I’m not getting what I’m paying for. When you personally purchase service or groceries or any exchange, do you receive a fair trade? How about refunding me for what I paid for, but didn’t get?

Chain hotels hurt mom & pop To the editor, The current building of mega-storied name-brandhotels in the heart of Durango is going to harm existing mom & pop hotels/motels/B&Bs. Price wars will greatly reduce typical summer room rates and many will turn into the likes of North Main motels with long-term stays – that used to have successful year-around short term stays in the early 1980s before Purgatory built accommodations.

Soon, all the Durango mom & pops will be renting rooms at a major discount to barely stay alive. Only corporate hotels can afford empty rooms as a write-off. What happened to Durango’s management team?

Problem not Fox, but antisemites To the editor, I worry about Shan Wells. After his latest cartoon, I think he needs anger management with a good psychiatrist. Why? What is considered the worst massacre of Jews in U.S. history, Wells turns into a platform to push his politics. Mourn and remember the dead? Not Wells. Dead Jews are just a prop for him to push his political agenda.

So what does Wells do, he blames it on Fox News.

Does the shooter have accountability? Not to Wells, who, if he studied history, would know that Jew hatred has been around at least 2,500 years before Fox. Bowers hated Jews and Trump because the neo-Nazi thought Trump was controlled by Jews. Nothing more and nothing less.

If Wells thinks Fox had anything to do with it, he should look into the statistics of hate crimes over the last 22 months. The NY Times just came out with a report showing that half of all hate crimes in New York were against Jews. Now get this Shan: Not ONE person caught or identified as the aggressor in those antisemitic hate crimes has been associated with a right-wing group. Right wing antisemitism is only part of the problem.

To Wells, Jewish lives matter only when they are attacked by skinhead neo-Nazis. When the Jew is attacked by a person of color or a Muslim or pro-Palestinian activist, his sympathy disappears. Still waiting for Wells’ cartoon denouncing Louis Farrakhan for calling Jews termites, filth, vermin and calling for our destruction.

The problem is not Fox News or conservatives – it is Jew hatred, plain and simple. It exists on the right and on the left. It exists in some sects of Christianity and Islam.

It exists among atheists as well. It can be found among the educated as well as the ignorant. White people and people of color can be and are antisemites.

To everyone who reads this letter, if you want to fight Jew hatred, look for the strain that is in the group you identify with and fight it there. Don’t sit back and pretend that it’s only a problem with your political opponents. If you think that, you are fooling yourself, and you are part of the problem.

The typical reaction of the Jews of Pittsburgh was not to call for the death penalty but to reveal that Jewish doctors had treated the shooter. Mr. Wells, maybe you could learn from that attitude instead of a rigid political narrative that has consumed and angered you for far too long. We can dream, can’t we?

Coming up short City, county face budget burdens without help after voters defeat tax increases

here’s a lot to take in from yesterday’s election – like power shifts and political ripples – but what will likely impact residents in Durango and La Plata the most is the failure of three tax increases to pass.

Voters overwhelmingly said “no” to the city’s request for sales and property tax increases to pay for basic services and a new police station. They also defeated the state’s proposal for income and property tax increases to pay for education, and a sales tax increase to pay for transportation projects.

None of these measures really even came close to passing. Some think Colorado voters aren’t typically on board with tax increases, and others suggested there was just too much on the ballot – including state and local races, 13 ballot measures, 11 possible questions for La Plata County residents, and a handful of judges.

The money matters the most, though, for city and county officials – both of which are expected to be struggling for funds in 2019 and beyond.

It’s no secret La Plata County has been on its back foot for years, dealing with the impacts of declining oil and gas revenues. The city, however, came out earlier this year and warned residents of what officials called their “wicked problem. “ A wicked problem is one that cannot necessarily be solved and is typically about making tough trade-offs. For the city, the wicked problem on the horizon is finding a way to keep providing basic services residents have come to expect without taxing them out of the community.

Durango officials hosted more than 50 meetings and received thousands of survey responses and comments from residents over the past several months. In the end, they said respondents wanted to keep things as they were. So, the City Council crafted Question 2A – a combination of property tax and sales tax increases – to fund those services.

Tuesday, the public voted the measure down 61 to 39 percent.

Besides ballot measures, La Plata County went its own way in two races. For State Senator (District 6), Democrat Guinn Unger won a 55 to 45 percent victory over Republican Don Coram in La Plata. But Coram took the seat with a 55 to 45 percent victory in the district. In the battle for the U.S. House of Representatives (District 3), county voters supported Democrat Diane Mitsch Bush 55 percent to Republican Scott Tipton’s 41 percent. However, he too won the seat in the end, 52 to 43 percent.

BudgetBusters from p. 9 LeBlanc said he, obviously, had hoped for a more positive outcome but he’s not entirely surprised by Tuesday’s results.

“It’s not unusual to see the first attempt is not successful,” LeBlanc said. “Some of the major issues Durango has attempted in the past were not successful on the first vote.”

Both the Durango Rec Center and Florida Road projects were voted down initially, he added. The City Council can come back to voters with another proposal as soon as April or November of next year.

“I think it might be helpful for the Council to have a couple listening sessions to get feedback and see what people were thinking,” he said.

Ultimately, it’s up to the City Council to decide whether or not to return to voters in the future, and what direction they’ll take moving forward. LeBlanc said they’ll discuss their next steps at the study session next Tuesday. City staff will also present council with 40 different projects on the to-do list and ask for feedback on how they’d like to prioritize those projects.

The city’s Question 2A wasn’t the only tax measure to go down Tuesday. In fact, they all failed to get voter approval.

Amendment 73 (funding for public schools) was defeated 55 to 45 percent. The measure would have changed income tax rates, raising the rate for higher earners, and adjusted the property tax rate – all of which was to go to education. The Durango 9-R School District would have taken in an additional $8 million in the first year alone.

Colorado residents also voted against the other tax question on the ballot, Proposition 110 (transportation taxes and bonds). This would have raised sales taxes to pay for road projects across the state, including bringing additional funds to Durango and La Plata County for multimodal projects, as well as road repair and maintenance. It was defeated 60 to 40 percent. “(Proposition) 110 certainly would have been beneficial to La Plata County,” Megan Graham, public affairs officer for

La Plata County rocks the vote with record turn out La Plata County Clerk and Recorder Tiffany Parker – who ran uncontested for another term – said Tuesday’s election was the highest turnout for a midterm ever, even surpassing 2010 numbers.

“I can’t imagine we had a better turnout before; it was incredible,” Parker said. “It was a huge day for us.”

La Plata County also had one of the top turnout rates in the state. Parker said she was hoping for 60-64 percent voter turnout, and that’s exactly what she got.

La Plata County turnout was more than 62 percent, outpacing the state level of just over 50 percent.

One glitch in Tuesday’s election was

some intermittent internet issues at the county’s three polling places. But, Parker said, voters were patient through it all.

“People were very understanding,” she added. “I was really impressed.”

La Plata County, explained.

She said it was unfortunate the measure didn’t pass, but it also doesn’t change things for the county. “We play the hand that we were dealt,” Graham added. “It doesn’t change what we have going forward.”

Unlike the city, the 2019 budget for La Plata County does include a few capital improvement projects – including remodeling county buildings and other infrastructure needs.

Officials had planned on a flat year for 2018, according to Graham, but with a slight increase in natural gas prices and sales tax revenues, the county came out ahead.

It’s not expected to last, but it puts the county in a betterthan-expected position heading into 2019 – in spite of losing some funding help Tuesday.

“I think that Colorado voters tend to have trepidation voting for tax increases,” Graham said. “I don’t know if it’s altogether surprising or shocking.”

Parker attributes some of the high turnout numbers to mail-in ballots, which make it easier for residents to take their time with the issues – especially with this year’s ballot. It included several complex state and local issues, as well as national, state and local races.

Another reason for the high turnout is likely how easy the state makes it for residents to register. Voters can register in-person, online or on social media – they can even text in their registration.

“It was a huge day for us,” Parker said of the turnout. “We were really excited.”

passed 71 to 29 percent. Those amendments will create commissions tasked with drawing the maps for state legislative and congressional districts in future elections.

Both county and city officials were also keeping a close eye on Amendment 74 (compensation for property owners) and Proposition 112 (increased setbacks).

Neither one was supported by elected leaders in the county or city. The Board of County Commissioners took official positions against both ballot measures in October.

“I think the fact that 74 and 112 went down is a really good thing for La Plata County,” Graham explained.

She said under Amendment 74, the county could have been roiled in costly litigations – a sentiment echoed by LeBlanc. With Proposition 112, Graham added, it just didn’t seem to fit the oil and gas development in this community.

Moving forward, both city and county officials will be faced with tough questions – even wicked problems – when it comes to budgets and the bottom line. n

MountainTownNews Sherpa studied to unlock health mystery OKANAGAN, B.C. – To his death, Sir Edmund Hillary insisted that he was not solely the first to stand atop Mount Everest, the world’s highest peak. He was in the company of Tenzing Norgay.

Together, they were first.

Norgay, also called Tenzing Norgay Shaerpa, had been born and lived his life at high altitudes in the Himalayas. He probably had some advantage because of that.

Researchers in May 2007 found that climbers’ blood oxygen levels at the summit of Mount Everest are about a quarter of what they are at sea level, according to a report in the New England Journal of Medicine.

More recently, researchers from the University of British Columbia set out to better understand the physiological adaptation of the Sherpa. “The Sherpa are born and raised at low-oxygen, and their ancestors have lived above 4,000 meters (13,000 feet) for 20,000 years, so they are the gold standard of exceptional high-altitude performance,” Assistant Professor Chris McNeil said.

McNeil and doctoral student Luca Ruggiero set out to find if the Sherpas’ muscle fibers were just as efficient in a low-oxygen environment as their well-studied cardiorespiratory systems.

To test this, they set up shop at the Pyramid International Laboratory, located 16,600 feet on the Nepali side of Everest. The oxygen concentration in the air there is roughly half that at sea level.

For the study, they conducted tests on 10 Sherpa and 12 people who came from low elevations and gradually ascended to the laboratory. The subjects were between the ages of 20 – 42, and the test measured the strength of each participant’s quadriceps because they are so important in walking, hiking and climbing, McNeil said.

It turns out, Sherpa fatigued about 33 percent less and out-performed even the fittest lowlanders. The results were published in the September issue of the Journal of Physiology.

McNeil said the finding may someday help people who don’t go to higher elevations but have lower oxygen saturation because of emphysema or other forms of pulmonary disease.

“A better grasp of how Sherpa muscles are able to not only survive but thrive in such a harsh environment could one day lead to exercise or pharmacological interventions and change the lives of countless people,” said McNeil. “That’s the Holy Grail of studying the incredible physical abilities of the Sherpa.”

Should mountain towns look like cities?

KETCHUM, Idaho – Downtown Ketchum has been getting a new architectural look, one strongly influenced by the modernist style seen in new buildings in prosperous cities.

Ketchum came of age in the late 1800s as a smelting town for the silver mines of the region. Commercial buildings in the late 19th and early 20th centuries were flat-roofed and made of red brick with tall, skinny windows and ornamental moldings at the top. You see these sorts of two and three-story buildings in Aspen and Telluride, which were also hard-rock mining towns. Crested Butte was a mining town, too, but it was mainly a coal town and hence not quite as affluent. Instead of brick, it had wooden Victorian buildings.

The modernist style, on the other hand, emphasizes straight lines and glass – lots of it. Think the shiny tall buildings of Vancouver or Toronto or even the newer buildings of Denver and Salt Lake. Don’t look hard for ornamentation; it’s just not there.

Whether this shift toward modernist style is good, said the Idaho Mountain Express, is open to debate.

“In Park City, we see the same thing happening,” a visitor from Salt Lake City told the Express. “I don’t like it. It’s changing the character of the town.”

But one resident in Ketchum is OK with the new, modernistic architecture, such as displayed by the Limelight Hotel, which was built by the Aspen Skiing Co. “I think the Limelight is lovely,” she said. “It feels like it’s more open and welcoming because of all the glass.”

Local architect Jeff Williams points out that the red-brick buildings reflected what was happening across the country at the time.

In that sense, the new styles are no different.

However, retired Ketchum architect Dale Bates frowns on the new “globalization of taste,” but agrees that dictating a historical local style leads to a dead end.

“The trouble with vernacular architecture is that it turns out to be fake,” he said. “That is the pitfall – that architecture is what you perceive on the surface. It’s not. It’s an environment that you actually walk into.”

Bates says true architecture of place consists of local materials and an authentic construction process – for example, real wood, thick walls and big wooden beams. An example of an unauthentic process, he said, is fake rock siding.

Can the Ketchum area develop its own style? “The challenge is finding a form that expresses a regional climate and a culture,” he told the Express.

The goal, he said, should be to “get beyond the global application of high modernism – not by going back, but by moving forward into something yet unseen.”

One idea in this discussion is to require buildings in the heart of Ketchum to nod to the century-old architecture, emphasizing stability and longevity. New projects a few blocks out could be more risky, more cutting edge, embracing openness and change.

Jackson’s bag ban may start next April JACKSON, Wyo. – In adopting its municipal bag ban, the Jackson Town Council adopted a policy intended to give merchants a soft landing. The ban would begin only when merchants ran out of existing bags. For grocers, that’s likely to happen in April. Other merchants may have enough bags for another year, reports the Jackson News&Guide.

Merchants in Jackson give out 5 million plastic bags each year to customers, said Heather Overholser, superintendent of Teton County Integrated Solid Waste and Recycling. She said her department captures 20 percent of them, compared to the 1 percent of most communities.

“But that’s still a very large percentage going into the landfill and our environment,” she said.

The News&Guide reports that the council discussed exempting smaller retailers, as they account for just 10 to 20 percent of plastic bags. But it would be unfair, members decided, to ask some businesses to change but not others.

Customers will be allowed to buy paper bags once merchants cease to give out free plastic bags. The fee has not been set. It could be 10 cents, but there’s also support for 20 cents. The money will be shared between the merchants and the town.

Europe, meanwhile, has been moving much more briskly to curb the proliferation of plastic that has now become ubiquitous in the Earth’s soils and water. The New York Times reports that the European Parliament has overwhelmingly approved a ban on 10 single-use plastics such as straws, plates, cutlery and cotton-swab sticks in Europe by 2021.

The World Economic Forum estimates that 90 percent of the world’s plastic ends up in the ocean. This year, the forum warned that there would be more plastic than fish in weight in oceans by 2050.

High threat of eruptions in the Cascades BEND, Ore. – The United States has 161 active volcanoes, but a new study by the U.S. Geological Survey finds that 18 pose a “very high threat.”

Topping the list is Hawaii’s Kilauea, which sent lava flows across the state’s Big Island earlier this year. Of others on that list, several are in the Cascades, including Mount Saint Helens and Mount Rainier in Washington. In Oregon, Mount Hood ranks as Oregon’s most threatening, followed by the Three Sisters, Newberry and Crater Lake.

This same report found the caldera at Yellowstone to rank No. 21 in terms of threat. The Jackson Hole News& Guide notes it hasn’t erupted in 630,000 years or produced surface magma flows in 70,000 years.

The Bend Bulletin explains that with the exception of the Hawaiian volcano, most of the changes on the list since it was last assessed in 2004, were the result of evolving understanding of how volcanoes behave. It did not define what constitutes a “very high threat.”

Whatever the threat today, eruptions have been relatively uncommon in the Cascade Range. Garibaldi, near Whistler, was last active between 10,700 - 9,300 years ago. Hood was last active about 200 years ago, although there was a sequence of steam explosions in the mid-19th century.

Because plastic straws suck Animas High School students spearhead anti-straw crusade

tudents in the “Cultivating Cultural Capital” class at Animas High School have a modern take on the concept of the ripple effect: the “ripplegram.”

“It’s kind of like getting back what you gave,” junior Jaylnn Nicoly explains.

It also illustrates the way even the smallest action can have far-reaching effects – something a group of students is hoping to accomplish with its latest endeavor.

Nicoly is a member of Animas High’s Interact Club, a Rotary-sponsored community service group for teens.

She joined the group last summer after hearing of its latest effort: tackling plastic straw usage, a cause near and dear to her heart.

See, like 33.1 million others, Nicoly watched a video about a sea turtle. Yes. That video. In case you haven’t seen the 2015 viral sensation, it entails marine biologists removing a plastic straw lodged up a sea turtle’s nostril. “We started talking to businesses and found that a lot of restaurants are already moving in that direction,” said Cahill.

One of those restaurants is Steamworks Brewing. Owner Kris Oyler, who also owns El Moro on Main Avenue, said his staff began raising the issue in 2017.

“We started cutting back our straw usage and offering them by request only,” he said.

Since then, El Moro has gone a step further, using hay straws (from haystraws.com, duh) in its cocktails.

“El Moro is a little more straw-intensive than Steamworks,” he said. The hay straws so far seem to hold up well in liquid and are in keeping with El Moro’s vintage vibe, he said.

“The hay straws are kind of a throw back.”

As for Steamworks, the restaurant has paper straws on order to take for a testdrive. However, as the sea turtle continues to live on in internet infamy, paper straws are in high demand and harder to come by.

“There’s a huge back log,” he said.

“We’re definitely seeing a drop in demand for straws, particularly among the younger generation,” he said. “We always try to do what we can.”

Of course, many of the environmental mindset have taken matters into their own hands, literally, and BYOS. “My high school daughter has a metal straw she carries around with her,” Oyler said.

In fact, the metal straw is another angle the AHS Interact team is also pursuing. The group sold metal straws for $2 at two recent bake sales, with funds going toward the club’s spring community service project (yet TBD.) They also plan to sell them at the upcoming Noel Night.

“We only have one Earth,” said Cahill.

“Yes, not using a plastic straw is kind of an inconvenience at the time, but it’s an investment that keeps our world cleaner, longer.”

BOGO: Kickstarting clean water containers for the world Local resident Kelly Fearney is also interested in clean water, but of the drinking variety. An engineer for local firm FEI Engineers, Fearney is active in Fort Lewis College’s Engineers Without Borders, now known as the Village Aid Project.

Over the last decade, she has traveled a handful of times with the group to such far-flung locales as Ecuador and Laos to help install clean drinking water systems in rural areas.

“Often, their drinking water is not obtained high up in the mountains but lower down,” she explained. “By then, it has gone through farm fields, etc., and degraded. And on top of it, they still have to haul it.”

However, while the newly installed systems address the first part of the problem, they don’t necessarily address the second.

“During one of our trips, a student noticed all these people had been drinking out of dirty containers,” she said.

According to Fearney, in many poor, rural communities, water is hauled and stored in any container people can find, from old paint cans to spent fuel containers. Often, residual chemicals linger in the containers, leading to health problems, from headaches to cancer. In addition, these contaminated containers are not properly cleaned over time, creating a breeding ground for bacteria and leading to GI problems as well.

As a result, the college started the “Clean Jug” program, whereby clean drinking and hauling vessels are provided to each family in a village.

“It goes hand in hand with having clean water and learning how to store it,” Fearney said.

Fast forward a few years, and Fearney and her husband, Tae Hillyer, are brainstorming for new business ideas. “I always liked Tom’s buy-onegive-one model,” she said of the immensely popular company that donates a pair of shoes (and now everything from glasses, water and bullying prevention) for every pair bought.

And that’s when the light went off: selling reusable metal water bottles, and for each one sold, donating a jug to the Clean Jug program.

The resulting brainchild, BOGO, was launched on Kickstarter last month (search “bogo bottle” at kickstarter.com.) The couple hopes to raise $28,000 by Nov. 17 to get the project launched. For a pledge of $30, donors will get a double-walled, stainless steel bottle in the size (16 or 20 ounces) of their choice, and a jug will be donated to the Clean Jug project.

The money raised through Kickstarter will go toward buying the bottles – which are only available in lots of 1,000, Fearney said.

As of this week, BOGO was about 17 percent of the way to its goal, but Fearney was optimistic.

(Hint: metal water bottles make great holiday gifts.)

“We hope once it gets off the ground, BOGO would be more on the ground, handing out the jugs,” she said. “But for now, we are relying on FLC to donate them.”

In fact, even without selling a single one of their metal bottles, BOGO in cooperation with FLC and various humanitarian organizations around the world, has already donated hundreds of clean drinking water containers in Myanmar and Nicaragua. Which means hundreds of fewer people drinking old paint or antifreeze and getting sick.

And clean water, for critters and humans, is something we can all drink to.

his technique is an open secret among those who have the most to gain or lose from the optimization of food. Food professionals like chefs and caterers know it, because flavor is money. Savvy home economists, who make it their business to satisfy demanding palates on the cheap, know it too. I learned the technique from a farmer, who learned it from a farmer – the kind of farmers who make it their priority to enjoy their harvest in a way that celebrates the local terroir.

Ukrainian food bloggers know it, because Ukraine could be a euphemism for “cold weather potatoes,” and this technique will change your potatoes forever. I can only hope my Ukrainian ancestors knew it. Of course they probably invented it.

When my thoughts turn to roasted roots, it means I’ve officially given up on summer, which is not something I do easily. And by “summer,” I mean the food of summer. The tomato plants are dead. The hens are getting lazy. I’m racing to get my garlic in the ground before it freezes. My furnace still isn’t getting any action, though, because my oven is heating up the house.

The heat produced by a load of roasting roots is a dry heat, much different from the steam bath of the simmering soup pot. If all goes well, that dry heat helps create a crispy brown exterior. Inside, we want more of a fluffy heat, if we are thinking deeply about what we want inside a roasted root.

We want a roasted root to taste like a perfectly roasted potato. That’s a tall order, since most cooks can’t even properly roast a potato.

Most recipes for roasted potatoes (and roots) direct the cook to heat them until brown, but that’s not enough.

How it browns matters.

Many suggest stirring, or solving every problem with more oil. Even if they are brown and crispy on the outside, the interiors may be gooey, or chewy, or bland like a steak house baked potato. They may be dry, or mushy like a mashed potato. They all have the same thing in common: the technique was not employed.

The potatoes must be soaked or parboiled before roasting. This washes away excess starch and allows them to cook perfectly.

Given how foolproof a path it may be to carb-o-liscious bliss, I’m baffled at how few cooks do the pre-soak. Google roasted roots and peruse recipes from the likes of Epicurious, Genius Kitchen, Food Network, Eating Well and the New York Times. Not a single recipe mentions the pre-soak.

(And many of them seem coincidentally quite similar). If you Google roasted potatoes it’s the same: zero mention of soaking the spuds after cutting them.

There are variations to the soak. Some cooks do a parboil instead, so the potatoes will cook more quickly in the oven. After a parboil with salt and vinegar, Kenji Lopez-Alt of Serious Eats advises to rough up the potatoes so they are coated with a starchy foam, which browns into something of a cross between a Pringle potato chip and the skin of a perfect piece of fried chicken.

But for all of the gains he makes in the skin department, the insides end up a bit overworked, if only compared to when soaked in cold water.

So cooks must choose between perfect insides or perfect skins. Most would probably choose the crust with nooks and crannies that break into a million golden pieces when you bite, even if the inside has lost a certain integrity.

When I have a big assortment of roots, I parboil, because when they are all cooked together, it creates a starchy mix of all of the constituents, as if they had all been mashed together. This mishmasher’s veneer absorbs the oil and spices, coats the pieces, and cooks into a tasty crust.

But if I’m doing potatoes alone, especially purples, golds and russets, I do a pre-soak in cold water. The recipe below details the parboiling of myriad roots but also includes directions for the potato soaking options.

Each type of root is different. Within the potato category alone, starchy ones like russets or Yukon golds will outperform waxy types, like fingerlings or reds. My favorite potatoes to use, in both soaking and parboiling contexts, are purples, the starchiest of all. When soaked, they blow up the fattest, coming closest to erasing all the angled cuts,

like an ankle so swollen you can’t see the bones.

When it comes to choosing roots, the earth is the limit. Use whatever you like, though be advised some can be problematic. I avoid roots that are too watery, like onion, or roots that are bitter, like garlic or rutabaga, as the bitterness can intensify. I avoid red beets, which will stain the entire tray, even if you don’t mix them together. As for squash, honorary root, I like ‘em starchy, like my spuds. Kabocha, sunshine and buttercup varieties are my favorites. Carrots, yams, sweet potato, parsnip and celeriac are all good choices, although many of these will stay moist inside and won’t crisp up. Ditto for kohlrabi, another honorary root.

Roots that Rock 2 lbs roots, peeled and cut roughly the same size 3 tablespoons salt 1 teaspoon baking soda 1 tablespoon garlic powder 1 tablespoon smoked paprika 1 tablespoon black pepper 1-2 teaspoon ground cumin 4 tablespoons olive oil Optional: fresh garlic and butter for dressing; ketchup, mayo and hot chile flakes for dipping.

Add 2 tablespoons salt and the baking soda to a gallon of water and bring to a boil. Add the roots.

Boil for 10 minutes. Drain the roots and allow to steam for a minute. Preheat the oven to 425 degrees, along with a tray.

Mix the cumin, black pepper, garlic powder and 1 tablespoon salt, and add 2 tablespoons of this mixture to the still-warm roots and stir them around roughly, to help disintegrate the soft, starchy exteriors. Add the olive oil and stir again.

Spread the roots upon the hot tray and hear them sizzle. Put as many pieces on the tray as possible without letting any of them touch.

Bake for 30 minutes. Remove the tray and inspect.

Turn each piece so a different side faces down, and bake again, removing pieces periodically and testing them, until you decide they are done.

Serve with some kind of tangy sauce or dip. I like a mix of ketchup and mayo. If I really want to impress, I melt some butter in a pan and saute fresh garlic and green herbs, like parsley, sage, rosemary and/or thyme.

Toss the roots in the garlic herb butter, and serve.

Pre-soak variation: Don’t peel the roots, but do peel squash, if using. Soak them in a gallon of water with the same amount of salt and baking soda. Cook until they whistle with the sound of 100 little blimps with pinpricks.

Serve with garlic herb butter or ketchup mayo, and your finest white wine. n

Dear Rachel, I’m on this new mucus-reducing diet, which sounds totally sexy, I know. I decided to do it because my voice is important for my job, and I thought this seemed like a nice way to care for my body. But it turns out I can eat absolutely nothing but lemons, salmon and chamomile tea.

Leastwise that’s what it feels like. All my favorite foods are OUT. How long do I need to stick with this diet before it goes from “quitting it” to “completed it?”

Upper Pine River Fire Promotes “Fill the Boot” for MD Muscular dystrophy is a group of diseases that causes progressive weakness and

loss of muscle. The disease can take away the ability to walk, run, hug, talk and even breathe. There is no cure for MD, but medications and therapy can help. Every year the Muscular Dystrophy Association sends more than 3,500 kids with MD to a week at one of nearly 80 MDA summer camps nationwide. Through donations made during “Fill the Boot,” MDA is able to provide this life-changing summer camp for free. Upper Pine River Protection District firefighters are asking local residents to help “Fill the Boot” at several locations throughout Bayfield, including the Heritage Day Parade.
