dR PUBLISHER’S LETTER Dear Reader, With our mild Winter weather this year, it’s time to find some fun things to do in and around town. This issue is full of ideas in our events calendar, and throughout the following pages. First, you’ll want to read the dR FEATURE on our inaugural duPont REGISTRYTM Cars & Coffee at Innisbrook Resort. The three-page editorial doesn’t give us enough room to display the photos of all the great cars that participated. We’ve given you a good representation, though. Read all about it on pages 82–84, and mark your calendars for the second annual show on November 17, 2012. Of course, we invite you to join us every third Saturday of the month from 7:00-9:00 a.m. at our headquarters for our regular monthly duPont REGISTRYTM Cars & Coffee. There are several editorial pieces in this issue that will aid in your selections for dining. dR DISH features Frenchy’s restaurants on Clearwater Beach. These locations are favorites for the locals and visitors alike. You won’t want to miss Frenchy’s Seafood Gumbo recipe on page 76. In dR CULINARY MASTERS, we feature the Tampa Club and Chef Joseph Van Bemmel’s mouth-watering recipe for Grouper Monte Carlo. You’ll find a favorite recipe for Red Sangria from Columbia Restaurant in dR WINE, along with some other great suggestions for the best sangria in the area. And, for those trying to eat healthy, dR AROUND THE BAY shares some information on FITLIFE FOODS in Tampa. Another dR FEATURE in this issue highlights The Mahaffey Experience. The Mahaffey Theatre has undergone a multimillion-dollar renovation that utilized local vendors and artisans. The venue is now hosting a growing number of paintings and dimensional artwork, including a gallery space showcasing Tampa Bay area artists. Along with these upgraded features, The Mahaffey also includes a diverse array of the world’s best entertainment from The Florida Orchestra to Broadway and ballet, with all different types of music. Making the Grand Entrance is a dR HOME feature this issue. This editorial features entrance doors of all different sizes and styles, from bold and artsy to traditional glass. If you are in need of an upgrade to your home, you’ll want to read these suggestions on pages 38–40. dR AUTO highlights the sleek two-door Cadillac CTS-V. With a 6.2-liter supercharged V-8, this car has as much power as it has class. The interior is both luxurious and high tech, and the exterior couples cutting edge styling with traditional elegance. And last, but certainly not least, dR BACK PAGE reports on Pierre-Yves Cousteau’s visit to St Petersburg, and his launch of a nonprofit global platform for marine conservation in the U.S. As you will see, this issue will keep you in the know on everything in the area from dining to art and music to home décor and much, much more Enjoy!

Classical Culture and Pageantry Onstage SHEN YUN — A performance you don’t want to miss!

nce upon a time, there was a vast and beautiful land, spanning many generations and many peoples. Grand emperors descended from the heavens bearing wonderful gifts. The great land of China has an extraordinarily rich culture, which has been largely hidden from Western view. Even in China, much of it has been lost. With all its bountiful offering, the magnificent culture of China has returned to grace the world, surfacing in New York as Shen Yun Perform-

Shen Yun artists include many award-winning dancers and vocalists. A full orchestra features ancient Chinese instruments with rich, Western orchestral accompaniment. dR HAPPENINGS

This Valentine’s Day, Cupid Takes Aim and Gets a Bull’s-Eye! By Susan B. Barnes

The holiday decorations were barely put away before red hearts and boxes of candy appeared on the store shelves – Valentine’s Day is just around the corner. How do you define romance?

I

? recently asked some friends what they find to be the most romantic spots in the Tampa Bay area; their answers included the point on Davis Island and a proposal; a favorite restaurant from a honeymoon on Siesta Key; the top deck of the parking garage at Tampa International Airport at sunset; canoeing the Hillsborough River; and walking along Bayshore Boulevard.

Following are a few ideas to get you in the mood. For many (yours truly, included!) spending the day at a spa is the definition of luxury. Why not make it a spa day for two? The Sandava Spa at the Hyatt Regency Clearwater Beach Resort and Spa offers a Couples Escape, in the Couples Suite. Choose from any of the spa treatments offered, and prepare for the ultimate indulgence for two. Living on the west coast of Florida, we are fortunate to have front row seats to each night’s sunset. However often it’s done, strolling along the beach as the sun melts into the water and the stars begin to twinkle overhead is one of the most romantic walks that can be taken. Cozy up at a table for two at Mise en Place in Tampa, order a bottle of wine and slowly make your way through an exquisite meal. The exceptional service and rich décor will make you feel like you’re the only couple in the room. Known as the “Pink Palace” on St. Pete Beach, the Don CeSar Beach Resort, built in 1925, is the destination of choice for hundreds of weddings and honeymoons each year. All of those couples can’t be wrong! Reserve a room and be transported back to romance of the 20th century.

At the end of the day, whatever your definition of romance, being with the one you love and doing what makes your Valentine dR happy is the most romantic of all.

dR HEALTH The only resolution you need to remember this New Year!

Positive thoughts empower and small steps lead to great change By Catherine Mitseas

Jay J Garcia MD Weight Loss & Wellness Centers 813-871-6465 www.garciaweightloss.com Cèsar Lara, MD, Center for Weight Management 727-446-7423 www.cesarlaramed.us Jay J Garcia, MD

C

èsar Lara, M.D. is a board certified family physician who has spent the last decade of his 20 years in practice helping people lose weight. As founder of the Center for Weight Management in Pinellas County, he says the best place to start improving your life is within your own head. “We are inundated with thoughts that are very self defeating,” he explains. These thoughts become our reality and eventually help create the diseases that destroy our health. Instead, he urges each of us to take a “psychological B-12” shot everyday by changing the way we talk to ourselves. This self-hypnosis, he says, is as simple as visualizing what we want in our lives and then saying it to ourselves regularly. Dr. Lara frequently asks patients to mentally list five significant changes they desire and then repeat them each day. As silly as the phrase “I want to have more energy” might sound out loud, in our head, it becomes the chant that allows us to refocus on our world. He explains, “A picture starts to emerge; the thoughts are produced that bring the energy and change you are looking for.” Most significantly, we need to accept that change is possible and by learning to love and believe in ourselves, we can achieve emotional balance. In this state,

32 www.duPontREGISTRY.com/TampaBay

César Lara, MD we can care for others and handle life’s daily stresses without neglecting our own inner spirit. “Once we open their perspective so that they can see themselves as how they want to be, what they want their world to be like, then all the little details about eating smaller meals, drinking more water, become easier when you truly believe in the picture you’ve created,” he says. Unfortunately, excess weight also is a medical condition and many of us need help to be successful. Dr. Lara says if you’ve tried multiple times to lose weight and failed or rebounded, consider investing in a medically-supervised weight loss program. The practice will provide a comprehensive diet strategy as well as the psychological support necessary to succeed. In addition, practices often offer good maintenance programs designed to keep small weight gains from escalating. At Jay J Garcia MD Weight Loss & Wellness Centers, with locations in Tampa and Brandon, patients can take a metabolic panel that provides a comprehensive blueprint for improving their health. This series of tests, says Center founder and lead physician Jay. J Garcia, a member of the American Society of Bariatric Physicians, is used both for difficult cases where a person has multiple

medical conditions related to excess weight and by individ-uals seeking answers to nagging health concerns. The panel tests for cholesterol levels, kidney and liver functioning, as well as delves into thyroid functioning, sugar levels and looks at hormonal levels, including male and female sex hormones, insulin and cortisol levels. Knowledge is power and from these tests, the physician and specialists design programs that address lifestyle stressors and nutritional deficiencies while prescribing natural supplements and a moderate exercise program; all these actions ultimately smooth out hormonal and chemical imbalances that prevent optimal health. Dr. Garcia explains that “we often find a small amount of improvement make a huge gain in health status. People can get healthy with a lot less pain then they think.” For example, Dr. Lara explains, “if someone is overweight…and they lost five percent of their weight, that person just decreased their insulin resistance by 50 percent. That’s why with diabetics, even a little weight loss has a large impact.” Positive thoughts empower and small steps lead to great change—that’s the only resolution you need to remember this New Year! dR

BANFF

a Winter, Spring, Summer and Fall Wonderland

The Need for Speed Ready to hit the slopes? Banff National Park boasts three ski resorts to choose from: Sunshine Village, Lake Louise Mountain Resort and Ski Banff at Norquay. Whichever you choose, you’ll

have plenty of opportunities – ski season in Banff typically runs mid-November through mid-May. In addition to the thrill of the downhill, cross country skiers will find myriad trails that lead through breathtaking landscapes. For a different kind of adrenaline rush, yell “mush!” when a dog sledding team tours you through the Continental Divide within the park. During your tour, you’ll not only be surrounded by breathtaking landscapes, you’ll learn about the ancient sport of dog sledding, and even have the chance to take the reins yourself!

Reaching New Heights Whether you visit in the winter, spring, summer, or fall, climbing is a popular sport year-round in Banff. Rock climbers easily transition into the winter months with ice climbing. Yes, ice climbing! Guides will equip you with the gear you’ll need to traverse a frozen waterfall. Your blood will be pumping from the exhilaration, and you’ll soon be seeking your next summit. Another year-round sport is hiking. When the snow falls, snow shoeing may be the better way to go, and with plenty of miles of trials, you’ll never be disap-

lose your eyes and picture a winter wonderland: glistening white snow; magnificent mountain vistas; a brilliant, bright blue sky overhead. When you visit Banff, a small mountainside town in Alberta, Canada, those wintery images from your mind majestically appear before you in all their glory.

Have a seat, relax and fuel up before setting out on the next leg of your adventure. Popular spring and summer outdoor activities in Banff include heli-yoga, canoeing, kayaking, horseback riding and bicycling. There’s plenty to keep you busy, whatever time of year you visit! Just Say Sp-ahh Your muscles may become weary after all of your outdoor and sightseeing adventures, and justifiably so! Fortunately, Banff has a number of spas and hot springs to help soothe, refresh and rejuvenate. Book the Ultimate Ascent at the Willow Stream Spa at The Fairmont Banff Springs Hotel: two hours of deep relaxation through a warm, aromatic footbath and scrub; a gentle dry-brush exfoliation; and a soothing, hydrating massage. All of this is followed by a warm wrap and a gentle face and foot massage. Among its menu of treatments, the Red Earth Spa at The Banff Caribou Lodge offers organic wraps and scrubs inspired by the four essential elements. doors in Banff National Park, you may want to take it easier and go sightseeing. There are plenty of options there, too! Take a gondola to the top of Sulphur Mountain for panoramic views of the town and valleys below; visit Johnston Canyon, the Lower & Upper Falls, Lake Louise and Moraine Lake; or, during the winter, drive the Icefields Parkway to the Columbis Icefields, often referred to as one of the most beautiful drives in the world.

If you’d rather take a soak, head to Banff Upper Hot Springs—travelers have been doing so since 1884!

Castle in the Rockies When you see photos of Banff, you most likely see the iconic Fairmont Banff Springs Hotel, a National Historical Site; construction began in 1888. Situated in the heart of Banff National Park, the hotel is an oasis amidst all of the activities the area has to offer. Though historic in stature, the guest rooms at the elegant Fairmont Banff Springs are warm, inviting and easily become your home away from home. With more than 750 guest accommodations,

you’ll certainly find the right space to suit your needs, from guest rooms with woodland views, to spacious suites overlooking the grandeur of the surrounding mountains. A stay at the Fairmont Banff Springs won’t soon be forgotten. After all, how often can you stay in a castle? Well, a hotel styled after a Scottish Baronial Castle, anyway. For more than 100 years, travelers have made their way to Banff for outdoor adventure, healing hot springs, and the sheer pleasure of being surrounded by resplendent, natural beauty. Is it time for you to visit Banff? That’s easy—the harder question to answer is, when will you go?

Ready to visit Banff? Getting there could take some time, but oh, the reward is so great! There are two options flying from Tampa. Major airlines fly into Calgary with a layover along the way. Once in Calgary, Banff is a 90-minute drive west along the TransCanada Highway. If you’d rather fly into Vancouver, you can do that, too. However, you’ll have a full drive’s easy along the TransCanada Highway, through the Coast Mountains and British Columbia—a terrific option if you like the open road.

Making the

Grand Entrance By Gale Steves

In this age of oversized garage doors, the front entry door has taken a back seat. Add value and style with a new front door.

D

rive down almost any block of beautiful homes, and you will discover that the front door has almost disappeared from view in many neighborhoods. “Nothing adds more welcome than a well-designed door,” notes Neal Fiske of TriplePoint Design-Build in St Petersburg. “It should be elegant and yet not overwhelming.” Mark Leek of DoorPro Entryways in Tampa suggests that the front door is the most important door in the house. “It not only sets the style but should reflect the architecture of the house,” he adds. On how many homes do you see the inappropriate door style—like a Victorian on a ranch house? Ed Bailey of Artistic Doors in Tampa whose custom doors have changed the personality of a house insists that a welldesigned entry door creates curb appeal and sets the tone for the rest of the house. For example, craftsmen style and more contemporary doors make a vast difference when fitted to a similar style

It should have strength and longevity as well. In 2012, the Florida Building Code will change to include higher wind ratings and this will affect not only windows but exterior doors as well for new and replacement construction. This may be a good time to really look at your own door with better scrutiny. There are new doors that resist the

elements better than older ones. Popular in the high-end luxury homes, wood doors, which has natural warmth and beauty, requires maintenance over its lifetime. A new generation of wood doors now has options to enhance the durability and lifespan in areas where inclement weather can be a factor. The new Simpson WaterBarrier technology is available in over 200 of their wood door designs. “The secret is a one-piece overlay over

the exterior which helps them withstand direct exposure; the result is the beautiful look of real wood on the inside of the door with the protection of WaterBarrier on the exterior,” says Brad Loveless, Marketing Manager for Simpson Door Company. Perhaps, the most important decision is what the door is made of. Beside wood doors, which are generally more traditional in style, high-tech alternatives of fiberglass composite and steel doors

have popular design choices. Fiberglass is a smart choice for harsh or humid climates as it is virtually maintenance-free. Many mimic the look of wood and can be stained or painted to match the other outdoor details. Steel doors are the most durable and they do not warp or crack. The new generation of steel door is also the best choice if security is an issue. If you’re considering a glazed entry door, you’ll have many glass options to choose from, including clear, etched, beveled, leaded and many others with ornamental glazing. Low-e window glazing is a popular option but if you are con-

cerned about security; look into laminated glass that is designed to resist break-ins. The fastest growing category in front doors, vented sidelites, offer the ventilation consumers want without the inconvenience and obstruction of storm doors or sliding screens. A new alternative from Therma-Tru for their Fiber-Classic® Oak Collection™ Smooth-Star® Collection now allows you to let in light and fresh air into your home without sacrificing energy efficiency or style. Some homes directly on the water are lucky enough to have two front doors, adds Neal Fiske of TriplePoint. “The front

door on the road is about security and street presence. The water entrance is all glass, although these days the glass may be high impact and laminated.” Not quite ready to make a door change? Lucianna Samu, color expert for Benjamin Moore Paints, suggests that the creative use of color can add life to an old door. And do not just pick one color but three instead. A low contrast door and trim combination can enhance details of a door. Select a color and then step the next colors up or down so the color mixture pulls your eyes beyond the door. Neighbors will think you have a new door. And you will never tell. dR

Lakefront Enclave Showcases One-Of-A-Kind Lifestyles Homebuyer Imaginations Running Wild on Shores of Lake Thonotosassa “Only at Stonelake Ranch...” It’s an expression heard often within this unique lakefront luxury community. Quickly becoming known as a place where even the grandest visions of custom country living can come gloriously to life, Stonelake Ranch is a breathtaking showcase of magnificent estate homes set within a majestic Florida landscape. A world away from the crowds, noise and hassles of urban living, yet only 20 minutes from downtown Tampa or Lakeland, the secluded countryside location is

a place where families go to bed each night tucked safely beneath a thick blanket of stars, and the days are filled with the natural pleasures of life in the great wide open.

Homesites measured in acres

Lifestyles measured in dreams come true

At Stonelake Ranch, 685 acres of unspoiled Florida landscape provide sprawling estate-sized homesites ranging from 1.5 to over 14 acres. Strictly reserved for only 160 families, each homesite overlooks endless expanses of open rolling fields,

Offering the freedom to create lifestyles so unique they could only happen here, some homebuyers have built residences that might be better described as “family compounds.” Many include signature features such outbuildings with art and

music studios, workshops, pool houses, tennis courts, boat docks, even horse stables, each tucked within scenic woodlands or nestled on hillsides that slope gently to the water’s edge. Miles of gently winding roads, equestrian and hiking trails weave the community together. An elegant, lodge-style lakefront clubhouse with wraparound porches and a catering kitchen serves as a popular gathering place for neighbors, friends and families. The clubhouse fitness facility, boat launch and dock enhance an unrivalled combination of natural beauty, gated privacy and freespirited outdoor fun.

A development team of experience, vision and commitment

A land rich in history

Tampa Bay’s most prestigious homebuilders

That rare place where wildlife, horses and kids can still run free, Stonelake Ranch has been witness to a legacy of stewardship passed down through the ages. Echoing the footfalls of the Native Americans who first settled the area, the land was held in trust by a family of ranchers for generations, now passing to new stewards with the promise of protecting its profound natural beauty and tranquility. Early Florida Seminoles called the lake “Thonotosassa” meaning “Lake of the Flints” for the tool- and spear-making stones they found here. Today, residents enjoy the untamed pleasures of fishing and boating on one of the region’s largest freshwater lakes. Miles of signature fencelined trails invite residents to stroll, jog, bicycle or ride horses beneath a cooling canopy of ancient trees in a secure, gated enclave imbued with the undeniable spirits of nature, family and community.

The principals responsible for the creation of this remarkable lakefront community are father and son, Charles and Brian Funk, and their partner Jeff Meehan. With over $1 billion in residential real estate developments, this visionary team is responsible for numerous distinguished communities throughout Florida and Connecticut. Successful commercial projects include a full-service destination marina on Tampa Bay and a large office building along scenic Bayshore Boulevard near downtown Tampa.

In keeping with their commitment to providing residents with the opportunity to create homes and lifestyles of extraordinary distinction, the developers have selected six of the region’s premier custom homebuilders to build exclusively within the community, including Alvarez Homes, Arthur Rutenberg Home, Bayfair Homes, Homes by John C. Fowke, John Cannon Homes and Windstar Homes. Exclusive sales representation is provided by a team from Baker Real Estate, an international realty organization renowned for its worldwide connections and Florida expertise. Those curious to explore the opportunity to come craft a custom home and lifestyle within this exclusive residential reserve are encouraged to visit www.StonelakeRanch.com or schedule a personal tour by calling 813-986-0062.

MORTGAGE Common Sense In a Tough Economy By Janan Talafer

Qualifying for a Mortgage Loan The three Cs determine if you are qualified and the interest rate you are quoted: CREDIT REPUTATION—everything from the borrower’s credit score and history of mortgage or credit delinquencies, to the status of credit card accounts. CAPACITY—includes monthly debt payment to income ratio, cash reserves, whether you’re salaried or self-employed and the type of loan product – fixed or adjustable rate, along with 30-year, 20-year or 15-year terms. COLLATERAL—takes into consideration the amount of down payment, property type, such as single family home, condo or multi-family, and property use.

Some real estate experts are predicting that 2012 will be a year of opportunity for homebuyers. But is that true? As banks develop stricter rules on credit eligibility, many people are finding it more difficult to qualify for a loan. According to the Florida Realtors Association, trouble securing a mortgage was one of the prime factors in limiting a customer from purchasing a new home. And what about refinancing? Even with interest rates at record lows, does it really make sense to refinance? In these challenging financial times, it can be difficult to know which direction to turn for advice on home mortgages. According to Cathy Pirtle, vice president and sales manager for SunTrust

58 www.duPontREGISTRY.com/TampaBay

Mortgage, the outlook for the housing market in 2012 is definitely a little more positive. With interest rates as low as they are and real estate both available and affordably priced, Pirtle says the timing

might be excellent for qualified individuals to purchase a home. But in today’s economy, who is qualified? It all comes down to “the three Cs,”

says Pirtle. That’s credit reputation, capacity and collateral. All three factors not only determine if you’re qualified for the loan, but also the interest rate you are quoted. Credit reputation refers to everything from the borrower’s credit score and history of mortgage or credit delinquencies, to the status of credit card accounts. Capacity includes monthly debt payment to income ratio, cash reserves, whether you’re salaried or self-employed and the type of loan product – fixed or adjustable rate, along with 30-year, 20-year or 15year terms. Collateral takes into consideration the amount of down payment, property type, such as single family home, condo or multi-family, and property use. The type of loan you are seeking will also play a role in any discussion about qualification. Conventional loans, FHA loans and VA loans all have their own variables in requirements, says Pirtle. “There is no one rule of thumb.” When it comes to refinancing, there

are just as many factors to consider. It is never a one-size fits-all approach. “We work one on one with people to review their current mortgage and help them determine the true benefit to refinancing,” says Pirtle. That includes looking at how long the homeowner expects to retain the home, whether there is an opportunity to reduce the term of the loan and where they can get the most significant savings. If refinancing doesn’t make sense, Pirtle suggests the option of making an extra payment each year or setting up a bi-weekly payment plan if the lender offers that type of program. When Lisa Langer, of BB&T Private Wealth Management, advises her clients, she looks at the big picture, taking into consideration all of their financial needs, not just their current mortgage situation. For example, she says, a client may be paying over four percent interest on their mortgage right now, but it may not make sense to refinance, depending on their personal and professional goals. And for

some people, it might make more sense not to refinance, but to liquidate some of their investment holdings and pay off the mortgage altogether. But before any of those decisions are made, she advises clients to consider issues ranging from how much cash will be required at the closing, to what the appreciation of the home will be over the period of the loan versus the interest they could earn by investing that money instead. Cash flow is one of the biggest determining factors, says Langer. “Someone who is very entrepreneurial may need access to immediate cash for new business ventures that come up,” says Langer. “Maintaining a mortgage on their home may be more practical rather than paying it off because having available cash is more important to them.” The bottom line is every financial situation and every client is unique, says Langer. Before making any decision on refinancing or obtaining a new mortgage consult a trusted advisor. dR

Is Refinancing the Way to Go? It is never a one-size fits-all approach. There are many factors to consider: How long the homeowner expects to retain the home? Is there an opportunity to reduce the term of the loan? Where can the most significant savings be obtained?

Protecting What Matters Most

F

rom stock markets to investment portfolios and the general instability of the world banking markets, there are many financial issues that Americans face in these tough economic times. While there is little control of monetary sectors, many individuals overlook one of the most important areas of financial planning where there is control—insurance portfolios. It is one of the most vital areas that can protect someone from certain financial ruin. Even though Americans are keenly aware that insurance plays an important role in asset protection, people are often willing to sacrifice important coverage to save a few dollars in premium. When buying insurance, it’s easy to see it as an intangible purchase with a need-based value. Everyone feels like situations such as property damage and health issues could never happen to them, and, unfortunately, this could not be further from the truth. Luxury home insurance, valuable collections coverage and worldwide liability are all components of insurance to consider when creating a portfolio. Excellent financial advisors guide their clients through the pitfalls of investing and retirement planning; however, many people still have the same insurance agent from when they bought their first car. “Having an insurance professional that can handle all of a client’s needs is key. Do not fall into the ‘price shopping trap’ when researching insurance needs,” said Eric Most, co-owner and chief marketing officer of Most Insurance. “Instead, take the time and effort to obtain a holistic review of insurance policies and find an agent that understands the high net worth client and his or her insurance needs.” Such things to consider include whether the insurance agent is asking the right questions. If an agent is truly focused on protecting a client’s assets, a full list of all current

62 www.duPontREGISTRY.com/TampaBay

properties and policies is requested, allowing the agent to verify there are no gaps in coverage. This is especially important in cases regarding umbrella policies. “All umbrellas have underlying coverage requirements and it is very important to understand and to make sure you are in compliance with those requirements,” explained Tricia Parker, a private client account executive of Most Insurance. To make sure any additional coverage needed in a portfolio is purchased, everyone should also complete an assessment of his or her lifestyle. “For example, if a client has domestic staff working at his or her home, then adding employment practices liability insurance to the portfolio is a must,” said Parker. “If sued for harassment or wrongful termination, this coverage will be helpful in fighting or paying those claims.” Someone on a charitable board or

association should also be cognizant of liability circumstances. A board officer can be held liable for any issues that may arise as a result of a decision the board makes. While these organizations typically have liability coverage, they often fall short in coverage and leave the volunteer officers open for litigation. Many umbrella policies offer directors and officers coverage for those types of exposures, and they will protect the individual not the organization. All insurance carriers are not the same and neither are the agents that represent them. Individuals should seek an insurance representative that will take the time to truly assess all possible risks. “If someone has never had a total insurance review, please seek out a professional that has the ability to review and consolidate all types of insurance portfolios,” said Most, explaining the necessity of reviewing every detail within a policy. “Take control of your financial planning. At Most Insurance, we have the expertise and ability to make sure you are protecting what matters most.” dR

Chef Joseph Van Bemmel Part of the Club

Tampa Club

Food is really an evolution of your time and experience. By Melinda Tam Orlando There is a good chance that if you don’t have a membership at the Tampa Club, you might not have had the pleasure of dining on Chef Joseph Van Bemmel’s delicious cuisine. Well, make one of your New Year’s resolutions to get that membership, because these dishes can’t be missed. “It’s all about flavor,” Bemmel says. “It’s not about appearances; it’s about using the correct ingredients within the ethnicity of the food.” And Bemmel knows what he’s talking about, considering he has been at the Tampa Club for 22 years and counting.

68 www.duPontREGISTRY.com/TampaBay

But it doesn’t stop there. His food passion dates back to his childhood, when he used to cook with his dad in his home state of Wyoming. “My dad was really my inspiration to cook, but I didn’t know that until later,” Bemmel explains. After attending culinary school, making his way to Florida and landing a few culinary positions, Bemmel found a home at the Tampa Club, and has been making mouthwatering creations every since. “You can move from place to place, and new ideas and new ways will be presented to you,” Bemmel says. “But

what’s more difficult is to continue to reinvent yourself, and that is what I have done. You have to keep things interesting and fresh, and learn from the people around you. I draw from my team as much as they draw from me. Food is really an evolution of your time and experience.” Menu staples include crab cakes, filets, Chilean sea bass and fresh grouper. But with 30 to 40 percent of the menu changing every three to four months to stay aligned with the seasons, members are constantly able to explore something new. “We are constantly evolving the cuisine, but the menu is only the base of what we do,” Bemmel says. “In a privateclub environment, we do wine dinners, themed events and more.” And even with all the raving reviews of the Tampa Club’s fine food, Bemmel stays quite humble and grounded, thanks not only to his down-to-earth personality but also to his wife and children. “I don’t like being in the limelight too much,“ Bemmel says. “I just want to be the guy that did a great job for the members of his club.” But even a chef needs to have some downtime. When Bemmel isn’t at the club, he is home relaxing with his family … out of the kitchen.

“After working in the kitchen all day, that’s the last place I want to be when I get home. But I do cook for special occasions. During the holidays, I like to surprise my family. We have had kangaroo and ostrich to name a few,” Bemmel boasts. “I even had Grandma in the kitchen rolling sushi for the first time one year.” And with that, this chef makes it into an elite club of his own: culinary perfection.

 SALT ROCK GRILL

Salt Rock Grill

The Salt Rock Grill is about the burning passion for delectable food, enticing dining and pleasurable surroundings...The first Indians and early settlers that arrived here were driven by similar appetite. Mostly fishermen, they camped along shores lined with huge salt rock boulders. While the sun melted into the gulf, big crackling fires were built in open pits made of piled salt rock. All gathered around for a grilled feast that lasted well into the evening. By Reynolds Fuller hether you’re a local or a tourist--it doesn’t matter--if you’re in the mood for fresh fish at great prices in a casual beach setting, Frenchy’s is the place to go. Its motto “to serve the best quality product at a good value” has not changed since Frenchy’s first opened its doors in 1981. The only changes Frenchy’s has undergone have been those of expansion. Canadian-born Mike “Frenchy” Preston, who got his nickname from his middle school friends who often heard him speaking French with his mother, has turned Frenchy’s into an empire all its own with four restaurants along Clearwater Beach--Frenchy’s Original Cafe, Frenchy’s Saltwater Cafe, Frenchy’s Rockaway Grill, and Frenchy’s South Beach Cafe--along Clearwater Beach as well as Frenchy’s Off the Hook Gift Shop, Frenchy’s Seafood Co., Frenchy’s Stone Crab Company, and Frenchy’s Oasis Motel.

“All the grouper and other fish served in our four restaurants are line caught from our own fleet of fishing boats, delivered fresh from the boats at our dock to the fish house at Frenchy’s Seafood Company,” Restaurant Operations Manager Alan Ebbert says. “Each daily catch is then prepped for same day delivery to each of the restaurants for use in that day’s service to our patrons. Although the seafood comes in off the same boats, according to Ebbert, as far as the four restaurants go, “the décor and ambiance of each Frenchy’s is different. The idea is to offer a little variety in the menu at each too.” Many of the “original” menu items, such as the Smoked Fish Spread, Boiled Shrimp served Greek style, Seafood Gumbo, and, of course, the famous Super Grouper Sandwich made with special seasonings and batter, are still featured at Frenchy’s Original Cafe making it a favorite for the locals 30 years running.

Frenchy’s Saltwater Cafe, originator of the Grouper Reuben Sandwich, offers a family-friendly and dog-friendly atmosphere with dining options inside as well as outside on a wraparound porch. Octopus dishes, specialty salads, Buffalo Shrimp, and Conch Fritters, a traditional Island-style recipe served with a homemade Bahamian sauce that Frenchy created, are a few of the specialities listed on Saltwater’s menu. “It’s across the street from the docks at our Seafood Company, so boaters love to tie up and come over for a bite,” Ebbert says. Overlooking the Gulf of Mexico with open-air beachfront dining, Frenchy’s Rockaway Grill is the largest Frenchy’s venue. “Rockaway serves up a variety of fresh seafood, their famous She Crab Soup and other Floribbean-style dishes, along with the best Rum Runners on the beach,” Ebbert says. “It’s an energetic atmosphere that features live music daily

and has a lounge area with games and a pool table.” Also offering beautiful views of the Gulf--it extends right up to Beach Walk--is Frenchy’s South Beach Cafe. As the newest addition to Frenchy’s restaurant chain, South Beach Cafe boasts a Key West bistro vibe and is sure to be another success for Frenchy. As the Frenchy brand has evolved to include more restaurants, a seafood company, a gift shop, and even a motel, so have the menu options. However, Ebbert says the staple items that Frenchy first created for the Original Cafe remain precise, consistent, and still on the menu. Among the original recipes is the Seafood Gumbo which Frenchy wanted to share with you.

Frenchy's Cafe Seafood Gumbo 1/4 lb butter 1 medium onion, chopped 1 large green pepper, chopped 4 ribs celery, chopped 1/8 cup celery, chopped (leaves only) 1 green onion, chopped 1–1/2 tbsp minced garlic 1/2 cup flour 1/2 tbsp oregano 1/2 tbsp basil 1/2 tbsp thyme 1–1/2 tsp cayenne 1 bay leaf 1–1/2 tbsp paprika 1/2 tsp black pepper 3-1/4 tbsp gumbo file 1/2 cup burgundy wine

6–1/4 cups canned tomatoes, diced and with juice 1–1/4 cups water 1–1/2 ozs ham base 2 cups frozen okra 2 cups frozen corn 1/2 lb crabmeat 1/2 lb shrimp (110-130) 1/2 lb scallops 1/2 lb grouper Melt butter. Add all chopped veggies and sauté for 10 minutes. Add all seasonings and flour; sauté for 15 minutes. Add burgundy wine. Add diced tomatoes, water. Bring to boil, turn down to simmer. Add seafood—simmer for 1–1/2 hours. Let stand for 10 minutes. Remove bay leaf before serving. Serves 10–12

Columbia Restaurant’s Red Sangria 1 bottle Spanish red wine 1/4 cup Spanish brandy 2 tablespoons lemon juice 2 tablespoons orange juice 1 tablespoon sugar 1 cup club soda 1 sliced lemon 1 sliced orange 2-3 whole cherries Mix all ingredients in a large pitcher. Stir with a wooden spoon until well mixed. Pour into large wine glasses. Garnish with orange slices and cherries. Add ice to pitcher. Serves 4.

hen you’re in the mood for a light, refreshing adult beverage, sangria should be the top choice on your list. Consisting normally of wine, chopped fruit and a sweetener, sangria can be the perfect accompaniment to most meals or enjoyed purely on its own. And the Tampa Bay community seems to agree. duPont REGISTRY™ polled some of our most loyal readers to find out where they sip their favorite sangria. We hope their recommendations will inspire you to partake in a beverage outside your normal comfort zone. Frank De Lucia, president and CEO of Abilities Foundation, loves the sangria at Red Mesa in St. Petersburg, saying, “Two words: Chris Fernandez. The executive chef extraordinaire makes his own sangria from scratch.” Jim Henning, realtor with Florida Executive Realty, boasts, “I thoroughly enjoy the sangria at Cheap in Tampa. Their handcrafted sangrias are a perfect blend of old-world tradition with a modern twist. And the atmosphere puts you in a perfect place to enjoy it!" Ryan Nece, a former Tampa Bay Buccaneers player and founder of the Ryan Nece Foundation explains, “I enjoy the sangria at Ceviche because it’s refreshing, not super sweet and always has a lot of fruit pieces inside. Their red sangria is a recipe worth purchasing.” Ellen Fiss, public relations manager for Tampa General Hospital, feels nostalgic when she sips on sangria. “I usually don’t drink at all, but on the two or three occasions a year that I do, I like the sangria at CDB’s Southside Italian Restaurant on West Shore. It reminds me of when I first met my husband more than 20 years ago, when we both worked in downtown Tampa and went on dates to CDB’s Uptown. It brings back good memories, and it’s a refreshing drink for a lightweight like me.” Lee Mezrah, president of Mezrah Financial, recommends the sangria at Michael’s 717 South. “His sangria is homemade with top-shelf wine. The premium wine with crushed fruit makes the difference.” Travis Claytor, the communications manager at Tampa Bay & Company, suggests the Columbia Restaurant. “Whether you are

80 www.duPontREGISTRY.com/TampaBay

at the original location in historic Ybor City or overlooking the channel at the Columbia Café at the Tampa Bay History Center, you’ll find one of the best glasses of white or red sangria in Tampa Bay. Mixed tableside, one sip of the Columbia Restaurant’s sangria, and you’ll soon be asking yourself, “Where did the pitcher go?” dR

The Mahaffey Experience

hen Big3 Entertainment assumed responsibility for managing The Mahaffey in September 2011, CEO Bill Edwards had an ambitious vision for the 47year-old theater in beautiful downtown St. Petersburg; create the ultimate entertainment experience that would establish the venue’s preeminence in the Tampa Bay area. Less than five months later, that far-reaching vision has become an indelible reality. The waterfront venue underwent a multimillion-dollar renovation that utilized local vendors and artisans to furnish the theater with state-of-the-art equipment and eye-popping décor, creating a seamless fusion of Las Vegas luxury and Tampa Bay beauty. With a meticulous mind for detail, furniture was custom-designed to accentuate the sparkling collage of new colors; indeed, even the lobby

82 www.duPontREGISTRY.com/TampaBay

seating reflects an artisans’ flair. As a vital part of downtown St. Petersburg’s cultural corridor, The Mahaffey also hosts a growing number of paintings and dimensional artwork. On the second level of the lobby, gallery space showcases Tampa-area artists. Acoustical panels in the main lobby pay homage to Salvador Dali’s melting clock from “The Disintegration of the Persistence of Memory,” a nod to the theater’s world-famous neighbor, The Dali Museum. Later in the year, the theater will host an exhibit on the 100th anniversary of the Titanic, which will include artifacts that have never before been exhibited in the region. Creating “The Mahaffey Experience” is an integral component to the venue’s enhanced customer service pillars. From the moment visitors arrive at the palatial

doors they feel uniquely welcomed, pampered and energized. For the most elevated guest experience, patrons can choose to become members of the M Foundation, a not-forprofit organization dedicated to leading arts education and performing arts for the community. Benefits include the opportunity to purchase tickets before the general public, VIP experiences, access to the exclusive VIP Lounge, and so much more. The Mahaffey’s lineup includes a diverse array of the world’s best entertainment. From The Florida Orchestra to family shows, Broadway to ballet, rock n’ roll to R&B, patrons can see it all in comfort and style at The Mahaffey. duPont REGISTRY™ Introduces Cars and Coffee at Innisbrook Resort By Nicole Lauber

O

n the third Saturday of every month, the duPont REGISTRY™

hosts Cars and Coffee at its headquarters in St. Petersburg from 7 a.m. to 9 a.m. But for the month of November, the leading monthly auto show in the Tampa Bay area relocated to Innisbrook Golf Resort and Spa in Palm Harbor for the first annual Weekend of Exotic Luxuries—a 2-day charity event composed of Cars and Coffee, a gala dinner with a silent auction, and a golf tournament, all to benefit the Ronald McDonald House Charities of Tampa Bay.

“We had been partnering with Innisbrook Resort for advertising for several months, and discussed the possibility of holding an event that would raise some funds for a local charity,” Tom duPont, publisher and chairman of duPont Publishing, Inc., said. “We thought of Ronald McDonald House and determined that it would be advantageous for everyone involved, and so it came to be.” The Concours d’Elegance-styled event attracted 850 people on the morning and early afternoon of Saturday, November 19 to see 230 cars of different years, makes and models parked on the 17th hole of the North Course. Additionally, 50 Corvettes were parked for show in an adjacent parking lot, and 200 cars

were on display at Edinburgh Hall. Many Tampa Bay area luxury automotive enterprises, including Ambassador Limousine, PJ’s Auto World Classics, Ferrari of Tampa Bay, Dimmitt Automotive Group, Reeves Import Motorcars, Lamborghini Sarasota, and Elder Automotive, displayed prized automobiles that are currently for sale. Of all the cars at the show, the biggest hit was the Mercedes-Benz SLS Roadster—the first one to hit U.S. soil that duPont Publishing, Inc. CEO Steve Chapman won at auction during the Boca Raton Concours d’Elegance. The No. 40 and No. 43 Richard Petty race cars, provided by Todd Werner, were popular among classic and race car enthusiasts, and the Fisker Karma, a hybrid luxury sports sedan brought by Elder Automotive, was a crowd-pleaser. But the car that stole the show was a 1955 Olds Starfire Red Convertible owned by Cars and Coffee regular Gale McFarland of Seminole. McFarland’s classic car won Best in Class for the 1950-1959 class, as well as Best in Show—not a bad day for McFarland and his Starfire, as it was the first time he entered this car into a show. “It [The Starfire] has been sitting in storage for 25 years,” McFarland said. “I’ve got 26 other cars, and we—my wife and I—only got around to restoring it four years ago. It was a ground-up restoration that we finished about a year ago, and it’s only gone 75 miles since then.” Awards were given to the top three cars from each class, which was based on what decade the car was made in, as well as to the top three Ferraris, Corvettes, Hondas, and Mustangs. The Publisher’s Choice was awarded to a 1992 Acura NSX, which had 148,000 miles on it. In addition to the car show, a gala dinner with a silent auction and a golf tournament was held. The golf tournament has been a charity event for the Ronald McDonald House for 23 years, but Cars and Coffee and the dinner were new to the weekend. “I was excited about adding a car component to the golf tournament we’ve been

doing so successfully for 23 years,” Janice Davis, the executive director and CEO of the Ronald McDonald House of Tampa Bay, said. “The expanded concept brought in new people passionate about cars and passionate about kids. It’s wonderful when you see how cars bring families together.” Because the event was such a success for all parties involved, duPont REGISTRY™, Innisbrook Golf Resort and Spa, and the Ronald McDonald House plan to partner every November for the Weekend of Exotic Luxuries. Mark your calendars now—we’ll see you at Innisbrook on November 17, 2012. dR

Tony Bennett

March 23

Inspired by the likes of Bing Crosby and Nat “King” Cole, Tony Bennett’s easy, natural style has captured the hearts of millions around the globe. Generation gaps are nonexistent when it comes to his music. Tony has charted hits in the past six decades. The New York Times attributes Tony’s longevity above all to “his ability to convey a sense of joy, of utter satisfaction, in what he is doing.”

dR PARTY

CLEARWATER BEACH UNCORKED AT THE HYATT REGENCY CLEARWATER BEACH RESORT & SPA The inaugural Clearwater Beach Uncorked—A Food & Wine Adventure, made its spectacular debut at the über seductive Urban Splash VIP Party poolside at the Hyatt Regency Clearwater Beach Resort & Spa. The combination of urban cool meets South Beach chic rocked the party with impromptu performances by NYC street musicians, break dancers, graffiti painted models, prickly pear or blackberry cabernet designer Bellini cocktails, sinfully delicious nibbles courtesy of SHOR, and the ultimate ‘wall of fame’ where guests signed in on a staged graffiti wall. This event was unlike anything the Bay area has ever seen.

Cadillac The success of Cadillac’s entry-level CTS sedan and its sporty -V performance package led to the development of the sleek twodoor CTS Coupe and cargo-ready CTS Sport Wagon and their respective -V counterparts. Like the sedan that started it all, the CTS-V Coupe features a larger grille to double the consumption of air and a raised hood to fit a supercharger to then feed that air into the engine. The resulting 556 hp and 551 lb-ft of torque from the 6.2-liter V8 equals a blazingly fast acceleration time of just 3.9 seconds. Power is available at every prod of the gas pedal, making the swapping of gears in the six-speed manual or optional six-speed automatic a mild delay during the acceleration rush. We have tested all three of the CTS-V

variants, and the coupe seems to handle the corners the best. This must be due in part to the coupe’s nearly one-inch wider rear track, lighter weight, and standard Magnetic Ride Control system, which includes electronic sensors at all four wheels to literally adjust its damping for the road conditions every millisecond. We would also consider the coupe to be the best-looking CTS. From the sharp rake of the rear window, modest fender flares over the back wheels, flush door handles, and a trunk-lid light that comes to a sharp peak, the CTS-V Coupe’s styling is both cutting edge and classy; it can be mesmerizing to the eyes. Part of the -V package includes aggressive front and rear bumper treatments including omi-

nous large dual outlets coming out of the center of the rear bumper. All wear 19-inch cast-aluminum wheels, available in either painted or polished finishes, and wrapped in Michelin Pilot Sport 2 performance tires. The interior is both luxurious and high tech. The best part is the optional Recaro performance seats, which did a fantastic job of making us comfortable and holding us tight. One particularly tasteful option is the Saffron color accents, which provides a contrasting color on the seats’ insert and stitching on the center console, seats, and door trim. The CTS-V Coupe also features microfiber on the steering wheel, seat inserts, and shifter. dR

When a Cousteau talks, everybody listens. By Cindy Cockburn Photography by Michael Dupre

Pierre-Yves Cousteau, youngest son of legendary Jacques-Yves Cousteau, was flown by Air France last month for his first St. Pete visit. "Tradewinds Beach Resort was an excellent place to stay and enjoy the view of the Gulf of Mexico," remarked Cousteau as he launched his nonprofit global platform for marine conservation in the U.S. "Divers and snorkelers are the only people in the world who witness the state of the oceans on a daily basis. Cousteau Divers is a worldwide community of ocean lovers united to become active protectors of marine life.” The whirlwind week included a Dali Museum press conference hosted by Director Hank Hine and  private tour with Yann Weymouth, HOK Architects. The host committee, Weymouth, Peter Betzer, St. Pete Downtown Partnership; Howard Rutherford, Pier Aquarium; and Maryann Ferenc, Mise en Place, and SONO Cafe, organized meetings for Cousteau with community leaders and VIPs, and hosted two receptions. Cousteau is looking to establish the first Cousteau Divers Center for North and South America in St. Pete. dR
