Welcome to the late Spring issue There were doubters out there who said it would never happen, but Spring has most definitely sprung. As the garden bursts into life, my treat to myself for mowing the lawn and pulling up a few weeds is to light the barbecue and enjoy the fruits of my labour with some al fresco dining. You’ll find lots of inspiration for outdoor cooking in the following pages (I love barbecuing our new Pork and Pecorino Patties), and much more besides.

Inspire me... Gorgonzola Pork Chops with a Chicory & Walnut Salad Serves 2 | Prep 20 mins | Cook 20 mins | Moderately Easy

25g butter 40g walnut pieces 2 pork chops ½ tsp sea salt 100g fine green beans 2 heads chicory, leaves separated ½ small red onion, finely sliced 1 tbsp olive oil 1 tsp balsamic vinegar 100g Gorgonzola, crumbled 100ml crème fraiche freshly ground black pepper • Heat 10g butter in a heavy based frying pan over a medium heat and toast the walnut pieces for 2 mins. Remove to a plate. • Season the pork chops with ¼ tsp sea salt and melt the remaining butter in the same pan. Brown the chops in the butter for 10-15 mins, turning halfway through to ensure they are thoroughly cooked. Remove to a warm plate. • Meanwhile prepare the salad by blanching the green beans in boiling water for 3-4 minutes then refresh under cold running water. Mix the beans with the toasted walnuts, chicory leaves, balsamic vinegar, olive oil and red onion. Season the salad with ½ tsp sea salt and toss together to ensure everything is mixed. • Add the crumbled Gorgonzola and crème fraiche to the buttery juices in the pan and heat until the cheese has melted, about 2-3 mins, stirring all the time. • Serve the chops alongside the salad with the Gorgonzola sauce spooned over the chop and add a little freshly ground pepper.

Inspire me... Pork & Pecorino Patties with a Rich Tomato Sauce Serves 4 | Prep 10 mins | Cook 30 mins | Easy

8 Pork & Pecorino Patties 3 tbsp olive oil 2 shallots, peeled and finely chopped 2 garlic cloves, chopped ½ red chilli, finely chopped 1 tbsp white wine 2 x 400g good quality chopped tomatoes 1 tbsp soft brown sugar 15g fresh basil leaves, torn 1 tbsp oregano leaves, chopped ½ tsp sea salt freshly ground black pepper • To make the tomato sauce, heat 2 tbsp olive oil in a saucepan and gently fry the shallots, garlic and chilli for 2-3 minutes until soft. • Pour in the white wine, then add the tinned tomatoes along with the sugar, basil, oregano and the seasoning. Let the sauce simmer for 5-10 minutes to reduce and thicken. • Quar ter each pattie and shape into balls, four balls per pattie. Heat the olive oil in a large frying pan over a medium heat and fry the meatballs until golden, approx. 5 mins. • Add the meatballs to the tomato sauce and continue to cook for 10 minutes. • Serve with some pasta, just stirring through the rich tomato sauce with the patties on top.

Dukeshill Bacon

Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too.

You can enjoy a perfectly glazed ham with no fuss or effort. Simply spread the glaze onto your ham and pop in the oven for ten to fifteen minutes. Serves 4 | Prep 15 mins | Cook 20 mins | Moderately Easy

8 slices white sandwich loaf 12 slices Dukeshill ham 80g Comte cheese, grated Béchamel sauce 40g butter 40g plain flour 660ml milk freshly grated nutmeg seasoning to taste • Pre-heat oven to 180’C/160’C fan • To make the Béchamel sauce melt the butter in a pan until just bubbling, then add the flour and stir and cook gently for 1 minute before adding the milk. • Whisk whilst it comes to the boil and thickens, approximately 5 minutes. Once it has thickened remove from the heat and add the nutmeg and seasoning to taste. Allow to cool and chill before using for the next stage. • Spread a layer of the chilled Béchamel sauce over one slice of bread, then place 2 slices of ham on top. Put another layer of Béchamel sauce on the ham slices and top with another slice of bread, then another slice of ham and lastly top with a generous layer of the Béchamel sauce. • Make up your remaining 3 rounds of sandwiches in the same way so you have 4 in total. • Place them on a baking tray and sprinkle the grated cheese over the tops. Bake in the pre-heated oven for 15 mins until gently golden brown on the top, cut into triangles and serve.

2 tbsp olive oil 1 onion, peeled and roughly sliced 3 garlic cloves, peeled and chopped 1 red pepper, de-seeded and chopped 250g paella rice ½ jar Lucy’s chorizo jam juice of ½ lemon 700ml fish or vegetable stock 250g/ 3 pieces cod fillet, skin removed • Heat the oil in a heavy based pan, add the onion and cook over a low heat for 2 minutes. • Add the garlic and red pepper and cook for a fur ther 5 minutes. • Stir in the paella rice and cook for 1 minute. • Add the chorizo jam and lemon juice and stir through. • Turn up the heat marginally to a low/medium heat and pour in half the stock into the pan making sure the stock is well mixed in so no grains of rice are left stuck to the bottom of the pan. Cook for 10 minutes periodically adding the rest of the stock until the rice is half cooked. • Place the cod fillets on the top of the paella and put a lid on (or a lid of foil) and cook for a fur ther 5-10 minutes until the cod is just cooked. • Sarah’s notes - this works equally well with any white fish fillet or chicken thigh fillets. You can add prawns and shelled mussels too. If using chicken thigh fillets add them at the start of the rice cooking to ensure they are cooked through.
