Dear Dukeshill Customer, As I write this, we have had some pretty amazing weather for early summer. The combination of sunny, dry days and all the restaurants being closed has meant only one thing chez Hollingsworth – a positively Mediterranean attitude to al fresco eating.

Whether it’s breakfasting on the terrace, a lunch of salads and cold meats, or the ubiquitous barbecue in the evening, I’m certainly enjoying some aspects of the ‘new normal’. Isle of Mull Cheddar This fabulously tasty, well rounded Scottish cheddar is made on the Isle of Mull by the Reade family. It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows.There is some variation throughout the year depending on the seasons but this adds to the interest. In winter the lack of organic grass is supplemented by hay and whisky grains, hence the cheddar appears a little whiter, and occasionally there is some blue veining.

Grandad’s Light Fruit Cake

The chocolate biscuit base is made using top quality Belgium chocolate, English butter, golden syrup and raisins covered with a thick layer of yet more Belgium chocolate. A whole different world to your average shop bought tiffin!

Traditional Scottish shortbread made by hand for us at the southern end of Loch Lomond. Using the finest possible ingredients this is the best and shortest shortbread by a country mile. Presented in our lovely keepsake tin it makes a perfect gift too.

Coriander & Lime Chicken 4 skin on chicken thighs (or 2 chicken legs)

2 tbsp coriander seeds

3 green chillies, deseeded and chopped finely

1 tsp ground cumin

½ tsp salt

1 ½ limes, juice and zest 150ml natural yoghurt seasoning to taste

Dry fry the coriander seeds over a medium to high heat for 1-2 minutes until fragrant. Crush them using a pestle and mortar, then pour them into a liquidiser with the coriander stalks, cumin, ginger, chillies, 2 tbsp olive oil, salt and juice of 1 lime. Whizz until smooth, then use to coat the chicken in an ovenproof dish. Cover and leave to marinade for a minimum one hour, but preferably overnight.

In the same liquidiser blend the coriander leaves, mint leaves, yoghurt and juice of ½ lime. Season to taste and sprinkle the zest of ½ lime over the top.

Either fire up the BBQ or pre heat the oven to 190°C/170°C fan/ gas mark 5.

Remove the dish with the marinated chicken from the fridge 30 minutes before cooking. Drizzle with 1 tbsp olive oil. Cook in the oven uncovered for 35 - 45 mins until cooked through.

If bbq’ing then either part cook in the oven for 20 mins and finish off on the BBQ for the last 20 mins or cook for the full 3545 mins on the BBQ until cooked through.

Serve the chicken with a fragrant pilau rice and the coriander and mint yoghurt alongside.
