Traditional Porchetta Sliced Pancetta

Wherever possible, we deliver by overnight courier but a few addresses take two days to reach. Should yours be one of these "two-day" addresses we'll let you know when you place your order. In either case we send your foods chilled in heavily insulated containers with ice packs when necessary.

Finally, the food you will receive is fresh, not frozen, so you can safely freeze it yourself and enjoy it when you are ready.

Pancetta - Sliced or Whole For our pancetta we use only the finest pork bellies, and cure them traditionally with sea salt, sugar and herbs to make sure this pancetta is every bit as good as the very best Italian versions. Our Pancetta is available very thinly sliced - perfect for wrapping or crisping - or in a piece so that you can dice it or cut into lardons as your recipe demands. Either way, it is full of natural flavour, not added water.

We simmer the Wiltshire cured ham hocks in stock made to my Mother’s recipe - onions, carrots, celery, black pepper and a dash of brandy - for more than 12 hours. While cooling, the natural release of gelatin from the hock bones sets the stock into delicious jelly.

The Shropshire Black Ham Story

Shropshire Black Ham - On The Bone

This most flavoursome of hams is the direct descendant of the historic Bradenham Ham. The Bradenham didn’t begin its life in Shropshire, or Wiltshire for that matter; it was invented by Lord Bradenham in 1781, and migrated from Bradenham Manor in Buckinghamshire in the 19th Century. The story is that the butler there fell out with his employer, moved to Wiltshire and took the recipe with him. He
