Black Pudding, Smoked Bacon & Caramelised Onion Stuffed Sirloin A classic centrepiece of British beef, generously filled with smoky bacon, black pudding and sweet apple chutney.

Ingredients For the Stuffing 250g DukesHill Black Pudding, crumbled 180g DukesHill Smoked Dry-Cured Streaky Bacon, diced 2 large onions, finely sliced 3 tbsp DukesHill Apple & Sultana Chutney 3 garlic cloves, finely chopped 1.5 tbsp DukesHill Ampersand Butter (for frying onions/garlic) 75–80g Panko breadcrumbs 1.5 tbsp fresh sage, chopped 1.5 tbsp fresh thyme leaves Salt & freshly ground black pepper, to taste

For the Joint 1 x2kg DukesHill Sirloin Roasting Joint, butterflied or roll-cut Salt & freshly ground black pepper 1–2 tbsp olive oil or DukesHill Ampersand Butter, for searing

Method Prepare The Sirloin

Lay the butterflied 2kg sirloin joint fat-side down and season the inside.

Spread the stuffing evenly, leaving a 2–3cm border. Roll tightly from the long side and tie firmly every 3–4cm.

Cook

Sear the joint in hot butter or oil until evenly browned. Roast at 180°C (160°C fan) / Gas 4, seam-side down, for: • 1 hr 20 mins – Medium • 1 hr 35 mins – Medium-well • 1 hr 50 mins – Well done (Add 10 minutes if the stuffing is chilled.)

Rest & Serve

Rest loosely covered for 25–30 minutes.

Slice thickly to reveal the rich spiral of stuffing and serve with beef gravy, goose-fat roast potatoes, seasonal vegetables and extra apple & sultana chutney.
