Holiday Cornbread Dressing from Foster’s Market Serves 10 to 12
½ pound (2 sticks) unsalted butter 1 onion, chopped 6 celery stalks, chopped, with ¼ cup leaves chopped and reserved 1 loaf challah, brioche, or other soft egg bread, cut into 1-inch cubes (about 12 cups) Salt and Pepper Skillet Cornbread, cut into 1-inch cubes (about 8 cups) 2 tablespoons chopped fresh sage 2 tablespoons chopped fresh marjoram 1 ½ teaspoons sea salt 1 teaspoon dried crumbled sage ½ teaspoon freshly ground black pepper 2 cups low-sodium chicken broth 4 large eggs Preheat the oven to 350°F. Melt the butter in a large, deep ovenproof skillet over medium heat. Add the onion and celery and cook, stirring occasionally, for about 5 minutes, until the onion is soft and golden. Remove from the heat, add the bread, cornbread, reserved celery leaves, fresh sage, marjoram, salt, dried sage, and pepper, and stir to mix. Add the broth and eggs and stir to combine and moisten the bread. The dressing can be mixed in the same skillet if it is large enough; if not, transfer to a large bowl to mix and return to the skillet to bake. Bake, uncovered, until golden brown on top, 45 minutes to 1 hour. If it begins to brown too quickly, cover with foil and continue to bake. Remove from the oven and serve warm.

If you’re heading to the mall for some holiday shopping, consider buying a few extra gifts! The Salvation Army provides children and families with Christmas gifts every year that they would not receive without donations from students and residents in the Durham community. The Angel Tree program pairs over 1,700 children ages 0 to 12 with individuals who donate gifts every year. You will be assigned to one child, learn his or her name, age, gender, clothing sizes and “wish gifts,” so you can shop specifically for that child. The Adopt-A-Family program is similar, but instead of adopting one child, you adopt an entire family to purchase gifts for. Price limit is $125. It is for this reason that each year, Meals on Wheels of Durham strives to provide each meal recipient with a holiday gift. They have been able to touch each client in this small but very meaningful way for the past three years only with the help of compassionate community members. They ask that you consider a donation of an inexpensive (under $20) item that can be given as a gift to a needy Durham senior. Christmas in the Carolinas during the Civil War
Bennett Place was the site of the negotiations and surrender that effectively ended the Civil War. But before hosting such a historic event, it was also a simple farmhouse inhabited by a typical middle class family. Bennett Place honors those joint legacies each year by hosting living historians who decorate the site with traditional Christmas cheer, cook traditional Christmas meals, and show what soldiers visiting home from the front would have done and thought. Theatre In The Park’s original musical comedy adaptation of A Christmas Carol, based on the book by Charles Dickens and adapted for the stage by Ira David Wood III, now in its 41st year, has been cited as “one of the most successful shows in North Carolina theatre history” and voted one of “the top 20 events in the Southeast” by the Southeast Tourism Society. In 2010 it was voted best in the Triangle by readers of Triangle Arts and Entertainment. A Christmas Carol has become a holiday tradition in the Southeast, and has also enjoyed critically acclaimed tours to England and France. A Christmas Carol was the first full scale theatrical event staged at DPAC during its opening week in December of 2008. New Year’s Day Hike
Each year on January 1st the Eno River Association sponsors a fun-filled afternoon of guided hikes, refreshments and merriment. This year there will be two hike options, a longer 4-5 mile hike as well as a shorter, approximately 2 mile route.
