Councillor’s Column The Platinum Jubilee weekend is upon us and it’s time to celebrate Her Majesty’s extraordinary achievement. Her life has been one of service in the truest sense of the word. To the United Kingdom, the Commonwealth and to all of us. Which is why I’m looking forward to joining you at many events across Test Valley this week. I think it’s also incumbent on us to mark this moment in our history with a longer-lasting reminder of Her Majesty’s incredible service. That’s why we’re commissioning two new pieces of public artwork for both Andover and Romsey. It’s my hope that generations to come will be able to enjoy these pieces of art and be reminded of this unique moment in British history. More details to be announced this month. In 2019, at the beginning of this Corporate Plan period, I announced I was on a mission – to improve the quality of life for everyone who lives in Test Valley. That mission centred around three themes. To regenerate our town centres, to give residents more opportunities to recycle and to enhance our green spaces and natural environment, whilst boosting biodiversity and countering climate change. Since then we have adopted masterplans for both Andover and Romsey, delivering the first phase in Andover with the creation of the new Riverside Park and cracking on with the feasibility work for the Romsey South of Town Centre. We’ve also been working flat out on waste and recycling. Although less than 6% of waste here in Test Valley goes to landfill, we can always do more. Particularly to improve our recycling rate. Thankfully, the Environment Act has proved the catalyst we need for change. We will imminently be announcing plans to offer residents the chance to recycle glass, thin plastics (pots, tubs 8

and trays) and Tetra Pak-style cartons in the same household recycling bin. As well as providing a weekly food waste service. After totting up the numbers, I’m pleased to confirm that Test Valley planted over 19k trees during the 2021/22 planting season almost doubling the target we set ourselves. For various reasons, we’ve had to cut down or coppice 500 trees during the same period, including 414 diseased Ash. So that’s 39 trees planted for each one we’ve had to remove. With the help of partners, it’s our intention to continue on this trajectory. From 2023, we will be embarking on a new Corporate Plan, which gets refreshed every four years. Please be assured that we won’t be throwing the baby out with the bathwaterand we’ll still be concentrating on the three missions as described above. However, there is an opportunity to shape new priorities – and I want you to have your say. Over the summer, councillors and council officers will also be at various community events up and down the borough to speak to residents. So please come and say hello. The Mention of Reinvention Daniel Radcliﬀe’s ability to embrace new projects across multiple mediums is no less admirable than his willingness to reference the past, and a certain wizard who just won’t go away. Change and reinvention for Daniel Radcliffe has never been in doubt. Of course, the 32-year-old, to some, will always be Harry Potter, no matter how much the genre changes or the boyish good looks lessen. “I learned a long time ago you can’t keep going back to the well,” he admits. “Harry Potter was great but, you know, I was a kid, and I’m deﬁnitely not that kid now. “Of course I will always be grateful, and I know to a certain generation they would love me to stay that character forever, but for my own sanity I had to reinvent as far away from that

as I could, and I feel I have done that. “And besides, what film does is immortalises people in that moment… so I will always be there, in one sense.” Since the final Potter film screened in 2011, Radcliffe has extended his range with a series of daring performances in horror films (The Woman in Black and Victor Frankenstein), dramas (Kill Your Darlings and The Gamechangers), and edgy comedies (Horns and Swiss Army Man). He’s also made a name for himself on stage in Equus (famously appearing naked), How to Succeed in Business Without Really Trying, and Broadway play Privacy. “I don’t have any strategy other than to choose projects that make me happy and satisfy me creatively. “It starts with the script, but I’m also anxious to work with actors and directors I admire, and who are going to help me grow as an individual and evolve in my profession.” For a while, it

seemed as though Radcliffe, who is in a long-term relationship with actress Erin Darke, was going to head the way of emotive, intellectual independent movies. After all, that would match the headspace he occupied as a kid growing up writing and poetry – two things he loves. “I think my love of words comes from having grown up surrounded by books, scripts, and plays. My father was an agent whose clients were writers and directors and there were always stacks of books lying around the house. “I didn’t read that much when I was a child but suddenly around the age of 14, I began to devour everything, especially books on history. I still read a lot although now it’s mainly nonﬁction. Reading and writing are great passions of mine and I think that has helped me in terms of choosing scripts. “Ultimately, whatever it is – TV, ﬁlm, stage – I know what makes me tick and I look forward to the next job, and making the best of that experience.”

Jennie Bond A portrait of the Queen, by revered royal correspondent, Jennie Bond. Jennie Bond worked as Royal Correspondent for the BBC throughout the Nineties, covering some of the happiest, most tragic and scandalous moments that have befallen the family in recent times. “At the heart of it, I am fan of royalty and a fan of the family unit,” she says. “The trials that the Royal Family have been through are really no different to our own, and that should reassure them as well as us. They are human beings, and fate doesn’t shine brighter on them, because the everyday gains and losses that are just part of being alive. “Ultimately, it is how you come back from the challenges that really matters – and the Queen has, over the past seven decades, truly shown herself to be the most resilient person possible.” Bond is certainly relieved our Head of State has styled and

positioned herself with such a brand of quiet authority. “You could arguably look at almost everyone around the Queen and pick out faults and failings,” she says. “We’ve seen so many in recent years, to the extent we don’t need to name the culprits or the dealings. “Yet when you shine that light on the Queen it’s really difﬁcult, at any point, to say, ‘you got that wrong’, or ‘this could have been done better’. “I think with Elizabeth we tend to take that for granted – we tend to just accept she is like that without contemplating what sort of royal landscape we would have with someone less capable at the helm.” As far as privacy goes, the

Queen values it, but respects the need to be visible and approachable. “Elizabeth is funny, charismatic, sharp as anything, but I think worn down at times by the sheer weight of what it is she has to do. It’s no easy task for someone in their nineties and no amount of wealth or privilege will compensate for what is an incredible commitment to her people,” says Bond. “I have had the honour of covering a lot of royal moments of great importance… moments in history I suppose – Princess Diana’s death, the Queen Mother’s death, the divorce of Charles and Diana. All those were very important moments I had to report on. But honestly, I think the jubilee celebrations and the pomp and pageantry is the most important. I know it signiﬁes a simple anniversary – just a date in the calendar – but more than that it’s a way of looking back over the continued efforts of someone so brave and inspiring, and is the perfect way to say ‘thank you’ to a very special lady.”

A Design for Life… The Kevin McCloud Column Designer, writer and television presenter, Kevin McCloud leapt into our consciousness with his vastly successful Grand Designs show on Channel 4. This month, the affable architectural business owner talks about the very ﬁrst and most basic element of any project, communication. I take it as a huge compliment when I see the Grand Designs format taken to foreign shores. In particular, our Grand Designs Abroad project, which is going back well over 15 years now, saw us working with ambitious homeowners in France, Italy and Spain in undertaking ventures to make their design dreams come true. What dawned on me is the fact that anything is possible when you are able to communicate a concept… clearly, concisely, properly. In reality, that’s no more difﬁcult to do in a foreign language than it is in English. After all, how often do we see home improvement shows here in the UK where the concept of what someone wants ends up a million miles from what they get?! It all comes down to interaction and being clear as far as what

we want and what we don’t want. I do believe in rural areas it’s a bit easier to harvest contacts and make a difference,

but wherever you are, city or countryside, the Loire Valley or London, ultimately what makes a difference is working on and solidifying personal relations. It’s about sitting down, being ﬁrm but polite, offering incentives and trying to get others investing in your project. Above all else, it’s about communicating. And that communication doesn’t end when you’ve had your house extension done; it should carry on over time. When we returned to France to catch up with some of our couples, it was great to see so

many of them fully integrated into their communities. Their contribution wasn’t just about adding to the local economy but learning the language and forming genuine friendships so that they could be really engaged with becoming part of that place. After all, a home is an entity not just in the context of what’s inside it, but what’s around it as well, and that’s always worth bearing in mind. People buy into people, and it’s amazing the extra lengths all of us will go to when we like, trust and believe in the people who come to us for help and support. So as I said at the start, communication is the ﬁrst step… and sometimes the biggest one you’ll make, as well, so get it right!

MOT Madness The three simple ﬁxes you can do at home to give your car its best chance of making it through the MOT, ﬁrst time. 1. TYRES Tyres are often the most neglected element of our automotive upkeep – but the difference between decent treads and uncared-for tyres could be a matter of life and death. One of the foremost indicators that your tyre is ready to be changed is when it loses its tread depth. Maintaining this is important because loss of depth reduces grip and traction on the roads, and eventually compromises safety while driving. Keeping a tab on the tread wear indicator, which is built into the tyre, is a good way to measure the tread depth. Also be wary of cracks appearing on the sidewall as the oils and chemicals in the rubber compound degrade. Over time, the rubber loses its tightness and splits begin to appear. At worst, this could result in a blowout, which is a

highly dangerous scenario. Finally check for lumps of rubber separated from the tyre. These generally occur when wheels bump kerbs. A small tear is driveable, but anything bigger, particularly when the gauze is visible underneath, means an immediate change is required. The good news for those requiring new tyres is that there are a range of tyre price comparison websites, including mobile tyre-ﬁtting services where your car needs to not even leave the driveway. 2. WIPERS AND JETS When you think about it, your wiper blades go through quite a bit. There’s rain, snow, mud, grit, not to mention full-on, head-on wind resistance, and a whole lot more besides. For basic maintenance, you should clean off your wiper blades every couple of months. Removing residual dirt will keep the rubber in better shape for longer, eliminating the need for regular replacement. If the wiper blade does need to be changed,

most automotive centres will do this for you and at no extra cost. Keep a check as well on blocked washer jets. These can be cleaned out by delving under the bonnet, releasing the supply pipe and washing through. If access is tricky, you may be able to move any organic matter stuck in the pipe by removing the jets and soaking them in a bowl of vinegar. 3. LIGHTS Where headlamps and brake lights are concerned, these are another easy check and easy ﬁx scenario, and will offer you perhaps the biggest saving of all. Bulbs can be purchased online for a fraction of the cost that might be charged at the MOT centre, and in most cases the light unit can be taken apart and the new lamp installed. In bigger vehicles you may ﬁnd the unit less accessible, although online tutorials are always available to guide amateur mechanics through the task!

The Queen’s Jubilee: Platinum Pomp The work that goes on behind the scenes to mark Jubilee celebrations. Soldiers, horses and musicians It all starts to come to fruition on the Thursday, as Trooping the Colour marks the Queen’s birthday celebrations. Over 1,400 parading soldiers, 200 horses and 400 musicians will come together in the traditional Parade. This is the first Jubilee celebration in which women will be included in the regiment, so additional preparations have been made to ensure the influx of first-time participants. RAF fly-past The traditional RAF fly-past completes the parade. The routine will have been practised countless times, though contrary to popular belief, this isn’t just a privilege reserved for the Queen. In the lead-up to the event, local communities have been invited to apply for their own fly-pasts. Jubilee beacons A fortnight before the Jubilee, 1,500 Platinum Jubilee beacons will have been distributed across the UK. This lighting

of beacons first took place in 1897 to mark Queen Victoria’s Diamond Jubilee and are a symbol of unity across towns, borders, countries and continents. St Paul’s Cathedral On Friday, June 3rd, attention switches to the Thanksgiving service at St Paul’s Cathedral. Public safety elements come to the fore here, with tens of thousands of well-wishers lining the streets around the Thames as the Queen and family members attend. The Derby A day of leisure follows on the Saturday as the Queen visits The Derby at Epsom Downs. The event itself is over 240 years old and has garnered a different winner every year, and is open only to three-year-old thoroughbred colts and fillies who have qualified for the race in the months preceding it. It remains the race that offers the biggest prize pot in the British racing – over £1.1million. 10,000 charitable tickets In the evening, Elizabeth returns to London for a party at Buckingham Palace. In

the months leading up to the event, which features music and drama celebrating some of the most signiﬁcant cultural moments from The Queen’s seven-decade, over 10,000 tickets have been made available to charitable organisations. This has been two years in the planning. Street celebrations Finally, on Sunday, June 5th, communities across the UK are invited play out their own Platinum Jubilee street celebrations. Named The Big Lunch and launched in 2009, communities have been planning for months how they wish to mark the special day, with up over 1,500 applications made. 200 silk scarfs At the same time, the Platinum Jubilee Pageant sees artistic performers, dancers, musicians, military personnel, key workers and volunteers tell the story of the Queen’s 70-year reign. It includes a ‘River of Hope’ section comprised of 200 silk ﬂags made by primary and secondary school children.

Property Fraud : Protect yourself with property alerts A fraudster can pretend to be anyone involved in a property transaction such as the owner, buyer, borrower, lender or conveyancer. Property fraud can be very attractive to fraudsters if they successfully persuade a buyer, their conveyancer or a lender into believing they are the true owner. They can then sell or mortgage the property to get cash from either the purchase monies or the mortgage advance. This often involves the impersonation of the registered owner and we highlight below who might be most at risk and what properties are seen as desirable targets. Owners at greater risk are: • unregistered owners • absent owners (eg. abroad, in hospital, in care homes) • landlords • beneficiaries of owners who have died • long-time owners with more equity in their property • sole owners Properties at most risk are: • high value properties • empty properties • properties without a mortgage • tenanted properties The Land Registry are encouraging people to set up a property alert in order to warn them if someone attempts to alter key details of their property online. • Scammers attempt to transfer your property into their name using false documents, or stolen identities, in some cases, even whilst you are living there. • The scammers then raise mortgages against, or sell, your property without you knowing. • Victims can find that they have to leave their home as there is nothing that can be done to get the property back.

• Victims are left with having to claim compensation from the Land Registry to replace their home. Whilst the Land Registry have been able to stop some cases where fraudulent documents have been submitted, not all cases are stopped, so it is important to help protect yourself against property theft. To protect yourself against the risk of property fraud, you should consider the following: • Register your property on the Land Registry if it is not already registered. • Sign up for the free Land Registry Property Alert service. You can get alerts for up to 10 properties, meaning you can help protect vulnerable family or friends as well as yourself. • Put a restriction on your title: this will stop the Land Registry registering any sale or mortgage on your property unless a conveyancer or solicitor certifies that the application was made by you. This restriction: ◊ Costs £40 if you live at the property. ◊ Is free where you do not live at the property but own it privately. ◊ Is free if a company owns the property. Protecting the nest generation The breeding season for birds has just begun – it roughly lasts from March until August – and it’s a crucial time of year for our feathered friends. If you think of a bird’s nest, you may picture a lofty eyrie in a tree or the side of a cliff or perhaps an intricate roost nestled within a hedge. But lots of birds lay their eggs in nests on the ground and for many reasons these require extra special protection. Many of our ground nesting birds are in worrying decline, including nightjar, woodlark, lapwing and woodcock. As well as habitat loss and climate change, one of the main threats these rare species face is from disturbance. Naturally, nesting on the ground means these birds and their eggs are incredibly vulnerable to predators. Yet, millennia of evolution have allowed them to evade such threats. One method is camouflage; for example, coastal ground nesting birds lay eggs that are patterned like pebbles among rocks on the shoreline. Other birds are extremely skilled at hiding their nests, like curlews and skylarks, which make hollows in long grasses. However, disturbance from humans and, more often, dogs is a key factor in the demise of ground nesting birds. Even the most well-behaved dog can seem like a big, scary predator to a ground nesting bird if wandering off path. Dogs can unwittingly trample eggs or scare adult birds off their nests, leaving chicks vulnerable to cold, starvation and predators. The best way responsible dog walkers can help ground nesting birds when

visiting nature reserves during breeding season is to keep dogs on a short lead. Other important things you can do to help include: • Sticking to the footpaths on all our nature reserves. This is especially important in forests, heathlands and coastal areas. • Respecting the signage at our nature reserves, alerting you to the presence of ground nesting birds. • If you spot signs of distress from birds (like loud alarm calling, flights backand-forth or even dive-bombing), back away and take an alternative route. • Bagging and binning dog poo. Poo can affect wildlife and alter the habitats of ground nesting birds so dispose of it properly. • Telling others about the need to be aware of ground nesting birds when visiting nature reserves. Hampshire & Isle of Wight Wildlife Trust’s nature reserves are havens for wildlife, including rare ground nesting birds. Please follow these guidelines in all nature reserves. Welcome to the June Stargazing Page. Highlights this month include a Planetary Parade and the hunt for noctilucent clouds. International Space Station

Planetary Parade

Late in June there is a rare opportunity for those of you with modest-sized telescopes to potentially see a ‘Planetary Parade’ (with the added bonus of the Moon and Pluto!), as around the 26th, with the help of sky maps freely available in magazines or the internet, it is possible to locate all well-known objects in the Solar System around 3.30am (see ﬁgure). Be mindful that dawn advances quickly at this time of year, so ensure you know the time of sunrise in your area and never look directly at the Sun with the naked eye or optical aids. For those of you without telescopes, Venus, Mars, Jupiter and Saturn will be visible in a line all month in our early morning skies.

Midsummer, or the Summer Solstice (from the Latin for ‘the sun stands still’) occurs on June 21st. For the northern hemisphere, it marks the day when the Sun reaches its highest point in the sky at noon (GMT). We experience this as the ‘longest day’ of the year (the longest amount of daylight and the shortest night). The early summer months are the best time to try and spot a rare and beautiful cloud-type: noctilucent clouds. If conditions are favourable, these blue-white illuminated clouds are visible thirty minutes after sunset for a couple of hours, in our northern skies. Although the exact cause of their formation is unknown, we know they are composed of tiny water ice crystals and form about 80km up in the atmosphere. Although June itself isn’t well-known for any major meteor showers, in 2014 the UN officially named June 30th as Asteroid Day. This day was chosen as it marks the anniversary of the Tunguska Event that took place in Siberia in 1908. Asteroid Day aims to raise awareness about asteroids, and if you want to find out more head to the official webpage at asteroidday.org.

Money on my mind... the Martin Lewis column He’s the UK’s leading money saving expert - a journalist and presenter who has kept millions of pounds in people’s pockets as well as lifting the lid on the threats and dangers we need to be aware of as consumers. In this month’s column, Martin Lewis looks at haggling, and discusses whether it’s a dying art into which we need to breathe new life. We have a real aversion to haggling in this country – in fact, I would say we are some of the world’s worst hagglers. We’ve lost the bravado and conﬁdence we once had to cut a deal, yet if you master haggling, and it is an artform, it’s fun and actually adds a layer of enjoyment to the process of buying and selling. Most people encounter haggling when it comes to their utilities and other service providers, and in simple terms, if you don’t haggle when it comes to renewing your broadband or TV package or mobile contract or car insurance or whatever it is, you are simply costing yourself money that could translate to a meal, or a deposit for a car, or a holiday. The ﬁrst part of haggling where utilities are concerned is to get on price comparison sites in order to get a benchmark of what is available elsewhere, because that’s your target. Usually these best offers will be

in the form of ‘new customer’ initiatives, though as an existing customer who has already paid into the pot, why the hell should you not be qualifying for the same deals. At the end of the day, a lot of haggling comes down to being honest, forceful and conﬁdent, but also charming and friendly. Explain your budget, explain the better deal being offered by another provider, or by your own provider to new customers, and make it clear you will leave unless something changes. Of course, many of us know

those best deals come when, as an existing customer, you get put through to disconnections – it’s the point at which your provider is really just one step away from losing you for good, and it is those customer service agents who have the ability to get you a much better price. Ultimately, it is your negotiation here that will count, but if you don’t get the deal you think you deserve, my advice is to walk away. If you can negotiate a new deal, don’t get caught on a long agreement, and do remember to phone back to renegotiate again when any promotional period ends. Mostly, be charming, friendly and forceful, and enjoy the process of haggling!

Get out! Get out! Get out! Yes, you – I’m telling you to get up, put your shoes on, open the door and immerse yourself in what a wonderful country and wonderful landscape this is. Even after my 70-plus years here, I am proud and passionate and loyal to the UK, and I could never live anywhere else; and while those emotions hold ﬁrm all year round, in my mind there is never a better time to soak up the majesty of nature than now, with the sun out, the days growing longer, and nature unequivocally at her most resplendent. When I suggest getting outdoors in this way – and I suggest it a lot! – on some occasions I get the answer

In reality, it doesn’t matter. Of course I want our gardens to be at their most beautiful as regularly as they can, but these spaces are as much about what they give us, as they are what we give them. So while our own lawns and beds and trellises are often a priority, in these early days of summer I would encourage you to take the opportunity to sample those of others… in the wild, at a country house, even at a neighbour’s. They say imitation is the sincerest form of ﬂattery, so get out there, get imitating, and get inspired. And by the way, take your kids… every time. Get them off their consoles, prise them away from social media – it’s really good for

them to see this whole other side of things. It’s funny, the three big things government are always ranting on about are law and order, health, and education. That’s fair enough. And yet, time outdoors, time gardening, gives us all of them. If you’re letting off steam, you’re less likely to use your anger in a place where it wouldn’t be suitable. If you’re out there, you’re learning about how things grow, so that’s the education element. And the health part is obvious fresh air, exercise, open spaces gardens, parks, woodland, moorland. I know it sounds terribly tribe, but I do think if some of these world leaders just went out and pottered about in their garden for an hour every Saturday letting off steam, the world just might be a better place! So, please… get out!

There couldn’t be a truer statement said of our town. And what a time for said statement to be made. After an unprecedented two year hiatus, barring a few exceptions, Romsey is finally ready to make up for lost time with a summer long schedule of festivals and events. You can expect food, live entertainment, outdoor activities, and much more. So, let us make haste and unpack the beloved headliners that are not to be missed! June: Kicking off the social calendar in spectacular fashion, as you will all be aware, is the biggest party of the century - The Queen’s Platinum Jubilee. To commemorate the historic milestone of the first British monarch to reign for 70 years, we will all be treated to a four-day bank holiday weekend (2nd-5th). But that’s not all. Street parties are quintessential to national celebrations in Britain, and Romsey will no doubt recreate imagery that hearkens back to the Queen’s Coronation as the Town Carnival committee have organised our very own “100s in the Hundred” street party (2nd). People are encouraged to bring their own decorated tables and picnics, while 38

This once in a lifetime occasion promises to endow the town with some much needed indomitable spirit as we start a new chapter post COVID. Following on from the Jubilee celebrations is The Legend’s Festival (25th), which will be stopping on its UK Tour at Broadlands. This concert will feature a lineup of pop and rock tribute acts, taking the likes of Abba, Robbie Williams, and the Beatles to name a few. Be prepared for lots of dancing and singing. July: On the 3rd we have the iconic Mayor’s Picnic in the Memorial Park. Highlights, amongst the multitude of family activities, charity stalls, and BBQ, includes the ever-popular Duck race. All set against music performed on the bandstand. Weather permitting, it’s reliably a nice day out to meet up in one of Romsey’s most scenic and sociable spots. Then on the 9th, comes arguably the most prolific headliner - Beggars Fair. Since 1993, this one-day festival of live music, dance and entertainment invariably rejuvenates the town with an awakening influx of life. With over

90 acts spread across the borough, you’ll feel an atmosphere of giddy joy no matter where you are (which absolutely has nothing to do with the fact many pubs and drinking gardens serve as venues). Hence why this charming occasion has a special place in Romsey’s heart. As if July wasn’t packed enough, Rio comes to Romsey for our very own Mardi Gras Carnival (11th-16th). Once again the Carnival Committee will be pulling out all the stops to bring the town an extra dimension of liveliness and colour. The procession will start from Fishlake Meadows to the town centre via Dutton and Station road. Though the star attraction of the day will be the Bed Race, which never fails to draw a cheering crowd. And as always, any money raised goes towards nonprofits and good causes. September: You heard it here first, I can confirm that Romsey Food Festival will return (4th). This flavoursome affair is a crowd pleasing culinary exploration, supported by local people and businesses, as the town centre and highstreet will be lined with stalls of various food. Mark your calendars, and be sure to bring an appetite with you.

To conclude the summer festivities is fittingly the oldest and biggest event of the year - The Romsey Show (10th). Dating back to 1835, the show has gone through many iterations until how it is today. With tourists and neighbours travelling far and wide to experience the best of Hampshire culture and trade. With arts and crafts and agricultural competitions and demonstrations. Plus lots of animals. And there we have it. As a town we sure do love to party. Any excuse to raise the bunting and set the tables; fill the glasses and lay out the food; set the stage and play some tunes, we take. Furthermore, take into consideration the longevity of the UK and all the milestones that pop up worthy of celebration - giving plenty of chances to reunite under joyous circumstances, which I think we can all agree has been long overdue. It’s an important part of what makes a community function. A chance to tap into that essence of connectivity and have fun. And of course, let’s show a hand to the committees and volunteers that plan and oversee these events for our enjoyment. Bravo.

Paul Hollywood’s Authentic Cornish Pasty Introduction A Cornish pasty is one of those things we almost always buy, yet in baking terms the concept is really very simple. After all, this was a homebaking staple for the tin miners of Cornwall, with its thick crust ready to be disposed of, so ensuring dirty hands wouldn’t contaminate the meat. Delicious, wholesome, and able to be added to vegetables or salad to form a main meal, the pasty really is one of my favourites.

Ingredients (serves 5) For the pastry • 450g plain flour • salt • 115g cold lard, diced • 75g cold unsalted butter, diced • About 90ml ice-cold water • 1 egg, lightly beaten, to glaze For the filling • 1 large onion • 120g swede • 1 large floury potato, such as King Edward or Maris Piper • 400g beef skirt • 50g butter • Salt and pepper to season

Method

1. To make the pastry, mix the ﬂour and salt in a large bowl, add the lard and butter and rub in with your ﬁngertips until the mixture resembles breadcrumbs. Stir in enough

water to make a fairly firm dough, then knead briefly until smooth. Shape into a ball, wrap in cling film and chill for at least 30 minutes. 2. Now move on to the filling, slicing the onion finely to start. Cut the swede and potato into small, thin strips; keep each separate. Cut the beef into small, thin pieces and divide into five portions. 3. Heat the oven to 200°C/Gas mark 6. Divide the pastry into five equal pieces. Roll each out on a lightly floured surface to a 3mm thickness and cut out a 24cm circle, using a plate as a guide. 4. Scatter a scant layer of swede on the pastry semicircle, leaving a 1cm border. Add a similar layer of potato, season lightly and top with

some onion. Repeat the swede and potato layers, seasoning as you go. Check the pasty will close, then add the beef. Add a final layer of onion, season and dot with butter. 5. Brush the pastry border with a little beaten egg, then close the lid of the pasty, making sure that the edges meet. Press together firmly and then crimp the edges together by pinching all the way round between your thumb and forefinger. 6. Fill and seal the remaining circles of pastry in the same way. Place the pasties on two baking trays and cut two small slits in the middle of each one. Brush the pastry with beaten egg. Bake for 20 minutes, then lower the oven setting to 160°C/Gas mark 3 and bake for 30 minutes longer.
