nc Support Our Troops Ayden, NC NC SUPPORT OUR TROOPS located in Ayden, North Carolina is a nonprofit organization formed with the mission to support troops and their family members by providing care and comfort items and expressions of appreciation for their service and sacrifices. Packing care packages for our deployed troops is a way to show your support and appreciation for the service and sacrifices by our military members. We also provide support for troops at home, their families and veterans. The end of last year our team of volunteers had to work from home because of not having a building to meet in and work from. We met these challenges while supporting troops through deployments and homeland activations. We continued with support from caring volunteers and donors who want our troops to know that America cares about and appreciates their service. We are now in our new location and we are looking forward to 2024. Below are some suggestions on how you can help...

Along For The Ride I had never ridden on a motorcycle until six years ago. That all changed through an earth-shattering event: the sudden, totally unexpected death of my oldest child, William, at the age of 32. It was a devastating moment in my life — a pivotal moment where I had to choose which way I would walk through my grief: my way or God’s way. I chose God’s way. My husband Sherman, is a retired navy mechanic. In the months after William died, Sherman was tinkering with a friend’s old Yamaha Virago. He finally got it running and told the owner it was fixed. However, the owner announced that he could no longer ride due to a medical issue. He gave the Virago to Sherman. My husband had been an avid rider in his 20’s. However, he had not ridden or owned a bike in the over 25 years that we had been married. He applied for and obtained his provisional motorcycle license and began riding again. I was thrilled for him — and relieved for me, because a provisional license meant no passengers and no passengers meant I didn’t have to get behind him on that metal monster. Win-win. In our area at the time, there was an organization called Trinity’s Angels. This group had begun an annual Never Forgotten Bike Rally to help parents celebrate their children who had run ahead of them to heaven. That year’s rally was just a few months away when my husband obtained his provisional license. I encouraged him to go on the ride. The organization invited me to speak at the rally, so this was a way for both of us to honor William’s memory. And then, God dropped His plan right down in the middle of my plan: Two months before the rally, my husband obtained his full motorcycle license.

God removed the only obstacle barring me from riding with my husband. Once again, God was asking me to choose: my way or His way. I chose His way, but I admit it was not a quick nor an easy surrender on my part. I doubt there has ever been a more unlikely candidate for “biker chick” than I am, and at that rally, we surely stuck out. By the day of the event, I had only been on the bike for a few short rides — just me riding behind my husband. We had never ridden in a group of over a hundred bikes in staggered formation. We had never ridden with a group so large that its sound announced its presence long before the group ever arrived. My husband asked that we be allowed to ride at the back of the pack because of my inexperience. It was actually a good place to be, because we were able to see the impressive sight of all the bikes ahead of us. The ride (with periodic stops) lasted about two hours. All that time on the bike gave me the opportunity to reflect on what I had learned in the half dozen or so rides I had shared with my husband up to that point. I realized there were some spiritual parallels to my bike lessons. One of the first things I had to learn was how to ride with my husband and not against him. I had to learn that my role as passenger was to follow the lead of the biker. If my husband leaned to the right, I needed to lean to the right. If he leaned left, I needed to lean left. If I pulled against my husband, I would make the journey more difficult than it had to be. I just needed to trust him and follow his lead. On the journey of this life, God does give us a choice. He allows us to choose our destination by what we believe. When we admit we’re not perfect (Romans 3:23) and believe in the One that is perfect (Romans 10:9), then God gives us a new destination: eternity with Him in Heaven. If we don’t make the choice to spend

Photos: Leslie Harder eternity with God, then we are making the choice NOT to spend it with him. And for all the jokes that are made about eternity in hell, there isn’t a single thing funny about it. It’s serious stuff, and if you ride a bike, your destination may be closer than you think. Don’t wait. Choose your destination today. Your life’s destination is your choice, but the ride to that destination is in the hands of God. Sometimes He takes you places you don’t want to go. Deliberately pulling against God will not make your journey any easier. Trying to “drive” your life from your position as passenger will exhaust you, frustrate you, and delay many of the blessings God wants to bestow on you. He’s just waiting for you to trust Him, surrender to His leading and realize that you are ultimately not in charge: you are along for the ride. We can make our plans, but the Lord determines our steps. Proverbs 16:9 NLT For everyone has sinned; we all fall short of God’s glorious standard. Blue Knights NC Chapter 2 RALEIGH, NC

The Blue Knights NC chapter 2 is more than a Law Enforcement motorcycle club they are a family and always welcome new members into their family. I, Samantha Raybon, came into the group as a guest in some of their meetings, after regularly going to their meetings and enjoying what they do they treat me like I am a member of the club. I am an 18 year old female who has just gotten my own motorcycle along with my license. When I posted on Facebook that I was ready for my first group ride a couple members of the Blue Knights showed up to show their support and make sure I stayed safe. They gave me great tips and showed so much love and compassion for me as a very new rider. I am so grateful for them and this experience because this gave me the courage to try harder and get better at riding and now I never miss out on a chance to ride. I started writing for the Blue Knight NC chapter 2 because they were looking for ways to spread what they do out to others and gain new members, but truthfully I write for the Blue Knight because they truly are a wonderful group to be around and are always willing to help wherever they can whether it is donating to a charity or some law enforcement family’s in need, to providing escorts. The president of The Blue Knights NC Chapter 2 is Vince Doxbeck, he does an amazing job providing leadership to the Wake County chapter. Vince has been a part of the Blue Knights for 17 years! His favorite part about being a Blue Knight is the fun, fellowship, riding and comradery. He became president in January of 2021 and has enjoyed that the most. Vince loves having the chance to be in a leadership position where he can get to serve. He loves coordinating all the monthly events and seeking out ways to be proactive for both the membership and community and expresses that it has been a wonderful experience. Vince joined the Blue Knights because he wanted to belong to a group of motorcyclists who shared a common bond. Not just a passion for motorcycles and riding, but also who would understand what he did professionally. Law enforcement is a unique profession and having a bond with other Law Enforcement professionals he says means a lot. Vince liked what the Blue knights stood for as well as the loyalty, brotherhood, friendship, and being a positive example to the community. When asked what Vince believes about the Blue Knights he goes on to say, This organization is very unique in and of itself. The potential in each chapter is endless, regarding events, comradery, riding, friendships, and especially as a tool to reach out to other LEO’s who are in need of fellowship and a way to deal with everyday stresses. There is also endless possibilities on being active in and serving our local communities. Because this club is worldwide, you can travel to a huge number of places and find fellow Blue Knights anywhere who are willing to meet up, assist or even just share a meal together. Mike Lewis is the Vice President of the Wake County chapter but also the Stat Rep. Mike has been a Blue Knight for about 7 years, his favorite part of being a Blue Knight is the fulfillment of gratitude seeing what they do on the faces of those who they help.
Mike joined the Blue Knights to stay within the Law Enforcement community brotherhood and because they ride motorcycles, which is a bonus. He feels it is a great organization that gives back to the communities in which they live. Mike also mentions that the Blue Knights is a motorcycle club that’s 100% Law Enforcement membership. The Blue Knights NC chapter 2 have a supporter’s page on Facebook titled “Blue Knights Wake County Supporters” I encourage everyone to go follow this page so you can see for yourself what all this club does for their community.

Motor Maids Polar Bear Ride FREDERICKSBURG, VA Story & photos: Catherine Hartman Although we may have been few in number for our Polar Bear Ride here in Fredericksburg, Va. Nancy Polend, Debbie McGhee and Lu Hartman ventured out on our annual New Years Day Polar Bear Ride. It was a cold Polar Bear Ride this first day of 2024. We met at the Park Lane restaurant in Fredericksburg, Virginia. We took our polar bears for a ride as we always do on this first day of each year. The skies were sketchy and we were undecided whether it was going to snow or rain so we dressed for both. Plus, it was cold! We had a nice time chatting about our upcoming ride schedule for the 2024 year and catching up with each other. When we finished and headed outside to our bikes, it decided to snow a little. It was pretty weird and fun, all at the same time, seeing the snow and us being on our bikes. The forecast was calling for rain later on in the afternoon and it did hold off until we got home. Except for Nancy, she ran into a little snow on her way home but she made it home safely. What a fun time! Since we are fairly spread out in our district we met in Fredericksburg and another group met in Harrisonburg. Now we wait for warmer riding weather!
BROADWAY, VA story: Patti Viola Every New Year’s Day marks the beginning of a new riding season for the Motor Maids and this year was no exception. We always gather up our white polar bears and load them on our motorcycles to ride and have lunch with fellow Motor Maids members. This year our VA/WV district met in Broadway,VA at the Gobbler Grille on Main Street. The Motor Maids in attendance were Glennadine Gouldman, Linda Meeks, Shirley Thacker, Mickie Sienko, Patti Viola and Jim Viola. As always we enjoyed the camaraderie and warmth of hearing about each others Christmas holiday and always talking about what wonderful rides we have planned for the new year. This is a special group of ladies that over the years have become dear friends and these quick “get togethers” feel like family.

Squatch Hunt Rules ●

The most important rule on this list is “Do not put yourself into an unsafe situation to score points.” Any number of environmental conditions & traffic situations can create an unsafe environment on any given day. Only you can recognize and judge whether or not the conditions are safe for your situation and riding/driving abilities. When in doubt send a text with a picture of the condition and a brief explanation and we will work with you within reason. STAY SAFE OUT THERE !!!!! At 9:00am EST on April 13th an email will be sent out to all registered Squatch Hunt participants. The email will include a link to the Overall Map. For the sake of convenience and simplicity, links to the maps created and organized by the set groups will also be included in the email. This email will also include a list of the points. Any participant registering after April 13 th, will receive their maps & info immediately. To receive credit for a point, a picture needs to be texted to (276) 254-5334. The following things must be present in the picture: The Squatch Hunt participant, Your vehicle, Your Rider Scoring Number Sheet, and the location itself. There are a few locations on the hunt that will be exceptions to this rule as they are located either inside, or just inside an area that you can't bring the vehicle. In those cases, the vehicle won't have to be in those specific pictures. At a minimum of every Saturday the scoreboard will be updated on the Squatch Hunt FB Page by the event administrators. If you are registered in the Motorcycle Division, then you must go to the points on a motorcycle. If you are registered in the Jeep Division, then you must go to the points in a Jeep. If registered in the Any Vehicle Division, then you can go to the points in any vehicle you choose. In the event of a mechanical breakdown or other situation that prevents a Motorcycle or Jeep participant from continuing in that specific vehicle type, that participant will be moved into the Any Vehicle Division so that they can continue to accrue points. There are bonus points for completing sets. These sets are noted on the map and on the set lists. The only sets not on the map are the more general scavenger hunt style sets that are open to being completed in a wide variety of locations. If you are stuck on the trivia style bonus mystery points, feel free to text and ask for a hint. A properly worded Google search will typically put you on the right route though ;) Have fun, be respectful and courteous to one another as well as other motorists. Scoring starts at 9:00am EST on April 13 th & ends at Noon EST on September 28 th. Prizes will be awarded at VetFest SWVA on September 28 th after the closing of scoring and final point calculations. VetFest SWVA will be held at the Lebanon Town Park (by Parks & Rec Building) in Lebanon, VA on September 28th. You can always text asking for a hint. I can't promise an immediate answer, but will answer as soon as possible.

By: Bob Seymour It’s almost spring and that means bikers like myself who are in the northern states and those in Canada are starting to chomp at the bit for the weather to break so we can get back in the saddle and lay down some miles again. I injured my neck and shoulder a year ago so I don’t know if I will be able to do much riding this year or not but I’m gonna do as much as I can and I hope it’s a lot more than I was able to do last year. I know there are a lot of older riders like myself in our late 60’s, and older, who have scooters in our blood that are facing the reality that our riding days are dwindling and we’ll have to stop ignoring the low fuel light soon and that’s a difficult reality for us to grasp…. I turned 69 in January and I’ve been riding for 58+ years and I admit that I’m getting tired, sore in places I didn’t even know I had and I’m coming up on the last exit of a lifelong love affair with scooters and road trips with no real destinations. Getting older has me reminiscing about and thanking God for the hundreds of thousands of miles I’ve been able to log in the saddle and the countless number of people I’ve been blessed to meet and develop relationships with. There have been a few times that I wasn’t very thankful for some of the events that happened on a ride but time has passed and with it came a change of perspective on those things and with the change of perspectives I’ve gained wisdom. I’ve seen a lot of change take place in the biker world some of which has been pretty good but some…not so much and it saddens me to think about. There have been remarkable advances in technology that have produced some of the most powerful, fastest and most comfortable scooters imaginable but those advances in technology and comfort are not what being a biker is about. Don’t get me wrong, I “USED”

to bust butt on guys with windshields and electric starters but not anymore….I don’t know if the advances in technology and comfort is the reason for the changes I see happening, not just in society as a whole but in the scooter community as well but whatever is behind the change isn’t good… Lately while reminiscing about the love of scooters that I have I find myself thinking about how my passion for scooters and the biker lifestyle bagan. I was young and inexperienced and I did some (a lot of) pretty stupid stuff that should have gotten me beat beyond recognition if not killed but a couple of old school brothers saw the potential in me and took me “under their wings”. Taking me under their wings didn’t mean they didn’t slap me up side the head a couple, well, more like a few times but they didn’t beat the snot outta me even though I deserved it. Instead of kicking my butt and running me off those two brothers, knowingly or not, took me on as a project to pass on the old school code they lived by…. It was those older brothers who saw something in me that birthed the old school ways in me and looking back I can see how God has used the things I learned from them in my walk with Him. They taught me what loyalty meant and what honor, respect and integrity meant and that it mattered not what you ride but onl y that you do. There was no discrimination against anyone because of their skin color or their religion, all that mattered in their eyes was that you lived by the unwritten code and traditions of scooter life and that you did your best to pass those traditions on to the next generation of riders….

onicles I have a unique ministry calling and a personal background that has given me the opportunity to minister widely in almost every sect of society and in some of the subcultures and I can plainly see that there are many parallels woven throughout all of them. Because I have a background in prophetic ministry dealing with spiritual warfare I tend to look at things with a spiritual perspective. I always look for a principle or a pattern of things that reveal the root of what I see or hear because I take Paul’s letter to the church in Ephesus literally….Once I can identify what I believe is happening I try to help correct the situation on the spiritual level by praying but prayer is not always enough. What’s happening today is a spiritual assault on everything that previously united us and it must be addressed first in the realm of the Spirit but then we have got to take action…..
If I could give counsel to my fellow senior riders, men and women alike, it would be to honor and respect our heritage by looking for opportunities to pass on the bikers code of life and the time honored traditions to a young rider. If I could give counsel to my younger brothers and sisters who have a passion for scooters it would be to take every opportunity you have to glean the knowledge and wisdom that the older generation has acquired from life experiences. If you younger riders will take the time to find an old school rider you’ll discover that “Old Guys Rule”. I’ve met a lot of older riders who are great mentors and I’ve met a lot of young riders that give me hope for the future of our brother/sisterhood but there’s plenty of room for many more of both. If you, like me, have a love for the freedom of the open road, regardless of your age or gender, I hope you will join me and tens of thousands of old school riders who want to see our lifestyle carry on for generations and will give of your time and life experiences to inexperienced younger riders……. .

My HD trike has accumulated a couple of days at 49,000 miles on her, also on her are new treads, oil, spark, battery. I also just added last month 6 new speakers to release sound from 2 power amps that will push my Jesus Jams in the wind to be carried back behind me. One song that will be pumped out that gets me pumped is a song titled, ”Bad day for the Devil” by “Livestock band“. Check it out as you throttle off the driveway to asphalt.

The 2024 New Year’s Day ride for NC SCRC is in the books! We had about 80 members of Southern Cruisers Riding Club (www.scrcnational.com) and a few guests, which represents about one-third of our total NC membership. I think that’s an awesome turnout for a single-day Monday event in the winter! From The Mi That’s pretty much started my love for motorcycles and for the lifestyle. Then what sealed the deal was I didn’t really know where I fitted in, in this world. So as a young man, I idolized my Dad. He was a biker and he enjoyed the same things that I was just begining to enjoy. I felt like a closeness to his spirit when I was riding. I felt like me and him were riding together. It was a like a life line to him. So riding was just different for me. I’d ride anywhere and just be gone from sun up to sun down. I loved it.
I have something to say. The truth of being a biker from a family man’s perspective. I may piss off a few but the truth is the truth and if it hurts your feelings...I’m just dumping my bucket and since I have this little slot in this fine magazine. I’m going to dump my bucket right here. I’m not arrogant enough to act like some know it all. I only speak what I observe. I love this life. This choice I made. From the very first time I fired up my first bike I was in love. I built my first bike. Couldn’t afford motorcycle payments, not back then. I got a Honda and worked on it every night and the weekends. The excitement ran through my body like a lighting bolt. I added a bit of either and a twist of the throttle. The carbs choked and popped and next thing I knew that motor had came alive once more. The bike was old and definitely not any style I would dreamed about having but it was two wheels.

I just wanted to point out that to me it was a connection. I want you to see where I started this life. So you can understand where I’m coming from and how deep rooted to this life I am. I started at 17 and currently still learning this life at 47 years old. I got some advice to give but before I go giving you anything. I wanted you to know some background. Because what I’m going to say, is super important things to think about when you join a motorcycle club. Not just you but if you are a family man, as well. I wanted to join a MC but at first I wanted to start my own. I was fortunate enough to meet Duece before I started down that rabbit hole. I was nowhere ready for such a commitment. Deuce introduced me to my club. It was perfect. I wasn’t looking a 1% club, because of my life choices. So being in the club that understood family came first worked well for me. Family is first, for me, my children need a Daddy. My wife wants her husband. Family is first. So, the 1st of my advice...always check with the people you’ll impact. Riding isn’t all fun and games. Its life or death. It’s a commitment to a brotherhood. It’s like being born again but this time you choose your family. God gave you your first one. You choose this one. So you must respect it like your very own. If you got any back bone or any worth as a man of his word. So ask yourself, Can you demonstrate loyalty to your chosen family?

You need to check your soul, brother. Because it takes it. If you are single. You made a decision just for yourself. Nobody in the world to answer to. You have a clear avenue to take. Your world in motorcycles is an open door. If you are in a serious relationship this is where I advise again... So this is for the woman or whatever you freaks are into. You must know the commitment your man is taking. The club depends on him, he depends on you. It’s how it all works smoothly. You don’t have to love the club, but you do love your man...right?? If there’s static between you and him especially if it’s related to the club it’s going to cause issues. You vent to him and you start not wanting to hang with the club because there was something you might not have agreed with. That’s going to weigh in on him. Now he doesn’t want to ripple the water at home but he’s still got a commitment to the club. Now he’s in a spot he doesn’t want to be in. Like it’s some sort of final Jeopardy.
It all goes back to communication and understanding. All families have problems. But what makes a family strong is the struggles. It’s the over coming of struggles. Sure, nobody wants them, but they do land at your feet. You must learn to communicate, to understand, and really listen. So you must be ready for this commitment. Willing to forgive or apologize if need be. But if you don’t want drama don’t start it, linger in it, hold on to it, or give food to it. Kill drama just by communicating to him, he’ll communicate to the brotherhood. The brotherhood comes together and trys to help keep things drama free so life can move on. Advice to the man who decides he wants be in this brotherhood. You must understand. Respect is the life blood in the MC world.

Don’t ever get on another man’s bike. It doesn’t matter if the woods is on fire around it. Of course, get it away from the fire, but don’t slap your ass on his leather because your lesson that day may stick with you forever... Always take a brothers shot. It just might be his last, or even yours. I’d like to know before my brother left this world. We had that one last drink. Drama free is the life to be. If you start dating a yapping bitch. Someone who you just know can’t wait to crank that jaw to full throttle and loves drama. Best be ready. This kinda of person can seriously impact your future in a club. First it starts, they don’t like so and so. Now she’s got someone else backing her up. Next thing you know, you’ve got a drama filled chicken pen and they are not going to like it when the club puts an end to it..You will catch the heat from the Club and you will catch the heat at home. Drama drama drama...if that’s what you’re into. That’s good for you I guess, but don’t expect a long future in a club. Never disrespect your cutt. Don’t treat it like a sweater from Walmart. A brother don’t want to see a cutt being mistreated especially if that said brother had to run naked in zero degree temperatures with cold beer poured over his head, to get his... Respect your club, respect your cutt, shows you’ve got respect for yourself. It shows the brothers, you’ve got respect for them. It matters bro... it matters.
I just wanted to add these notes or words of advice. People sometimes perceive a motorcycle club with this Sons of Anarchy bull shit in their mind. Joining a Club there are some things to think about. You’ve got to treat it like a Family. Don’t believe the fairy tale either. This is real life and not everyone joins a club for the same reasons. Some need an ego boost and trust me, there is so much ego in the MC world that sometimes I feel like a conservative in a building full of liberals. The bigger the ego, the more fragile it becomes. Think of it like this... imagine being a Trump supporter and going to a liberal, LGBQ+ convention. You say one word that seems even close to being disrespectful. The cry babies will want your head on a stick before you can leave the place. Ego is okay but too much of it and somehow balls will be replaced with vaginas. It’s crazy how little can be taken as disrespectful. I remember asking an adult male, a man, if he works in Garner because I see a truck just like his on my way back and forth to work. A simple question turned into a huge sign of disrespect. I liked the truck. So that’s how I noticed it, but WOW! I might as well had said something derogatory about his dog or something. Literally had two club presidents having to meet in conversation because how fragile an ego was, basically. That’s why I’m saying. You need to really think about what you are getting in to. People say bikers are just a bunch of bad ass people. It’s not true. Sure, there’s some potential hazardous people and I’m sure if you mix those individuals with alcohol or some party favors you might stumble it to a problem, but most are just regular folks enjoying the life like we all do. My last bit of advice. Take care of your motorcycle. Learn everything you can about it. The year, the motor size, the oil type. The belts, the filters. Inspect your brakes, check things out on your bike yourself. Not just take it to a mechanic and expect them to see everything wrong with it.

You ride this bike, you should know what to listen for. There’s enough morons on the road to be aware of without your bike falling apart on you. Also don’t assume some cage dweller to be watching out for you. Bikers die nearly every day, and a lot of the reason is because a cage dweller is on their damn phone not paying attention to the road. You will become a cross along some road side if you think people are looking out for you. I don’t want to be all gloom and doom about this lifestyle. Even though it may sound like it. The pros and cons really depend on you and your commitment. If you are a stand up individual and love to ride and enjoy the camaraderie of people enjoying the same thing. When you’ve earned your patch, theres no words to explain how it feels. I call it being born again. The brotherhood can be rewarding. Trust me, when you put on that cutt, doors are opening. You automatically feel it. As all things go.
It’s the man inside that cutt that really matters. Trust me the brotherhood is always watching. If you want to earn respect and be a righteous brother, keep your mouth shut, and be alert. Be a stand up individual. Stay loyal and show up. Extend your hand to help a brother out or be an open ear. Also have fun, because that’s why we do it. To have fun. This life already sucks!!! If you are having fun, the bro next to ya wants to have fun too. Life is too fu*king short and being a biker seems to add just a little more danger and thrill, but fu*k, who wants to be on their deathbed and sharing how boring their life was? I want to be in mine and sharing with the world of what a thrill it was to fire up a thunder cloud and roar with my brothers along the country side. That to me is a life lived brother.

Adventure Riding & Harley Riding I’m from western North Carolina. My adventure bike is currently a 2014 Suzuki V-Strom 650. I also have a Harley-Davidson Street Glide Special. I have only been adventure riding about 1 year. Getting off pavement has been a real struggle but I’ve finally started to truly love it! We ride here in the Pisgah National Forest, Great Smoky Mountain National Forest and recently a good portion of the SCAR in South Carolina. I have ridden the Harley in over 30 different states. began as homemade Christmas gifts for family and friends during the 1980’s. Over the years we (Cheryl & Steve) refined our recipe and were eventually prodded by family and friends into starting a business. That was 1990. It only took us another 6 years to actually get our business off the ground (two new careers and 3 children later). Our children have grown up in the business (though, sometimes less enthusiastically than other times) and have been able to learn everything from cooking and maintenance to book-keeping, marketing and tax law. And always, working with people! Our family and community have always been priorities as our business continues to grow. The name “Old Mule” came out of an appreciation for the working mules of the past. Our parents and grandparents told stories of the mules with which they farmed for many years. We were looking for a good name that tied to our farming background and the farm mules that were once so common (Cheryl’s father wanted to name her after his favorite childhood mule, but her mother forbid it….but that’s another story…In keeping with that era, we package Old Mule Sauce in a style reminiscent of the old time general store. Today, we continue to cook Old Mule ourselves on our family farm in the Blue Ridge Mountains of Western North Carolina. It seems few companies actually MAKE what they sell or put their label on. Since our beginning, this “made by our family” principle has been important to us (though not always easy). Because of this, we take great pride in our products! We do not try to be “all things to all people” or set a “new North American record for sales growth”. Our goal is simply to provide our customers with a unique, high-quality sauce that will add something special to their gatherings and meals with friends and family..

Cooking with The Kitchen Goat *Pork & Black Bean Chili* *Ingredients:* 2 tablespoons vegetable oil 2 slices of bacon, chopped 2 pounds trimmed pork shoulder, cut into 1/3-inch dice Kosher salt and freshly ground pepper 2 poblano chiles–stemmed, seeded and cut into 1/3-inch dice 1 large onion, cut into 1/3-inch dice 4 chipotle chiles in adobo sauce, minced (1/4 cup) 8 garlic cloves, minced 1/3 cup ancho chile powder 3 tablespoons cumin 1 tablespoon dried oregano 1/4 cup minced cilantro, plus more for serving (1) 28-ounce can whole tomatoes 1 pound dried black beans, soaked overnight and drained 5 cups chicken stock or low-sodium broth 3 cups dark beer, such as Samuel Smith Nut Brown Ale 3 tablespoons corn flour 3 tablespoons water To Taste...Old Mule Basil Bash
The “Kitchen Goat” Jason Knapp Once a history teacher, he now raises goats in Nash County, NC, but he’s always had a passion for cooking. At the beginning of the COVID pandemic, he started posting cooking videos on YouTube. “I called it ‘Cooking a la Quarantine’ and once everything lifted up someone said, ‘Why don’t you call it ‘Kitchen Goat’ and I said, ‘That’s so stupid. *Instructions:* In a large enameled, cast-iron casserole, heat the oil until shimmering. Add the bacon and cook over moderate heat until the fat has rendered. Using a slotted spoon, transfer the bacon to a plate. Season the pork with Old Mule Basil Bash. Add the pork to the casserole and cook over moderately high heat, stirring occasionally, until browned (about 7 minutes). Add the poblanos, onion, chipotles and garlic to the casserole and cook over moderate heat, stirring occasionally, until the onion has softened (about 7 minutes). Add the chile powder, cumin, oregano and minced cilantro and cook until fragrant (about 1 minute). Add the tomatoes, beans, chicken stock, beer and cooked bacon and bring to a boil. Cover and simmer over moderately low heat until the beans are just tender, about 1 1/2 hours. Uncover the casserole and continue to simmer, stirring occasionally, until the beans are cooked, 30 to 45 minutes longer.

In a small bowl, whisk the corn flour with water until smooth. Slowly whisk the mixture into the chili until incorporated. Season the chili with Old Mule Basil Bash, garnish with cilantro, and serve.

STICKERS For 20 years we have included stickers in each issue of the magazine. I personally put each
and every sticker in each and every copy myself (Doobie)!!! Here lately folks have gotten bad about pulling stickers out of many copies... I guess because they like the stickers so much. It has happened in the past but not like it has the last few issues. It is unfair to others who pick up a copy of the magazine only to find that their copy does not have a sticker. So, starting with the Jan-Feb 2023 issue of Behind Barz we are not going to place stickers in each copy. We will have stickers available for FREE but you have to send a self addressed, stamped envelope to our PO Box listed on previous page. We will then send you the sticker that goes with this issue (if you write “BIGFOOT 20” on the envelope) plus we will throw in 3 more stickers, of our choice. We hate this has to be done but with the time it takes to place each sticker in every copy and then people are pulling the stickers out we feel that this is the best way to do it right now.
