ALL OF OUR FREE RANGE TURKEYS AND GEESE ARE ALLOWED TO MATURE SLOWLY OVER A 22 WEEK PERIOD SO THAT THEY DEVELOP A GENEROUS LAYER OF FAT UNDER THE SKIN. THIS EXTRA LAYER OF FAT RETAINS MOISTURE WHEN COOKING AND PROVIDES A FULLER, RICHER FLAVOUR AND SUCCULENT TEXTURE.
TURKEY COOKING TIPS Bear in mind that most ovens aren’t big enough to fit a turkey as well as all the trimmings. Don’t panic! A turkey can be left to rest for up to an hour after cooking. Keep loosely covered in foil in a warm place. It will still be lovely and hot, and will leave your oven free to cook the roast potatoes and other vegetables. Serve the turkey with piping hot turkey gravy. If you have a small oven, why not try our boned and rolled bird or a turkey breast roasting joint this year? Alternatively our butchers would be delighted to remove the turley legs on request.
