““I am Nicole Manning ” … and I’m programme manager at the Forum Theatre I moved from Brisbane to Melbourne seven years ago for an admin job, but I didn’t want to be tied to a desk eight hours a day. I left in 2013 and started a teaching degree. To support myself, I took on jobs behind the bar at Marriner Group theatres, including at the Forum, which is where I became the bar manager. I realised just how much I loved hospitality and the entertainment industry, and I stopped the teaching degree. I’ve never looked back. I was invited to work at head office to help out with programming, which includes everything from ticketing and building events to being there on the night. For the past six months, I’ve been the programming manager. I’ve learned everything on the job, and those years working behind the bar have helped enormously. Broadly speaking, my job involves liaising with venue hirers, the venue manager and venue coordinator to put on shows, as well as promoting the Forum. On a day-to-day basis, I get in at 9am. If we had a gig the night before, I’ll open up the event report to see how the show went and follow up on any issues; contacting security, bar or cleaners with feedback, good or bad, although there’s not much negative feedback. The aim is to make things smoother in the future. Then, I’ll have a look at the calendar and see if we’re announcing a show or if a show is going on sale that day, and make sure everything is set up in terms of social media and emails, and check in with the ticketing company. My favourite nook at the Forum is the waiting room before you go into the ladies’ bathroom. It’s a beautiful detail. Where else would you find that in a venue now? The craziest day at work was definitely “Harry Styles Day”. We knew it was going to be nuts. That morning, there was a massive line of teenage girls waiting for the doors to open, not leaving their spots, not eating, not drinking and not going to the toilet; a rabid look in their eyes. I’m not making fun – you lose that adrenaline and excitement as an adult. Another job highlight was earlier this year when my favourite band ever, Slowdive, played here. I bought tickets for my friend’s birthday and she came down and saw it with me. I had a moment of, “This is what I do for a living. I get paid to do this. It’s incredible.’’ ●

Calling the shots The toughest challenge yet – a famous St Kilda eyesore – confronts new teams on The Block, who will spill sweat and sawdust to create landmark apartments.

s the teams for the new season of The Block walked into the old Gatwick Hotel in St Kilda for the first time, they had no idea they would be taking on the biggest project in the show’s history. “There’s nothing that can prepare you for that feeling when you’re thrust into a property like the Gatwick,” contestant and former professional netballer Carla says. “You walk in, the carpets are wet underfoot, there’s a smell that you’re confronted with. You’re a bit like a deer in headlights.” It’s a building with a patchy past. Built as a luxurious hotel in 1937, the Gatwick fell into disrepair, and had up to recently been used as a lowbudget rooming house. In the 14th season of The Block, five couples from across Australia will transform the notorious Fitzroy Street dive from rundown hotel to high-end apartment building over just 12 weeks. Architect Julian Brenchley, who has worked on the show since its first season, says transforming the building was a feat like no other. “We like to give ourselves challenges, so year on year the brief gets bigger and bolder. They’re the biggest apartments we’ve ever done.” Brenchley says. “It’s been really exciting being involved with the rebirth of a grand old dame.” The project is set to breathe new life into this somewhat downtrodden area of St Kilda. Hocking Stuart Albert Park director David Wood, who was the auctioneer of last season’s winning property by Josh Barker and Elyse Knowles, says locals have been positive about the building’s rejuvenation. “The Block renovating the Gatwick will be the catalyst for real improvement in Fitzroy Street and the surrounding streets,” Wood says. “A lot of people who live locally have said they’d be very interested to have a look at the apartments because they love the location.”

He says the apartments are likely to fetch record prices for the area. “There’s precious few that have the size that these properties have and there’s very few that have the nature of the renovation.” The task of having 10 relative novices designing, managing and completing a renovation of the quality and scale The Block requires is not a small one, but Brenchley says most of the applicants at least had some clue about what goes on on a building site. “People are getting more savvy with how things are done,” he says. “There are limitations, but then that’s when the creative juices are meant to flow.”

or former professional netballers and Bianca and Carla, their lack of experience on the tools is made up for by their ability to stay calm under pressure. Bianca won Commonwealth Games gold and silver for Australia in netball, and hit the court for the Melbourne Phoenix and Melbourne Vixens, where she played alongside Carla. They met about 15 years ago, and though they’ve not always lived in the same state, their friendship has lasted the test of time – and so far, the test of The Block. “Coming from a team sports background, you have that foundation of knowing what you need to make a good team, and I guess, that real hunger to win,” Carla says. “I still want to make sure we come out of this very good friends – that means more to me than anything else.” It was Bianca’s idea for them to audition for the show. Her dad is a builder and she has renovated a couple of small apartments in Melbourne. “Both of us have to be labourers, we have to carry as much stuff up stairs as we can,” Bianca says. “Anything where we can get our hands dirty, we’re doing it.”

She says friends told her to get a male counterpart to audition with – someone who could do more of the physical work – but Bianca says being a rare allgirl team was not a disadvantage. “I get budget-wise it might be helpful to have a guy with a trade,” Bianca says. “But like [season seven winners] Alisa and Lysandra [Fraser] showed, it’s possible and I hope it shows other girls that they could do it too.” Another team, West Australian fiancees Courtney and Hans, are also renovation rookies. The flight attendant and pilot met seven years ago and decided on a whim to try out for the show. “I think everyone loves a bit of a cliche and the pilot-flight attendant storyline everyone kind of loves,” Courtney says. She says arriving in Melbourne with no trade contacts – especially once they saw the condition of The Gatwick – was overwhelming. “I wanted to leave. I was like ‘we are way in over our heads, there’s absolutely no way in the world we are going to be able to do this’.” Hans says the pair have realised their tendency to be “rule followers” might not always work in their favour. “The whole thing is not to take ‘no’ for an answer, and it took us a while to cotton on to that,” Hans says. “You have to just throw all caution to the wind and persevere.” Carla says what she’s learnt about herself has made the stress of renovating a room a week worth it. “It’s the best thing I’ve ever done – I loved the experiences I had with netball – but this is a challenge that’s completely out of my comfort zone and to be able to do it gives me a massive sense of achievement.” ● THE BLOCK 2018 \ Premieres Sunday August 5, 7pm, on Channel 9. ● 9now.com.au

Bob Dylan has threaded his way through my life since I first discovered him when I was 15. His songs have guided me and carried me in different ways. The characters I am interested in writing about tend to be marginalised. They come from life’s underclass, and are often isolated: language is not necessarily easy for them. I have this feeling that if I don’t give them a story, then who will? Bob Dylan’s 1985 song, Up To Me, plays in my head every day as I write. I don’t understand the song, and yet I do. For me it is a song about sacrifice and determination and loneliness, and it always helps me.

I’ve always had the most idiotic fantasy about going back in time to May, 1965, and hanging around in the laneway behind London’s Savoy Hotel to watch Dylan filming the video to Subterranean Homesick Blues. It is a sublimely jumbled masterpiece of inchoate images, none of which make sense on their own, but which together erupt in the brain, to linger there like a dream you can never shake. And the video! Just him standing there in that lane, with that pile of cards. He dumped the cards in a skip and then went off to lunch. I would dive in after them.

As a 16 year old I’d play Like A Rolling Stone before going out. Then a friend loaned me Blonde On Blonde and we recited the lyrics to Visions Of Johanna. I hitched to Queensland because I wanted to say, I’d been ‘‘hittin’ some hard travelin’’. Saw him three nights running at The Music Bowl in 1978 and at Kooyong, The Palais, Rod Laver, Byron, and soon I’ll see him again. He was interviewed by a friend in 1986, and I found a spot by the hotel door, knowing he would have to walk past. He shook my hand. Brief, but deeply momentous.

I first heard Dylan in year 8 English class, 1977: the teacher gave us the lyrics and pressed play on his Casio cassette player. Like rolling stones we wandered, warbling out. The tune was threadbare, but the lyrics made rudimentary sense – I was hooked. The glaring honesty of Dylan’s unadorned delivery may be the reason few of his songs are covered. Who would dare match his frankness?

Another Side Of Bob Dylan will never be far from my player, as it’s the most warm, crackling, open fire of a record I think I’ve ever heard. From its plaintive ballads to its cheeky rags and waltzes, Bob just sounds so damn relaxed, and why wouldn’t he be? He’s a master enjoying a youthful peak, in easy command of a freaky God-given way with words and chords, and I think he knows it. Ballad in Plain D reduces me to tears and used to make me so nostalgic for childhood when I was still a child. It’s a perfect song among perfect songs. I also bust out New Morning pretty often for a dose of

that wizened, raise-the-kids-in-thecountry Bob. I find the simplicity of that record heart-wrenching, and somehow not very Bob at all. But I hate If Dogs Run Free. What the hell is that song? hen HWKR approached me to take on one of their pop-up leases at their food hall in the Melbourne CBD, I came up with a Malaysian street food concept, which offers both traditional and fusion dishes. It was then that Chanteen was born, using family recipes passed down through the generations. Chanteen is cooking from scratch with no shortcuts, and this is my secret satay recipe. It is one our top-selling dishes along with the Char Kuey Teow. Don’t be overwhelmed by the list of ingredients as I guarantee you it is worth the hassle. Do it over the weekend, allowing 24 hours for the meat to marinate and if you haven’t got a charcoal grill, use the barbecue instead. However, charcoal will give you a deeper and smokier flavour, which you can’t get from an electric grill. If you think it’s all too much work, pop down to Chanteen before it closes on August 12. ●

Chicken satay Ingredients (Serves 4-6) 1.5kg chicken thigh (skin off), cut into bite-sized pieces Honey and water mixture, for basting Chicken satay marinade 200g shallots 100g garlic 25g galangal 60g lemongrass 25g ginger 20g turmeric powder 100g brown sugar 20g cumin powder 20g fennel powder 20g coriander powder Salt to taste 1 cup vegetable oil Satay sauce paste 30g candlenuts 50g dried baby shrimp

20g dried chillies 50g long red chillies 60g shrimp paste (toasted) 200g shallots 100g garlic 30g fennel powder 30g coriander powder 50g lemongrass 30g ginger Satay sauce 2 cups vegetable oil 3 cups water 600g palm sugar, shaved 100g tamarind paste 500ml coconut milk 600g skinless roasted peanuts, blitzed to breadcrumb size 100ml sweet soy Method For the satay marinade, blend all ingredients together until a

smooth paste is formed. Marinate the pieces of chicken for a minimum of 12 hours. ■ Skewer the chicken and cook over charcoal or a barbecue for 5-10 minutes, basting with honey and water. ■ For the satay sauce paste, blend the ingredients together to form a smooth paste. ■ For the satay sauce, fry the paste in the oil for 3-5 minutes. Add the water and palm sugar and stir until dissolved. ■ Add the tamarind paste and coconut milk. Stir to combine. Allow to simmer for 10 minutes. ■ Add the peanuts and allow the sauce to thicken to a thick gravy. Add the soy and adjust salt levels if the sauce is too sweet. ■ Serve with compressed rice, cucumber and onions. ● ■

Southern style

iven the current turbo-charged interest in all things Tasmanian, it’s not surprising that the state’s pinot noir output is also attracting extra attention. It should. Tasmanian expressions of this fickle grape variety are among the best in the country and there’s an increasing acknowledgement that the state is home to several distinct subregions that make drinking the stuff even more interesting. Philip Kennedy, co-owner of recently refurbished Southbank restaurant Pure South, has not only been specialising in all things Tasmanian at his restaurant for 14 years but also makes wine in Tasmania, including pinot noir. He has watched the wine industry develop and reckons it’s like it has “advanced 40 years in the last 15 years”. “I think what’s interesting is that people are PU R E S O U T H

finally acknowledging and taking real pride in the length and the breadth of the quality in Tasmania and that there are distinct subregions,” he says. “In the north, you get more fragrant, bright pomegranate expressions, while in the south the wines are more broody, more savoury with dark cherry characteristics. ‘‘In the east, it’s hard to put into words, but they display a savoury character with an almost lolly-like lick of musk and a quality like dark red blossom.” For those wanting to compare and contrast Tasmania’s pinot noir (and others), Pure South is hosting VIN Diemen, a former wine trade show that’s evolved into an annual festival highlighting the state’s food and wine output. The festival will take over the top floor of Pure South and some of the ground level with 26

or 67 years, Melburnians have been escaping the darkness of winter for the darkness of the cinema. This year’s Melbourne International Film Festival, the eighth, and final, to be helmed by current Artistic Director Michelle Carey, will have the largest program in its history. The prospect of more than 250 feature films screening over 18 days (from August 2 to 19), might feel a little daunting. But never fear. Here are just some of the festival’s many highlights. If you can’t decide what to watch, why not take the plunge and pick something you’ve never heard of and would otherwise be unlikely ever to see? Who knows, that movie might just change your life. In a break with recent tradition, the festival is not kicking off with a locally made movie. Instead, the opening night film is actor Paul Dano’s directorial debut Wildlife. Starring Carey Mulligan, Jake Gyllenhaal and local actor Ed Oxenbould, it’s an adaptation of American writer Richard Ford’s novel

about a teen dealing with his dysfunctional family in 1960s Montana. The festival wraps up with closing night film The Coming Back Out Ball Movie, a documentary on the LGBTQI seniors ball that was held in the middle of last year’s marriage equality debate as part of the Victorian Seniors festival. More than 40 movies are arriving in Melbourne direct from the Cannes Film Festival. Among them is local filmmaker Charles Williams’ All These Creatures, winner of Cannes’ prestigious short film Palme d’Or award. Other Cannes highlights include Iranian filmmaker Jaffar Panahi’s 3 Faces. Panahi hasn’t let a government ban on making movies stop him – he even resorted to smuggling his 2011 documentary This is Not a Film out of Iran on a USB drive hidden inside a cake. Also worth looking out for is Lee Chang-dong’s Burning, an acclaimed adaptation of Haruki Burning Murakami’s short story.

Among the local fare is the premiere of Acute Misfortune, an adaptation of Erik Jensen’s book about meeting bad-boy artist Adam Cullen. The documentary Undermined: Tales from the Kimberley investigates the path to justice for Kimberley traditional owners, while Janine Hosking’s The Eulogy commemorates the life of piano prodigy Geoffrey Tozer with the help of former prime minister Paul Keating. If there’s one niche in which MIFF seems to always excel, it’s movies about food.

This tradition continues with the restoration of Juzo Itami’s 1985 film Tampopo, about a band of Ronin searching for the perfect ramen recipe. Tickets include a bowl of ramen from Windsor’s Tokyo Tina. Some of the most creative moving-image art is now being made for virtual reality headsets. Among the 19 works in the festival’s VR showcase is Thalu: Dreamtime is Now, created by awardwinning Ngarluma man Tyson Morwarin. It offers audiences the chance to experience the modern Dreamtime stories of the western Pilbarabased Ngarluma. Finally, rest (or dull) your senses with 737 minutes of Nicolas Cage. TRAVEL \ ICEL AND Marketing efforts to overcome Iceland’s postfinancial crisis economy spawned an unprecedented tourism boom. And the introduction of Icelandair’s #MyStopover hashtag in 2014 in particular, was at the root of this. The social media campaign popularised the airline’s longstanding deal allowing passengers a stopover in Reykjavík at no extra charge on their trans-Atlantic flight. As a result, the number of Americans visiting Iceland each year jumped from 240,000 in 2015 to over 570,000 in 2017. fter a long day at work, a brutal workout, a stressful meeting or a long commute there’s not much better than arriving home to your favourite comfort food. Whether it’s dad’s signature spaghetti, nan’s chocolate pudding or pad thai from your local takeaway joint, everyone has their go-to food that’s like a hug from the inside out. There’s nothing wrong with enjoying your favourite hearty foods here and there, but when they’re not necessarily ticking all of the health boxes you need to indulge in moderation. This does not mean you need to say goodbye to these meals altogether to meet your health goals. In fact, you can actually eat your favourite comfort foods more often than you think. We often make the pizza ourselves and love to get creative in the kitchen with our toppings. Sometimes we’ll use a wholegrain wrap as a lighter base or if we really feel like dusting off our aprons, you can’t go wrong with a good cauliflower base. My final tip is easier said than done, but try not to overdo it on the cheese. It was during his own schooling that Carroll first became interested in becoming a teacher. He went on to study at Burwood Teacher’s College, but says he did also consider other professions. “My father was an engineer and I was going to go down that path, but then I realised in school that I didn’t have a passion for that area,” Carroll says. “We had careers people that came out and talked to us and I thought about primary teaching, it really resonated with me. “I think what I’ve loved is being involved in the formative years of a student’s growth of learning. We build on the foundations and it’s being where the action is. “Of course, I believe in lifelong learning. “However, those early years are really important.” It was also during his time at school that Carroll found his passion for music and in his teens started

n a sunny, winter morning in Box Hill, Kingswood College’s Head of Junior School, Julian Carroll, is busy with a class of excitable year-3 students. It doesn’t take long for him to get their attention, however. With a few chords from his guitar Carroll soon has the children singing, laughing and dancing along to one of Peter Combe’s famous children’s tunes, Spaghetti Bolognese. Carroll’s enthusiasm and passion for education hasn’t waned in 38 years. He’s been a teacher and principal in schools in Ballarat, Geelong and wider Melbourne. He joined Kingswood College 18 months ago, where he leads staff and students from ELC to year 6 on the college’s large campus, which also houses the middle and senior schools. Carroll says that while he’s loved all of his roles, there is something special about Kingswood College – and it’s not just the wonderful singing of the year 3s. Or the fact he grew up around the corner. “I guess the attraction for me about Kingswood College is the wonderful community,” he explains. “It’s just a fantastic community. I’ve been in bigger schools before but I just really enjoy the relationships with the students, the staff and the parents here. “We are also an International Baccalaureate PYP (Primary Years Programme) school, so that’s been a great attraction as well – having a strong educational program behind us,” he says. The PYP encourages inquiry-led learning, allowing students to grow academically and develop the skills they need for future careers. “We really have to equip our students with the skills for the future, so they need to be flexible, they need to be able to work in teams. We want to foster curiosity, creativity and the ability to think critically,” Carroll says. “That’s not to say that numeracy and literacy are not important, because they are, but we need to prepare students to be ready for future jobs.” Carroll says Kingswood also focuses on teaching young students to become good citizens. “We have a responsibility to educate learners who are knowledgeable, have great social skills, are caring, empathetic and tolerant, and independent, which aligns to the values of our school.”
