““I am Sarah de Witt ” … and I’m a professional tea sommelier I didn’t have a defining “I love tea and I’m gonna
make a career from it” moment, but there was a turning point when I was studying psychology and found that tea de-stressed me. I started with herbal tisanes before transitioning to the hardcore teas. I decided to take a break. I’ve always been entrepreneurial and, being on a student wage with not much to lose, I thought, “Why don’t I just start a business?” I’d been reading about tea and found that the least likely demographic to enjoy it ran from 2035. The perception was that tea was for older people, which I thought was nonsense. There was also a gap in the market: Melbourne’s food, coffee and wine scenes were huge, but tea wasn’t being done justice. In 2014, I opened my first tea business, Impala & Peacock. I fell so in love with it that I never went back to study. I’ll never forget my first customer: he ordered a chai with soy milk and honey on the side, and was genuinely excited about the product, rather than the hundreds who’d walked in and gone, “Oh, you don’t do coffee”, and marched straight out again. I studied and became an accredited tea sommelier with the Australian Tea Masters Association. It was a year-long course covering the fundamentals, science and art of tea with a lot of flavour profiling and testing – every week we’d get a bunch of different teas to analyse and brew. I also run a loose-leaf tea company, as well as Mary Eats Cake. There’s a really creative element to blending tea, and inspiration comes from the weirdest places. I remember washing my hands with an Aesop soap that had rose, cardamom and elderberries through it, and thought I should work on that for a tea blend. Running a business means wearing a lot of different hats. The only constant is that I drink a lot of tea: I always start off with black tea in the morning, then I go to white, then green around lunch, moving towards herbal blends in the afternoon so I can sleep at night. I try not to judge how other people make tea, but there are little things that scratch at me. For instance, milk should always go first. e’s one of Australia’s most acclaimed actors and a film and television director who has written a children’s book. The year ahead truly belongs to Richard Roxburgh, who returns to the big screen in two Australian films that couldn’t be more different. Go Karts is a comedy designed to tug at the heartstrings and features actress Frances O’Connor, while a more serious move is made with Danger Close – a war movie about Australia’s involvement in the Battle of Long Tan starring Travis Fimmel. For someone who has dabbled in Hollywood films ((Mission Impossible 2 and Moulin Rouge, both made in Sydney) and directed his own drama ( (2007’s Romulus, My Father starring Eric Bana), there’s a paternal need that’s fulfilled when working in Australia – particularly now that he has become a dad for the third time, to daughter Luna, aged 15 months. “Seven weeks, that’s the cut-off for me,” says the 56-year-old Roxburgh, who is making a menswear campaign debut with Van Heusen, of the amount of time he can handle away from his family for work. “I came to parenthood at an older stage in life and love that it happened for me. “I thought that ship had long sailed and I had made peace with that but when I finally did become a dad, my spirit was ready for it.” His children, Raphael, 11, Miro, 7 and Luna put life in perspective for the ambitious actor, who is also adored for his role as Cleaver Greene in the ABC TV legal drama Rake, which returned to our screens last weekend. “I think people like the cheekiness of Cleaver, there is something about his hopelessness that we can all relate to,” says Roxburgh. “In a world that is becoming politically correct and nanny-stated, we long for a person on our screens who breaks away from that and says what he feels.”

Born in Albury, NSW, Roxburgh is the youngest of six children who grew up in the border town until moving to Canberra’s ANU to graduate with a bachelor of economics. His father John, who died at the age of 91 in 2011, was an accountant who ran his own business in the regional town. A desire to act saw him enrol at NIDA, which led to him working with the Sydney Theatre Company before landing his first major TV role as Roger Rogerson in the TV mini-series Blue Murder Murder. Happily married to Milanese actress, cooking author and TV personality Silvia Colloca, Roxburgh admits his ability to work on a variety of TV and movie roles is all thanks to an understanding partner who runs a tight ship back home. Soon after Luna was born, they moved to the hills of Tuscany for a few months and quit the northern beaches of Sydney for a rustic Italian life. Roxburgh, who can speak Italian and has an Italian passport, says it was the perfect escape. “The two

That’s when we decided to give our eldest boy a 10th birthday present that involved him coming over for two weeks. “He would come into the theatre every day and loved it so much. It was a very special moment in time to see his beaming face arriving.” Over a glass of pinot, he and Blanchett make lists of stage roles they’d love to undertake. The pair has shared the stage for more than two decades and are close buddies. It’s banter between friends, discussions that keep the creative juices flowing and the very real process of being an actor. “We write lists, we talk about the roles we would love to play on stage which we haven’t yet. I guess the fact I make lists means I’m still thrilled by what I do, but not all is always possible,” he says.

boys got an experience at the local school and Silvia and I had time with Luna. We got to eat peasantstyle, good quality food. What I love about the Italians is what they can do with such few ingredients. It’s not about eating like the rich – it’s about making ‘cibo povero’ [poor food] rich in flavour,” he says. The career and family juggle is real, but he says age has mellowed him and while he’s still keenly ambitious to do films, flirt with Hollywood and appear in theatre shows, he’s acutely aware his children will only remain that for a short time. Last January he starred alongside his good friend Cate Blanchett in The Play – a reworking of Chekhov’s Platonov written by her husband Andrew Upton that opened on New York’s Broadway. “I am hopeless away from my family. I would love to be better at it but I am just not. I feel very Italian in that regard,” admits Roxburgh. “When I take on a role overseas there’s a pact the family has to visit –
“As an actor you have to remain alive to all possibilities. I like to dip my toe in around the place, but love to come back home to the glorious northern beaches of Sydney. It’s a balancing act and having Silvia as a partner who has great understanding certainly makes the process easier.” As part of his role with Van Heusen, Roxburgh will also take part in a mentoring panel alongside comedian Nazeem Hussein and Paralympic gold medallist, Invictus Games ambassador and former army officer Curtis McGrath. The actor will share stories about his journey in film and television. “It’s interesting to see I am now at a point in my life where people think of me in that way,” says Roxburgh. “I used to be fairly reckless in youth, but maybe you gather wisdom points as time goes by, you manage to stay alive and I would like to think I was capable of some reasonable advice about life choices these days.” ●

ever labour over how to perfectly scatter lounge cushions again after following Jason Grant’s lowmaintenance tips for high-traffic areas. Stylist and author Grant is known for his laid-back home aesthetic – the key to great entertaining areas, he says. The aim is spaces that are lived-in and loved, that reflect your personality. In Melbourne recently for a styling masterclass with World of Style by Porter Davis, Grant revealed just how he pulls off his very Australian approach.
KITCHEN Styling your kitchen for entertaining is no different than for any other occasion; it’s simply about amplifying details to make the ordinary feel extraordinary, Grant says. “Sometimes those high-traffic areas are the kind of places we create to be more functional and we think we can forget about them, but it’s important to give them just as much love,” he says. “It’s about having a little beauty in the everyday.” Small items to focus on in this typically functional room include the fruit bowl, dish rack, soap holder and tea towel, all of which can be updated for relatively little cost, he explains. If you’re someone with a great range of tableware, showcase this proudly by installing some basic shelving. If you don’t have any spare space, the Bondi stylist recommends taking the doors off your existing kitchen cabinetry.

LIVIN G ARE A Creating a stylish room is all about investing in quality and timeless pieces, starting with the floor rug. “I always recommend getting the bigger floor rug rather than the smaller one. I think that’s a great way of defining and setting the tone for the living area,” Grant says. Inject some personality into this room by displaying meaningful items on a mantelpiece, sideboard or coffee table. This may include photographs, books, house plants, ceramics, candles, or more functional pieces such as lamps and coasters. “For people who aren’t expert decorators, these are really safe places to experiment and play,’’ he says. ‘‘It’s about finding those places where you can create a little moment.” Limit your spending to pieces you truly love, even if it takes you a while to find them. “I think your home needs to be a sanctuary, somewhere relaxing, and just filling it up can be too much,” Grant says.
DININ G RO O M The dining area is where styling is most likely to deviate from the everyday, but this doesn’t mean it requires hours of preparation. Simply by placing on the table some handpicked flowers in a vase, or a tray of objects found in nature, such as interesting stones and leaves, is way of instantly bringing beauty inside the home. Enjoy being creative with your table setting, start with a linen tablecloth and layer with handmade
plates, unscented candles (“You want to be enjoying the meal, not the scent of the candle”), elegant glassware, napkins and decorative ceramics of varying heights. One way to encourage the rest of the family to maintain your look year-round is to keep decorative items on the dining table, therefore avoiding it becoming a dumping ground when not in use. “Just putting something on the table leaves less space for laundry and ironing!” Grant explains. ●

Visions from the deep A Melbourne landmark informs Hannah Nowlan’s latest show, Cerberus.
C
hildhood memories of a sunken warship form the inspiration behind the latest body of work by artist Hannah Nowlan. Cerberus, Nowlan’s third solo exhibition since graduating from the Victorian College of the Arts in 2015, is named after the 19th century naval ship that was sunk as a breakwater off Half Moon Bay in Black Rock in south-east Melbourne in 1926. The local landmark has always been a creative reference point for Nowlan, who grew up in Black Rock and remains a resident of the suburb. But the heritage-listed site acquired a deeper significance for her following the death of a close family member earlier this year. The shipwreck, which she has visited regularly with her family throughout her life, became the
catalyst for a series of artworks where she documented the grieving process and her eventual return to a state of hope. “It’s a sinking, decaying, fragile ship – but it’s also robust and strong and has this physical presence in the landscape,” says Nowlan. “Cerberus, for me, is a really strong physical presence, being there when I was a child and where I was growing up.” The ship’s name – derived from Cerberus, the three-headed dog that guards the gates of the Underworld in Greek mythology – had added resonance for Nowlan after the loss of her loved one. The paintings, which are on show at gallery and furniture store Modern Times in Fitzroy, are abstract depictions of the ocean floor as viewed

he hype has well and truly settled since the unforgettable scenes of the Stokehouse burning to the ground that fateful Friday eve in summer 2014. fried and served with caper tartare. Think outside the gym Where there’s a will, there’s always a way to work out.
W
hen I first started my online fitness program, some people doubted whether I could have the same success with online participants as I do training with face-to-face clients. How very wrong they were! The truth is, you don’t need to have access to an expensive studio, or even a gym, to achieve incredible results. Here are a few of my favourite exercises that you can do anywhere, any time and that won’t cost you an arm and a leg.
INTERVAL RUNNING \ I believe there’s a runner in all of us, and the good news is it’s an incredible workout for your body that can be done anywhere – I love to go for a run when I’m travelling as it’s a great way to explore a new city. You could also take

it a step further by adding intervals to your run. Not only will you get more bang for your buck with less time required and more calories burnt, your body will continue burning calories after your workout has finished. BODY-WEIGHT BURNERS \ The best thing about
body-weight exercises is that the options are endless and you don’t need any equipment. Body-weight exercises can be done in the kitchen, in a park or even in a hotel room. There really are no excuses not to work out! To get the most out of your body-weight moves, pick ones that target multiple muscle groups. My favourite calorie-burning, body-weight exercises include:
BURPEES \ Burpees are a huge calorie burner as they work your legs, chest and core and really get that heart rate going. JUMP SQUATS \ Jump squats engage your lower body, especially those quads. Enjoy the heart rate spike and the leg burn.
PUSH-UPS \ Push-ups are a simple (simple, not easy!) and effective upper body and core exercise with plenty of variations for an added challenge.
MAT-BASED WORKOUT \ You don’t always need to be dripping with sweat or gasping for air for your workout to be effective. A lower-impact workout that works your whole body, a Pilates-style, mat-based routine can be incredibly effective. With compound movements that rely on multiple muscle groups, this helps you to work more than one area at once. Add in some isolation exercises to tone up target areas and feel that deep burn. These workouts are included in my online programs and have become favourites among my 28ers because you can do them just about anywhere. So, now that I’ve given you so many great options, you really have no excuse not to get active! ●

SPLIT LUNGE JUMPS \ Lunges work your lower body but also help to improve your balance and coordination. Jumping to alternate each leg seriously gets your heart pumping. MOUNTAIN CLIMBERS \ Mountain climbers
target your obliques, glutes and hamstrings and the fast-paced motion delivers a solid workout. This is definitely an exercise I love to hate.

A
lison Heard teaches drama, music and theatre studies at Genazzano FCJ College and shares her enthusiasm for the creative arts with her students. For the past four years she’s also been a year 7 homeroom teacher, helping new students to become part of the vibrant school community. Alison has taught performing arts to Elena, now in year 11 and a house captain, and to Miranda who is in year 7 and a co-curricular captain for year 7/8. Both girls see performing arts and being involved in school productions as valuable parts of their education at Genazzano.
I balance academic subjects with music, singing, debating, cricket and swimming. I work better when I’m busy and I’ve learnt an incredible amount through trying different activities. I’m working on my Gold Duke of Edinburgh Award so I volunteer every Friday at Kew Library, I’m studying trombone and I’m part of the school stage band. I’ve been on camps to Wilson’s Prom and Anglesea, and waking up at 4am for a long hike would not have been possible without the support of the teachers and girls with me. I’ve played piano since year 2 and started singing and trombone in year 5. Ms Heard taught me music in year 7 and she made the subject fun. I remember playing the glockenspiel and Ms Heard always insisting the instruments were put away correctly when we finished! When I started year 8 I wasn’t sure that I wanted to continue with music but Ms Heard’s enthusiasm and passion for what she teaches were instrumental in me staying with my musical pursuits. She reminded me of the enjoyment that music brings.
MIRANDA SAYS ... I knew no one when I came to Genazzano in year 6 and it seemed to be such a big school! But I felt part of the community here quickly and I made friends by joining co-curricular activities. I’m involved in choir, strings, the netball team, debating, athletics and volleyball. I enjoy extending my skills. I’ve had many favourite moments at school. For the year 7/8 production I worked behind the scenes

and did the lighting. I enjoyed the da Vinci Decathlon – an academic competition between schools, and year 7 camp this year was on Phillip Island. In year 6 I did the father-daughter camp at Mount Eliza and I still remember my dad on the high ropes looking very nervous! I study music with Ms Heard and during every class she encourages us to take that extra step and to be the best we can be. She encourages us to be creative, too. During one composition task, for every note value, we did a little movement to help remember the rhythm– she certainly makes music interesting.
ALISON SAYS ... After finishing degrees in performing arts, music, drama and theatre studies, I was a casual relief teacher. I stepped away from teaching for a while, but I missed the ongoing contact with young people and I came to Genazzano. I chose to be a year 7 homeroom teacher because it’s a wonderful year. Some of the girls are new to the school and I like helping them develop new friendships and get involved in school. We have
about 130 co-curricular activities – from ceramics and chess to AFL umpiring and “Genproductions”, which provides students with the technical skills to put on a production. It would be hard to find a student at Genazzano who isn’t involved in music, drama or theatre. Elena was extremely enthusiastic in music classes. She always had her hand up to ask questions and, when I think of Elena, I immediately think of her commitment to the trombone and the school bands and ensembles. I always encourage students to keep up music because it doesn’t only teach you to play an instrument, you learn to work as part of a group, which is a valuable skill. Miranda is in my year 7 music class and she’s very similar to Elena because of her enthusiasm and focus. She’s performed a few composition tasks this year and she always sets herself that extra challenge. A specialist who helps people who have been advised they are unsuitable for laser surgery, Dr Stubbs is also committed to demonstrating that age, corneal distortion or astigmatism are no barriers to eliminating the need for glasses. One of my best moments was treating a 12-year-old girl who was struggling at school because of poor vision due to congenital cataracts even with the use of thick glasses. Now 10 years later, she still has 20/20 vision without glasses. That inspires me. “Seeing my patients’ bright smiles after surgery, as they stop squinting and can read without glasses, is definitely the best part of my job.� No referral is needed and no out-of-pocket expenses are incurred for an assessment to enable all options available to be considered.
