I have no qualifications in music and dubious taste (judging by what is populating my Spotify playlists). But would I be so wrong if I said that Tina Arena’s Chains was the biggest Australian banger of the mid-1990s? Now imagine being in the presence of the raw power of that voice, soaring through one of the most iconic melodies in musical theatre. And so you get the Melbourne season of Tim Rice and Andrew Lloyd Webber’s Evita, on stage from early next month, starring Arena as Eva Peron. Journalist Luke Dennehy spoke to Arena about her sensational leading role, and what comes next. ●

very night when Tina Arena hits the stage as Eva Peron in the classic Andrew Lloyd Webber and Tim Rice musical Evita, there is a moment where she gets the shivers. It’s singing that classic song Don’t Cry For Me Argentina, with its soaring melody and big notes. “It still gives me goose bumps,” Arena, 51, told Domain Review. “It’s a powerful melody which evokes complete vulnerability. It’s majestic. “I never tire of the wonderful opening melody, where those strings take the lead and it just sweeps you away. It’s magical. I never tire of it, and the audience seem to genuinely respond.” Ever since 1974 – when she was aged eight – audiences have been responding to Tina Arena in a big

way. She famously got her start on Young Talent Time and, while there have been some tough times along the road, she has barely been out of the spotlight. Most of her life she has been making hit records, including her last English-speaking album Eleven, which was released in 2015 to critical acclaim. While the album struggled to get commercial radio airplay, Arena fans will tell you it was one of her best – full of slick pop songs that really should have been the top of the charts. Growing up in the Melbourne suburb of Keilor East with parents Giuseppe and Franca, Filippina (then known as “Pina”) Arena had a big voice at a very young age. Pina then became Tina when she joined Young

Talent Time. The rest, as they say, is history. Even back then when she was beginning on Y Young Talent Time, she had a love of musical theatre, which has been a big part of her career on and off for decades. “Even as a very little girl, somehow I knew that I would perform in musical theatre as I have both here in Australian and in the UK,” Arena says. “The beauty of theatre ... is the exchange between the artists and the audience. It’s instant and hugely rewarding. I do also really enjoy working in a company, and this company of Evita is simply stunning.” After years based in France with her partner of 18 years, Vincent Mancini, Arena moved back to Australia a few years ago to settle in
the inner suburbs of Melbourne. Her son, Gabriel, is now in high school and after living in Fitzroy, the family moved to Toorak last year. There is always something special for Arena about performing at home in Melbourne, so the return of Evita to town – playing at the Arts Centre’s State Theatre – is something she is looking forward to. At any Melbourne Tina Arena concert, she is always surrounded by family and friends, school mums and old work colleagues, and the official grand opening of Evita in Melbourne on Sunday, December 9, will be no different. Arena breezes into her dressing room before every show and is relaxed – most days, that is. “If it’s a full moon, then I tend to be twitchy, otherwise it’s usually
fairly chilled,” she says. “I’m so lucky to work with people that have wonderfully wicked senses of humour. It’s definitely been a relief when you're playing Eva Peron. “Contrasting the intensity with laughter is vital.” Evita has already played a successful season in Sydney at the Opera House, and to begin with, getting used to the gruelling show schedule of up to eight shows a week was a challenge for Arena. “To be honest, it is a shock to the system in the beginning,” she says. “But, we train our body and mind during the rehearsal period, and then the muscle memory goes into automatic pilot. It helps that Arena loves the music of Evita, and its story about Eva Peron, the legendary wife of
Argentinian president Juan Peron, who ascended poverty to become a figure of influence and power. “The score does many things, it’s lyrically genius that’s for sure. I would say that it is a perfectly balanced rock opera, it’s definitely a favourite of mine.” After Evita finishes its Melbourne run early next year, Arena intends to have a well-earnt break, but she says she has “exciting” plans for 2019. hen T2 opened its first shop on Brunswick Street in 1996, it was the sole tea purveyor amid a sea of dedicated coffee vendors. Some queried the wisdom of founders Maryanne Shearer and Jan O’Connor at the time, but the company has expanded exponentially and secured the beverage’s position as a serious coffee rival in a town renowned for its love of a cup of joe. Now with stores worldwide – including in New Zealand, Singapore, London, New York and opening shortly on the US west coast – T2 has permanently expanded our tea horizons. At the time of its inception, a cuppa in Melbourne was a very different proposition. “Back then it was very stuffy, old-world tea,” says Michelle McGoff, T2’s sommelier and developer. “Nothing really exciting was going on in tea, so the idea was to reset people’s expectations.”

With a range spanning everything from rare traditional teas (like Pai Mu Tan white tea) through to exotic herbal tisanes (such as the limited Christmas release Spellbound Cider), T2 continues to nail that goal. McGoff, who has always been a tea drinker (“Well, I’m Irish,” she says by way of explanation), has the enviable job of dreaming up the company’s new blends. Presently, she’s chuffed with loose tea A Trifle Delicious, a festive brew incorporating flavours from white chocolate, hibiscus and elderberries. Interestingly, McGoff doesn’t just look to culinary inspiration when concocting T2’s brews. “I look more globally, so, when I’m looking at development and innovation, I’m looking at beauty brands, ice-cream, chefs, what our team is drinking. Anything, you name it, it all goes into the mix.” Of course, with her sommelier training and years of experience, McGoff has also mastered the perfect cup of tea, saying it starts with the quality of the water. “Use really nice water,” she says. “You can get as

fanatical as you want with what water you use and what minerals are in there, or not. “Generally, at home I filter my water through a Brita filter, although Melbourne tap water is actually pretty good.” She says that reboiling the kettle is a no-no. “It de-oxygenates the water. Only put the right amount of water in the kettle.” Then there’s water temperature. While tea aficionados are now on top of steeping teas at different temperatures (for instance, never put boiling water on green tea), McGoff has another pro tip. “Even if you’re making it in a cup, but especially if you’re making it in pot, always heat the cup or pot first,” she says. She also urges against stewed tea. “A lot of people say that they like really strong tea and brew it for seven minutes. “But then you’re not actually drinking really strong tea, you’re drinking over-brewed tea. What you could do is maybe put two scoops in the pot instead of one, and only brew it for four minutes or five minutes max.” ●

emographics are always fun, and cafes are like living pie charts. At Lenny, a spunky corner haunt four blocks from the beach, its statistical breakdown might read: diners wearing sports jackets at brunch 5 per cent, designer dog owners 39 per cent, LWL (ladies who lunch) 16 per cent, kids scoffing cheese toasties and awesome iced chocolates 13 per cent, millennials on a morning date 7 per cent, mums in activewear 19 per cent, and diners with unbrushed hair wearing black – one per cent. Lenny is the work of Christina Higgins (front of house) and Stephen Svensen (executive chef), a follow-on from their much-loved Moby cafe in Armadale. She was a catering manager at Ottolenghi’s London cafe in Spitalfields, he was her brother’s best mate and chef at Richmond’s Pillar of Salt. “I knew I wanted to open a cafe,” Higgins says, “and we just fell into it.”
It’s a preppy, pastel-themed spot with a seriously magnificent corner position, flooded with natural light, fully exploited with brolly-shaded outdoor seating and a bench-seat window. Wicker-style chairs and blondwoods lend a beachy vibe, adding to the white, breezy fit-out that’s minimalist and fresh, like the food. “Albert Park is a different crowd to Armadale. It’s more health conscious,” Higgins says. “They’re all about the bliss balls and cold brew, lots of salads.” Loads of the Moby menu faves have come beachside, including the soft Sriracha chilliscramblers, smashed avo with feta and a poached egg, nutrient-dense black quinoa superfood salad, and slow-braised duck leg waffle. super tasty, given oomph with green paw paw, pickled red cabbage, Sriracha, fried shallots and crunchy peanuts. If solids seem too, well, solid, go for the Mr Lenny, a whiz-bang, meal-in-a-glass concoction of banana, cacao, peanut butter, almond milk and honey. Add a double shot of Five Senses coffee, and you’re good to go. Some days, service can seem a little vague. The staff are a lovely, friendly bunch, but initially waiting 10 minutes for a menu and water, and different staff asking the same questions or turning up with incorrect orders, were slight issues. The coffee is a bespoke blend of Brazilian and Ethiopian beans. Higgins is a soy and almond drinker and says the caramelly house blend has “less acidity”, which works well “with all three milks”, including cow’s. Likelihood of going back to Lenny? 95 per cent. ●

Dessert is coming up roses
S
traw traw wberries berries and cream is a match made in heaven. As I do not have a sweet tooth, I think this dessert is the perfect balance of tartness, creaminess and sweetness. The inspiration for this dish came from a challenge I did in MasterChef Australia. It was in ‘‘sweet week’’ and the challenge was to design a dish inspired by flowers and the garden. Janice Wong from 2am Dessert Bar in Singapore, who was the guest chef, had designed an edible art installation for us to be inspired by. I instantly thought of roses for this challenge. I absolutely love roses and used rose water in my ice-cream. Here I’ve used some rose petals but if you can get some rose water, try adding a few drops to the consomme. Be careful not to add too much as it can be quite overpowering and it’s an acquired taste. If you aren’t a fan of sponge cake, you can also substitute shortbread cookies. I hope you get to wow your guests with this eye-catching dessert. ●

Strawberries and Cream Ingredients (Serves 4) Sponge cake 6 room-temperature eggs ½ tsp vanilla extract or 1 vanilla bean pod 1 cup caster sugar 1 cup plain flour ½ tsp baking powder Strawberry consomme 3 punnets of strawberries (use frozen as substitute) ¾ cups caster sugar Champagne macerated strawberries 1 punnet of strawberries, cut into 3mm slices 300ml Champagne or sparkling wine ¼ cup caster sugar Garnish Vanilla ice-cream (store bought) Freeze dried strawberries (optional) Rose petals Method ■ Make the sponge cake in advance. Preheat oven to 180C and line a 22cm cake tin. ■ Using a stand mixer, add eggs, vanilla extract and whisk. Gradually add in the sugar until a light, fluffy mixture is achieved. This should take approximately four mins. ■ In a mixing bowl, add in the plain flour and baking powder and mix through. Using a fine sieve,
add in the flour mixture a third at a time using a spatula folding through gently using a figure 8 motion to incorporate the flour without knocking out too much air. Continue until all the flour is mixed through. ■ Pour the cake batter into the lined cake tin and place it in the middle of the oven. Bake for 25-30 minutes. ■ Remove from oven, allow to cool then flip it out onto a cooling rack. Set aside for later. ■ For the strawberry consomme, place a pot of water on medium heat. Dice the strawberries and place it into a metal or glass bowl, sprinkle over the caster sugar, and cover tightly with cling film. Let it simmer for 30-40 minutes. Remove the bowl and pass it through a sieve lined with a muslin cloth. Use a piece of Chux if you haven’t got any muslin cloths. Set the liquid aside until ready to serve. ■ For the champagne strawberries, mix all the ingredients into a mixing bowl and let it sit for 15 minutes in the fridge. Drain when ready to use. ■ To assemble, using a 8cm cookie cutter, cut out a circle of the sponge cake and place it right in the middle of the serving dish. Place the macerated strawberries all around the cake. Top with a scoop of good quality vanilla ice-cream. ■ Pour the strawberry consomme around the cake and garnish the top with freeze-dried strawberries and rose petals. ●

ate Peck, the former model-turned-motor sport TV presenter, is a petrolhead at heart. Peck is now the face of Melbourne moto clothing label Saint CC. Pitched to the modern grease monkey, it’s where biker cool and denim punks come together for the ultimate fashion makeover to make a ride all the more, well, fashionable. And Peck is the perfect fit for the gig – she’s got biker chic down pat and is the ideal pin-up for its female ambassador role. From MTV host to studying to become a sommelier, she’s proof you can have your cake and eat it, too. The tall blonde, now 30, first came to our attention as a 15-year-old contestant on the TV show Search for a Supermodel, signed to Vivien’s modelling soon after and then landed racing ambassador roles with Myer in 2014 and 2015. She was a regular face in the Birdcage at Flemington over the years, and appeared again this month as a “friend” of Mumm champagne. She’s obsessed with motorbikes, loves adventure sport and you can find her on race tracks or behind the wheel of rally cars as part of her day job. Away from the media spotlight, she’s busy getting around on her BMW R nineT Urban G/S.

Firing on all cylinders Motorbike-loving model Kate Peck finds her perfect fit. “I’ve always been into riding motorcycles,” says Peck, who was born in Canada, raised in Cairns and moved to Melbourne at the age of four before relocating to Sydney for work. She’s even been on riding trips abroad with her dad and stepmother – from South Africa to Sri Lanka and Mexico. “It was my dad who got me into motor sports and riding bikes,” she says. “It’s a love I’ve had ever since I was a young girl. To land a gig as a motor sport presenter and be doing it three years on is my ultimate dream job.” But when it comes to riding gear, Peck says the choices haven’t always been great. More than just a partnership for the sake of exchange, she says joining Saint CC made sense because the brand appealed to her style.
“It’s always been a battle for women, more so than men, when it comes to find cool protective clothing you can wear,” says Peck. “Riding gear for women has always been superbly ugly, adorned with too many diamantes, and when Saint CC approached me it felt like a godsend.” Saint worshippers include Hollywood’s Ewan McGregor and Eric Bana, who are regular customers of the denim and workwear range. There’s unbreakable denim with a protective safety feature – you get a four-second fabric protection when you slide off your bike – and they’re doing what few have in the denim space. Peck says she hopes to attract more women to the sport via her TV role. “There’s not a lot of mentors to look up to the

It’s important young girls feel they can do anything.” Away from sport, she’s got a passion for wine. “You’d really impress me with a bottle of Savaterre or a Giaconda chardonnay,” she smiles. “I do enjoy learning about wine. How to make good food choices
I
f you have no control around food, read this. When you first start your health journey, you may find it hard to steer clear of temptation and stick to your guns when it comes to making good food choices. You may even find it laughable when people who are farther along their journey tell you that they honestly prefer healthy foods but, I promise you, that will eventually be you, too. I know it can seem like the mental battle to resist the Cadbury or put down the Pringles will never end, but, before you know it, the cravings will be gone and your tastebuds will have adapted to all the good stuff. There’s no denying that discipline can play a huge part in healthy eating. The good news is that as you go farther in your healthy lifestyle, it becomes easier to choose the healthy option and simply say no. This isn’t going to happen overnight, so if you’re
feeling a little stuck and struggling to make the right choices, here are some tips that may help you on your way. REMOVE TEMPTATIONS FROM THE HOUSE \
You want to eventually get to the point where you can treat yourself to a scoop of ice-cream without finishing the entire tub. I know that for some people, practising self-control simply isn’t possible in the beginning. As you strengthen your assertiveness muscle and know when and how to stop, balance will come and you won’t risk overdoing it. However, until you get to this point, sometimes it’s easiest to simply remove temptation. Remove the junk food, processed crap, alcohol or whatever it is that sets you back, and you will be less tempted to indulge in your vices.

Dr. Tony Stubbs, Eye Surgeon, says that just about anyone can have their vision restored and be rid of their glasses for most of the time. And this is without the use of laser surgery. Dr Stubbs formerly at the Royal Victorian Eye Hospital who has worked with the Fred Hollows eye department at the Prince of Wales Hospital in Sydney, says he began his career through the inspiration of his father, Dr Maxwell Stubbs. “My father was a pioneer in cataract implant surgery from 1963! He has now passed away but some of his patients still come in for a check-up. Not only is this inspirational, it also demonstrates that good surgery outlasts the surgeon,” Dr Stubbs says. A specialist who helps people who have been advised they are unsuitable for laser surgery, Dr Stubbs is also committed to demonstrating that age, corneal distortion or astigmatism are no barriers to eliminating the need for glasses. One of my best moments was treating a 12-year-old girl who was struggling at school because of poor vision due to congenital cataracts even with the use of thick glasses. Now 10 years later, she still has 20/20 vision without glasses. That inspires me. “Seeing my patients’ bright smiles after surgery, as they stop squinting and can read without glasses, is definitely the best part of my job.” No referral is needed and no out-of-pocket expenses are incurred for an assessment to enable all options available to be considered.
