The Calderon’s Delicious Ceviche

As children, our parents taught us the importance of doing things as a family: prepping and helping in the kitchen was expected. I’ve embraced being in the kitchen and creating memorable experiences and adventures with my kids.
INGREDIENTS
• 1-2 big tomato(s) - you can use colorful tomatoes for a beautiful colorful dish
• 1 serrano pepper or jalapeno (for less spice, remove seeds) keep seeds off to side to adjust spiciness




• 1/4 cup of white onion
• 1-3 lemons - depends on juiciness
• 1-2 limes - I prefer more lime juice more than lemon
• 1-2 tablespoons of butter (to sauté shrimp)
• Deveined Raw shrimp (jumbo 2 lbs bag)
• 1 mini yellow, red, and orange bell peppers (optional)
• 1 bunch of cilantro (use to your liking)
• Salt & Pepper to taste
RECIPE


Step 1: Use a pan to melt butter, add clean and deveined raw shrimp on medium heat for 2 minutes. Mix and stir as cooking. You don’t want to overcook the shrimp. Once cool, chop the shrimp into 3rds (or your preference in size). The juices of lemon/lime will cure. I cook until it’s about 90% done. Set aside to cool in a separate bowl.
Step 2: Chop all the vegetables (medium to fine), I don’t recommend that you use a food processor because at times it can let out juices. (Set aside in a separate bowl). Add salt and pepper to taste. Taste before storing in refrigerator. The idea is you let this sit as long as possible to allow time to sit for flavor to marry.
Step 3: Refrigerate separately and the next morning, you will mix all ingredients together. Taste for flavor and return back into the fridge (approx. 2 hours) until it is ready to serve.
You can use more or less of any of the ingredients, the proportions listed above are only a guide, the uniqueness of preparing ceviche is that you have the flexibility on how much to use based on your
preference.

HOW LONG HAVE YOU LIVED IN THE NEIGHBORHOOD? 8 years.
IS THERE ANYTHING YOUR NEIGHBORS MIGHT KNOW YOU FOR? We just moved from the Country Club area to across the street from Uptown. These neighbors probably know us as the new family on the block which just moved into the Maloney Custom Built Home. They may also know us by our cute kids! However, there are a ton of kids on the block so they blend in easily. In the future I hope we are known for our kindness and interest to supporting our community.
TELL US ABOUT YOUR KIDS. Lincoln goes to Pre-K at the STEM Studio and Nature School at the Park District. He is a creative, outgoing, loving, sweet, fast-pace little boy. He loves to be with mom, dad, and sister. His interests include building robots, learning about science, and doing hands-on exploratory
projects. Leighla is a calm, joyful, silly, and peaceful little baby. She loves all things music. She likes to go to the “Jigglejam” or “Hello Baby” classes. She gets really into these classes and even tries to be the teacher’s helper. Both of my kids are big cuddlers and we spend a lot of time just enjoying the special time we have with them. They are only young for so long!
WHAT DO YOU LIKE TO DO TOGETHER AS A FAMILY? We are together a lot. Mom and dad have a flexible schedule which allows for a lot of direct attention to the kids and each other. Weekends are spent with grandparents, cousins, play dates, and just enjoying time together. In the summer we spend all our time outside, going to the farmers market on Saturday mornings since we can walk right across the street to it.
WHAT ARE YOUR PROFESSIONS? I am the founder of MMC Educational Consulting and Staffing. I was a school psychologist for 10 years until I had my son in 2020. I ended up never going back after maternity leave and started my own company focused on staffing school psychologists in the Chicagoland


area. In a few short years the company grew to 35+ employees. It recently was acquired which has allowed me to get back to what I love most - being a mom. Although, I am staying on with the new company, this still allows for great flexibility! My husband, Steve works for Northern Trust as a Vice President of Wealth Management/Incident Management. He worked really hard to support us while I got MMC up and running. I am really proud to have him by my side.

ARE YOU PASSIONATE ABOUT ANY CHARITIES? We rescued our dog from a local dog rescue, Players for Pits, 7 years ago. We fostered 2 dogs with them. It was one of the most rewarding experiences, but a lot of work! This year we are having a small charity event at our house in which we will take proceeds and donate to a local animal rescue or shelter.

Former Park Ridge mom helping kids fight cancer one trip at a time Compass to Care Childhood Cancer Foundation

COMPASS TO CARE, a 501(c)(3) charitable organization provides a free Non Emergency Medical Transportation (NEMT) solution to access life-saving cancer treatment and clinical trials for children fighting cancer and facing poverty or cancer-related financial toxicity (CRFT).
Compass to Care was founded out of Michelle ErnsdorffMay’s deep personal experience and passion. Michelle has many ties to Park Ridge, after living here for years. As a child, Michelle battled kidney cancer, and her parents’ struggled financially during that time. Her father once recounted hitchhiking over 200 miles home from the Mayo Clinic after an unexpected hospitalization because they couldn’t afford the journey back to work. Recognizing that many families today still face these same hardships when traveling for their child’s cancer treatment, Michelle felt compelled to act. From this personal journey, Compass to Care’s mission was born. Driven by a desire to make a lasting difference, Michelle founded Compass to Care, The Mike & Sandy Ernsdorff Childhood Cancer Foundation, in honor of her parents.






Why is it so important to our community? The best cancer treatment in the world cannot cure a child if he or she has no way to get there. For children whose families are facing poverty and/ or cancer-related financial toxicity (CRFT), getting to treatment can be a real problem. Transportation is a basic but necessary step for ongoing health care. Many families need reliable access to Non Emergency Medical Transportation (NEMT). With research pointing to a risk of relapse when a child misses just one daily dose of chemotherapy in a two week course, Compass to Care can support a child’s cure by providing free NEMT to help children arrive on time, every time treatment is scheduled.

IT’S 10:00 PM. Do you know where your children are? Well, I have teenage boys, so no, not necessarily. Recently, I noticed I am still driving around a lot but spending less time with my kids, especially at night. I am still driving to and from their activities, except now my children are rarely on those commutes with me. They are usually on a team bus, hitching a ride with friends or finding their own way. My wife and I have been relegated to the role of spectator and fan, which we enjoy, of course. The same goes for nights at home; more and more nights are spent on our own, figuring out what to do. This change in situation has allowed us to do things we couldn’t do as easily in the past. Now we can just pop out for dinner, hang out with friends, or watch a movie that doesn’t meet the wants of the 15- to 18-year-old male demographic. We can watch whatever we like. Herein lies the problem: what should we watch?
Living in the time of streaming means we have infinite possibilities, but it also means information overload. Nights on the couch generally start with: “What do you want to watch?” “I don’t know, what are you in the mood for?” Then the search begins, and



before we know it, half the night is gone, deciding what to watch. We divide and conquer, one of us will flip through the streamers while the other scrolls on their phone looking for the right show or movie. We search all the apps: TikTok, Reels, Rotten Tomatoes, you name it, we’re scrolling through it.
People told me that when your kids grow up, it’s important to be with the right partner. Someone who knows you better than you know yourself, a soulmate. I say it’s equally important to be with someone you can enjoyably cuddle up on the couch with while scrolling for TV shows. Luckily, I am with my ‘Scrollmate’, but if you have any good recommendations, let me know!

or the best authentic Italian dining in town, you must visit Nonna Silvia’s Trattoria & Pizzeria! Nestled in Park Ridge for over 25 years, this family-owned restaurant offers a cozy, welcoming atmosphere that makes you feel like you’ve been transported straight to Italy. The owners, cousins John and Steve, bring generations of culinary tradition to life, using cherished recipes passed down from their grandmother, Silvia, and updating them with modern flair.
I invited the Stroll Book Club to this restaurant review. Boy were they ever in for a treat! Our evening began with a delightful selection of antipasti. The Arancini di Riso, filled with ricotta and spinach, were crisp and creamy. We also sampled two of their weekly specials: the Polpo Isabella, a perfectly grilled Spanish octopus, and a Mediterranean Salad marinated in their signature house vinaigrette—both bursting with fresh, vibrant flavors.
Before the entrées, we indulged in two mouthwatering pizzas and their house-made pasta. The Ravioli Caprese tasted incredibly fresh and light. Sacchettini Porcini—purseshaped pasta filled with a four-cheese blend and porcini mushrooms, tossed with pine nuts in a brown butter and crispy sage sauce. Simply outstanding! And just when we thought we couldn’t eat another bite, the Risotto di Mare arrived—an exquisite medley of clams, PEI mussels, wild Gulf shrimp, scallops, and calamari in a delicate plum tomato sauce. A seafood lover’s dream!
For dessert, we savored every bite of Nonna’s Tiramisu, Limoncello Mascarpone Cake, Pistachio & Ricotta Cheesecake, and my personal favorite, a refreshing Pistachio Gelato. A special shout-out goes to our exceptional waiter,
John Giannini, owner with the STROLL Book Club.

I’M RUCHI SHAH, an optometrist and the owner of Norwood Park Eye Center since 2024. Our practice has been serving the community since 2016, offering full-scope eye care, including comprehensive exams, emergency care, dry eye management, myopia control, and specialty contact lens fittings. We also have a beautiful optical and love helping people look their best!
I was born and raised in Gujarat, India, and moved to the U.S. with my family in 2000. I grew up in New Jersey and I moved to Chicago after marrying my husband, who has lived here his whole life. My husband and I have two sons, ages 4 and 2.
What makes our practice unique is that we can provide care for everyone. We’re equipped to manage and treat a wide range of eye conditions, from prescribing glasses and contact lenses to addressing glaucoma, macular degeneration, cataracts, flashes/floaters and eye pain or discomfort. What sets us apart is our full-scope care and availability for emergency eye visits. We understand how frightening eye problems or injuries can be, so we make sure to see patients the same day or after hours when needed. More recently, we added an edging machine, allowing us to cut some lenses in-house—so our patients can get their glasses in just 3-4 days instead of waiting over two weeks!
The most fulfilling part of my job is building trust with my patients and making them feel comfortable. One of the best feelings is when a patient comes in for an exam, and then a few weeks later, I see their other family members—it shows they truly trust me with their care.

HELLO! MY NAME IS FLUFFY and I live in my own little house outside the rest of the family. My best buddies are Elvin and Emil.
Family members: Zarif and Melanie, Elvin (7), Emil (4).
Street Fluffy lives on: Western Ave.
Is Fluffy an angel or a bit of a troublemaker? Fluffy is a sweet bunny who loves attention! He will run around in circles super fast when we come outside to play with him.
Is there anything neighbors or pets would know Fluffy for? He did escape once and so our two closest neighbors were in on the hunt for Fluffy! It was a group effort, and thankfully we were able to get him home safely.
Has he ever gotten into trouble? He has been working on a hole under the fence in his little yard. One day, it was big enough for him to crawl through to the other side. Fluffy thought - Freedom! Where do I go first? I started hopping around the backyards in the neighborhood and was soon discovered. My human mommy apparently saw me through the window and came running out with the boys in tow. I was smart enough to realize they couldn’t reach me if I stayed under the neighbor’s car. After a while, my human daddy came looking for me. At that point, I had ventured off into a lush garden of greens. He slowly came towards me and convinced me to come back home. I surely did not want to be a coyote’s dinner that evening!



Personality traits? Spunky, kind, and thrifty. He won’t take no for an answer when knocking on the window. Being ignored does not make him back off, he will only knock harder.

What is Fluffy’s favorite place? Fluffy’s fenced in backyard. He has lots of space to run around and get lots of exercise! This fun park includes stacking towers that can be knocked over, a couple of balls that he will roll with his nose, and two tunnels to run through.

What is his pet peeve? Being ignored when I knock on the window of the TV room.

What street do you live on? I live on Western.
What school do you go to and what grade? I go to Carpenter Elementary school and I’m going into 3rd grade.
Do you have any siblings? Yes, I have a brother named, Logan and he is 10 years old. I also have 4 fish and 1 snail.
Do you do any sports? Yes, I do gymnastics, soccer, and cheer. I started gymnastics when I was four, but then I stopped, and started again this year. I started soccer when I was seven and cheer when I was five. My favorite thing about gymnastics is the floor event because I get to tumble. My favorite thing about soccer is kicking the ball and for cheer is cheering for the football team.
What do you do in your free time? When I am not doing anything, I like to play with Barbie dolls or do art. I mostly color and make bracelets but for my birthday I got a headbandmaking kit so now I can make headbands too.
What is your favorite memory? My favorite memory is starting gymnastics. It’s my favorite memory because I remember the first time I stretched my body out and it was nice.
What is something unique about yourself? My love for cicadas. Most people don’t like the cicadas when they come but I think they are so fun especially to play with. Last summer, I went to a graduation party and I filled up a cup with cicadas and we went to scare the girl and her friends and they all said ew. It was really funny.
Have you ever met someone famous? I haven’t actually met anyone famous but I have seen Simone Biles.
What do you want to be when you grow up? I want to be a marine biologist.

What is your favorite thing to do in Park Ridge in the summer? Going to Centennial Pool with my family.
What is your favorite Park Ridge park? Carpenter School Park is my favorite.

Mary, Seat of Wisdom’s teacher gives back, teaches by example

Ask Mrs. Z what’s special about Park Ridge and you’ll hear the words family and community as she tells story after story of the 60 years she’s called this town her home. Judy and her siblings attended Mary, Seat of Wisdom and she been teaching at Mary, Seat of Wisdom for over 25 years. Students know her as Mrs. Z, the religion and science teacher, the teacher who started Kids Who Care, and the teacher who loves every child she has taught and puts all her effort into helping them become their best selves.
Judie and her husband Ron (who were college sweethearts) could have settled anywhere but for Judie there was only one place that felt like home and where she wanted to raise their daughter, Allison. That was Park Ridge. Allison followed in her mom’s footsteps and attended MSW.
The town and the school come together for Mrs. Z through her projects with Kids Who Care, a club that meets monthly to do or lead a service project, including sending candy to the soldiers at Halloween, sending food to the Park Ridge food pantry at Thanksgiving, raising money for breast cancer research and making bracelets and sending them to various organizations to show that the kids at MSW care.

Mrs. Z loves working at MSW, where Mrs. Due, a wise, driven, compassionate principal leads a dedicated staff of teachers who love children, who love to teach, and who are privileged to work together to give their students a nurturing environment.
Mrs. Z is in her element when she is giving back. She loves that she has been fortunate enough to spend her life in the small town in the shadow of the big City. As an 8th grade teacher, imagine the thrill of seeing two of your former students walking the streets of Park Ridge as new members

of the police force, or heading into Daniel’s Charcuterie and seeing Daniel - her former student. Another thing that Mrs. Z enjoys doing is flipping through the latest issue of Stroll Magazine, where she oftentimes sees and reads about her current and former students! Congrats Judie! You are POSITIVELY PARK RIDGE!

Street you live on: Knight Avenue.
School you attend and grade you’re in? Carpenter. I’m going into 3rd grade.
What sport do you play? Soccer.
What inspired you to get started with soccer? I wanted to shoot a goal like Mallory Swanson and show the boys that girls can play too!
What position do you play? Forward and Goalie, my mom helps me locate the ball from behind the net when I can’t count on my vision.
What do you enjoy most when playing soccer? It makes me feel like I can do anything. My parents weren’t sure I could play being visually impaired but I like showing them I can.
What is your proudest moment? I finally was able to score my first goal this year. My mom and dad worked with me everyday to help me figure out different ways to play due to being visually impaired.
Who is someone you admire? Mallory Swanson. I watched her play in the Olympics and I admire that she won a gold medal.
What advice do you have for others looking to get into soccer? Never give up, you just have to work hard at it.
Beyond sports, what do you like to do? I play the piano. My piano teacher came up with a color system so I can read the music notes. I’m learning Braille too.
If you were to continue playing soccer, what do you hope to become or accomplish someday? I want to be a soccer player like Messi or Ronaldo.
