In the Batelina tavern, David and his family prepare specialties with the fish that his father Danilo catches, cultivating intense original tastes of the Adriatic Sea.

The story of Batelina began in 2000 as a modest family-run tavern in which we (the Skokos: mom Alda, the middle child and the only son David and father Danilo) intended to sell our own catch prepared in a way we have always been preparing it at home. My mother, who is a superb cook of traditional fishing cuisine, had the final word in the kitchen. Since we are a family that for four generations reckons on fishing for income, our kitchen is mainly based on our own recipes and a long tradition of cooking exclusively from the daily catch. Therefore Batelina's offer has been significantly different than most local restaurants’ whose menues are organized by the chef's preferences or the wishes of guests. We dedicated our efforts to that case of fish my father brought from fishing. After the first few harder years our guests were mainly starting to trust our advice and menues which back then were more traditional, typical for our region and only seasonal. In the last ten years, since I started to cook with my

mother and serve our catch, our menu sometimes takes a more extreme note. Dishes such as shark liver pate and monkfish tripes were born under the influence of those crazy uncles and old fishermen who had to eat them in order to prove their manhood or just to make it clear that they reached a higher level of fish consumption. For long we have experimented and worked on these dishes to make them suitable even for those less extreme palats. Such a

step forward was soon accepted by our clients and the growing number of foodies became a part of our regular clientele. Our menu becomes a blend of traditional and bizzarre. Our wish is to present everything that a fishing net takes out from the sea, from first class fish to small (blue) pelagic fish, fish's dried eggs (butarga), anemonas, edible fish intestines, large predator's bone marrow to the antipodes - tiny shrimp that keeps our waters clean. We believe that, for sustainable fishing and conservation of our eco system, we should try to appreciate a complete fishing catch, regardless of what is caught, provided that it is not in closed seasons (when it is forbidden by law to fish). It is rude and unfair towards labor of fishermen to consume only certain types that meet the general criteria (and because of that are on the brink of extinction) and ignore all the abundance of sea life that surrounds us and is also nutritionally much better and more environmentally friendly. Our wine, olive oil and herbs and spices offer is exclusively regional-Istrian. We are lucky that we live surrounded by beautiful ingredients and people that still appreciate and grow fresh, organic food. We are closed in August because of lack of fish, and in January for holidays and trips to far, exotic places for fun and inspiration. My other passions, in addition to my family and all previously mentioned, are motorcycles and tattoos.
