Gaëtan Joly Chef des cuisines du 1728 Nous souhaitions confier les cuisines du 1728 à un jeune talent, curieux et ouvert sur le monde, à l’écoute des goûts et des saveurs.

Notre choix s’est porté sur un jeune chef de 29 ans déjà doté d’une solide expérience dans les temples du goût.

3 Chefs ont plus particulièrement marqué Gaëtan JOLY : Marc MENEAU, William LEDEUIL, Maxime MEILLEUR. C’est aujourd’hui une cuisine signature personnelle que propose Gaëtan JOLY au 1728 et c’est également l’occasion de renouer avec nos racines sur les thème de la nature et du voyage.
