Serves: 6 Prep time: 50 minutes Cook times: 10 minutes
Ingredients 1/2 cup olive oil 1/2 cup ranch dressing 3 tablespoons Worcestershire sauce 1 tablespoon minced fresh rosemary 2 teaspoons salt 1 teaspoon lemon juice 1 teaspoon white vinegar 1/4 teaspoon ground black pepper, or to taste 1 tablespoon white sugar, or to taste (optional) 5 skinless, boneless chicken breast halves cut into 1 inch cubes Directions 1. In a medium bowl, stir together the olive oil, ranch dressing, Worcestershire
sauce, rosemary, salt, lemon juice, white vinegar, pepper, and sugar. Let stand for 5 minutes. Place chicken in the bowl, and stir to coat with the marinade. Cover and refrigerate for 30 minutes. 2. Preheat the grill for medium-high heat. Thread chicken onto skewers and discard marinade. 3. Lightly oil the grill grate. Grill skewers for 8 to 12 minutes, or until the chicken is no longer pink in the center, and the juices run clear.

Preheat oven to broil. Slice bread into 1/2 inch slices. 2. In a medium-size mixing bowl, combine Romano cheese, garlic, and cream cheese. Spread the cheese mixture onto the

Ingredients 2 tablespoons sesame seeds 1 tablespoon poppy seeds 1/2 cup white sugar 1/2 cup olive oil 1/4 cup distilled white vinegar 1/4 teaspoon paprika 1/4 teaspoon Worcestershire sauce 1 tablespoon minced onion 10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces 1 quart strawberries - cleaned, hulled and sliced 1/4 cup almonds, blanched and slivered
sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour. 2. In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.

1. Preheat oven to 325 degrees F (165 degrees C). Grease a 6-cup muffin pan. 2. In a medium bowl, mix together the graham cracker crumbs, sugar, and margarine with a fork until combined. Measure a rounded tablespoon of the mixture into the bottom of each muffin cup, pressing firmly. Bake in the pre-heated oven for 5 minutes, then remove to cool. Keep the oven on. 3. Beat together the cream cheese, sugar, lemon juice, lemon zest and vanilla until fluffy. Mix in the egg. Pour the cream cheese mixture into the muffin cups, filling each until 3/4 full. disturbed as they perform the mating rituals of spring. Portions of the refuge are closed to the public during this crucial time, but many viewing opportunities still exist. The most optimum times for viewing wildlife occur around sunrise and sunset. But sometimes even an afternoon visit can be rewarding to the quiet, watchful observer. To increase your chances of seeing wildlife, take a journey on the Blackbird Wildlife Drive. This
five-mile drive follows the edges of lakes, marshes and meadows. If you feel inclined to exercise, hike the two-mile long Old Indian Hiking Trail and experience the beauty of the maple basswood forest. Another option is to venture out on the North Country Trail which traverses 14 miles through the southern half of the refuge.

There are many varieties of fish to be caught including crappie, walleye, sunfish, northern pike and bass. A fishing map and regulations can be obtained at the information kiosks located at refuge entrances.
VISITOR CENTER If you’ve got questions, enthusiastic volunteers have answers! They are eager to help you make the most of your visit. Check out the interactive exhibits and learn about the diverse habitats which support Tamarac’s many species of wildlife. Learn about the historical use of the refuge including that of the Ojibwe Indians and the European settlers. Be sure to view the large screen presentation entitled “Tamarac: Its Life and Legends.” Before you leave, browse the Tamarac Bookshop, operated by the Friends of Tamarac. Proceeds from sales support educational programs at the refuge. The visitor center is located nine miles north of Hwy 34. Visitor center hours are Monday-Friday, 8 a.m.-4 p.m. and beginning May 16, weekends 10 a.m.-5 p.m.
MOVIES AND ACTIVITIES • Wildlife Excursions will be offered every Thursday through August at 10 a.m. beginning June 9. Explore the refuge with a knowledgeable guide. Search for wildlife and learn about the cultural and natural history of the refuge. Meet at the visitor center. • Wild Wednesdays! 10 a.m., June-August. Explore the world of nature with your child during this hour long adventure geared for 3-6 year olds. REFUGE SPECIES SPOTLIGHT: AMERICAN BITTERN
Some species don’t seem to mind putting on a show for the casual observer. Without hesitation male Red-winged Blackbirds raucously perch at the top of reeds, showing off their crimson wing patches, called epaulets. Male Wood Ducks offer striking multicolored displays of breeding plumage in the sheltered opening of a pond. Sandhill Cranes perform elaborate mating dances visible in open wetland and prairie habitat. SUMMER SCENE | MAY 2015 | 25
But for the most part, wildlife makes its living by being elusive. As a matter of survival, prey and predators alike use camouflage to remain undetected from each other. The secretive American Bittern is a master in this game of hide-and-seek. Unlike Tamarac’s conspicuous marsh inhabitants like the Red-winged Blackbird or photogenic Trumpeter Swan, the solitary American Bittern is rarely seen, even when sought out. If detected, it will not flush like many other birds. Skilled at the art of optical illusion, it will posture its spear-like bill skyward to mimic its cover of marsh reeds. The bittern will sway along with the breeze, making its vertical streaks of tan and white plumage indiscernible from the surrounding vegetation. The American Bittern, like more commonly seen herons, patiently pursues prey, often standing like a statue in shallow water, waiting for fish, amphibians, reptiles, and small mammals that do not perceive its presence. Insects and crustaceans also form a large part of the diet. With its elusive nature, the chances of identifying 26 | SUMMER SCENE | MAY 2015
this bird by sound is more likely than by sight. The male American Bittern announces his presence to potential mates and rival males with a bellowing call, heard up to a half mile away. The unmistakable call resembles the gulp of water enveloping an oversized pebble tossed into a stream and sinking to the bottom. Others compare the unique sound to an old-fashioned water pump, earning it the colorful nickname “slough pumper.” The distinctive call is made by inflating their esophagus, allowing their slender neck to puff out and amplify the sound. Tamarac National Wildlife Refuge and other managed wetlands provide important freshwater habitat for this migratory bird. While the breeding range of the American Bittern is widespread, loss of wetland habitat to agriculture and development has contributed to population decline in recent years. Listen for the bittern’s call during the spring breeding season and scan the tall grasses of the shoreline. If we wait as patiently as the slough pumper, we may be lucky enough to catch a glimpse.
