As summer 2025 arrives in full swing, there’s no better time to reconnect with the joy, warmth, and wonder of the Caribbean. Here at Divi Resorts, we’re kicking off our Summer of Fun by preparing for your next great escape, bringing exciting updates, mouthwatering flavors, and budget-friendly ways to enjoy your favorite destinations.
At Divi Aruba Phoenix Beach Resort, we’ve opened our brand-new Zen Terrace, offering private cabana rentals in a serene beachfront setting. Renovations are now complete on Beach Tower Buildings B, C, and D, as well as all Phase 1 Villa Suites, creating refreshed, modern spaces with all the comforts you expect. Plus, Tower Suite Phase 1 renovations are officially underway, with more enhancements on the horizon.
Over at Divi Village Golf & Beach Resort, we’ve completed interior and exterior renovations to Buildings A & B. Renovations to Building D have just begun, and we’ve added new Seabreeze Pool cabanas, updated restaurant furniture, and installed an Instagram-worthy “I Divi” sign right at the front of the resort — be sure to snap a photo! Upgrades are coming to St. Maarten as well, with renovations on our beachfront guestrooms kicking off this July. Read more about resort updates on pages 4 and 5.
It’s always exciting cooking up new culinary experiences for our guests. On St. Maarten, we’ve got new UFO Burgers at Gizmo’s (they’re out of this world), a Big Green Egg grill menu, and new specials at Mix at Oceans. Pureocean Barbados is sporting a refreshed menu and furniture upgrades as well.
On Aruba, our talented Executive Chef Gilbert Flemming (a beloved member of the Divi family for years) has poured his passion into a special Five-Course Wine Dinner you won’t want to miss. Hosted at our beachfront pureocean Restaurant on June 27, this exclusive experience was designed with you, our guests, at the forefront. Read our interview with Chef Gilbert on page 6, where he speaks warmly about his culinary journey and his passion for building harmonious dishes, and shares his favorite dish at the resort! On page 7, get a sneak peek at some of the wine and food pairings he and his team worked so hard on crafting.
We’re wrapping up our “Our Caribbean, Your Way” campaign and giveaway. It’s been heartwarming to hear how each of you experiences the Caribbean differently, from solo scuba adventures in Bonaire to honeymoons on Aruba and family feasts under the stars in St. Maarten. Executive Chef Gilbert Fleming pureocean at Divi Aruba Phoenix
After chatting with Executive Chef Gilbert Fleming of Divi Aruba Phoenix, we left the conversation inspired and hungry for burgers, dillcrusted salmon, and some good wine. Fleming’s love for the culinary craft, his care for quality, and his excitement about sharing food-focused experiences with guests are unmistakable.
How long have you been Executive Chef at Divi Aruba Phoenix, and how has the food and beverage program evolved in that time? I’ve been here for four years. We have definitely seen an increase in food quality, service, and guest satisfaction. A lot of that comes from training and consistency, and new products — we opened Wave Shack bar and grill recently.
At pureocean, we’ve seen a big change. We introduced a new menu that is more contemporary, with a new style of presentation. At first, it was difficult for some of our return guests who were used to the old offerings. But now we’re hearing more and more guests, including owners who stay here every year, say, “I didn’t use to dine here, now I have to come every night.” Every day I tell my team: we’re not here to meet expectations. We have to go beyond. We keep pushing to be better, always with passion and love.
What makes cooking in Aruba unique?
The international culture here. We get to explore with so many ingredients — Dutch, Caribbean, American, Latin influences. But the most important thing is love and passion. You have to respect where the ingredients come from. The people who grew it, the people who brought it to your hands. That’s the key. And our guests, they’ve traveled far to be here — we want them to try something they want and that they haven’t experienced before.
What’s one local ingredient you especially love working with?
So much - even the greens like the arugula, romaine, and oak leaf. The way they grow here — sun, climate, soil— it gives them a different character. When you mix those with imported seeds and flavors, it creates something truly unique. I also love pica di papaya. It’s a local hot sauce made from papaya and it changes the whole plate. I always tell people to take a bottle with them when they leave at the airport. As a chef, you always have a bottle or two with you!

CHEF GILBERT!
What’s one dish at Divi Aruba Phoenix you think every guest should try?
[Laughs] That’s a hard one! There are many. I don’t want to sound too simple, but I would say the dillcrusted salmon. It’s very balanced. You have the buttery, nice Atlantic salmon, dill-lime crust, miso reduction, asparagus. You get the Asian flavors and the amazing dill crust. That’s one of my gotos. Another one is the rack of lamb. That’s also a favorite for guests and a great dish overall.
What’s something the kitchen has taught you that applies to life outside the kitchen? You’re always learning. Every day. And, no matter how much you know, you can always always learn more from the people who know less than you. They want to share what they’ve learned. It could be a family recipe, a storage trick, a way to manage long hours. If you’re a good teacher, you listen to everybody — not just the ones with the most experience.
What’s your personal go-to comfort meal?
I’m a simple guy. I love a cheeseburger! [Laughs]
What’s your burger order?
So simple. Medium beef patty, American cheese, caramelized onions, and a lot, lot, lot of pickles. I could eat that every day.
You’re hosting a special Wine Dinner event. How did you approach this menu? Did the food or the wine come first?
To be honest, as the chef, I always go for the food first. We didn’t just pick what we wanted, we started with what guests already ask for. The sauces, side dishes, main courses, and even wines that we know they like.
Then comes the hard part: the wine pairing. You taste until it’s perfect, and the wine becomes part of the dish, not just a complement.


A WINE DINNER CRAFTED WITH CULINARY PASSION
After years of leading the kitchen at Divi Aruba Phoenix, Executive Chef Gilbert Fleming has found himself newly energized. The occasion? A five-course Chef’s Wine Dinner at pureocean Restaurant, built not just on technique, but on emotion, experience, and attention to what guests love most.


BRAISED OCTOPUS PAIRED WITH TERREBONNE CÔTES DE PROVENCE ROSÉ
Succulent Spanish octopus, slow-braised in white wine and citrus, then oven-roasted for a smoky finish. Served with roasted baby rainbow potatoes, pickled onions and peppers, confit cherry tomatoes, charred leeks, and herbed olives. Finished with black garlic aioli, Peruvian aji crema, basil coulis, and microgreens.
Why It Works:
Terrebonne Rosé brings refreshing acidity and notes of wild strawberry and citrus peel that cut through the aioli’s richness and brighten the octopus’s natural sweetness. The wine lifts the dish’s smoky undertones and echoes the citrus and pickled elements. Each bite and sip moves in harmony—briny, creamy, smoky, and vibrant.


FILET PAIRED WITH BLACK STALLION CABERNET SAUVIGNON
Pan-seared USDA tenderloin crusted with fresh thyme, rosemary, and cracked black pepper, served over silky garlic mashed potatoes with wild mushrooms. Topped with decadent black truffle cream, red wine reduction, herbed jus de veau, crispy onions, and microgreens.
Why It Works:
Black Stallion Cabernet mirrors the filet’s depth with bold structure, dark fruit (blackberry, cassis, plum), and firm tannins. Earthy truffle and umamirich mushrooms enhance the wine’s complexity, while the red wine reduction ties everything together. A pairing of intensity and elegance, building richness with each bite and sip.
"You can have great food, and if the wine is bad, the whole experience falls apart. But when it works, it creates a whole festival of flavor in your mouth. Even after you’re done eating, the acidity, the tartness, the salt, the sweet, it keeps dancing on your tongue. That’s what I look for. That’s when I say: this is it. It's a very exciting feeling when you get it right. I can't wait for everyone to experience that."

Meet Vicki Cimmino, a President’s Elite Divi Vacation Club Member from Long Island, New York. For Vicki and her extended
family (many of whom are also Club members) Divi vacations are more than just getaways; they’re a cherished family tradition that began back in 1978 with her grandparents. What started as a simple trip to Aruba has grown into a multi-generational legacy of sun, sand, and togetherness.
How long have you and your family been members of the Divi Vacation Club? We’ve been going to Divi forever — since 1978! It started with my grandparents. My grandma was a teacher, and they first visited Aruba for a teachers’ conference. From there, it just became a family tradition. My uncles and my dad started going, and now it’s a family thing.
Wow, that’s a long-standing tradition! How often do you go now? I usually go for two weeks in February, and my uncle goes for about three months every year. Sometimes we’re a group of 10, and sometimes it’s 20 of us! It’s a real family reunion.
Have you always used the Divi Vacation Club program? Yes, I’ve only ever done the Club. I really like the points system. It gives you the flexibility to travel when you want, and you’re not tied to a specific week. I like that you can arrive when you want, like on a Tuesday or Wednesday when flights are cheaper. My family loves to golf, so they use the golf discount. I definitely use the food and beverage discount, and the Aruba Aloe promotion.
Where do you usually stay? We used to stay in the Dutch Village and I loved the rooms there. Now we stay at Divi Village [Golf & Beach Resort]. The value there is just incredible.

What’s your vacation style? Are you beach people, do you like to do excursions, just hang by the pool? What are your must-do activities when visiting Divi resorts? All of the above. If it’s just me and the family, we’ll hang out by the pool or beach. The sunsets are the best I’ve ever seen in my life. I’ve brought friends, and we’ve done the butterfly farm, the catamaran cruises, some De Palm Tours. But most of the time, we’re just New York beach bums escaping the winter.
Can you describe a typical day at your favorite Divi resort? It’s all about relaxing. You’ll find us lounging by the pool, grabbing something to eat, walking the beach, and just enjoying the island breeze. My cousin has a bunch of kids, so it’s a mix of family fun and adult downtime.
What does it mean to have multiple generations of your family as part of the Divi Vacation Club? It’s really special. We feel like we’ve watched the resort grow up over the years. It genuinely feels like home. I almost feel like I had to join because of the deep family connection!
Have you introduced friends or extended family to Divi? Absolutely. It’s common to see the same people year after year at the resort, and over time, they become friends. I come with my uncles, cousins, lots of extended family. I’ve brought friends, and then they bring their friends.
What’s been your most memorable or meaningful moment during your Divi vacations? The family time, without a doubt. Just sitting around with a glass of wine, eating, and spending time with family. Especially my dad — he doesn’t always come, so when he does, it’s extra special.
If you could describe the Divi Vacation Club experience in three words, what would they be? Relaxing. Fun. Warm.

FUN IN BONAIRE!
We love this resort. Have been going there for many years. The weather is perfect. The accommodations are very good. Its walking distance to downtown and church. There are also a lot of stores close by. The staff is outstanding. The dive shop is great. They work with a lot of people with disabilities. Great snorkeling right at the resort. We even played pickleball in Bonaire at a sports complex. Hope to be back next January.

GREAT DIVE RESORT!
This was our first trip to Bonaire. Our selection of Divi Flamingo was based on recommendation of friends and a local dive shop. We left at the end of the week making plans to return as soon as possible. The resort is fantastic. It is quite picturesque and located just at the edge of downtown and close to shopping and restaurants. The restaurants on site provide gear service and great food. The dive shop is on site as well with the boat dives and fantastic shore diving. This is definitely a place you want to check out before booking a resort on Bonaire.

CELEBRATING TWO YEARS OF FEEDING HUNGRY CHILDREN ON ARUBA!
This June marks the second full year of our Ban Uni Man Pa Cria Nos Muchanan program on Aruba, wherein a dollar for each day of your stay is donated, fee-free, to a charity that provides children at Aruba schools with a nourishing breakfast. Since its launch, we’ve raised over $264,000 thanks to your generosity, making significant impact on generations of Aruban children.
5TH ANNUAL ALEX NIEUWMEYER GOLF TOURNAMENT
Aruba’s biggest golf charity tournament was, yet again, a hit! The day was filled with great swings, team spirit, and memorable moments on the green. Players followed up with a delicious Mediterranean buffet at Windows on Aruba, but the real treat was this: the event raised AWG 100,000 for the Brighter Future Academy, a school dedicated to helping children with special needs.


BINGO FOR PAWS
Each quarter, Divi Aruba Phoenix hosts everyone’s favorite charity event: Bingo for Paws. This past April, the resort did an Easter-themed version of the event, in partnership with the Luna Foundation. Proceeds were raised for the foundation to increase awareness and promote adoptions.
