Late last year, we were thrilled to reopen Divi Carina Bay on St. Croix. Even more exciting, starting February 1, 2022, Divi Carina Bay will transform into an all-inclusive and adult-only (18+) resort, the only hotel of its kind on the island. The resort has been completely renovated from top to bottom. Plus, US residents don’t need to bring a passport or get covid testing for return travel. Read more about this resort on page 4. Our employee spotlight on pages 6 and 7 features two new members of our team, Dyal Sandhu, the General Manager of Divi Carina Bay, and Pascal van Empelen, our new Divi Dive Bonaire Operations Manager. On Bonaire, Pascal van Empelen joins Divi Flamingo Beach Resort & Casino’s team as the new Dive Operations Manager for the resort’s award-winning dive operation, Divi Dive Bonaire. Hailing from the Netherlands, Van Empelen started diving nearly two decades ago and quickly fell in love with the sport. In 2012, he left his corporate marketing job to pursue his passion as a full-time dive instructor on Bonaire.
Taking the helm as the new General Manager of the completely renovated Divi Carina Bay Beach Resort & Casino and Oceans at Divi Carina Bay on St. Croix is Dyal Sandhu. With over 20 years of experience in the hospitality industry around the world, Dyal says he’s enjoying his new adventure on St. Croix and looks forward to meeting and greeting returning guests and newcomers alike.
What do you love about Bonaire?
Bonaire is my favorite island for diving, hands down. When I first visited nine years ago, I was mesmerized by the island’s beauty both above and below the water. Just a few months later, I moved to Bonaire for a year, and in March 2018, I returned to the island for good. The marine life here is so incredible and I love contributing to the greater good of Bonaire with Reef Renewal Foundation Bonaire and STINAPA.
How do you feel about joining the Divi Dive Bonaire team?
I feel incredibly lucky to be a part of Divi Dive Bonaire’s tight-knit team that not only wins Scuba Diving’s Readers Choice Awards year after year, but also works hard to create and grow new coral reef nurseries at the Calabas Reef, the resort’s house reef.
What is your favorite part of diving?
The joy of nature’s beauty. You can dive a site multiple times and still be amazed by its beauty. Of course, sharing this beauty with students and guests is the goal of any scuba professional, including myself.

What is your main goal as General Manager?
My goal is to elevate our offerings and deliver an exceptional vacation experience so travelers want to return year after year. Guests can expect top-notch service, a safe environment, and a strong team dedicated to helping them create lifelong memories.
What do you love most about your job?
I enjoy nurturing talent and working with diverse teams to build a culture of service excellence and deliver exceptional experiences. Plus, I love doing what I do, so it does not really feel like work.
What are your future plans for the resort?
I will continue building the resort into a destination synonymous with St Croix by providing personalized experiences and building our base for future repeat visits. I will also ensure that we not only follow hospitality trends but also become trailblazers in the industry.

We recently caught up with Windows on Aruba’s Executive Chef Darwin Torres, to learn more about how he and other Divi Resorts chefs ensure nutritious options are always available.
For his low-carb recipes, Torres swaps out white rice and other empty carbohydrates with whole grains and legumes to keep blood sugar levels stable.
“We are committed to making healthy eating easy for guests at Divi Resorts,” said Torres. “I’ve done a great deal of research on nutritious eating and cooking habits, and with that knowledge, I’ve developed delicious recipes that are actually good for you. The key is to surround yourself with wholesome products that are full of flavor.”
“We think you should leave every meal feeling refreshed, reinvigorated and full of energy,” said Torres. “It’s never too late to fulfill your New Year’s resolution to eat healthier, and we’re here to help satisfy your appetite with tasty island cuisine that packs a healthy punch!”
Torres says using assorted fruits, spices, vinegars, marinades, mustards, herbs, exotic roots, and grains in his recipes helps “kick it up a notch’’ without adding unnecessary calories or fat. Cooking with “good” oils like olive, canola, avocado, and safflower also helps keep his dishes nutritious.
“Changing the way you cook your food also makes a difference,” Torres added. “We roast instead of fry, and grill for flavor using low-fat or no-fat sauces and dressings.” Torres’ healthy selections include his savory Grilled Salmon, exotic Stir-Fry Vegetables, mouthwatering ratatouille-style Vegetable Casserole, and many gluten-free and vegan items, among others.

Last year, Divi Flamingo staff members participated in the island’s annual Bon Doet, a day where Bonaire citizens volunteer in the community. The team helped clean up and paint a local animal shelter. Once the work was done, the crew had extra time to cuddle and play with the pups.

Divi Flamingo played host to a host of her own for the Bonaire Awards, a gala event that celebrates Bonaire youth. Nicole Trenidad, a journalist, TV host, and model from Curaçao enjoyed her time at the resort and raved about the friendliness of staff members. 19
