Ingredients 2 cups of washed Omena 2 large tomatoes, sliced 1 large onion, sliced 3 cloves- minced garlic 1/2 Red chilli, chopped Salt to taste 2 tablespoons Vegetable oil

Instructions 1. Select the omena to remove loose scales and dirt. Put the omena in a bowl and soak them in hot water with salt, cover it with a dish cloth and let it sit for 30 minutes or until the water has cooled. Once cooled, strain the omena and rinse them in cold water.

2. Place your sufuria over medium heat and add the omena. stir till i It's Shakshuka! t turns golden brown and becomes crunchy to remove the excess water 3. In a separate sufuria add your oil and add your onions and let it cook till it becomes soft.

4. Add tomatoes and a pinch of salt. Cover and let it cook till it’s all saucy making a thick paste in the mixture then add your omena and keep stirring.

Add garlic. Stir.

5. Let it cook for about 2 minutes without stirring.

Add chilli and let it cook for about 4 more minutes till it’s almost dry.

6. Add your squeezed lemon juice as you stir for 30 seconds Serve hot with ugali.

Ingredients

• Add the garlic, chilies and 10 Matoke small green concentrated tomato purée and cook for a further 2 minbananas utes.

1 tbsp concentrated tomato Pop these into a pressure purée cooker and fill with 500ml wa1 tsp ground cinnamon ter. Pressure cook for 3 whis2 tbsp chopped coriander tles and then switch off the heat. If you don’t have a pres2 tsp ground black pepper sure cooker you’ll need to boil Procedure the Matoke in a big pan of water with a lid until tender, • In a large, non-stick pan, about 30 minutes.

• Allow the Matoke to cool until you can just about handle them. They need to be hot.

This is really important. If you let them cool down too much they will become super starchy and be hard to mash, leaving you with a lumpy finish. Peel the Matoke and mash them with a potato masher until smooth.

• Add the mashed Matoke to the tomato and onion mixture and cook on a medium heat for 20 minutes, stirring all the time. The butter should start to separate from the Matoke at the sides of the pan. Now add the cinnamon, salt, lemon juice, black pepper and chopped coriander and mix thoroughly.

• Serve immediately with hot Chapos (chapattis).

airobi’s top eateries offers a rapidly expanding market as more international cuisine restaurants open across the city driven by a growing middle class, tourists, an influx of expatriates and a simple desire to try something different.

These restaurants have been opening up in major areas around the city while the cuisines are readily available even at food courts in malls.With the ingredients available locally, preparing these dishes has been easy for most restaurants. Nairobi has become home for them and here are some of the places to go to for a taste of some international dishes.

CHINESE CUISINE

A typical Chinese meal will have two things - a carbohydrate or starch like noodles, rice or buns, and accompanying stir fries or dishes of veggies, fish and meat. They use a lot of fresh vegetables like mushroom, water chestnuts, bamboo and even tofu.

Each dish focuses on creating a balance between three aspects - appearance, aroma, and taste.

Here is where you can have a taste of China in Nairobi; China Plate in Valley Road, Double Dragon in Ngong’ Road, Tin Tin Restaurant in the CBD and Taste of China in Parklands.

TURKISH CUISINE In addition to being the refined product of centuries of experience, Turkish Cuisine has a very pure quality. The variety and simplicity of the recipes and the quality of the ingredients are guarantees of delicious meals.

Kebabs are dishes of plain or marinated meat either stewed or grilled. Lamb is the basic meat of Turkish kitchen. Pieces of lamb threaded on a skewer and grilled over charcoal form the famous "Sis kebab", now known in many countries of the world. "Doner kebab" is another famous Turkish dish, being a roll of lamb on a vertical skewer turning parallel to a hot grill. You should also try "Alanazik", "Sac kavurma", "Tandir" and different types of "Kofte" as typical meat dishes.

INDIAN CUISINE With all its exotic ingredients, unfamiliar dishes, and tongue-tingling flavours, Indian cuisine can be both exciting and intimidating. Indian cuisine uses the whole palette of flavours—spicy, sour, sweet, and hot all at the same time—making it something that wants to jump off the plate.

There are a basic 20 to 30 spices that are used in many dishes—cumin, coriander, turmeric, and ginger—and there are an infinite number of ways of using them.

Indian cuisine has an added bonus for vegetarians: For them, it’s one of the friendliest cuisines around. Judicious use of spices and sauces breathes new life into the likes of potatoes, cauliflower, peas, and eggplant.

French cooking may seem sophisticated, but it’s not rocket science. “It’s ultimately about creating a harmonious dish that elevates the quality of the main ingredient. For example, different regions in France may treat chicken differently.

In their soup, stew, and sauce-heavy cuisine, dishes often start with a base of mirepoix, a combination of diced celery, onions, carrots, and garlic. And it’s no secret that French chefs cook with wine every now and again—but it’s never just sloshed into a dish. It’s often added into a hot pan to evaporate so that the concentrated flavour of the wine sips through the dish.

Japanese cuisine encompasses the regional and traditional foods of Japan, which have developed through centuries of political, economic, and social changes. The traditional cuisine of Japan is based on rice with miso soup and other dishes; there is an emphasis on seasonal ingredients.

Side dishes often consist of fish, pickled vegetables, and vegetables cooked in broth. Seafood is common, often grilled, but also served raw as sashimi or in sushi. Seafood and vegetables are also deep-fried in a light batter, as tempura. Apart from rice, staples include noodles, such as soba and udon. Japan also has many simmered dishes such as fish products in broth called oden, or beef in sukiyaki and nikujaga.

She is the official NBA’s Dallas Mavericks team entertainment manager. As a holder of that title, she controls sound at the American Airlines Centre during or after the game. She also anticipates plays and selects best sounds to complement actions.By the virtue of working at the NBA, Ivy’s star is on a gradual rise. She Deejays high profile gigs across the USA, sharing the stage with crème of the crop artists. Various awards and accolades are also flowing her way. She won the Diaspora Entertainment Award (DEAR), and in 2017 she had been nominated for AFRIMMA Awards in the category of Best African DJ USA.We took the time to speak to her about some aspects of her life that you might not know. Watch out for an in-depth interview later on about her career and what the future holds; Tell us a bit about your family.

I’m the eldest of 3. Both my younger brothers actually live in Kenya and one is an aspiring actor. One of my brother’s most notable work includes a recurring role on the famous t.v show Tahidi High.

People don’t know you have quite some history with the Mavericks.

Oh yeah. Before becoming the team DJ for the Dallas Mavericks, I was a ball girl for 5 years. Those are the kids you see sweeping the floor when a player falls, rebounds during warm-ups, etc.

If you could have one food for the rest of your life, what would it be?

If I could eat one meal for the rest of my life, it would be Chapati and Ndengu.

Favourite movie of all time?

My favourite movie of all time is Sarafina, followed closely by Lion King because it was the first movie I saw in a movie theatre, which was actually at Kenya Cinema.

Seeing that you are a basketball team Dj, is basketball your favourite sport?

Yes, but although basketball is hands down my favourite sport, I have also developed quite a liking for football.

What are some things on your to do list?

One of the few things on my bucket list is visiting the Seven Wonders of the World seeing I’m a big history buff. I also really want to go on a game show.

What’s the coolest thing in life for you?

I seriously believe that there will never be anything cooler that I can do in life than being a mother.

I hear that apparently you have some predicting powers.

Haha, but yes. There is an interview that I did with J. Cole in 2010 I believe. In this interview, I correctly predicted the name of his debut album. I also predicted that the Mavs would win the 2011 NBA Championship way before either of those happened.

You have to be cunning to survive these Njaanuary streets. It’s all about treading carefully, and having the right life hacks. Worry not, Dishy has your back covered. Here are some of the back streets of this Njaanuary maze.

1.Buy chapo, mandazi from Mama kibanda. It’s just 10-20 Bob rather than cooking at home.

One of the cheapest and most enjoyable breakfast pieces around 2.Buy madondo (Beans) and green grams (ndengu) from mama pima while also trying to avoid buying canned beans. January doesn’t mix well with gentrification 3.Store egg trays at all times rather than buy per piece.

4.Try small chops of meat either doing it from home or even from your local butcher.

5.Buy big cuts or packages of meat and stretch it out over multiple meals.

6.Divide and freeze any meat you won't use within the week.

7 .Make big batches of whatever you cook and portion out the leftovers to fridge or freeze for later.

8.Buy frozen fruits and veggies.If you're a big smoothie person, buy the more expensive ingredients (like berries) frozen instead of fresh.

Costs way less and they last longer.

9.Take time at the beginning of the week to plan out what you're going to make. Plan your menu for the week on Monday and buy what you need that day.

10.Shop in thrift veggie markets like Gikomba and Marikiti rather than buying from the in estate mama mboga. They are considerably cheaper especially in bulk.

11.Don't fall into the temptation of impulse buying. Be strong 12.Don't pay extra for packaging. Carry you own paper bag /kiondo while going for shopping.

Stop paying for the packaging every time you go out shopping 13.Utilize that backyard shamba and home garden. If you can, grow your own vegetables go ahead do, plant things you'll actually use, like tomatoes and onions.

Apart from funkies, food was really crucial. Some of us had really subpar food daily and that one signature meal that was everyone’s favourite was really valued.

We even had some custom ways of making it tastier.

In this new segment titled ‘Enzi Zetu’, we go back in time to our high school days with some of your favourite celebrities. For our first issue in this new decade, we talk to comedian Vincent Muasya aka Chipukeezy as he takes us into his high school days.

1.Which high school were you in?

Ala, the one and only Tala High School.

2. Take us back to your high school days and tell us about your favourite meals.

Our high school menu was simple. We had Muthokoi daily for lunch. Friday’s was however slightly different as it was served with some meat. That was my favourite.

We even used to mix it up with some Blue Band making it really awesome.

3. Were you friends with the Dining Hall / Kitchen staff?

Yes. The guy in charge was called Mr. Kilema and he was my guy. He used to add me tu nyama and viazi when serving. I also got fairly huge portions when served.

I remember one time he really came through. There was this funkie at our school and I took a girl to the DH to impress her. Luckily, Mr. Kilema came through and we had some muthokoi.

4. Do you cook or eat outside?

I am usually busy during the weekdays. So from Monday to Fridays I eat outside. Weekends however are for eating indoors.

5. What do you cook mostly?

Indomie noodles. It’s really easy and fast to make.

6. What was your first meal to backfire?

Ugali. I remember trying to make ugali but ilichomeka mbaya sana. The whole house was really smoky too.

Through the days I have however perfected my ugali.

I ate Muthokoi daily for 4 years…

Located at the Capital Centre in Nairobi, along Mombasa Road, the establishment has become a focal point of the area serving local residents and tourists connecting to the airport. The restaurant is also easily accessible from the CBD using either private or public transport.

Interior; Sights & Feels “Giving the African food experience a much needed modern makeover,” best describes the insides of Nyama Mama. The outside name banner theme of Nyama Mama is white and black but still manages to be artistic and modern. Don’t let that fool you though, because the interior is a whole splash of colours.

If you’re African, being inside Nyama Mama makes you feel at home, but with a twist. For non-Africans, it feels like home but with an African twist.

There is no single standing color that stands out inside. The walls are red, some black and even cream. The tables have been set out differently in all sorts of variations. The ‘vitenge’ couches are actually a good touch giving the place an African homely touch. There are tables of four or more if you are a huge crowd.

The various artefacts in and around the place give you a nostalgic feeling. Kettles, cups and even plates are not your modern ones. On the wall are also sculptures the Big Five reminding you what beauty Kenya has to offer.

Cuisines

Nyama Mama isn’t a stylish roast house for its classy African setting and appearance only but this is also reflected in their menu. The place isn’t called ‘Nyama Mama’ for no reason.

Their menu is broken down into so many variables and will almost leave you confused.

Their flame grills titled under ‘Mama Grill’ which is served with a choice of sauce (mushroom sauce, pepper sauce, onion herb gravy or mint sauce), mashed potatoes and grilled tender stem broccoli are a huge variety. Some of their signature grills are Grilled beef tenderloin 1600 /-, Lamb chops 2700 /-, T-bone 3600 /-, Rib-eye 3500 /-, Grilled Praw 2500 /-, Pork chops 2000 /-, New York steak 3000 /-

The vegetarians are also catered for in the ‘Shamba la Mama’ menu section. Some vegetarian salads include the Organic garden salad (lettuce, cucumbers, olives, cherry tomatoes, mushrooms, baby corn, citrus & mustard vinaigrette) for 500 /- and the Roasted pumpkin & feta salad (baby spinach, pumpkin seeds, peppers, balsamic & honey dressing) that goes for 600 /-.

Instructions

Here, I enjoyed their Long Island Iced Tea. The Long Island is a potent cocktail that is very easy to screw up. These guys do not. They balance out the flavours nicely and still maintain its potency. For their happy hour, you get a 2 for 1 deal that runs from 5 p.m. to 7 p.m.

Prices range from KES 750 – KES 900

Charlie's Bistro They are good at cocktails. Heck, even if they made you wait a year for a cocktail it would be worth it. At Charlie’s, you get cocktails at a slashed price. You buy them for Ksh 500 bob. This runs from 5 p.m to 7 p.m. Word of advice though, if you are planning on going there on a Friday, leave work early. It is quite the popular joint.

The place reeks of luxury. At first sight, you freak out a little. You are not sure what a night out here would cost you and you probably do not want to find out. And that is the good news. You do not have to find out. Just pop in for their happy hour where it is 2 for 1 on selected cocktails. Plus, it might be the longest happy hour on the list running from 5PM-9PM.

The Tav

Located on the ground floor of the Mirage which is off Waiyaki Way, the Tav is an Irish joint that has a rustic type of feel. Sitting on a building that holds one of Nairobi’s open office spaces it attracts a young crowd.

Their happy hour is on select cocktails where you buy one and get one free. And an exceptionally good treat on Fridays and Saturdays where you get bottomless cocktails for only Ksh 2,000. The offers run from 6 p.m. to 8 p.m.

Igiza Lounge

It is located at Kenya National Theatre. A nice walk away from the CBD. Their happy hour is pegged onto local beers. They come at a reduced price. The same applies for select cocktails as well. The offers run from 5PM-7PM and it is a good joint if for you the CBD hits closer to home. On their happy hour menu cocktails appear to range be around KES 350 (arguably the most affordable) e.g. a whiskey sour and local beers go for KES 200.

Salt Bar and Grill

Salt Bar & Grill is located on the ground floor at the Wine shop, Junction mall. They offer the best selections of Napa Valley wines which are stocked in their beautiful bar.

Other selections of wine being offered include Oak Ridge, Silk Oak, Three Girls and Lodi Estate wine. Happy hour happens every Friday from 5pm to 7 pm where you buy two glasses of selected best wines and get the third one absolutely free.

Newscafe Newscafe is located at Sarit Centre, Westlands. Their happy hour is from 5pm-7pm on select cocktails. Classic cocktails that include the Cosmopolitan, Mojitos, Daiquiri and Margaritas are Sh400.

Their more grandiose cocktails go for about Sh600.

Thrilling Kigali

o, January is here. January is like that moody kinyozi guy- you got to learn how to treat him right, but still you aren't sure if he's going to mess up your hair or not. I mean come on, you can't expect someone to cut your hair nicely if you don't keep them interested in you.

Nobody knows what interests barber Jan, so you can't just depend on football and politics. You got to be wiser, deeper and careful - because Mr. Jan can smell bullshit from a mile away. Try too hard but don't try too hard.

I was in Kigali a couple of weeks ago in December. December is that nice barber everyone loves. The guy has a way of making you trust him. Trusting someone with your hair is one of the hardest thing to do. But Dec has your back. You just sit back, relax and unwind. The guy flows with everything - football, politics, heck the guy even knows about swimming.

I had never been to Kigali before so when my boss told me I was going to Kigali to get drunk and write about it, I said why not. The plane was full of Kenyans headed there for festivities. Kigali Airport is nothing compared to the busy JKIA. My taxi guy was waiting for me, a dude called Patrick something.

"So, what do you do? Are you a businessman?" Patrick spoke English with a French accent.

"No. I'm actually a writer."

"Oh." The look on his face was full of disappointment.

Like he didn't expect a Kenyan writer to look like this.

"So, you write for the big gazettes in Kenya?"

This guy started every sentence with 'so' but I wasn't going to tell him. What arrogant writer corrects people's grammar? Atop their grammatical high horse. So I let it go. I won't tell you about the beautiful, clean and hilly streets. Come on, you've heard all that from somewhere.

The dude at the bar- Peter- in Serena was a Kenyan chap.

It was like meeting a long lost cousin.

I headed straight down in my shorts and hairy legs and got a bottle of Jameson while getting all the stories from Peter. You might find it hard to get stories for your bar guy but trust me, get a Jameson whisky and a fellow Kenyan behind the counter in a foreign land and you're good to go.

I only had 4 days in Kigali. Some Rwandan journalist- Jojo who I met in Nairobi years back was hosting a party. He was surprised when I updated my WhatsApp status saying I was in Kigali. One text led to another and I receive an invite for a party.

You don't show up to a party without alcohol. It's just simple party etiquette which we were going to follow even in Kigali. We got three bottles of Jameson - one for us, two for the people. We showed up at Jojo's house in a posh neighbourhood at around 12.30 a.m.

"Is this a party or a meeting?"

"My guy. You know Rwandans don't party like Kenyans.

You guys are too loud."

"Well, today you have not just one, but two Kenyans in your house. We might as well bring a piece of home here."

If you go to Rwanda, don't expect to see people drinking themselves to death like we do. I told you, they are slow.

Slow in a good way, but in a bad way too. Three bottles of Jameson later, coupled with some Kenyan music and charm, the whole place was different. The ladies my friends. The ladies! I woke up hammered next to this fine lass not knowing what time it was.

Just yesterday, I get a text from Jojo asking me when I'm going back to Kigali again.

He is now a Jameson whiskey guy and has Pete for a slice of Kenyan company.

new decade is here and Arsenal couldn't have started it any better. They managed to give us some silence in January from those noisy Manchester lads who are stuck in past glories. These Liverpool lads are surely getting away with it. VAR has managed to ruin football. The damn thing is so bad that it has the Special One calling people idiots. We're all waiting to see whether Pep will outsmart Zidane in Europe seeing the league race is all but done.

Allano had texted me saying I should pick him up when the time is right. Being the typical Kenyans we are, we planned on showing up at around 4 pm when all the cooking was done. Just in time to eat.

We did just that. I was surprised that Allano never mentioned his Liverpool boys even once during the drive.

Ever since last season's slip up, the guy is careful not to jinx his team. We passed by the liquor store to get drinks- this was our only chore as the ladies had put it.

The house was buzzing when we got there. Friends and relatives were all there eager to cradle the baby. Jamo was relieved to see us.

"Mabuda. Hii yenu ndio timing. Ni muhimu."

"Kwani ulikuwa unataka tukuje mapema tupike nini?"

Allano never lacks a comment.

The foods were a huge variety; from chapos to biryani. I went to check up on Sly and was surprised when I found her all dressed up. She hadn't left home like this but with women you never know.

After eating up and stories with the various friends and family, we boys excluded ourselves. We grabbed our bottle of Jameson and headed to the rooftop area of the apartments. There was a nice chill spot there with a perfect view.

"Manze next week ni shule bana. School fees is required." Jamo said.

He was the only one among us who had school fees struggles.

"You know we can't relate." I chipped in.

"No you can't. But the time is coming. This decade tu.

Kwanza where's Jen?" "We wacha maneno mingi." Allano was irritated.

"Kwani what's taking this guy so long?" He had been gone for almost 15 minutes. We were too lazy to go downstairs knowing the ladies wouldn't allow us to leave again.

Just as our patience was running thin, Jamo shows up. One hand holding a bottle of Jameson and his face in somewhat shock.

"Mbona umekawia?" I asked angrily.

"Manze you won't believe what just happened." Jamo said as he took a seat, almost as if to relieve himself if what he'd just seen.

"Manze Cate is here. And she has come with the kid and some jamaa."

"Walai?!!" Allano shouted. Even I couldn't believe it.

Cate was Jamo's first baby mama. She didn't see eye to eye with Jen and dramatic didn't even cover how she is.

"Kwani you invited her?" I asked.

"Aii aje? Even I ain't that stupid. She has just shown up. Kwani hamskii she has even come with some dude." Jamo had a hint of bitterness and anger in his voice.

We had to see it for ourselves. So Allano and I went downstairs with the disguise of wanting to pee. True to his words, Cate was there with a buff dark chap seated beside her in the sitting room. Sly called me - you know that thing ladies do with their eyes - and asked me why she was here. I told her I hadn't the slightest idea. The whole living room was tense.

I didn't see Jen but from the look I things she was probably mad somewhere. I greeted them, and went Jen was his girlfriend with whom they had broken up, straight upstairs. again. Those two were breaking up everything but somehow managed to get back together. Even when Jamo was drinking as if the whisky would make this we thought it was worse, they always defied the odds. all a bad dream. Even Allano couldn't believe it.

Talk about a toxic relationship. This time Allano had "Buda. Hii ni noma sana." He said messed up and she had been through his phone. Guy "Manze this is not right. How does she show up with was texting 'unnecessary people.' a guy in my house? Uninvited kwanza."

"This is no way no begin the year," I said, “We need We talked about life and set plans to buy land in Ruai. another bottle."

2019 had passed and we still hadn't done it. This time we were serous. Problem is we were always serious. I went downstairs to grab another bottle of Jameson The years just seemed to pass by. The bottle was done from the car. and Jamo went downstairs to get another one.

wanted to have a good time somewhere not far from the city centre and my good guy Pete suggested we party in Westie. Westlands is the ultimate party centre of Nairobi. You cannot miss something to do in Westlands.

We drove to the leafy suburbs and along Rhapta Road, shining brightly is the shining board of Déjà vu Lounge.

I had never been to this infamous joint before and I must say the outside looks really impress. The parking is laid out nicely and was partly full at around 9 pm. The lighting at this place is so subtle. The place gives out some old school vibes with the building partly made up of bricks.

The aroma inside Déjà vu is also something else. Their roasted beef is out of this world. If you want something to munch in the middle of your enjoyment, they have you covered. The chicken and beef are really a must have.

A deck of stairs takes you up into the main entrance into the club. The interior of Déjà vu is a décor heaven.

The lighting blends in really well with the whole seats setting. The bar area well lit up with drinks arranged in a neat row. On the walls is some graffiti art that give the place a nice touch. Space is key in Déjà vu and they The place gets full quite fast so it’s advisable to get have utilised what they have well. The tables have seats there early. The cocktails at this place look really good that can accommodate and you have to try them out. Déjà vu is the ultimate place to go to for a night out.

e've all been there: A pimple pops up seemingly overnight and you need to get rid of it, immediately. While it may be tempting to pick and pop it into oblivion, there are plenty of better at-home, DIY ways to deal with acne in a way that won't leave you with a scar.

Acne can be stubborn, and depending on what type of pimple it is. They can also be really frustrating to treat too. The most important thing is to NOT pick the pimple. The more you pick at it, the slower the healing time.

Instead, there are a number of natural ingredients that you can incorporate into your skin care routine to get the job done.

To prevent and treat acne, create a facial mask and apply it, then leave it for short periods of time and rinsed off with warm water. Avocado oil which contains linoleic and oleic acid together with Vitamins A, C, D and E keeps skin hydrated without leaving an oily residue. This reduces the risk of acne. Avocado oil also has anti-inflammatory effects, which helps to reduce the redness and inflammation associated with acne.

It also helps get rid of the sunburned skin due to the antioxidants in avocado oil which help to ease the symptoms of a sunburn. According to a 2011 review, the vitamin E, beta carotene, vitamin D, protein, lecithin, and essential fatty acids in the oil supports healing and soothe the skin. For those affected by dandruff , applying avocado oil to the scalp as a hot oil mask also helps reduce dandruff and other problems caused by a dry, flaky scalp.
