Dima Al Sharif offers a full line of Organic Mooneh Essentials – named DS MOONEH which she describes in short as:

(Mooneh is Arabic for Pantry) INTRO: DS MOONEH, is the name of Dima Sharif’s line of artisanal food products that she along with her team

produce and supply the UAE market with. This line of products preserves local organic seasonal produce when in season (available in plenty and in best quality) following old school cultural methods and traditional family recipes. At MOONEH local organic produce is preserved either by means of fermentation, jamming, drying or saucing... Without the use of any chemicals in the process, not any additives, preservatives, food coloring or artificial flavoring... The line is made only with real natural ingredients all of which are detailed at the back label of each product, also including the origin of each ingredient.

This line of products is conceived and carried out as the company’s effort to support the UAE’s local organic farmers, and what better way to support them than to actually buy straight from them and in good quantities? Therefore, at MOONEH LLC the produce is always purchased straight from the farmers, with no middleman, and where possible only local organic produce is used, however and only when an ingredient cannot be grown in the UAE, such as the case of olives and olive oil then they are sourced from the nearest proximity possible or from regional organic seasonal farms and artisans. Mostly from Dima’s own family farms in Jordan.

At MOONEH LLC. We consider this line of products to be part of our social responsibility program, where we give back to the community we operate in, through supporting likeminded small businesses/producers and local organic farms whom we find to operate under similar philosophies and ethos as our own.

DS MOONEH also supports a number of widowed Palestinian Women families living in the Palestinian Refugee Camps in Jordan.

TO OUR CUSTOMERS & THE ENVIRONMENT This line of products is focused on being 100% organic. As you may already know, Dima Sharif is a pioneer in the organic food scene in the UAE. Being among the core group that first established the now widespread farmers markets in Dubai. She is a huge supporter of eating organic and of organic farming & farmers simply because she believes that organic farming is the only method of producing healthy, chemical-free, non-hazardous produce that not only does not harm our health but also does not harm our environment in the growing process. Dima believes this to be both a responsibility that we all share towards ourselves and our earth as well as a legacy to leave behind for future generations. As such it is only natural that her food brand is organic.

Furthermore, MOONEH LLC is the closest possible to a zero waste kitchen where all food waste is recycled into compost given to the local organic farmers, and all non-food waste materials are recycled. We also only use jars made out of recycled glass and our packaging is all made out of recycled materials.

SOURCING

We know the process of producing food is one that involves a lot of hard work; especially true to actually growing produce. The farmers who work very hard to produce our food do so with great love, as without it no plant is ever nurtured to give and without continuously pouring this love over the tiny springs no plant will bear fruit, then without this love, no fruit will make it to our tables.

One thing for sure, these farmers’ job is not the easiest, nor the safest bet.

Organic farming is very much affected by environmental conditions, for instance the weather; whether cooler or hotter than usual can affect the yield and quality... they continue however to put their resources, hard work and love into it to ensure that we have local organic food to savor with our loved ones.

Those farmers who made a conscious choice to farm organically for all the reasons above are the ones Dima Sharif wants to express appreciation for, and therefore wherever possible her choice and priority in sourcing is their local organic produce.

Wherever that is not available, as is the case with olives for instance, then her choice and priority is the highest quality organic produce in this region.

Seasonality

It goes without say that this range is highly seasonal, depending only on what is in season, harvested in its natural season, preserved in the same season and lasting for as long as it lasts until the next season. Therefore, the range will offer different varieties with the different seasons and some varieties will not be on offer once their season is over and our stock is sold out.

Artisanal Quality

The whole range is artisanal: handmade, individually packed without the use of machines. The range is also always made in the shortest time possible from farm to jar (mostly within the same day or 2). This is not mass production; it is the exact contrary of that both in philosophy and production process.

Dima believes that our modern lifestyles and the whole globalization of goods had altered food and food production to accommodate mass production. So much so, that we can hardly tell what we are eating anymore. Modern-agriculture in most cases caused produce to very often be tasteless and we are mostly incapable of telling the difference between the different foods. A fact that has made her adamant to create a line of products that brings back the whole goodness and flavor back to the table.

Nor do I want to taste the medicinal, chemical and artificial flavorings that make both the taste and color of the food unnatural and obviously over processed.

DS MOONEH ZAATAR & DUKKA

Along with Olive oil, Zaatar can very well be labeled “the flavor of the Levant”, no that is not an exaggeration or an over estimation of the importance of this herb to the makings of Levantine cuisine.

So much so that every home in the Levant - regardless of area, background or social status - will have a bowl of Zaatar and another of olive oil permanently placed at the kitchen table to be had any time for snacks, breakfast and dinner. So true, and ask anyone from the Levant about their childhood memories and you will find that Zaatar is an integral part of everyone’s childhood.

Zaatar is a plant that is within the same family of oregano and thyme, only it’s the variety that grows in the Levant area. This plant grows wildly and is characteristically sharp, slightly peppery with lemony undertones. It is a pungent flavor much more robust than thyme and oregano, making it to the inexperienced palate a very different family of plants altogether.

Zaatar, besides being served for breakfast, used in making children’s school sandwiches and used in the making of the very famous Manakish, is also used as a seasoning in cooking especially in salads, rice dishes and most significantly to season poultry and fish.

DS Dried Zaatar Following the traditional Palestinian recipe we use pure Zaatar in making this Dried Zaatar. We only add a bit of salt for preservation and some sesame seeds as traditionally done. This is not mixed with any other flavors, spices, ingredients‌ it is really pure Zaatar.

We do not buy ready mixes, we actually buy the Zaatar and dry the leaves, then hand roll them into the fine texture you see. This is why our Zaatar is very differently colored and textured than what you will find in the market. People stopped making Zaatar this way because its laborious and also expensive to produce this way, which is why most Zaatar in the market these days is cheat Zaatar and not really Zaatar! No we Brought back the old traditional Zaatar and the flavors of your childhood. This is why the whole country raves about DS Zaatar.

DS Dukka Following Dima’s personal family recipe, She created this Dukka that pleases every palate. We use DS Dried Zaatar to make this Dukka and add DS Pire Sumac, DS Dukka Spice Mix and ground hazelnuts to make this premium Dukka.

We do not buy ready mixes, we actually buy the Zaatar and dry the leaves for making our DS Dried Zaatar Mix, we also make our own signature Dukka Spice Mix. This is why this Dukka truly is an outstanding product.

This Dukka is an excellent sandwich when mixed with olive oil, can be used in making Manakish too. It is an excellent seasoning for roasted chicken or fish and a great garnish for so many breakfast dishes like labneh or even fried eggs. Not just breakfast, but soups and stews too! DS Pickled Zaatar Following the old and forgotten traditional Palestinian recipe from the villages of Deir Yaseen, where green zaatar was in demand all year round for making the specialty fresh Zaatar bread, and as such the women of those villages devised this genius recipe to preserve green Zaatar without loosing its aroma, or sharp taste, Dima created this product using the local organic variety of Zaatar.

The outcome is a delicate and very elegant flavor of green Zaatar that appeals to the fussiest of palates, even those who think they don’t like Zaatar! Tried and tested, always fail proof.

Despite the traditional name using the word “pickled” it is rather a preserved Zaatar which we ferment first, then preserve in DS Extra Virgin Olive Oil. Our packaging is in 200g glass jars or 400g glass jars.

DS MOONEH Olives & Olive Oil

It is said that once olive oil enters the body one can never again live without it! And we believe this is so true. To us, the whole MOONEH line started off with Dima’s family farm’s olives and its derivative premium extra virgin olive oil and all the products at first were based on this fruit and its oil. To date, the vast majority of our products are based on this oil and all our ferments are preserved in this fantastic olive oil.

Here, our aim is to celebrate the olive tree, its fruit and oil and also to celebrate and appreciate those who tend the earth and grow this precious tree. To us the olive tree, its fruit and oil represent all things earth and human and we treasure this part immensely, therefore, in this section the olives and the oil are the heroes in these products.

“We have on this earth that which makes life worth living” the famous words of Palestinian poet Mahmoud Darweesh and this right here, from growing to product, is exactly that.

DS Organic Premium Extra Virgin Olive Oil This beautiful, Premium Extra Virgin Olive Oil is sourced from Dima’s family farm in the North of Jordan. This farm houses Nabali olive trees, the variety that is native to Palestine, and it produces a superior quality of olive oil, with a fruity nose. The oil is delicate, fruity and very elegant in flavor. It is not the type that overwhelms all other flavours, rather one to open up the flavor of all other ingredients allowing them to shine. It is a perfect olive oil for both savory and sweet foods, and is definitely an outstanding finishing oil.

The Farm is ISO 9001 and HACCP certified and strictly adheres to the best practices. The farm received many certificates including King Abdullah II of Jordan Certificate of Appreciation and Ministry of Agriculture Award of Excellence. In addition, as of 2013/14 harvest, our farms have been fully certified

by IMO Switzerland and the harvest is labeled “Organic”.

DS Green Olives In Brine The green olives are sourced from Dima’s family farm in the North of Jordan. This farm houses Nabali olive trees, the variety that is native to Palestine, and it produces premium organic olives, with a fruity nose.

DS Jumbo Green Olives In Brine These jumbo green olives are sourced from a personal friend’s small farm in Crete in Greece. Dima loves doing business with friends because she knows she can trust their products and always loves supporting their passions too.

These olives are de-bittered in water then brined. They do not go through the chemical de-bettering process known in Greece and so do not have that iconic metallic flavor of Greek olives. They rather enjoy a tangy brined flavor and are ideal for table, cooking and cocktail purposes.

DS Kalamata Olives In Brine The Kalamata Olives are sourced from a small farm in Greece owned by a woman who is Dima’s personal friend. She was very impressed with the process that they followed at the farm to make their Kalamata olives, as Kalamata olives usually go through a chemical processing that keeps the olives’ shape and structure in tact for long bringing. Like herself, this woman is enthusiastic about keeping the olives all natural and so she had devised a way to keep the olives in tact without carrying out the whole chemical processing.

As a result, the olives’ texture is gorgeous, and also the taste is so superior as it has not been tempered with through use of chemicals. These Kalamata olives do not have that metallic flavor usually present in this variety of readily available ones in stores, yet possess a sharp tangy flavor of superior quality traditional Kalamata olives.

This is a light and summery flavor that captures the spirit of the joie de vivre. It is savory and ever so slightly tangy, and the fermentation process concentrates the flavors. The green olives are sourced from Dima’s family farm in Jordan and the artichokes are a mix of Jordanian and Italian artichokes that we marinate in-house for a restaurant in town.

DS Kalamata & dried Tomatoes Tapenade This is a rich and deeply flavored product. It is savory and tangy, with slight sweet notes lent from the dried tomatoes. The fermentation process just concentrates all the flavors, making this a pure pleasure to have. The olives are present in every bite and the dried tomatoes are in the background adding their natural sweetness and color to the mix. This product is made using our MOONEH product: DS Kalamata Olives in Brine, and the tomatoes are sourced from the local organic farmers and dried in-house.

DAIRY

All from goats’ and/or ewe’s milk and the milk is bought straight from Jordanian shepherds’ during season, in April. As such it is not hormone induced milk, but natural birth induced milk.

We are currently keeping away from cow’s milk, in order to do our part for the environment and our part in being humane to the over exploited animals.

Goats’ and ewe’s milk are deeply flavorful and also much more easily digested than cow’s milk.

DS Goat’s Milk Rolled Labneh This is really the best thing you can ever eat! These gorgeous, savory goat’s milk labneh balls are made using 100% natural, free range goat's milk which after draining is cured and rolled then preserved in our premium extra virgin olive oil.

These labneh balls are made using goats’ milk that is the produce of Jarash, a city in Northern Jordan, known for producing this specialty "Labneh Jarashiyeh". Whether spread on bread as the main event, or a base to other toppings, or even if served on your cheese platter, or crumbled on top of salads this amazing treat is always Divine! You will also love using them as spread under your avocado toast, they just add that little extra flavor making such a simple snack a glorious treat.

DS Nabulsi Cheese This cheese is a traditional Palestinian white cheese, the specialty of the city Nablus. A very uniquely flavored white cheese, made out of a mixture of both, ewe’s and goat’s milk. It is one of those products, where the variety available in the UAE market is a replica that is no way near the authentic and high quality original Nabulsi cheese.

Dima personally, looked throughout Jordan for the best Nabulsi cheese maker and found one who was very close to the cheese created in Nablus. "Close" but not quite, so she agreed with the maker to follow her own family recipe for Nabulsi cheese, and together they made a few batches, that were finally chosen to be made exclusively for this “MOONEH“ range.

Once bought the cheese needs to be sweetened by boiling in fresh water, as this cheese following ancient preservation methods is cured in salt (no preservatives or chemicals). As such it cannot be eaten as is, and must be boiled before eating to rid it of the extra salt.

This is great because how sweet/savoury you wish the cheese to be is totally up to you. Prolonged boiling results in sweeter cheese.

For salty flavor boil for 10 minutes in fresh water. For sweeter boil for 20 minutes, for sweet cheese boil for 35 minutes then soak in fresh water over night. The sweet cheese is the traditional choice for making desserts such as Knafeh and Atayef…etc.

DS Pure Cashew Butter A very specific nut butter, not always in demand but for those who use it in their cooking and confections, this is definitely the one you want to buy! It is so good you will be eating it by the spoon fulls. Made using organic cashews without the addition of any oils or anything else, relying only on the oils present in the nut itself. The result is a concentrated, sweet nutty flavor that is unmatched!

We make two versions of this butter, one that is roasted, which will result in a darker and more deeply flavored butter, another is an activated raw cashew butter, which is a lighter colored butter with much milder flavor.

DS Modena Balsamic Glaze Dima frequently uses this glaze in her catering menus and when plating. It is a fantastic sauce to drizzle over salads, pastas and a variety of dishes. As such and during a visit to Modena to purchase Balsamic vinegar and balsamic glaze, she met a maker there whose vinegar and glaze really stood out. She asked him if he was willing to tweek the recipe to the flavor she needs in her dishes and he agreed. And just like she receives her yearly olive oil she now also receives her yearly balsamic vinegar and glaze from this Modena maker.

DS Mastic Crystals From the Greek island Chios, come these premium mastic crystals that add a haunting flavor to your food and desserts. Mastic flavor is widely known in Levantine, Greek and Turkish cuisines and is absolutely a very unique and unforgettable flavor.

Also known as the caviar of flavors sue to its rich, unforgettable and expensive nature.

Mastic is also a gelling agent a natural binding agent mostly used in desserts and yogurt/milk based concoctions. Molecular gastronomy had popularized the use of mastic, however the most traditional Middle Eastern foods and sweets have all been using this flavoring since ancient times.

We buy from a small nursery in Chios, Greece and in limited quantities. As is usually the case with mastic we sell this premium quality mastic crystals by the gram.

DS Pure Sumac This is a pure organic ground sumac. Sumac is a traditional Middle Eastern flavor that definitely adds the Levant touch to your cooking. It is a zesty, tangy flavor with lemony notes that is strong due to the fact that it is not mixed with any other ingredients that mask its natural flavor. Sumac can be used across the board where salads are concerned, and is a a known addition to roasted or fried vegetables, fish and seafood, as well as a gorgeous garnish for sandwiches and soups. It is the must use ingredient in the Palestinian dish Musakhan.

DS Himalayan Pink Salt Because we do not use any preservatives in making DS MOONEH Products, we have to use salt as a preservative. We do not add massive quantities however we cannot commit it completely. A lot of concern lately about the side effects of salt on health, and so after extensive research we have learnt that the minerals rich Himalayan pink salt is the healthiest salt on earth and the best salt to use where salt must be used.

We make our products using this amazing salt.

Because this salt is rich in flavor you do not really need to use much of it, you will see that you will really reduce the amounts you use and so we recommend that you use only Himalayan pink salt in your daily cooking. As such we decided to make the finest quality of this salt which we use available for you and so we added it to our list of DS MOONEH Products.
