Christmas-on-the-Brazos The historic Christmas traditions of Texas in the 1800s will transport visitors into the past at the Christmas on the Brazos celebration at the Washington on the Brazos State Historic Site — the very spot “Where Texas Became Texas” — on Saturday, Dec. 10. No-cost and low-cost holiday activities for all ages include period music, craft making, readings, food samplings and sale of artisan gifts. The day culminates in the park’s popular Candlelight Christmas event at Barrington Living History Farm, featuring vignettes of Texian frontier festivities with music, musket firing, dancing and a candlelit tour of the farm. cover design & photo: DEREK HALL on the cover barbecue courtesy: NATHAN’S BBQ

BBQ road trip through Washington County ARTICLES BY
TARA DREYER |
In case you’ve been asleep for the past few years, here’s some breaking news for you. Barbecue, which used to be the domain of church fundraisers and backyard cookouts, is now a big-time player in the food service industry. Whole shows on television are devoted to smoking meats, introducing barbecue to hungry people who can’t seem to get enough of succulent fare like briskets with their “bark” and smoke rings. We Texans, who have known this for a long, long

time, welcome all of the attention and welcome the ‘cue-craving masses into the fold. Barbecue restaurants can be found in virtually every city in the state, no matter how big or how small. And right here in Washington County, you can find some of the best barbecue anywhere. Each barbecue “master” has their own techniques and add their special touches to produce some mighty tasty plates. You’re welcome to come stand in line, partner.

Nathan’s BBQ offers customers same quality taste year after year
N
athan Winkleman opened the Buccaneer Food Store in 1981 without realizing that it would become a barbecue staple in Washington County years later since it was fi rst opened as just a convenience store. “I looked at what I could do because we knew we were going to do some type of food and barbecue is what I knew,” Winkleman said. “I went out to barbecue places all over the state of Texas and looked how they were doing it; I took bits and pieces of different things to figure out how to make it work in a convenient store setting and that’s what we did.”

t’s something that Texans know all to wellthe smell of barbecue drifting through the outdoor air. So, if you are ever walking down Commerce Street in downtown Brenham on a Thursday, Friday or Saturday, you know to expect a whiff of fresh smoked barbecue lingering outside of the Corner Liquor Store’s back door. The name of the place is LJ’s BBQ, and it is temporarily nestled into the liquor store across from Ant Street Inn, before it moves into its new building on West Main Street in then next two to three months. “We make sure everything is just the right way; there are
no short cuts here, we do it all the hard way,” owner and pit master Matt Lowery said. “I personally believe that Texas is just a huge barbecue renaissance right now, so many people are opening around here and we like to eat it and we decided ‘hey, let’s open one’ and we are wanting to go far.” LJ’S BBQ, owned by Lowery and his cousin’s husband Corey Cook, started out serving periodically out of Home Sweet Farm and Brazos Valley Brewing Company in Dec. before moving to its current location in mid-March where they can be found Thursday through Saturday from 11 a.m. until they sell out. “Preston Street ran right through where the building is now back in the 1850s,” Rogers said. “So it is history and it just seemed really fitting; the barbecue is something that works really well here and it just seems like the right thing to do.” Rogers opened R-Place in April 2008, 2.5

Chappell Hill Bakery and Deli barbecue roots run deep
I
n March 2011, John and Carolyn Kopycinski opened Chappell Hill Bakery and Deli and have received the response you would expect with their knowledge of the industry and family heritage. “Since everyone in Texas seems to love barbecue, we thought that a barbecue restaurant along with a bakery would work well in Chappell Hill where I have lived all my life,” John Kopycinski, whose family has been in Chappell Hill since around 1870, said. Kopycinski grew up around the industry since his family owned a general store and meat market and his dad and mom were the first people in Chappell Hill to make and sell polish sausage, ‘kielbasa,’” after World War II. “The people in Chappell Hill thought that you couldn’t sell sausage because everyone made their own, but it sold as people came from Houston and liked being able to buy the country polish sausage both fresh and smoked; a product ROOTS continued on 24

Lake Somerville State Park complex consists of four units: Birch Creek, Nails Creek, Lake Somerville Trailway, and the Somerville Wildlife Management Area. It is northwest of Brenham in Lee and Burleson counties. Birch Creek is 2,365 acres in Burleson County on the north shore, and Nails Creek consists of 3,155 acres in Lee County on the south shore near the west end of the reservoir. The two units are connected by a 13-mile trailway system. The Somerville Wildlife Management Area (WMA) consists of 3,180 acres with the Yegua Creek Compartment in southwest Burleson County and the Nails Creek Compartment in northeast Lee County. The Somerville Reservoir was constructed by the U.S. Army Corps of Engineers. Work was started in June 1962, and deliberate impoundment of water was begun in January of 1967. The dam is located on Yegua Creek, 20 miles upstream from its confluence with the Brazos River, and about two miles south of
Somerville. Somerville Reservoir covers 11,630 acres with a shoreline of 85 miles. Its main purposes are flood control, municipal water supply and recreation. The state park complex was leased from the federal government in 1969 and opened in 1970. The Texas Parks and Wildlife Department manages the Somerville WMA under a license agreement and in cooperation with the U.S. Army Corps of Engineers. Flag Pond is a 350-acre impoundment in the Yegua Creek watershed; it is located within the Lake Somerville State Park along the Somerville Trailway. The pond is a natural depression which has served as wetland habitat for waterfowl wintering (mid-October to mid-February) in the Lake Somerville vicinity. Flag Pond was originally developed by a private hunting club in 1926. Enjoy, but do not disturb historical places. If you find an artifact, leave it in place and let park staff know.

Chappell Hill Chappell Hill is situated in the southeast portion of Washington County, which lies halfway between Houston and Austin on U.S. 290. The town of Chappell Hill was founded in 1847 by Mary Hargrove Haller, granddaughter of Robert Wooding Chappell, for whom she named the town. Mary Haller’s husband, Jacob, was the town’s first postmaster. Mary Haller purchased the town site and it was divided into blocks, with streets and alleys laid off in a regular pattern. The sale of lots began in the fall of 1849. Situated in the heart of Stephen F. Austin’s original colony, the Chappell Hill area had seen earlier efforts at settlement along nearby creeks. In the late 1840s, the town attracted settlers from prominent families of the Old South who were drawn to the fertile land of the Brazos River with its abundant stands of native cedar. The area became an agricultural community with cotton the principal crop. Jacob and Mary Haller also built the Stagecoach Inn of Chappell Hill in 1850, which they operated until 1859
and continued under new ownership until 1871. Because the Inn was about halfway between Houston and Austin, it was a frequent stopping place for travelers along two major stagecoach lines. The town became an important part of the Republic of Texas and later the State of Texas before the Civil War. The population reached a maximum of about 3,000 people; at the time, San Antonio and Galveston were the largest towns at around 8,000 people. A sawmill, a railroad line, five churches, and a Masonic Lodge were built in the area. Two colleges, Soule University for men and Chappell Hill Female College for women, were founded in 1856. The men of Chappell Hill formed part of the First Texas Lancers cavalry regiment during the Civil War and fought in Missouri, Louisiana, and Arkansas. Men from Chappell Hill served in numerous renowned Confederate units, including The Texas Brigade and Terry’s Texas Rangers, and saw action in most of the major engagements of the Civil War. In addition, the Soule University building was used as a field hospital. The men of Chappell Hill saw
action in a number of renowned Confederate units, including The Texas Brigade and Terry’s Texas Rangers. By the mid-19th century the town gained prominence in the region, boasting sawmills, a railroad line, a Masonic Lodge, five churches, and two institutes of higher learning (the Chappell Hill Female College and Soule University for males founded in 1856). The Civil War and Reconstruction era brought violent changes to Chappell Hill, as to all the South. But the terrible yellow fever epidemic of 1867 decimated the population to such an extent that the town never fully recovered. Entire families perished, and many others left never to return. Many men who survived combat in the war lost their lives just two years after the war’s end. The town never recovered and faded into obscurity. Polish immigrants, mostly from the German partition, began to appear in the 1870s and the area was re-settled, though it did not reach the status of before. In 1889, Father Grabinger from Brenham’s St. Mary’s established St. Stanislaus Roman Catholic Church. Denizens of

Polish ancestry can still be found in the area surrounding the church and throughout Washington and Austin counties. Yet the town has survived and has entered a new era of growth and prosperity, while maintaining its historic charm. In 1933, the Farmers Bank of Chappell Hill refused to close its doors when so ordered by President Franklin Delano Roosevelt during a March 6 to March 10 banking freeze. The owner of the bank took out an ad in a Boston newspaper protesting the order. Washington County is revered as the home of the “Birthplace of Texas.” On March 2, 1836, in the community of Washington-on-the-Brazos, 59 delegates gathered under the direction of Sam Houston and George Childress to draft and sign the Declaration of Texas Independence. Following the receipt of fateful news from the Alamo, these men declared Texas “a free and sovereign nation” and went on to fight at the Battle of San Jacinto. This area is rich with historical sites from the Republic of Texas era.

Dallas Morning News and this year received Business of the Year Award from the Chappell Hill Chamber of Commerce. Customers are encouraged to stop in anytime since Chappell Hill Bakery and Deli is open seven days a week from 6 a.m. to 9 p.m. and only closed on Christmas Day and Easter. On most Friday nights, customers can enjoy live music from 6 p.m. to 9 p.m. “You can dine in and take out and we also do catering,” Kopycinski said. “Whether you are having a family dinner, business meeting, friends getting together to visit and have lunch, birthday parties or family events, our facility is large enough to host large groups if you call ahead.” “We hope that everyone coming in can smell the wonderful aroma coming from the barbecue, kitchen and bakery and then enjoy the good food, our courteous accommodating staff and the rustic country atmosphere,” Kopycinski said.

Truth Continued from 15 sold out by 2 p.m. since everything is made fresh daily. Customers could find a shorter wait on Thursdays and Fridays. “On Labor Day weekend, the line was out to the parking lot door; it was probably a two hour wait,” Botello said. “It is probably going to get a lot more traffic going through there since it is football season.” Located off of U.S. 290 in Brenham, customers can expect the same type of barbecue found in popular Austin joints since that is what Truth Barbeque is modeled after. “It is the same style of stuff that they have up in Austin; we use an offset smoker so the wood and everything is on the opposite side and the smoke goes all the way through,” Botello said. The brisket smokes for 16 hours, while the homemade jalapeno and cheddar sausage smokes for two to three hours and the beef and pork ribs smoke in between. If customers prefer their meat in the form of a sandwich, they can pick between brisket, chopped beef, pork, sausage or turkey that
can be topped with homemade pickles, onions, escabeche (a blend of pickled jalapenos, onions and carrots made fresh each week) and homemade barbeque sauce. We have fairly large sandwiches that people get excited about,” Botello said. In fact, he even has created his own sandwiches that are anything but basic such as ‘The Whole Truth!’ which is sausage, pulled pork, and chopped beef topped with a splash of sauce and pickled red onions and ‘The El Jefe!’ which is jalapeno cheddar sausage and your choice of pulled pork or chopped beef topped with a splash of sauce, coleslaw and escabeche. If customers prefer their barbeque plated with sides, they will not be disappointed with choices such as prime beef brisket, pork, spare ribs, beef ribs, sausage, jalapeno cheddar sausage and smoked turkey breast accommodated by collard greens with diced up smoked sausage and bacon, baked beans with diced rib meat, macaroni and cheese topped with bacon, corn pudding, potato sal-
ad and cole slaw. “A lot of the barbeque restaurants that you go to are focused on just the barbeque and their sides are kind of hit or miss, so we wanted to spice it up a little bit and do that extra work,” he said. To finish off the meal, Botello’s mom makes homemade cakes every day with choices like strawberry, red velvet, Italian crème, triple layer chocolate, German chocolate, carrot cake and hummingbird cake. The place is such a hit that Truth Barbeque has warranted many visits from former Texas Gov. Rick Perry. “There’s a lot of people who follow barbeque and it is kind of a tight niche group and they say that people are doing runs for barbecue in Texas like they would do in Napa for wine country,” Botello said. “People are going from barbeque restaurant to barbecue restaurant in Texas now; they usually make more than one stop in one day.” One thing is for sure, Truth Barbeque is a stop you don’t want to pass up.

Relax in Rustic Round Top, one of the smallest incorporated communities in Texas, is on the old La Bahia Road between La Grange and Brenham in Fayette County. The earliest settlers were Englishmen who came to the area from other parts of the United States. The family of Stephen Townsend arrived from Florida in 1826, and the name Townsend was the first to be associated with the site of Round Top. The family established a Presbyterian church, Florida Chapel and founded a Masonic lodge. The Townsend family had the distinction of sending more men to the battle of San Jacinto than any other family. Joel Robinson, another Round Top resident, was the captor of Antonio Lopez de Santa Anna. His father, John Robinson, was a member of the First Congress of Texas. John Rice Jones Jr. settled in the Round Top area in
1831 and in 1835 was made the first postmaster general of Texas by the provisional government. Other important names associated with the earliest settlers were Taylor, Ledbetter and Alexander. The Ledbetter land was the site of the first Round Top Academy. By the mid-1830s Round Top was identified as Jones Post Office. The English were soon supplemented by Germans. In the early 1840s, Alwin H. Soergel, author, historian, musician, and member of the Adelsverein, settled in the Round Top area, bringing with him the beginnings of the Germanic traditions that characterize the area. He built a white house with an octagonal tower, which by 1847 was listed as the United States post office, with Henry A. Robertson as postmaster. The odd-shaped tower gave rise to the name Round Top.
Round Top By 1850 Round Top had a population of 150, two stores, two blacksmith shops, two taverns, a post office and a line of tri-weekly stages serving the predominantly German citizenry. According to some sources the first Round Top Fourth of July celebration, held in 1851, gave the community the distinction of having the oldest contin-

Round Top along with its pipe organ carved out of native cedar by Traugott Wantke. Education, music, language studies and the arts played an important role in the lives of residents, and the cultural arts characterized Round Top throughout the 19th century. Chartered in 1870, Round Top is located on Cummins Creek in northern Fayette County. The town is said to have received its name from “the house with the round top”, an early stagecoach mileage designation that, at the time, was located about a mile northeast of the town’s present site. The first settlers were prosperous Anglo-American plantation owners who came here as early as 1826 and were active in political and military affairs. By the late 1840s, German
immigrants settled here. The original 1880s courthouse in Round Top burned in 1924 and was rebuilt at the present location on the town square. Major restorations were accomplished by the Bybee Foundation on Henkel Square, by the James Dick Foundation on Festival Hill, and by Miss Ima Hogg at Winedale. Round Top has become an internationally recognized cultural center for the arts and education through the programs of the International FestivalInstitute, founded in 1971. The 1,200-seat concert hall at Festival Hill is the permanent home of the Texas Festival Orchestra. Residents have always taken pride in the care and preservation of their town. Those who have relocat-
ed here from places more metropolitan have learned to treasure this pocket of rural tranquility. Today, Round Top has found new supporters, who along with life-long resi-
dents and those descended from the earliest settlers, are working to preserve this unique living legacy.

The spelling of the town was changed to Carmine on June 15, 1892, to eliminate confusion for the postal service with the town of Cameron. Culinary Continued from 13 From 11 a.m. to 5 p.m. on Saturday, and 12 p.m. to 5 p.m. barbecue takes the spotlight until 6 p.m. on Saturdays when a special one-entree dinner is served. “During the day, I make barbecue and my specialty is brisket,” Rogers said. “Small barbecue places [like ours] smoke their brisket for 12 to 14 hours and that’s what it takes to make a really nice brisket. That’s the process and it takes a long time.” Customers can also get Slovak Sausage made in Snook to compliment Rogers brisket that he smokes himself or his homemade chicken salad that is a hit. For sides, Rogers makes everything homemade, including German potato salad, macaroni and cheese and pinto beans, along with homemade desserts. “I make a homemade bread pudding with a rum sauce and of course I make peach cobbler with a scoop of Blue Bell vanilla on top,” Rogers said. “For chocolate lovers, I make a flourless chocolate cake with a little bit of Blue Bell on top of that and a few crumbled pecans; those are my standard desserts.” R-Place also offers a variety of drinks including craft beers and a wine selection that features about 40 bottles. “My mainstay is my wine selection, which includes red and whites from small wineries

There are a lot of barbecue places, but i think our experience being out here on Washington-on-the-Brazos historical park; I think thats the big plus. It’s a nice place to be.”

Roots Continued from 12 The secret to their early success could be that they are keeping all things traditional, local and Texan. After converting an old 500 gallon propane tank into an offset smoker, Lowery and Cook smoke brisket, pork, ribs and sausage using post oak wood. “Post Oak is traditionally used in Texas because it is the most prevalent wood in the area and we want to stick to the tradition,” said Lowery. The brisket, which is their best seller, is smoked for 12-15 hours and can be served any way a person likes from lean slices to burnt tips. “Brisket is our biggest seller for sure, but pretty much everything has been popular,” Lowery said. “A lot of people tell us a lot of different things, but we sell more brisket than anything else. Pretty much every bit of feed-

Nathan’s Continued from 12 In 1994, Winkleman began selling barbecue takeout plates, something not done before out of convenient stores, until it took off. “We started real small and had just a small little building out back with a bar-b-que pit in it and built it from there,” Win kleman said. “It grew and grew and got popular because of the method that we use to cook and we still use it to this day; we never changed even with the remodel.” Due to the popularity of the barbecue, Win kleman remodeled in Nathan 2010, adding a dine-in area that seats 100 people inhouse and 40 on the patio. “When I say this is original Texas barbecue, it’s because we don’t smoke it; we cook it directly over the coal and wood and it is old school,” Winkleman said. “There’s actually some really good brisket out there, but once you get outside of the brisket and start getting into the pork items; that’s where you can’t compete with me so that’s what makes us
unique.” According to Winkleman, aside from the freshly made brisket and sausage, the ribs and chicken breast are what he has become known for. “We have a unique way of marinating those grilled chicken breasts and through the cooking process that we do on our pits, there is a special way to do those chicken breasts and you won’t get the same results on the gas grill or barbecue pit at home,” he said. Sides include macaroni and cheese, potato salad, blacked eyed peas, pinto beans, and on Thursdays German sweet rice. For those not in the mood for barbecue, customers can enjoy daily lunch specials such as hamburger steak, chicken fried steak, fried chicken and fried catfish. “That breaks the monotony of barbecue right there because you can’t eat barbecue every single day,” he said. On any day of the week, customers can enjoy newer menu items such as burgers, onion rings and salads if they are seeking lighter fare and for dessert pies, cheesecakes, puddings and homemade cobblers.
Don’t forget to wash it all down with cold iced down long necks or a glass of Texas wine. “Long necks and barbecue go together; it’s a Texas thing,” Winkleman said. “And we like Texas wines, I figured if we’re going to do wines, we were going to keep it local.” “I am in Washington County, so to be successful, what I do here is built around the local people and what they grew up with, what they were accustomed to and what they like because those are going to be my customers,” Winkleman said. “That’s why we haven’t changed; we will never ever change as long as I’m here because nobody can compete with that.”

Young and old alike enjoy the DVD “Cotton: From Wagon to Finished Bale” and of course - the guided tour of the historic gin is always a highlight! Geocaching in the ‘Birthplace of Texas’ The Washington County Chamber of Commerce have hidden various caches across the county, in hopes of getting more people to visit the historic sites and fun locations in the area. Unlike a normal scavenger hunt, these geocaches are hidden by the locations in spaces outside as a part of the chamber’s Birthplace of Texas GeoTour. The tour has 28 locations, including a three-part view of the historic homes of Washington County. Of the 28 caches, 22 are new for the geotour. The concept of a geotour isn’t new, Website and Social Media Manager Jenny Mills said, but the Birth of Texas GeoTour is the first in the state, with other towns in the state discussing ones for their areas in the near future. If a geocacher is among the first 250 to collect 25 total points — either by fi nding the geocaches, or by eating, shopping, and staying in Washington County — a cacher can receive a collectible geocoin, which
can be placed in any cache that will hold it and can be tracked online. Of the 250 coins, Mills said that 150 or so have been claimed by people who have completed the tour. Most have come from the state of Texas, but Mills said that there have been people who have visited from out-of-state, like Colorado and Georgia, and out-of-country, like the Netherlands and Puerto Rico. While she said that a majority of the in-state cachers haven’t stayed multiple days in Washington County, the comments have been positive and even if someone stays only throughout the day, it means multiple people are seeing Washington County attractions and hopefully will return. To find out more about the Birthplace of Texas GeoTour, visit www.geocaching.com.
