SkYe Café
ena Lindsay left the corporate restaurant fast food business after working as a corporate trainer and handling the start up of 5 Pepsi Cola/Yum Corporation food chain stores. Lena, a single mother of a six-year-old little girl named Sydney Skye, decided to take the plunge and start her own international gourmet food truck. And SkYe Café was born. When Sydney entered the truck for the first time her arms went straight up in the air in the shape of a “Y”. She could not contain her excitement and joy when she saw the truck. The wonderful thing about that was it was the beginning of Lena’s ingenious idea of how to brand her truck. With her entrepreneur spirit along with a resume of management and creativity her thought of starting this restaurant on wheels gave her the freedom to be with her daughter and work her own schedule while also being involved in community events. Her creative side wanted to have her truck stand out from

your average food truck design so she commissioned a renowned New York Artist named Chris Cumberbatch to hand paint the truck. And Lena vows to continue to add more creative artwork to the truck to continally enhance her brand. Her management experience told her to partner with someone who has technical operational strengths, so she chose Eric Gomez. Maintaining a well-organized system within everyday customer service and back of the house management, Eric ensures all social media is up to speed— and he is a great mechanic to boot! Eric, like Lena, has the passion for perfection. This becomes apparent once you experience their services and food from renowned Chef Willie Mack. Chef Willie has an outstanding resumé in the restaurant
world. He is a graduate of the Institute Culinary School of America. His private client list is phenomenal and he has quite few a stripes on his belt. Opening a list of well-known restaurants in the New York area, he likes to be known as the “Traveling Chef.” Willie and Lena created a comfort food menu for SkYe Cafe offering a home cooked flavor that reminds you of the taste and smells of home-cooked meals all with a gourmet twist. Every dish is made from scratch and with healthy ingredients. Together they are promoting a healthy international menu to the melting pot family of Houston. Lena’s ultimate goal is to assist schools and non-profit organizations by offering a “Give Back Program.” (Read more about this on her website skye-cafe.com) She is also working with clients offering marketing opportunities using her installed TV on the side of her truck to promote information during special events. This allows the SkYe Café team to work within the community, build the brand all the while introducing a new food truck culture and a new spin on the food truck way of business: catering to the taste buds of different cultures. Y SkYe? Y not? Check out her web calendar for her next location to experience the team and most of all to enjoy the food.
After only 4 months on the road catering and bringing the truck to these facilities for lunch, SkYe Café has already been awarded high ratings from such clients as: Omron Oilfield & Marine Inc. Mancuso Harley Davidson Joe Meyers Toyota Northwest Jeep & Dodge Foundation Academy Ivy Kids New location: 50/50 Acorn Golf Range, a great Houston range offering golf for all ages. Watch for special events coming to this location.

Anna’s Gourmet Greek

Anna’s Greek Weekend Frittata
e are a family owned business, my husband Vasilis and I have three children. My husband is a Professor of Mathematics at UHD. Being a chef wasn’t my first career choice, actually I am a former attorney and then high school history teacher, but with three children, I needed to focus on the family and home and that’s where my love of cooking blossomed. My husband and I both loved the idea of a food truck and my husband always told me how much he loved my cooking… so the natural choice was Anna’s Gourmet Greek. We proudly offer Greek and Greek fusion items, many vegetarian and gluten-free choices, a kids menu, and a line of authentic hand-made Greek desserts. Premium and fresh chef-selected ingredients and critical attention to detail help make our food opa-mazing. We are available for catering, both corporate or personal

We have also catered weddings, anniversaries, birthdays, appreciation lunches, charity events, and graduations with our food truck as well. Our most popular foods are usually found on our daily menu: Gyros, Chicken Souvlaki (marinated, char-grilled chicken breast), Helios Salad (Greek Fusion with Tex-Mex), Greek Hot Dog, Spanakopita (Fresh baked & hand-made spinach pie), oven roasted lemon potatoes and Baklava—just to name a few! Drink Your Vegetables
G
reen Smoothies are the latest craze. Finally we have discovered a great way to eat our veggies without even realizing it (translation: your kids will love them, too.) There are so many recipes available on the internet and each puts its own unique spin on what
amounts to covering up the taste of a green veggie. I don’t know why these greens like spinach, kale, and collard greens get such a bad rap. There are many other ways to “dress them up” without blending them to smithereens. But, for some reason, we want to mask the flavor
with fruits and yogurt—which still works because it is all good for you. We need 5 – 9 servings of fruits and vegetables every day to prevent cancer and other diseases according to the American Cancer Society. Smoothies are easy and fun to make with very little clean
up afterward. They provide us with a delicious way to get needed nutrients without resorting to multi-vitamins. So why not drink a smoothie? Go ahead and experiment with your favorite ingredients. You are sure to find a combination that everyone in your family will enjoy.

Tutus TapShoes ave you ever noticed that kids will break into dance any old time—at home, while standing in line, in the middle of the grocery store. They just love music and love to move! Whether it’s tap, ballet, modern, jazz, or hip-hop, dance classes are very popular. Though girls have traditionally been the participants in dance classes, boys are increasingly interested in the many aspects and benefits of dance. Beyond the music and wanting to just move with the beat, the cardiovascular and strength training benefits that go hand-inhand with dance training make dance as much of a workout as any sport. Don’t overlook the potential of dance class to help your child to learn to socialize with other children. TAP Born in America in the 19th century, tap dancing was named for the sound that tap dancers’ shoes make when the shoe’s metal plate claps the stage. Kids can get involved with this exciting form of dance as early as 3 years old, but classes for young children should remain fun and improvisational. Like most forms of dance, tap becomes more rigorous and demanding as children grow and improve.

BALLET This technical and beautiful form of dance has evolved with Italian, Russian, and French influences. Expect your child (age 3 or older) to start ballet in a fun, recreational way. Keep in mind that ballet becomes more challenging and demanding as dancers improve. Ballet allows children to learn specific moves and encourages discipline in body and mind. HIP HOP More about the spirit than strict dance steps, Hip Hop is an urban ethnic dance form that has gained popularity in recent years. Considered good exercise, it helps dancers to improve flexibility, to develop body balance, and to coordinate the muscles. With steps and movements that you don’t find in ballet, tap or ballroom, you experience more freedom while dancing but do need to learn the techniques of Hip Hop. Experts agree that dancing is a wonderful activity for children of all ages. All dance activity is a great alternative to team sports, and most studios offer lessons for children as young as three.

Not Your Typica And Oh So
F
ood trucks are capturing Houstonian hearts and palates. This new craze is sweeping the nation so you know Houston is bound to have its share of all things hip. Within the past couple of years food trucks have been popping up around the area. These are not your grandmother’s food trucks either. These are full-blown eateries with executive chefs and menus that will leave you craving their deliciousness and begging them to come around more often. Food trucks and their owners go through rigorous health inspections—just like brick and mortar restaurants. And maybe they are scrutinized even more, but owning a truck today is far different from what it used to be. Formerly known as ‘roach coaches,’ more people shied away from them than sought them out. Today that is not the case. Just check out any social media outlet. We follow food trucks around town, we tweet them to find out where they are, we post photos showing how much we enjoy the food; we do anything we can to get our next food truck ‘fix.’ Are they addictive? You bet! So much more so than your favorite restaurant. Why? Maybe because the trucks are not parked in the same place all the time. Is it more exciting to ‘hunt’ for your food? If you answered yes, you might be channeling your inner caveman… um… person…or maybe you grew up in Texas where hunting is second nature and your instincts are just kicking in. For whatever reason, almost guaranteed, you will not mind pursuing your favorite truck, such as Cousins Maine Lobster.

al Grab and Go o Delicious! Probably now one of the most famous truck brands, Cousins Maine Lobster who is widely known for landing a deal with Barbara Corcoran on Shark Tank in 2012, went on to franchise their system and have been flooded with requests to become part of this phenomenon ever since. In 2014 they signed 10 franchisees and one of them was from right here in Houston. But not all trucks are franchises. Many are ‘mom and pop’ shops. You know how great food can be from traditional diners and drive-ins tucked in back off the beaten path? Multiply that taste by 1000 slabs of butter and you get awe-inspiring, jaw-dropping, slap your knee, and downright mouth-watering cuisine sure to knock out at least one of the top 5 on your “Best of the Best Places to Eat” list. And prepare to be amazed—some of these owners have never even stepped foot in a culinary school. From healthcare to construction to people who just love to cook, food truck owners are from various careers and are in various stages of their lives. Some are looking for a change of pace while others are looking for their next challenge. Ask any owner, it is definitely a challenging business. Legislation has not kept up (no surprise there) and many people have never managed a business however that should not stop anyone from giving it a go. With passion, self-discipline, determination, and good social skills, becoming the next great thing in food trucks could be in your future! If owning a truck is not in your cards then give a food truck (or several) a chance to wow you with their some of their down home-, fusion-, healthy-, gluten-free-, and not-so-healthy-but-oh-so-deliciousinspired cuisines. Trucks have been spotted in and around Cypress and also at the Houston Food Park, 1311 Leeland St, Downtown Houston.

Scrapbooking Retreat. First time I had ever heard that term was when my friend invited me to spend an entire weekend scrapbooking at a location specifically designed for this purpose. Looking forward to the camaraderie, relaxation, sleeping late, and just enjoying the days for myself—little did I know how intense this weekend would get. Scrapbookers don’t sleep—ever! These people are serious! They either get started early in the morning (4a.m. – 7a.m.) or stay up all night. There is no down time except for meals. I did not witness one person (except for me) looking around or daydreaming. Some of them scrapbooked continuously without any sleep at all. Scrapbookers are organized! There were so many different types of organizers: plastic, wooden, metal, baskets, hanging, flat, desktop, on the floor, over the table—all so they could organize every item. From stickers to vinyl to special cutting machines everything had its place and could be easily selected—even their

drink had a special holder so it would not spill. Everyone had their own 6-foot table and these ladies made use of every inch of space—above and below. Many of them even brought their own chairs. Scrapbookers share! If you happen to forget something fellow scrappers would step up and offer you whatever you need. There were also items for purchase which was really helpful for newbies like me. The two ladies who invited me for the weekend are the most amazing scrapbookers I know. Over the course of 3 days, they completed 40+ pages between them while I was only able to complete 5. In my defense, gulp, I had just purchased a new cutting machine and spent most of the weekend learning it. I also was so interested in what everyone

else was doing I lost track of time (double gulp). I had to find out more about Heathre, a 40-something mom of 2, and Linda, her mother-in-law, a 71 yearold grandmother. When did you start your first scrapbook? Heathre: In 1998 after my children were born. Linda: After Heathre dragged me to a scrapbooking demonstration back in 2002. What machines do you use? Heathre: We both use a Silhouette™. This machine cuts paper into almost any shape with the help of an app on your computer. Some of the other models cut vinyl, write on paper, make heat transfers, stickers and more! There are many brands out there, you just have to do your research and try them. We like the Xyron™ that makes stickers out of most anything. How do you organize your photos? Heathre: I store my photos in chronological order in photo storage boxes. I make two prints of photos because I make a book for each of my children. Linda: Needless to say, I was getting a late start and I felt like I had no talent for creating. Once I got into it, I thoroughly enjoyed it. My first step was to go through mountains of pictures for three children, and organize according to child and age. Then I picked the best photos and went from there. What do you think constitutes a nice looking page? Heathre: I like titles and not a lot of clutter. Journaling is a must. I received a scrapbook of sorts from my Great Grandfather. My family has enjoyed many hours reading what he wrote about the photos in his own handwriting. Linda: I don’t have any particular style. I like to write about the photos. I crop off any unneeded part of the photo to save space. I just like to take my time and make a page that I am proud of. I know it will mean a lot to someone some day. How do you find a retreat? Linda: I leave it up to Heathre to find the retreats. Heathre: If you really want to seriously spend the entire weekend honing your scrapbooking skills find some retreats online and get on their mailing list. Scrapbooking Retreat Weekends are held all around the country. I like to set up tables in my spare room upstairs and invite friends over for our own ‘retreat.â€? We don’t get as many pages completed but it is sure a fun way to catch up with friends and enjoy an old-fashioned slumber party, too!

The 1870s Marine School, a one-room, board-and-batten schoolhouse is furnished with handmade benches and a teacher’s desk. The “blackboards” are actually painted on the walls. Other than a few maps and a portrait of George Washington, there is little in way of decorations. Back to the One-Room Schoolhouse
O
f all things American, perhaps nothing captures the imagination or fuels a sense of nostalgia like the one-room schoolhouse. As late as the 1940s, before the great school consolidation movement took hold, children in all parts of Cypress were being educated through eighth grade in these tiny house-like structures. On any fine late September day, children in all areas of Cypress began their walk to school on sandy roads, rode atop a family mare or were driven by buggy. Similarly, the one-room schoolhouses served as a center of Cypress activities, a place where parents and friends gathered. From boxed lunches to socials, this little building was not an isolated place of learning. Most of these schools were in walking distance

of the children’s homes and accommodated grades one through eight, which was typical for a rural schoolhouse. Students were usually taught penmanship, hygiene, reading, grammar, arithmetic and geography using worn textbooks and slates. Bathrooms were outside, lights came from either grease lamps or candles, and children brought their lunches from home. Families expected a quality education that would provide their children a better life and more opportunities. The one-room school houses of Cypress during the early 1900s included the Brink school on Barker-Cypress near what is now FM 529. One of the best accounts of this school was told by Marian Backer Yarborough who attended the Brinks school. Here are some of her memories: The Brinks school was located on a sandy
Example of a one-room schoolhouse in Cypress road named Barker Cypress near Freemon Road, now FM 529. The one-room school wooden building faced east to the main road. it for all our coats. Our books, tablets, colors, and pencils were kept in our single seat desks. Each family had to provide a way to school for their children. If we came by horse, we had to unsaddle the horse and tie it to a post outside the school. The horse stood or laid down during the school hours without food or drink. We didn’t have any trouble getting the horse to head for home after

In the winter we covered our legs with lap robes and if we had a buggy we placed warmed bricks at our feet. The school yard had a barbed wire fence around it with a little room to play. The fence kept the cattle out and the kids in. There was little traffic on the road, so we were allowed to walk or play on the sandy road. If the ditches were dry, the boys would dig small tunnels in the banks of the ditch. We also had races or high jumps on the road. Each teacher had four classes to teach one at a time. Everyone could hear the other kids being taught. Each morning began with a prayer, The Pledge of Allegiance and one or two songs. The most popular songs we sang were: “When the Roll Is Called Up Yonder,” “Day is Dying in the West,” and “Santa Lucia.” Everyone brought their own lunches and we ate outside if the weather was good. We had no Prinicpal so the teacher pronounced the punishment for acting up in class. Maybe a spanking, standing in the corner or standing with our nose in a circle drawn on the blackboard. We had fun and entertainment throughout the year. We had box suppers and parties for every holiday. On April Fool’s day the kids would hide in the woods near the school. Other Cypress schools were much like the Brinks schools. Wood stoves heated the rooms in the winter and open windows cooled the rooms in the spring. Water came from a hand pump and restrooms were a single person outhouse. There was no electricity, lighting , no telephone, no bank, no organized sports, no custodians and no art classes. But what they did have was a willingness to learn, a deep sense of community, and parents who wanted their children educated. And maybe these three things are what really matter most in any educational system.

Creating Your Personal
DECORATING PLAN By Carrie Davies
beautiful home doesn’t just happen. Good decorating is the result of good planning and should start with developing a comprehensive, detailed decorating plan. What should be included in your decorating plan? Everything that needs to be done, including timing priorities and budget. It’s vitally important to write down everything and be as specific as possible. Most people feel they need assistance in creating and implementing their decorating plan. Professional interior decorators have the talent, experience and specialized knowledge to help you pull it all together. They can also save you time and money. After all, the most costly furnishings you will ever buy are the ones that prove to be mistakes! Here are a few suggestions that will help you understand your own preferences and prepare you to work with a decorator. Begin by collecting decorating magazines—or design books. Consider cutting out photographs of furniture, styles, window treatments, color schemes, floor and wall coverings, etc., that appeal to you. Keep a notebook. Compile everything you’ve collected into a notebook and organize it into sections for each room you’ll be doing. If you choose to work with a decorator, your preplanning will make it much easier for you to communicate your likes and dislikes. Evaluate your present furnishing and de-

cide what you want to keep, eliminate, and re-do. Write down the various items in your notebook. What will be your overall color scheme? Does the carpeting need to be replaced? Which room do you want completed first? What budget have you established for each decorating project you
wish to undertake? Knowing this information will prove valuable in working with your chosen interior decorator. And remember, no matter what your lifestyle, your home should be a reflection of your tastes, your likes, and your interests!

The bath pictured above started as a typical 1990s gold accented room with a small shower and hydro-jet tub, as shown at left. The owners preferred a good looking soaking tub and spa-like shower. Space for the new shower was created by relocating the toilet out of the water closet. The master bedroom retreat, at right, in beautiful seafoam and celery greens, replaced the serviceable but neglected bedroom at left. At left, a 1992 country kitchen with honey oak cabinets, busy wallpaper, and laminate counters gave way to a traditional and sophisticated look in warm whites and browns with granite counters, new tile floors and orange accents. The original boxes for the cabinets were used, keeping the overall budget in line.

Children‘s Book Reviews By Emily Anderson
W
hen you are stuck inside the house this winter with several children who need entertainment, be sure you can pull out a few new stories to tell. Who knows what weather El NiÑo will bring in 2016! Curling up under a blanket by the fire and reading is a treasured pastime for adults and children alike. This selection of picture book recommendations includes stories and artwork that will transfix the children in your life. Pick two or three to add to your collection. In one book a humdrum trip to the pool results in a magical oceanic exploration, and the beautiful illustrations depicting each season in another title will have you dreaming of spring. Pool by JiHyeon Lee (Chronicle Books,
2015)
The delicate pencil illustrations in JiHyeon Lee’s wordless “Pool” capture the magical possibilities that exist in the imaginations of children. A young boy is hesitant to enter the municipal swimming pool due to the comically claustrophobic mass of rubber floats and bodies that are fighting for every inch of space, so he dives down deep to the bottom. There he meets a young girl, and together they explore the surprising world
the exists on the floor of the pool. The majestic and colorful creatures will delight younger readers, while the tale of friendship and individuality is sure to encourage older children and adults to search beneath the surface of the ordinary. Indi Surfs by Chris Gorman (POW!, 2015)
A powerful lesson is shared in this simple story of Indi, a small girl who drifts and plays on her surfboard in the immense and powerful ocean, waiting for the perfect

Give it as a gift to a baby, who will stare with wonder at the highly contrasting black and white images; the story and its message will be cherished as the child grows. This book is the perfect addition to a child’s collection of poetry and is highly recommended for nature lovers of all ages. Ashlock’s gorgeous artwork on oversized pages sets the scene for Yolen’s alliterative couplets that roll off the tongue. Adults will find this book a pleasure to read, and very young children will look forward to pointing out the different animals on each page. The art in this book is so layered and detailed, that older children will still enjoy lingering on each season to find an animal species they had missed or to check out the
human activity that is depicted subtly in the distance. The end of the book circles back to winter as deer, foxes, raccoons, and cardinals cuddle together to fall asleep under the snowflakes—perfect for a bedtime story. The Moon is Going to Addy’s House by Ida Pearle (Penguin Group, 2015)
Children are fascinated by the moon, and most can relate to the idea of being followed by the moon as they ride home in the car at night. Ida Pearle has turned this simple childish concept into a mesmerizing display of artistry. Her cut-paper collages are truly brilliant, capturing the different textures and colors of the city streets as Addy and her family leave a friend’s house and drive toward the country past a series of epic vistas. The speed of the car is perfectly conveyed in a sheath of blurred greens, whites, and blues rushing by outside the window. The images might be a bit abstract for the very young, but children four and older will explore this book with wonder. An Ambush of Tigers by Betty Rosenthal; Illustrated by Jago (Millbrook Press, 2015)
“An Ambush of Tigers” is an educational treat that will make children and adults alike smile and chuckle. Rosenthal introduces readers to the interesting words used to describe groups of animals in clever rhymes that will appeal to a baby’s ear, and Jago’s clever illustrations will charm older children. A shiver of sharks is shown wearing a variety of winter gear including ear muffs and scarves. A mischief of rats has gathered together to play a prank on an unsuspecting clutter of cats. This book, with its trifecta of rhymes, humor, and education is a sure bet for little libraries. “An Ambush of Tigers” by Betsy R. Rosenthal, illustrated by Jago. © Millbrook Press, 2015. JANUARY Best Gardening Month of the Year
Mine Retrievers

W
hile most of us think of January as an uninspiring month when it comes to gardening, we would be so wrong. January is the ideal month to plant fruit trees and shade trees; prune and eliminate weeds; add mulch and get all our garden implements ready for spring. As the holidays end, January’s cool weather invites you to head to the local nursery to see what new fruit and shade trees are arriving. Most garden outlets get their new selection of these trees during the winter, so you get the pick of the crop. Plus, because the trees are dormant, they transplant with a minimum amount of setback. Incidentally, if you are selecting fruit trees be sure to ask a Certified Nursery person or Master Gardener on duty, which of the varieties are recommended for your area, so you get trees that will produce the very best quality fruit. January is also a great month to select and plant roses. Likewise, evergreens and deciduous shrubs can easily be planted anytime the temperatures are above freezing. While you are picking out the perfect shrubs, this is also a great time to make an application of insect spray to help control winter insect and plant disease problems. From Pruning to weeds, this is an appropriate time to get flower beds ready for spring and to make sure all trees and shrubs are pruned. So while all your neighbors are sitting around, you will have a great headstart on the spring season with a yard that is ready to bloom and grow.
